In their stunning book, Sourdough, young Norwegian bakers Casper and Martin take us through the baking process from making a starter yeast to how to use different flours. Although the basic elements have remained the same for more than 5000 years - flour, water and salt - the authors explain that to make good sourdough there is one further ingredient, time. It is time that is the key to successful sourdough baking, allowing natural processes to take place at their own pace, and giving the bread its unique quality.

The book includes 15 clear and concise step-by-step recipes using a variety of grains from spelt to toasted oats, sprouted rye to whole barley. All the breads are baked with organic grain and stone-ground flour from small-scale producers to preserve nutrients and flavour. There is also a whole section on Troubleshooting including what to do when the bread is too wet to handle, or goes flat.

ABOUT THE AUTHORS

Born in Fredrikstad, Norway, in 1985, friends Casper and Martin developed a passion for sourdough baking and have shared their enthusiasm with a growing number of Instagram followers. Their commitment to using time-honoured techniques coupled with locally grown grains and flour is showcased beautifully in Sourdough, their first book.
