Jamie Oliver is a world-renowned chef and celebrity from Essex, England that has truly begun
to change the way the world looks at food. When I listened to Jamie Oliver’s TED prize speech, I was truly inspired. In the span of 20 minutes, he cemented principles and beliefs in my mind that I had been processing for years. As someone who has seen the power of food in all its glory to bring joy, health, comfort, pleasure, and inspiration, I’ve also seen food as a powerful catalyst for depression, disease, discontent, and a jaded sense of reality. All my life I’ve been someone who, more than anything else, loves food and everything involving my taste buds. Jamie has already changed the landscape of food in England. He has been working tirelessly over the better part of the last decade to bring this change to the rest of the world. “A revolution has to happen,” he says, “in order for us to change the culture that we’ve created for our children and the situation into which we’ve placed them.”
The facts of said situation are:
• This generation of children will have an average lifespan of 10 years less than that of their parents.
• Ten percent of what we spend on healthcare yearly is due to obesity.

These facts coupled with the knowledge that American food culture is founded on consumerism and pleasure/enjoyment, and not a deep-seated belief in “the greater good” health of the American people, is downright frightening. John and Jane Q. Public should be sufficiently alarmed to realize they need to know as much as they can about every piece of food that goes into their mouths. Unfortunately, given the current economy, most people are eating to live,and only eating what they can afford.
The economy aside, the simple truth is that the shortcoming lies not entirely with the choice-maker. The downfall comes with the choices that are so unabashedly vomited into our faces. That we feed our children and ourselves a diet of fast food and sugary drinks is a travesty. We raise them on pizza and McDonalds, with a serious lack of viable nutrition that is nowhere near the recommended minimums. Granted, there are exceptions to this rule, but it is a HUGE problem.
Jamie believes the solution to this problem is a 3-legged stool: 1. Home, 2. Main Street, and 3. School, with each leg as important as the last. There has to be coinciding reform from the food industry, not only in what they sell, but how they label and advertise their food. There also have to be changes in both what we choose to serve in school
and how we choose to prepare it. Lastly, we need to educate our children, and ourselves for that matter, how to provide great, fresh, nutritious food at home. Good food can not only be convenient, it can also taste DELICIOUS!!
Jamie has taken our country by storm in the last 2 years. He began his “Food Revolution” in Huntington, WV, which at that time was the least healthy city
in the unhealthiest state in the most obese country in the world. (Evansville just so happens to hold this claim to fame now.) When he began, elementary school students there couldn’t even tell the difference between a tomato, an onion, and a potato. The schools were serving pizza for breakfast,

categorized french fries as a vegetable, and served flavored milk without batting an eye at the amount of added sugar. He met resistance on many fronts, even publicly.
Jamie and his insatiable drive to bring people healthy food persevered in Huntington. He was able to change the habits of several families. He also succeeded in changing the culture by educating the people and giving them perspective on the current food climate in their area. He’s taught many how to cook, how to shop, and how to plan, in order to have a healthier, more sustainable food lifestyle.
In his second season, he took on a much bigger challenge. He chose to move his entire family to Los Angeles and serve as a food coach there just as he had in Huntington. Through his efforts he brought about a high level of change in one of the biggest cities in our country. One of the most outstanding accomplishments to note is the decision by the LAUSD to eliminate all flavored (sugary) milk from being served in public schools. As a note of comparison to the unknowing, a carton of flavored milk has nearly the same amount of sugar content as a can of soda.
While coaching and leading the “Revolution” from the field this year, Jamie and his team have launched an enormous mass media campaign, partnering with multiple organizations and agencies to bring awareness to America as a whole. Multiple community kitchens have been started with the intent of offering low-cost

cooking classes. A “Food Revolution” truck has been mobilized for the same purpose. Towns and cities across the country are coming together to form “Food Revolution” Community groups. Community pages on Facebook and Twitter keep “Revolution” fans updated on everything going on in the movement. Petitions have even been submitted to the USDA on behalf of the nation’s children to change the way legislation and tax dollars affect what kids are given to eat for the 180 days each year they are in school.
I hope to see changes like these made in the Tri-State region. There is an amazing foundation of people that support this movement. Moreover, the people that are already supportive of local, fresh, non-processed food are very well connected and adept at networking here in Evansville. From chefs, to business owners, physical trainers, farmers, growers, artisans, and knowledgeable consumers that fill in the gaps, Evansville is ripe for the picking. What can you do to change the way you think about food? If you’ve already changed your lifestyle, what could you do to help your brother or sister, friend or neighbor? Maybe we could create a “Revolution” of our own. I’m sure Jamie Oliver would be proud!

M aking ti me to eat with your family is important for many reasons, but in order to make the best of those meals, it’s even more important to learn how to choose fresh foods and prepare them well. Even if you have never cooked
from scratch, learning a few basic techniques is easy. Then you can cook simple, fresh meals and stop relying on packaged dinners. Your table will overfl ow with delicious, nutriti ous food that you prepared yourself, so you know what’s in it - and if you buy locally, you may even know the farmer that grew or raised it.

“One of the reasons we human beings are sti ll here on earth isthat our ancestors would go out to the garden, forest or fi eld and bring in fresh ingredients,” said Mike Sackett , owner, with wife Shelly, of Kitchen Aff airs in Woodland Place. “They ate many more raw foods, and did a lot of cooking without oil in covered pots,” he said. “It was much healthier than frying or griddling everything like we oft en do today.”

Look for fresh local products at farmer’s markets, the River City Food Co-Op, health food stores, the Newburgh Country Store, gourmet markets and many groceries. In additi on to peace of mind, you’ll fi nd that local products are fresher, riper, and just taste bett er.
“The best reason in the world to cook fresh from scratch relates to something I learned from Chef Jacques Pepin,” said Sackett . “Jacques said to me: ‘anyone can make a decent meal for a family if one starts with good ingredients. I can’t cook worth a d*** if I start with bad food.’
“Nobody’s a master chef by nature,” Sackett - who is also a cooking instructor - added. “Good cooking is learned;from classes or from books, but mostly from doing. I guarantee your 100th meat loaf will be excellent! Sti ck with it. Start with fresh ingredients, and you’ll love the results.”

