The Brief

A local business in Chesterfield has decided to set up a new café in the town centre. They have asked you to help the new manager of the café to help in the planning. The new café is in a small building in the town centre. The manager would like the café to attract teenage customers who are old enough to meet up with their friends.

Your planning will include ideas for the theme and name of the café, menu ideas and research about food hygiene and safety.

• You must work through the tasks in this booklet to help you to prepare your ideas to show to the café manager.

• You can use a computer to present your work or hand write and draw your ideas directly into the booklet.

Task 1- Theme for your caféYou must first of all decide on a food style and theme for your café, you will find some ideas to

Task 2- Name and Logo

Now you have decided on the theme for your café the manager has asked you to choose a name and design the logo that will be used on the sign outside the shop, on the website and on items such as takeaway containers and napkins. The logo and branding is very important for a business. It grabs a customers attention and makes a strong first impression. It can be memorable and separates the business from the competition, think about the logos that are used by some of your favourite foods and restaurants.

Task 3- The MenuYour next task is to create the menu cards for your café.Make sure you consider:• The age of the customers and what types of food that will appeal to them• Including a range of items relating to your theme so that customers have choice• Some healthy options, use the Eatwell Guide to help with this.• Including items suitable for people with special diets such as vegetarian, gluten free,

food allergies (you may need to look up what these mean)• Including some savoury and sweet items• The types of drinks that you can serve• Advertising any special features of certain menu items

Task 4- Personal Hygiene

Personal hygiene is very important when working with food. These 6 easy follow rules to help to prevent the spread of germs and food poisoning. Draw lines to match up the rules with their pictures.

Task 6- Hand HygieneWhen working with food hands should be washed at various times to control the spread of harmful food poisoning bacteria.These times include:• After handling raw meat, vegetables, poultry, eggs or fish• After touching face or hair• After using the toilet• After coughing• After handling rubbish• Before touching food or equipment

Task 7- Practical ExperimentHere’s a practical task to prove the importance of what you have learnt in Task 6.

You will need:2 slices of bread2 clear food bags or cling film.

1. Label the plastic bags- 1 dirty hands and 2 clean hands2. Without washing your hands, get a piece of bread and put it in the first see-through plastic

bag or wrap it in clingfilm – maybe choose the crust that most people don’t eat! 3. Now wash your hands thoroughly with hand wash for 20 seconds (sing Happy Birthday

twice!!)4. Place this slice of bread in the second plastic bag , seal both bags and place on the window

sill5. Using the table below, record what changes with the bread over the next week.

Task 8- Social Distancing

Unfortunately with the current Covid 19 situation in the UK all of the country’s restaurants and cafes are closed, other than to provide takeaway food and drink services. When cafes and restaurants are allowed to open again business owners will have to think very carefully about how they can do this safely in order to reduce the risk of transmitting the virus between staff and customers.

In the table below make a list of rules/guidelines that the café manager could follow to ensure that the staff and customers are safe. An example has been done for you.

Task 9- Invitation to a Taster Night

The café manager would like you to design an invite to a “Taster Night” at the café to introduce newspaper reporters and food critics to the new venture.

You to design a suitable invite that would get reporters and food critics to come and take part in the evening. (This can be a hand drawn creation or handwritten).

• Think about the type of writing you need e.g. persuasive • What details need to be included?• Would your invite be electronic or printable to post to them? How would you get

replies to know how many of the tasters to cook?• Think about the dates you put on, allowing enough time for a reply e.g. if the event was

on 25th May, you may ask for replies by 18th May.• Would you include images on your invite?

1. Describe how your menu suits the Eatwell Guide, explain how you could improve your menu to include more healthy options.

2. Choose one of the items from your menu. Use the Explore Food tool from the Food a Fact of Life website to work out it’s nutritional value
