The colours and scents of the Christmas season will be here. Slow cooked pork, scented candles, mulled spices, fresh baking and shopping delights at 40 outdoor Christmas stalls and over a hundred Wellington Market stands with plenty of Victorian Rascals around to entertain.

On our family Christmas celebration day, you are invited to enjoy live seasonal entertainment & free children’s workshops. Savour local food, mulled wine & barista coffee along with handmade chocolates and treats galore. What about making a LIGHT WELLINGTON CHRISTMAS CAKE?

225g Self Raising Flour225g Mixed dried fruit +rind of a large orange grated fruit110g Local Butter110g Caster Sugar1 egg (suggest Margaret’s)2 Tablespoons Milk3 Tablespoons **Wrekin Ale1 Teaspoon Cinnamon1 Dessertspoon Demerara Sugar

METHODRub butter into the flour until the mix resembles breadcrumbsStir in the caster sugar, dried fruit and cinnamonGently mix the egg, milk and ale togetherAdd the liquid to the dried ingredients and stir and fold to a soft consistencyPut into a lined 2lb loaf tin and sprinkle with demerara sugar gently patted downBake for 11/4 hours at 180degrees / 160degrees fan or Gas Mark 4Check that a skewer comes out clean and your cake is cooked.Allow to cool, remove from tin and serve sliced with the rest of the chilled Wrekin Ale.