Grill & BroilGrilling and broiling are similar; the heat comes from below when you grill, and from above when you broil. High heat is used to sear the food, and lower heat is
then used to finish the cooking. Choose tender items to grill or broil, such as chicken
breast or pork chops, well-marbled steaks, vegetables, or seafood. Always make sure to pat the food dry and apply oil right before cooking. White meat and fish can benefit from a buttermilk marinade to keep them juicy.
Cajun Chicken & Yellow SquashServes 4
1 pound boneless, skinless chicken breast 1/2 cup butt ermilk2 yellow squash, sliced 1 inch thick2 tablespoons olive oilCajun Seasoning to taste
Soak the chicken breasts in butt ermilk overnight. Drain and pat dry. Heat grill or broiler to high. Brush the chicken and squash with olive oil and sprinkle with Cajun seasoning to taste. Oil the grill rack or broiler pan, then cook the chicken and squash using high heat, turning once, unti l the outside is golden, about 2 -3 minutes on each side. Reduce heat to low and conti nue cooking, with the lid closed, unti l the chicken is fi rm and no longer pink and the zucchini is tender, about 5 - 10 minutes.

Pan FryPan frying involves coati ng food with breading, then frying it in a layer of oil deep enough to come halfway up the side of the food you’re cooking. This is a quick, medium-high heat
method, and tender foods such as poultry, fi sh, vegetable slices, or tenderized meat work
best. Slices should be cooked in the ti me it takes the breading to brown. To bread, pat the food dry, then dip it in seasoned fl our. Next dip the food into beaten egg, and fi nally roll it in cracker crumbs or breadcrumbs. The oil should be hot enough to sizzle when you place your food into it, in order to ensure that the breading doesn’t get oily. Keep the food sizzling, turning it once, unti l it is golden brown all over. If your coati ng gets too brown before the center is done, fi nish it in a 300 degree oven.
SautéSautéing is a high-heat method used for thinner pieces of poultry, fi sh, vegetables, steak or tenderized meat. The food may be coated with seasoned fl our or left plain.
It is fried in a small amount of hot butt er oroil unti l it is brown on the outside and just
done on the inside. Thicker pieces are fi nished in the oven. A pan sauce is made by boiling wine or another liquid in the used skillet, unti l the sauce liquid has been reduced and thickened. The skillet should be very hot before you add food to it; never over-crowd the skillet or the food will release too much moisture and boil instead of brown.
Parmesan Fried ZucchiniServes 4
1/2 cup fl our1 teaspoon salt1/2 teaspoon pepper1/4 cup bread crumbs 1/4 cup grated parmesan cheese2 small zucchini, cut 1/2 inch thick1 egg, beaten1/2 cup olive or canola oil
Mix the fl our, salt and pepper in a large zipper bag. Mix the bread crumbs and parmesan in a bowl. Add the zucchini slices to the bag and shake unti l coated. Dip each slice into the beaten egg, letti ng the extra egg drip back into the bowl, then roll it in the crumb and cheese mixture. Set the slices aside unti l each one is breaded. Heat the oil in a wide, heavy skillet unti l the oil is lightly rippling. Carefully lower the zucchini into hot oil and fry unti l the bott om of each piece is golden, then turn and fry the other side. Drain on paper towels.
Beefsteak PizzaolaServes 2
2 tablespoons olive oil2 thin-cut ribeye steaks salt and pepper2 cloves garlic, minced1 small onion, slicedPinch red pepper fl akes1/4 cup red wine1 cup chopped tomato2 tablespoons capers
Heat the olive oil in a wide skillet. When it is almost smoking, add the steaks, season, and sear quickly on each side unti l brown. Remove to a plate. Lower the heat and add the garlic, onion and red pepper fl akes, and cook unti l soft , sti rring oft en, about 5 minutes. Add red wine and boil unti l it is syrupy. Finally, add the tomato and capers and cook unti l the sauce is thick. Taste and season. Add the steak and any juices back into the sauce, and cook the meat to your desired degree of doneness. Serve with pasta if desired.

Roast & BakeWhen roasti ng and baking, the food is cooked by hot, dry air. Any vegetable or cut of meat can be roasted, from whole chickens to sliced eggplant. Make sure
the surface is well-oiled or butt ered before roasti ng to avoid dryness. Larger items, such
as roast beef, pork loin, or turkey breast, can be seared at high heat but are fi nished at a low temperature in order to avoid shrinking and drying out. When cooking a large piece of meat, cover it to keep the outside from browning before the center is done. Fatt y meats such as pork shoulder can cook at a consistent medium-high temperature.
Boil & SimmerOnly pasta should actually be boiled. Everything else should be placed into seasoned water, brought to a boil, and then lowered to a gentle simmer, with
a few small bubbles breaking the surface. Rapid boiling toughens meat by causing it to
shrink quickly and expel moisture. The gentle, moist heat of simmering works well for tougher cuts such as beef brisket, shank, and dark meat poultry.Tangy Pork Roast
Serves 8
3 teaspoons chili powder, divided1 teaspoon garlic salt1 (4 pound) rolled and ti ed pork shoulder roast1 cup apple jelly1 cup ketchup2 tablespoons cider vinegar
Preheat the oven to 350 degrees. Combine 1 teaspoon chili powder and garlic salt. Rub over roast. Place the roast fat side up in a shallow roasti ng pan. Bake, uncovered, for 2 hours. In a saucepan, combine the jelly, ketchup, vinegar and the remaining chili powder. Bring it to a boil, sti rring unti l smooth. Brush 1/4 cup jelly mixture over the roast. Bake 10-15 minutes or unti l crusty, and rest for 15 minutes before slicing. Serve with remaining sauce.
Shrimp BoilServes 4
1 box crab boil seasoning4 medium red potatoes4 ears corn1/2 pound smoked sausage1 pound large shell-on shrimp, thawed
Bring a large pot of water to a boil with the seasoning, cover, and let simmer for 15 minutes. Add the potatoes, bring the mixture back to a boil, lower to a lively simmer, and cook for 15 minutes. Add the corn and sausage and bring back to a boil. Add the shrimp and bring back to a boil, then turn off the heat, cover, and let it steep for 15 minutes before draining. Serve hot with butt er.

