havereleasedthefirstsetofEBV’sforSAWagyu
duringMarch2002.EBVsforallanimalscanbe
found on the website www.wagyu.org.za/
DatabaseSearch/AnimalEnquiry.
This is a major milestone in our drive to have
objective and independent EBV’s for our South
African herd based on the data from our
breeders.
Somepointstonoteregardingtheevaluation.* A crossbreed genetic evaluation was
conducted. This means that data from ALL
animalsareusedintheevaluation.Thisinclude
Fullblood, Purebred, F3, F2 and F1 crosses
ensuring the most accurate genetic evaluation
possible.
* It is generally assumed that a breed can
consider a genetic evaluation when it has at
least 3000 records for a given trait. Wagyu SA
hasexceededthisnumberforbirthandweaning
weightsandthusstartedtheevaluationwiththe
growthtraits.Asourdatagrows,wecanexpand
tocarcassandmeatqualitytraits.
* Though a Marbling EBV is given, the
accuraciesarelow.
* Carcass data from the MIJ and MasterBEEF
havenotnotbeenusedinthisanalysis.Weare
stillworkingwithABRItoloadthisdataontothe
systeminthecorrectformat.
*Herdprofilesareautomaticallygeneratedfrom
thesystemandareplacedintoyourLoginfolder.

username (usually your herd ID) and a

objektiewe en onafhanklike BTW's vir ons Suid-

telersgebaseeris.

speengewigte oorskry en het dus vir die groei-
eienskappe met die genetiese evaluasie begin.
Namate ons data groei, kan ons uitbrei na
eienskappesooskarkas-envleiskwaliteit.

CertifiedWagyuBeef(CWB)
Earlier this year CWB rolled out the Masterbeef
App to all members. Since then the app has
becomeavailableatsixabattoirs.Togetherwith
the MIJ camera (that is currently being used at
CavalierandMorganBeefAbattoirs)therehave
beenover550imagestaken.
The protocol for using the cameras have also
beenupdatedtoensureefficiencyandassigning
marblescorecorrectly.Thechangesinprotocol
include:
*Scanningofcarcassestotakeplace72hours
afterslaughtering
*Thecarcasscoretemperaturesmustbebelow
5°C before they can be scanned (Carcass
temperatureshouldbetakenbeforequartering)
*Thegraderneedstowait30minutesafterthe
last carcass was quartered before scanning the
carcasses
*Allimagesneedtofirstbeverifiedbytheoffice
before the results are sent to the producers via
theabattoir.
Theofficewouldliketoassureitsmembersthat
image scanning is still taking place during this
lockdown period and is available to assist the
gradersviaphoneand/orvideocalls.Wethank

* Skandering van karkasse moet 72 uur na
slagtingplaasvind

temperatuur moet geneem word voordat dit
gekwartword)
* Die graderder moet 30 minute wag nadat die
laaste karkas gekwart is voordat die karkasse
geskandeerkanword
* Alle beelde moet eers deur die kantoor
geverifieer word voordat die uitslae via die
slagpaleaanprodusentegestuurword.
Diekantoorwilsy ledeversekerdatskandering

inperkingsperiode en beskikbaar is om die
gradeerders via telefoon- en / of video-oproepe

Wagyu.OurdestinationforthedaywasMacquarieDowns.
AtMacquarieweweretaughtthemeaningofhumanspiritbyChantelandAnthonyWinter.Theyare
amiddevastatingdroughtfollowingaterribleflood.Thereisnoharvestforthem,andtheyare
bringinginmostofthefeedfortheir900feedlotanimalsandallthecows,bullsandcalves.
Nonethelesstheiranimalslookfantastic.Theirgeneticsareofthebestintheworldanditcertainly
showsinthefeedlot.Feedingfor500days,theyareattainingconsistentlyexcellentresultson
carcasssizeandmarblescore.
ThesecondpartofourtriptookusonanearlyplanefromBrisbanetoMelbourneandalongdrive
westthroughthemagnificentwinelandstothetownofMillicent.HereishomeofScottdeBruinand
MayuraStation.Scott’sachievementsarenothingshortofmindblowing.After20yearsoffarming
Wagyuhehasbuiltupafullbloodherdof9000head.Therearearound3500breedingcowsandthe
sameagaininfeedlotwithweanersandbackgroundinganimalsmakinguptherest.Everyanimalon
thefarmislargeframedandbrimmingwithmarblingpotential.Scottexpectsthebestfromhisherd
andiscontinuouslypushingtheenvelope.Weanersaregrownsemifreerangewellintotheir
traditionalfinishingphaseandarelottedonlyfor270daysfeedinghereona‘hot”mix.Theyare
weanedat6monthsandslaughteredat24-25mnths.HisItoshigenamiJnr’sblooddominatesfor
goodreason.Thebull’sstatsaresupreme.With1124progenycarcassesrecordedheaverages
Ausmeatscore:9.12,eyemusclearea:102cm,andcarcassweight:424kgat25mnths.Scottbreeds
formeatqualityfirst,hisremarkablegeneticsareanaturalby-productofthis.
ThefinallegofourjourneytookusbacktoSydneyandouttotheincredible,understatedTakao
Suzuki.HefarmswithhisWagyuinamuchmoretraditionalJapaneseway;Hiscalvesareoffered
creepfeedfromthestart,areweanedat3monthsandgostraightintolot.Hisattentiontotheirfeedis
hereimpeccable.Hepersonallyoffersthemthreedifferenttypesofhayalongwiththeir16%protein
grainration.Takaojudgestheamountoffeedgivenonanindividualbasisandmovesthemwith
greatempathytogroupsthatsuitetheirgrowthandpersonalities.Hisfinisherrationisacoolmixof
12%protein.Cowsliveonlyonnaturalpasture,supportedwithaseasonappropriatelickblock,and
lucernewhilelactating.
DuringourtravelswecertainlydidhavetheprivilegeofeatingWagyueveryday.It’sofferedonthe
menuofeveryrestaurant,evenourQuantasflighthaditasamealoption.Eachofourhostsserved
usoutstandingsteaksfromtheirfarmsorregions.MostoftheWagyubeefonofferisfullbloodandthe
qualityisexcellent.Thesubcutaneousfatisminimal,themarblingandtendernessissuperb,andthe
flavourisremarkableanddistinguishablefromsuppliertosupplier.
