While we could bring you stats about wasted food and the number of people the food you leave behind on your plate could serve, we decided not to. We’re sure you know those facts. Instead, we’re bringing to you a unique dish from each state in the country that Milaap has its presence in. If you belong to one of these states, or love its cuisine, we’d like to hear from you. 1. Karnataka

MASALA DOSA – While this has become a popular breakfast dish all over south India, here’s what makes it unique in Karnataka. As you travel across the state, you get to sample different types of the masala dosa - moving from Davengere benne masala dosa, to Mysore masala dosa to Udupi masala dosa!

2. West Bengal

MISHTI DOI – While low fat “fro-yo” might be hitting the shelves, no Bengali would give up on mishti doi. Sweetened by caramelized sugar and flavored with cardamom, who could blame them for not wanting to let go?

3. Maharashtra

THALIPEETH – Are you touring Maharashtra and getting heartily sick of poha? Try Thalipeeth! A snack served with ghee and/or yoghurt, this humble version of an Indian pancake is a multigrain variety. Not only is it good for your heart, but it is also very filling.

4. Rajasthan

KER SANGARI – If you’ve been at a Rajasthani wedding, chances are you’ve already tasted this. But if you haven’t, it’s time to meet this two local vegetables – kair/ker and sangria.

Flourishing in arid regions under a punishing sun, the people of Rajasthan decided to put them to good use. Soak them in buttermilk, add some spices and you have a yummy accompanying dish with your rotis!

5. Odisha

CHHENA GAJA – You’ve heard of roshogulla and you’ve heard of gulab jamoon. This dish is also based in a sweet sugar syrup, but couldn’t be more different in taste. We hear that Pahala is the best place to sample this dish, so if you are in Odisha, you know where to go!

6. Tamil Nadu

RASAM – An accompaniment to rice and something that most Tamilians swear by, it often startles people to know that there are over 20 varieties of rasam that can be prepared. Did you know that the Mulligatawny soup, served in many restaurants across the world, is actually a variation of a type of rasam – namely Milagu Rasam ( Pepper rasam)!

7. Uttar Pradesh

KACHORI – A snack that originated in UP, there are both sweet and spicy versions on this that are made all over India now – ranging from the Raj kachori in Delhi to the Mawa kachori in Rajasthan. But the original version was a spicy snack made by combining various types of flour and spices.

8. BiharSATTU PARANTHA – Sattu is not easily defined, and is often confused with besan. However, it is a form of roasted chana (chickpeas), which is combined with spices and onions and folded into paranthas. Eaten with curd or pickle, it’s easy to see why so many folks from Bihar drool over this particular dish!

9. Andhra Pradesh

KODI KOORA - So everybody has heard of Hyderabadi biryani. We think though, that the next time you are in Andhra, you should try the kodi koora if you are non-vegetarian. A traditional chicken curry, it’s supposed to be great when eaten with garelu (another local snack)!

10. Mizoram

ZU - Avid tea drinker? You should try Zu! A form of tea widely known and drunk in copious quantities in Mizoram, it’s a must have for any tea addict. Be careful they don’t bring you their local rice wine though, it has the same name!

11. Manipur

KABOK – A sucker for various kinds of pulao? We think you should try this one. Not essentially a pulao in the strict sense of the word, it’s a rice dish which is fried with all kinds of vegetables added. Quite innovative, we say.