SteamSteaming permits the heat and steam of boiling water to cook food without immersing it in liquid, thus keeping the nutriti on in the food. Steaming works
best with delicate foods, especially vegetables and seafood. You can purchase
a bamboo steamer that is meant to be set over the curved bott om of a wok, a metal steamer basket to set in the bott om of a lidded saucepan, or an electric counter-top steamer. This is a great, quick way to cook fresh vegetables for everyday eati ng.
PoachPoaching is similar to simmering, except that the liquid is never permitt ed to boil. It is kept at 180 degrees, just hot enough to move around in the pan without
breaking a bubble. This method is for delicate fi sh, eggs, and fruit. When poaching
seafood, the liquid is seasoned with spices, lemon, onion and herbs. When poaching eggs, a dash of vinegar is added to help quickly fi rm up the eggs. For fruit, the poaching liquid is sweet and spicy.
Steamed Cauliflower with Butter and ParsleyServes 4
1 medium head caulifl ower, cut into fl orets1 tablespoon butt erSalt and pepper to taste1 tablespoon chopped fresh parsley
Place the caulifl ower into a steamer with water already boiling, cover it ti ghtly, and steam for 10 - 15 minutes or unti l it is tender. Remove carefully, and toss with the butt er, seasoning, and parsley.
Poached Pears
1 bott le red zinfandel wine3/4 cup sugar1/2 teaspoon vanilla extract3-4 whole cloves4 fi rm bosc pears (Use bosc pears. Green anjou pears will fall apart.)
Bring the wine, sugar, vanilla and cloves to a boil in a medium saucepan, and sti r it to dissolve the sugar. Lower the heat unti l no bubbles break the surface. Peel and halve the pears, removing the core with a spoon or small knife. Carefully place the pears into the poaching liquid and keep the liquid barely under a simmer for 15 minutes. Poach unti l the pears are tender when pierced with a knife. Remove the pears and permit the liquid to cool. Chill pears in the poaching liquid unti l ready to serve. Some liquid may be reduced for a sauce.
Breaded pan fried zucchini recipe: slices of zucchini are dipped into fl our, then egg, then breading mixture and placed into a hot skillet with oil to fry unti l golden on both sides.
Aft er the seared steaks are returned to the skillet to warm in the sauce, pasta is added and the dish is fi nished with a sprinkle of fresh oregano.

Stew and Braise Stewing and braising are combination cooking methods, because some of the ingredients are browned in oil first, then simmered in liquid until tender. These
methods are best for tougher cuts of meat, such as beef chuck, shank or brisket,
pork shoulder, and dark meat poultry.
Braised Beef TacosServes 4
1 tablespoon oil2 pounds beef shank meat with the bone1 small onion, choppedSalt and pepperFlour Torti llas
Bowls of diced fresh tomato, onion, cilantro, jalapeno peppers if desired, and lime wedges. In a wide skillet, heat the oil and sear shanks unti l dark brown on both sides. Place shanks into a soup pot and barely cover with water. Add the chopped onion, season generously with salt and pepper, bring to a boil and lower to a simmer. Cover and cook slowly for 1 1/2 hours or unti l the meat is falling off the bone. Remove the meat from the broth and shred. Discard the bones. For each taco, place some shredded beef in a warm torti lla and top with fresh vegetables, a sprinkle of salt and a squeeze of lime juice. Roll up and enjoy. Eat the broth with a spoon.
Your fi nished meal - Beefsteak Pizzaola with pasta, Parmesan fried zucchini, and a side of simple grilled vegetables.
Eggs Even though we learn in Home Ec. to crack an egg on the edge of a bowl, cracking on a fl at surface like a plate or a countertop will prevent shards of shell from entering the part of the egg we’re trying to extract.
Onions Should be stored separated in a dark, cool, and dry locati on. There are some onion enthusiasts who ti e off their onions in a pair of pantyhose and drape them over pipes in their basement.
ApplesWhen peeling an apple, the best procedure is to guide the apple through the peeler. This is a departure from the ever popular moving the peeler around the apple method.
MushroomsKeep mushrooms fresher longer by storing them in a paper bag in the refrigerator. The bag allows moisture to stay near the mushroom, but also allows air to circulate through the bag.
BrothToo much left over broth? Measure out according to your favorite recipes then freeze for easy prep-work! Freeze extra broth into and ice cube trays to add quick fl avor to any meal.
ChiliesSize matt ers when it comes to chilies. The smaller –the hott er. Same goes for color. Green chilies packmore of a punch over their red counterparts.
StrawberriesBuying strawberries requires a keen nose. If the aroma is sweet and strong, the berries will be delectable no matt er what they look like.
When buying in the grocery store always remember to turn over the container to examine the fruit at the bott om, which can go bad before the ones on top.
GarlicNever store garlic heads in the refrigerator. Garlic should be stored like onions and potatoes: in a cool, dark, dry place with good circulati on. Try a paper bag over the plasti c containers or the plasti c bags available at the grocery store. If your garlic has begun to sprout, it has gone bad.

Over the last decade, I’ve considered and defined myself as a foodie. I am an enthusiast of all things taste-related: food in all its glory, cooking,
preparing, and of course, eating; alcohol, for its flavors and sensations, including beer, wine, whisky, gin, etc. As my enthusiasm for gastronomy increased, I began to develop a thirst for knowledge, a need to know why things taste the way they do. This grew into a passion for the inner workings and the origins of what I ingest. I quickly realized that this is a shared passion amongst several of my peers. By being introduced to and reading authors such as Alice Waters, Eric Schlosser, Michael Pollan, and Jamie Oliver, all while investigating my own eating habits, I began to learn a great deal more about food and its effect on us. In the last few years, I’ve focused this passion towards promoting the joy of food, sharing meals, and fostering a community of locavores. The set of principles I’ve cultivated in my own life is rooted in my belief that the more you know about what you’re putting in your body, the healthier and happier you’ll be. The foundation of these principles is the fact that we, as consumers, have the daily opportunity to vote for good food with our dollars, and choose what we eat and drink. We live in a far from ideal situation with regards to the food marketplace. Most of the food we buy in supermarkets has a much larger and longer backstory than we ever give it credit for. There are very practical steps that we can all take to enjoy fresher, healthier food, while also supporting this community. There are multiple places within a 20-mile radius where you can purchase ingredients that are inherently fresher than those you can buy in a supermarket. We have not one but two farmer’s markets here in Evansville alone. Both have a wide and colorful variety of produce (most picked within a day or two of purchase), as well as some meats and artisanal craft! In my time as a locavore, I’ve built relationships with many of the farmers and growers that peddle their wares at our local markets:

of great fruits and vegetables to my table, but also great friends. Their peaches, strawberries, and blueberries are all fantastic. Their goods are not only available at the local farmer’s markets but also at the stand they’ve built at the orchard itself. As the season progresses, they also have a variety of veggies, not to mention the pick-your-own apples and pumpkins that add outdoors fun tothe deliciousness! Jerlene Cannon from Stonewall Farms and I always chat for a while every time I see her at the market. We shoot the breeze about what we’ve been cooking recently, and what influences or excites us regarding food. Stonewall offers many cuts of beef and pork, and even lamb on occasion. The homestead lifestyle that she provides for her family, while also providing quality meats and eggs for the general public is no less than inspirational. Bud Vogt from Bud’s Tomato Farm is one of the most knowledgeable growers and proponents of the local-food movement. His heirloom tomatoes are second to none, and his greens are thoroughly satisfying. Bud really knows his stuff, and shares tidbits of his organic growing wisdom with me on regular occasions. As for establishments outside the market to buy goods, both for cooking and for pure enjoyment,

