SELECTION:• When selecting green cabbage in your produce section, look for firm, compact, dense heads that feel weighty with

waxy, tightly folded green leaves. For convenience, pre-packaged shredded cabbage is also available in your produce section.

• Whole fresh green cabbage should be crisp, with few loose leaves. Because of the different sizes of green cabbage heads, you may find them pre-sliced into halves more convenient. When sliced, look for creamy white interiors and avoid sliced cabbage heads with black spotting.

• Although green cabbage is the most common, other delicious and colorful varieties include Red, Savoy, and Nappa cabbages. All are related to a group of crops named cole crops, which is the source of the name coleslaw, which consists of shredded green and purple cabbage.

• 1 medium-sized head of cabbage, outer leaves and core removed.

• 1 tbsp. butter• 1 tbsp. olive oil• ½ tsp. garlic powder• ½ tsp. salt• ½ tsp. pepper• 2 tsp. curry powder• ¼ cup water

Directions:

1. Chop the cabbage into bite-sized pieces and set aside.

2. Bring a large and deep skillet to temperature over medium heat. Melt the butter and then add the olive oil. Add the cabbage half at a time. Let the 1st half begin to wilt and then add the remaining half and the water. Cover and let cook over medium heat for about 2-3 minutes.

3. Mix all the spices in a small dish and add all at once to the cooking cabbage. Stir gently to incorporate the spices throughout. Cover and continue cooking until desired tenderness. Add more water as needed.

Ingredients: 8 servings

• 3 lbs. corned beef• ¾ medium-sized head of cabbage • 4 large carrots (optional)• 2 onions• 4 large baking potatoes• 12 oz. low-sodium beef broth• cup of strongly brewed coffee

Directions:

1. Cut baking potatoes in half and place at bottom of pressure cooker with the cut side down.

2. Remove corned beef from the package and place it over the potatoes. The potatoes will act as a spacer so the corned beef does not touch the bottom of the cooker or rest in the liquid.

3. Pour the low-sodium beef broth and coffee over the corned beef. Sprinkle the seasoning packet that came with the corned beef on top of the meat.

4. Close the pressure cooker lid and assure the steam valve is closed. Pressure cook on high for 85 minutes. Let the pressure set for about 15 minutes and then actively release the remaining pressure (steam) using the quick release method for your cooker.

5. Carefully remove the beef and potatoes, set aside and cover.

6. Quarter the onion and carrots. Cut the cabbage into large chunks and discard the core. Add all the vegetables to the pot with the liquid that is remaining.

7. Put the lid on and pressure cook for 4 minutes. Release pressure manually using the quick release method. Gently remove the vegetables and place on a large dish. Pour some of the liquid in the pot over the vegetables.

8. Slice the corned beef into 1 inch slices.9. Serve by placing 2-3 slices of corned beef with a

large portion of vegetables and half of a baked potato.