I like to support a select few, but I am always on the lookout for more. The Newburgh Country Store is exactly what I would expect from the name. I often stop by its Jennings Street location when looking for fresh herbs for my summer cooking. I’ve also thought about buying some of the various other garden items, but I’ve been so busy I have yet to bite. The most tempting items have certainly been the perennials, which I could give minimal effort to and still enjoy. I always enjoy my visits here, if nothing else, to enjoy the serene, nostalgic atmosphere that is hard to find these days.
The River City Co-op is my “go-to” place for any bulk goods and anything else organic or all-natural you might desire. They even have gluten-free, kosher, and vegan items to offer more discerning or needy palates.
Mayse Farm Market is an invaluable asset to the Tri-State community, and as a true farm market, they offer freshness not readily available at your local supermarket. Paul Mayse told me that you might even see the farmers out in the fields picking your produce, just before you buy it. In the off-season, there is also plenty to do at the Farm, Mayse reminds me. They offer a corn maze in the fall as a part of their Family Fun weekends in October. During off months, you can also check out their on-site bakery, where they create all sorts of baked goodies. The Henderson counterpart to Evansville’s Mayse, Cates Farm and Produce offers the same style of fare. Local pick-your-own pumpkins during the fall, and the farm’s own corn maze, are only a few of the non-seasonal produce offerings available at Cates. Located just off Highway 1217, Cates’ lends itself to a quick stop for any veggie needs you might have for your at-home cooking. Lorenzo’s and Black Buggy each offer a unique brand of baked delicacies. Black Buggy makes everything from scratch, and it’s hard to choose the delight I think is the best. In the mood to satisfy your sweet tooth? The apple crumb pie, red velvet cake, lemon meringue pie, pumpkin bread and coffee cakes are, without a doubt, stand-outs. If a meal is what you crave, try out the chicken and dumplings or sweet potato casserole to get your fix of belly-warming home cooking. In the mood for a fresh baguette, pan ordinaire, soft Challah, or fresh-sliced French 9-grain? Your bakery cravings will certainly be sated at Lorenzo’s. Tucked off of Green River road, once you find this jewel, you won’t be a stranger. Lorenzo’s is proud to offer an array of dishes made from fresh, local ingredients, which most certainly includes homemade bread. As a cookie enthusiast, I frequent Just Rennie’s Cookie Co. on 4th Ave. in downtown Evansville for my dessert delights. at a discount! To accompany your sugary delights, Rennie’s also offers an array of wonderful salads and sandwiches, both in wrap and roll form. When walking downtown on a beautiful summer day, I never think twice abou stopping by when I’m hungry and passing by their outdoor patio. As for the adult beverage piece of the gastronomic equation, I have several favorites in this arena as well —all in Indiana! I appreciate the time and attention given to all aspects of the wine-making process at Oliver Winery in Bloomington, IN. Their Creekbend series, made from estate-grown grapes on their vineyard, has gained national attention since the vineyard re-opened in 1994. I particularly enjoy the Vidal Blanc Ice Wine and the Chambourcin Rose. While the mass production of their sweeter “Soft” wines have given Oliver a wide audience,the Creekbend wines keep purists like me coming backfor more. Libations closer to home are also easy to come by, especially for the microbrew lover. Jack Frey and Turoni’s Main Street Brewery have been treating Evansville to delicious hand-crafted beers for years now. With 5 regularly available varieties and 6 rotating seasonal brews, even the novice beer drinker can find something to enjoy. As an enthusiast myself, I am always pining for a pint of the Octoberfest beverage when fall rolls around. For an everyday pizza visit, I switch between the Honey Blonde, the Ol’ 23 stout, and the Blue-Eyed Moose IPA. Any of them go incredibly well with an order of garlic cheez toast and a delicious “Vincenzio’s Masterpiece” (I prefer to add banana peppers as well!)
For more information on other local/regional breweries, talk to the associates at Winetree or Liquor Locker. Both have professionals on staff that can direct you to your old favorites or introduce you to new specialties. I’m always willing to stop for a minute and talk food or drink with anyone looking to educate themselves or just share stories, so next time you’re down at the farmer’s market, or one of our local shops, I just might be there. George F. Reisch, a fifth generation brewmaster by trade, is a Brewmaster at Anheuser-Busch, Inc and is the Director of Brewmaster Outreach for Anheuser-Busch.
During his tenure at Anheuser-Busch, Reisch has traveled to Mexico, Brazil, Japan and Canada on a variety of brewing-related projects and has also assisted with “New Beer Brand” development. He has hosted hundredsof “Brewmaster Dinners”and brewing schools all over the world.
Reisch is a Past President (2008-2009) of the Master Brewers Association of the Americas (MBAA). He is a tasting judge at the World Beer Cup, Brewing Industry International Awards, and the Great American

Braised Short Ribs6 to 8 Beef short ribs, on the bone2 T. Olive oil1/2 Sweet onion, chopped1 C Dry red wine1 can Diced tomatoes2 - 4 C. Rich beef broth 1 -2 Fresh garlic, whole clovesTo taste Salt and freshly ground black pepper2 T. Freshly chopped parsley, to garnish Cornstarch, to make a slurry
Preheat an oven to 325°F.
Season the ribs with salt and fresh pepper all over.
In a heavy Dutch oven (I like the low ovens from Le Creuset), heat the empty pan over medium heat, and when hot add the olive oil. When the oil is hot, add the short ribs and brown them on all sides. Don’t crowd the pan. Get them very brown on all sides.
Remove the ribs from the pan when done and add the onion to the pan. Cook the onion in the oil and drippings unti l just translucent, then deglaze the pan with the red wine. Reduce the wine to 1/4 cup, and add the diced tomatoes with their liquid to the pan.
Return the ribs to the pan and add the garlic. Add enough beef broth to nearly cover the ribs with liquid. Move the covered pan to the oven and bake for at least 2 to as much as 4 or 5 hours. Spoon off as much of the fl oati ng grease and fat as you can. You might have to do this several ti mes.
When the ribs are done, you will be able to just pull the bones right out of the ribs with your fi ngers or tongs. Turn the ribs over so the tops, which may be a litt le dry, become moistened and juicy again. Uncover and conti nue to cook for 30 to 45 minutes to thicken the sauce.
Remove the pan from the oven and if the sauce isn’t thick enough, it may be thickened on the stove over medium heat, by adding a cornstarch slurry (cornstarch blended with water, no lumps!). The sauce is right when it coats the back of a spoon and nicely glazes the ribs. Taste the sauce and add more seasoning if necessary.
I like to serve these over mashed potatoes or egg noodles. Garnish with a litt le freshly chopped parsley, if desired. Serves 4 to 6.

SlurryA slurry is thick suspension of solids in a liquid. Oft en in cooking, a slurry is used to thicken
a sauce. A common slurry used is cornstarch blended in water. Another favorite method is saving
some of the broth or liquid used in cooking the protein in a bowl and blending the cornstarch in with the broth instead of water. Either method requires care to ensure no lumps are in the newly formed slurry.

Michelob Amberbock Crème Brulee
2 t. Michelob Amberbock6 Egg yolks, large6 T. Sugar1 Vanilla bean, split lengthwise1 1/2 C. Whipping Cream6 t. Brown sugar, packed
Preheat oven to 325°F. Whisk yolks, beer and 6 tablespoons of sugar in medium bowl to blend. Scrape in seeds of vanilla bean. Gradually whisk the cream into the sugar. Divide mixture among six 3/4” deep custard cups or ramekins. Arrange dishes in 13x9x2 inch baking pan. Pour enough hot water into the pan to come halfway up sides of dishes.
Bake approximately 35-40 minutes until the custard is set. Do not over bake or your custard will be rubbery. Remove the pan from the oven and remove custard cups from the water. Allow custards to cool before placing in the refrigerator. Chill overnight.
Half an hour before serving: Remove the custards from the refrigerator and let stand at room temperature.
Preheat broiler. Just before serving, sprinkle 1 tablespoon brown sugar on top of each custard. Place dishes on small baking sheet. Bourbon-Brined Pork Chops4 Loin pork chops (each 1 inch thick and10 to 12 ounces)1 Small onion, thinly sliced2 Bay leaves1 Cinnamon sti ck10 Black peppercorns5 Allspice berries3 Cloves3 T. Brown sugar3 T. Coarse salt1 C. Hot water2 C. Cold water3 T. Bourbon2 T. Walnut, hazelnut, or vegetable oil, plus 1 to 2 tablespoons for basti ng
Volcanic Applesauce (recipe follows), for serving
Rinse the pork chops under cold running water and blot dry with paper towels. Arrange the chops in a baking dish just large enough to hold them or in a resealable plasti c bag. Arrange the onion, bay leaves, cinnamon sti ck, peppercorns, allspice, and cloves over the meat.
Make the brine; Combine the brown sugar and salt in a large bowl. Add the hot water and whisk unti l the brown sugar and salt are dissolved. Sti r in the cold water, bourbon, and 2 tablespoons of oil. Pour this mixture
over the chops, turning the chops a couple of ti mes to coat evenly. Brine the chops, covered, in the refrigerator for 2 to 4 hours, turning once or twice to ensure even brining.Set up the grill for indirect grilling and preheat to high. If using a gas grill, place the wood chips in the smoker box or in a smoker pouch and preheat unti l you see smoke.When ready to cook, brush and oil the grill grate. Drain the pork chops and blot dry with paper towels, dusti ng off any loose spices. Brush the chops on both sides with the remaining oil. Arrange the chops in the center of the hot grate away from the heat. If using a charcoal grill, toss the wood chips on the coals. Cover the grill and smoke the chops for 20 minutes. Then, move the chops directly over the heat.*Note: If using a charcoal grill, place 2 chops on each side over the mounds of coals. If using a gas grill, place all 4 chops over the lit porti on of the grill.
Grill the chops, uncovered, unti l cooked through (about 160°F on an instant-read meat thermometer, 4 to 7 minutes per side, rotati ng the chops 90 degrees aft er 2 minutes to create and att racti ve crosshatch of grill marks. Transfer the chops to plates or a platt er and let rest for 3 minutes, then serve at once with the applesauce.
Volcanic Applesauce
1 piece Fresh horseradish, (1 to 2 inches long and 1 to 1-1/2 inches across; about 2 ounces)1 C. Applesauce (preferably homemade)1/4 t. Ground cinnamon
Peel the horseradish and fi nely grate it into a mixing bowl or chop it in a food processor fi tt ed with a metal blade. (If using the food processor, cut the horseradish into 1/4 inch thick slices before processing.)
Whichever method you use, take care not to breathe the potent horseradish fumes. Sti r in the applesauce and cinnamon. The applesauce can be made up to 12 hours ahead. Store it in the refrigerator, covered. Serves 4; makes one cup.

Mousaka
1 lb. Eggplant1 lb. Potatoes1 lb. Zucchini1 lb. Ground beef8 oz. White wine2 t. Tomato paste3 oz. Chopped onions4 C. Cold milk3 Eggs2 t. Butt er5 t. FlourFreshlygrated Parmesan cheesePinch NutmegPinch Chicken base
Thinly slice eggplant, potatoes, and zucchini. Flash fry all vegetables until golden. This will help them retain their appearance and crispness when the dish is complete.
Arrange the vegetables in the following layer order in your 9” by 13” greased pan: potatoes, eggplant, and then zucchini. After layers have been properly placed, add a generous handful of freshly grated parmesan cheese.
Brown 1 lb. of ground beef. Drain off excess grease and add onions, white wine, and tomato paste. Simmer mixture over medium heat for about 10 minutes. Drain off excess liquid then add mixture over top of the vegetable layers.
Beat 3 eggs then mix with 3 cups of cold milk and 2 t. butter, simmer over medium heat. While the mixture is nearing a boil, add the additional cup of milk that has been mixed with 5 t. of flour. Let the mixture simmer until it begins to thicken. Once it has come to the consistency of thin ‘mashed potatoes’ remove from heat and add as final layer of mousaka.
Top the pan of delicious mousaka with anothergenerous handful of freshly grated parmesan cheese. Place pan in a preheated 350 degree oven for 35-40 minutes.
Let dish stand for at least 10 minutesbefore serving. Enjoy!

Lemon Latte Cotto with Poached Pear in Port Wine
6 Lemons, zested12 oz. Milk8 oz. Heavy cream½ t. Lemon extract½ t. Vanilla extract7 oz. Sugar8 oz. Egg whites
Combine lemon zest, milk, cream, extracts and pinch of salt in saucepan and bring to boil. Slowly whisk in sugar and then stir in egg whites. Strain mixture through chinois and pour into 4-ounce molds that have been sprayed with a vegetable spray. Bake in water bath at 250 °F for 25 minutes or until set.
Poached Pear in Port Wine:Peel pears and use a melon baller to scoop out the bottom of the pears. Pour Port wine over the top of the pears and add a little water to cover the top of the pears. Add cloves, cinnamon, all spice, lemon and lime halves. Bring to a boil, then turn down to a simmer. Cook until the pears are soft. Leave in poaching liquid and steep overnight. Strain the reserved liquid and thicken the liquid with a little cornstarch slurry. Slice the pears in fan shape and pour the sauce over the top of the poached pears. Serve with Lemon Latte Cotto and fresh seasonal berries.

Blue-Eyed Moose IPA BeerGrain needed:7 lb. Pale malt2 lb. Munich malt1 lb. Biscuit malt.5 lb. 60L malt Mix crushed grain with hot water & mash at 155 degrees for 1 hour. Sparge (rinse) grain with hot (175 degrees) water to fill kettle with 6 gallons liquid (wort). Bring to boil & boil for 90 minutes. Hop Additions to Boil:.25 oz. Cascade & .25 oz. Fuggles at beginning of boil (90 Minutes)..25 oz. Cascade & .25 oz. Fuggles with 45 Minutes until end of boil..25 oz. Cascade & .25 oz. Fuggles with 15 Minutes until end of boil.1.0 oz. Cascade at end of boil. Cool to 75 degrees, Pitch (add) yeast, US-05, & Ferment at 68 degrees.
Dry hop with Cascade hops (Add hops to fermenter).
Yields 5 gallons.

Squeeze the lime into a bowl. Cut each avocado in half around the pit; twist apart and remove the pit with a knife. Carefully peel off the skin, dice the fl esh in the bowl of lime juice to prevent loss of color. Add the onion, tomato, cumin, chili powder and jalapeno. Mash together and add salt to taste. Enjoy!

Mushrooms, sliced1/2 C. Carrots, diced1/2 C. Peanuts, Roasted For the marinade:2 t. Light soy sauce1 t. Cooking wine1/2 t. Sugar
For the sauce:1 t. Light soy sauce1 t. Dark soy sauce1 t. Vinegar A fewdrops Sesame Oil2 t. Chicken Stock1 t. Sugar
1. Combine all the ingredients for the marinade in a bowl and marinate the chicken, covered, for at least 20 minutes. Combine all the ingredients for sauce and set aside.
2. In a preheated wok or deep pan, heat the oil and sti r-fry the chilies unti l crispy and fragrant. Toss in the chicken pieces, baby corn, mushroom, celery stalks and carrots. When the chicken
begins to turn white, add the garlic and ginger. Sti r-fry for about 5 minutes.
3. Pour in the sauce, and when everything is well mixed, sti r in the peanuts. Serve immediately.

Pan Seared Red Snapper with a Ragoût of Shitaki Mushrooms, Sweet Corn,Baby Spinach, Applewood Bacon and Crab, Finished with a Garlic Lemon Broth
1-6 oz. Red snapper fi llet2 oz. White wine3 oz. Spinach2 oz. Shitaki mushrooms, sliced3 oz. Sweet corn2 oz. Lump crab2 strips Applewood bacon, choppedTo taste Salt, pepper and Olive oil
Sear snapper fi llet in hot skillet with enough oil to just coat the bott om of the pan. Pull and allow to rest. Add spinach, corn, crab, mushrooms, salt and pepper. Then, add white wine and reduce. Place a nest-form side or serve in a bowl with snapper placedon top. Float broth (recipe to follow) at base of side/snapper. Garnish with chopped bacon.

Roast all peppers over an open fl ame or under a broiler unti l the skin becomes black. Blend peppers and vinegar in blender unti l smooth. In a large bowl, mix drained tomatoes, diced fresh tomatoes, peppers, spices and onions. Mince the cilantro and add to mixture. Allow salsa to rest for an hour to let fl avors blend. Enjoy with fresh chips.

Fact About JalapeñoJalapeño chile peppers can be served fresh, cooked or pickled. Add diced fresh jalapeno to cornbread, couscous, chili, sauteed corn and beans, even sweet desserts such as an apple dutch baby. Pickle peppers with garlic, salt, spices and vinegar. Halve peppers, stuff with cheese and bake. Jalapeño may be added to a variety of dishes for a mild heat. Peppers will keep in cold storage for 1-2 weeks.

4 Jumbo sea scallops2 Slices of thick cut bacon, cut in half
Wrap scallops in bacon. Blacken and grill.
Mango Relish:2 lbs. Mangos, diced1/2 lb. Pineapple, diced (reserve juice)1/2 lb. Mandarin oranges, diced1 head Cilantro, diced2 Tomatoes, diced1 Medium sweet onion, diced
Mix all ingredients, including reserved juice. Serve over grilled jumbo sea scallops.

Chardonnay Chicken Capone
1 – 6 oz. Boneless skinless chicken breast3-4 White snowcap mushrooms, sliced1/2 Rib celery, minced1/2 Small yellow onion, minced1 – ½ T. Flour 1 t. Red bell pepper, diced small1 t. Garlic powder1/4 t. Black pepper3/4 C. Heavy whipping cream2 T. Unsalted butter4 t. Grated parmesan cheese1/4 C. Shredded mozzarella cheese1 t. Fresh Italian parsley, chopped fine1/2 t. Seasoned salt1/2 t. Vegetable oil
In a small sauce pan on low heat, add butter and flour. Stir with a wish until smooth. Add onions, peppers, celery, black pepper, and mushrooms. Let cook on low heat until onions are tender. Stir and slowly add heavy cream, parmesan cheese, garlic powder and fresh parsley. Mixture will thicken when done. Set aside and keep warm. Grill chicken breast
in vegetable oil and seasoned salt until done. Let rest and cover with sauce. Sprinkle mozzarella cheese on top and serve with salad and baked potato. Prep Time 20 – 25 minutes.Serves 1.

Big Kahuna
19 lbs. Certi fi ed Angus Prime Rib1 C. Kosher salt1 C. Course black pepper1 C. Au jus
Preheat oven to 325°F.Rub prime rib generously with salt and pepper.Place in roasti ng pan covered and roast for 3 to 4 hours.Serving size should be 50 ounces bone in.
Serve with one cup of au jus or juice from prime rib that has been enriched with a beef stock.Serves 5.
Twice Baked Potato
2 lbs. Large Idaho baking potatoes1 T. Butt er, unsalted2 T. Sour cream4 T. Shredded cheddar cheese1 T. Chives, diced2 T. Bacon, chopped1/3 C. Half & half1 T. Salt and pepper
Preheat oven to 350°F. Wash potatoes then pat dry.Bake potatoes for 1 hour 20 minutes.Remove from oven and cut each potato lengthwise.Scoop out potato into bowl leaving shells.Set shell aside to cool.
Add butt er, sour cream, cheddar, chives, bacon, salt and pepper into potatoes.Using a piping bag, stuff potato fi lling into shells.Let cool for 30 minutes under refrigerati on.
Cook at 350°F for 15 minutes unti l golden brown and serve hot. Serves 2.

Seared Ahi Tuna½ C. Soy sauce1/4 C. Green onions1 T. Sesame oil2 T. Minced garlic1 T. Crushed red peppers2 Whole limes4 lb. Sushi grade yellowfin tuna1/4 C. Toasted sesame seeds2 T. Honey
Mix all ingredients in a bowl excluding tuna and sesame seeds for a marinade. Marinate tuna for two to four minutes. Pre-heat sauté pan. Add 1 tsp. sesame oil to pan; sear the tuna for one minute on each side. After searing, roll in toasted sesame seeds. Slice tuna into 1/4 inch cuts – serve and enjoy!

Italian Coconut Cake with Cream Cheese Icing
1/2 lb. Butter2 C. Sugar5 Eggs, separated yolks from whites1/2 t. Vanilla1 C. Buttermilk2 C. Cake flour, sift before measuring1 t. Baking soda1/2 t. Salt1 1/2 C. Coconut, plus about 1/4 cup for toasted topping1 C. Pecans
Cream together butter and sugar. Beat well. Add egg yolks and vanilla. Beat until light and fluffy. Add soda, salt, buttermilk and half of the flour. Mix and then add the rest of the flour and mix again. Stir in coconut and pecans. Beat egg whites until peaks form and fold into cake batter. Line two 8” cake pans with parchment paper and spray with non-stick cooking spray. Bake at 325°F for 32 minutes. Ice with cream cheese icing and top with toasted coconut*.
*To toast coconut: spread into an even layer on a cookie sheet and bake at 325°F for about 5-8 minutes. Coconut is done when it turns light brown.
Cream Cheese Icing
1 lb. Cream cheese, room temperature1/2 lb. Margarine, room temperature2 1/4 lb. Powdered sugar, sifted (may need more to reach desired consistency)1 t. Vanilla
Beat cream cheese and margarine until smooth. Turn mixer on low and add vanilla. While mixer is on, slowly add powdered sugar.Yields: One 8 inch double layer cake or Two individual 8 inch cakes

Thai Papaya Salad“Fresh, healthy and helps one’s digestive tract.”
1 C. Fresh, shredded green papaya¼ C. Carrots, shredded2 T. Brown Sugar2 T. Fish sauce (or salt)2 T. Lime juice½ t. Fresh garlic1 t. Fresh chili (thai)1 T. Ground peanuts (opti onal)5 Slices of tomatoes5 1” pieces of Green Beans1 t. Tamarind sauce
Mix together papaya and carrots.
Add a litt le water to Brown sugar and mix well.
Mix together sauce and seasonings. Add papaya, carrots, tomato and green beans. Mix together with sauce. Garnish with lett uce or cabbage on the side of the plate.
Recommended to serve with steamed sti cky rice or any other kind of rice.

Apple Cake
8 Baking apples, medium1 T. Cinnamon6 T. Sugar2 3/4 C. Flour, sift ed or Jule’s gluten free all purpose fl our*1 T. Baking powder1 C. Vegetable oil2 C. Sugar1/4 C. Orange juice, freshly squeezed or Sunny-D 2 1/2 t. Vanilla4 Eggs1/2 C. Walnuts, chopped1 T. Butt er, unsalted1 C. Powdered sugar1-2 t. WaterAsneeded Crisco
Preheat oven to 350°F. Grease tube pan. Peel and chop apples. Combine 1 T. cinnamon and 6 T. sugar. Toss with apples and add walnuts. Set aside. Combine fl our, baking soda and salt. Combine oil, OJ, sugar and vanilla in a separate bowl. Mix contents of each together with an electric mixer unti l combined. Add one egg at a ti me. Pour half of batt er into pan. Then, top with half of the apple mixture. Pour remaining batt er and top with apple mixture.Bake for 1 hour 30 minutes or
1 hour 40 minutes for gluten-free recipe. Let cool 10 minutes and then remove from pan. Cut butt er into 3 T. of powdered sugar. Add remaining powdered sugar. Add water a few drops at a ti me to make glaze. Pour over cake when completely cooled. This cake is even bett er eaten the next day!

Buttercup PieCrust:1 Pre-Baked Pie Crust
Filling:1 C. Brown Sugar1/2 C. Sugar3 T. Flour4 T. CornstarchPinch Salt1 2/3 C. Milk2 Egg Yolks1 Egg White1/4 C. Butt erscotch Schnapps (reduced to 2 - 3 Tbsp.)1 T. Butt erCrushed Butt erscotch Candy
Mix dry ingredients in sauce pan. Whisk in milk and heat to boiling point while sti rring constantly. Remove part of fi lling and temper into eggs by whisking. Add mixture back to sauce pan. Add reduced Butt erscotch Schnapps and butt er to sauce pan and cook unti l thickened.
Pour fi lling into pre-baked pie crust.
Meringue:4 Fresh Egg Whites1/4 t. Cream of Tartar1/3 C. Sugar1 T. Cornstarch1 T. Butt erscotch Schnapps
Beat egg whites and Cream of Tartar unti l frothy. Gradually add Cornstarch and Sugar. Beat unti l peaks form and meringue becomes sti ff . Add Butt erscotch Schnapps and beat for 1 minute. Top fi lling with meringue and seal to edges of pie plate. Top with crushed butt erscotch candy. Bake at 325 °F for 20 minutes.

Sauce Preparation:Heat olive oil in a large saucepan, add onions, celery, garlic and basil, cook for about 5 minutes. Add the tomatoes, sugar and pinch of salt and pepper along with 6 ounces Budweiser beer. Turn heat to low and let cook for about 20-30 minutes.
Cooking the Mussels:Place mussels in a pot with 12 ounces Budweiser beer. Place on high heat and bring to a boil. Cook for a few minutes unti l the mussels have opened. Sti r frequently to ensure they are evenly cooked. Pour off the excess cooking liquid and discard any unopened mussels. Place the opened mussels in their shells in a serving bowl or platt er.
Pour the hot sauce over the mussels and garnish with chopped basil or parsley.

Blackened Neptunewith Choron Sauce
6 T. Red wine10 T. Black peppercorns1 T. Finely chopped onions2 T. Tarragon1 T. Tomato paste1 T. Cajun seasoning3 Egg yolks1 T. Water1 C. Butt er, unsalted and at room temperatureTo Taste Salt and pepper
Combine fi rst four ingredients bring to boil unti l all liquid has dissolved.Add tomato paste and Cajun seasoning. Then set aside to cool.Add egg yolks and water and whisk over low heat unti l frothy, about 3 minutes. In a slow steady stream add butt er unti l the sauce thickens. Season with salt and pepper.
Yukon Gold Potato
1 lb. Yukon Gold potato2 T. Butt er5 T. Half & HalfTo Taste Salt and pepper
Bake the Yukon Gold potatoes for one hour or unti l tender.Remove skins and add 2 tablespoons of butt er and 5 tablespoons of half & half.Salt and pepper to taste. Mash. Set aside and keep hot unti l read to assemble.
Lightly Blacken Shrimp and Lump Crab Meat
2 oz. Shrimp, peeled, deveined and tail off 2 oz. Lump crabmeat1/8 T. Cajun seasoning2 T. Butt er
Heat 2 tablespoons of butt er in a skillet.Add shrimp and cook unti l shrimp is fi rm and pink, about 2 minutes.Add crab meat and season with Cajun spice.Cook 1 minute more. Set aside to stay warm.
Lightly Blackened Tournedos of Beef
2-3 oz. Medallion of beef tenderloin¼ oz. Cajun seasoning
Season the beef medallions and grill on each side 1 to 2 minutes for medium rare.
Plating
Place Yukon Gold mash in center of plate.Medallions should be placed on each side of the potatoes.Shrimp and crab should be placed over mash in a lengthwise positi on.Charon sauce is then drizzled over the shrimp and crab meat.Garnish with fresh tarragon. Serves one.

Cannoli8 Cannoli Shells1/3 C. Unbleached flour2 T. Unsalted butter, melted and cooled1/3 C. Sugar2 Egg whites1/2 t. Vanilla extract1/4 t. Almond extract
Place flour in a mixing bowl and add remaining ingredients. Mix by hand until dough comes together in a ball. Wrap in plastic wrap and refrigerate for 30 – 40 minutes. Remove from refrigerator and place on a lightly floured surface. Roll dough until it is approximately 1/8“ thick. Cut 5” circles in dough and place on a floured sheet pan. Roll each cannoli around a metal cannoli tube. Refrigerate for 20 – 30 minutes. Remove each cannoli shell and deep fry at 350°F until light and golden brown. Let cool on a dry towel until ready to fill. Prep Time 3 hours.
Cannoli Filling
1/2 lb. Ricotta cheese 1/2 lb. Mascarpone cheese1/4 t. Cinnamon1/4 C. Grand Mariner1 1/4 C. Powdered sugar1/2 C. Tiny chocolate chips
Mix above ingredients until smooth. Add chocolate chips and mix until incorporated. Place filling in a piping bag and fill each end of the cannoli shell. Serve immediately. Garnish with powdered sugar and chocolate syrup. Whipped cream optional. Serves 8.

Artichoke Dip5 lbs. Cream cheese1 lb. 10 cans artichoke hearts1 Bunch of green onions1/2 C. Parmesan/Romano blend cheese2 t. Tabasco sauce1 T. White pepper
Open can of artichokes and drain half the brine out; place cream cheese in bowl and whip for three minutes until creamy. Add artichokes to cream cheese and mix for three more minutes. Chop the green onions and add rest of ingredients; mix for another three minutes. Bake until bubbly.

Score chop on both sides, about 1/4 inch deep.Season chop with salt, pepper and chopped parsley.Sear chop in sauté pan, browning both sides. Finish to temperature in oven.Cook colannon cake like a normal potato cake, finishing in oven.Blanch broccolini.Place finshed cake in the bottom of a large bowl. Lay broccolini across cake.Lean chop bone away against cake.Spoon applesauce down front quarter of chop into the bottomof the bowl.Sprinkle with chopped parsley.Serves one.
Ri Ra Homemade Applesauce
4 lbs. IQF Apples, peeled1 Zest of one lemon1 Juice of one lemon1 Cinnamon Stick4 oz. Brown Sugar1 C. Water1 oz. Kosher Salt
Combine all ingredients into large pot. Bring to boil then lower heat. Simmer for 10-15 minutes. The apples should be soft, but have some body.Remove cinnamon stick. Mash with potato masher but do not puree. There should still be small chunks of apple in the sauce.Cool completely. Check seasoning. Yields 4 pounds.

Wine is not only good with food; it’s good in food. It can add another dimension, additi onal layers of fl avor, and can help tenderize less expensive cuts of meat. Wine is also
excellent for de-glazing a pan, dissolving the fond. That’s the brown bits stuck to the bott om from browning or searing meat. When shopping for wines to cook with, there are two important things to remember. Keep it medium-light, but not wimpy, and avoid oaked wines. For most uses you’ll also want the wine to be dry. As an additi on to a recipe or when used in a sauce or reduc-ti on, oakey vino turns somewhat bitt er and harsh. Oak is a treatment to be avoided in both red and white wines used in cooking. Among whites, the lighter wines such as Pinot Grigio and Sauvignon Blanc are reliable choices, but steer away from highly acidic wines. Box wines are a wise choice because the collapsing bladder keeps oxygen away allowing the remaining wine a longer life. One brilliant alternati ve is inexpensive dry Vermouth. It keeps well and serves all but the most demanding uses. In the realm of reds, medium-bodied, un-oaked, dry wines are the safest choice. Blends tend to work very well, the diff erent grapes working together to provide a rich, well-rounded fl avor. One wants a decent, drinkable wine, but it need not be at all expensive.
Wines from France’s Rhône Valley or the Languedoc, the United States and Australia are all suitable, espe-cially when made from blends of Grenache , Syrah/Shiraz, Mouver-dre, Merlot and similar varieti es with good fruit fl avors. While you can safely de-glaze that hot skillet with a dry white wine, reds seem to prefer a more delicate treatment. Lower temperatures and slower simmering allows the fl avors of red wine to concentrate and integrate without breaking down and becoming sour and muddy. Slow and low is the way to go, just like Bar-B-Q.
