But the nuance is never more crucial than when you approach whisky, since this multi-dimensional category, when considered carefully, can tempt the lips of pretty much anyone coming into a bar.
The trick is to keep things global. Be it Scotch single malt, blended, American or
WHISKYIN THE MIX
Such drinking dinosaurs almost damaged the reputation of whisky, but today it is fighting back and proving it is a spirit that can play to the masses.
Take American whiskey for example.
Here is a category that has boomed in recent years, in fact it’s one of the fastest growing of all spirits in the UK with extraordinary
range, and yet even in two considered choices you can champion the story of this spirit. Elijah Craig bags the heritage, named after the man who reputedly invented the charring process on barrels, a fundamental element of maturing whisky; while Hudson, part of the modern craft set, is the first legal pot-stilled whiskey to be produced in New York since prohibition.
If you then explore the world of Scottish single malts, you quickly discover
that variety is the spice of the spirit. Compare the softer sweeter Speyside Cardhu Gold Reserve with the Auchentoshan, a lesser-spotted Lowland whisky that presents a lighter, grassier style. Then journey to the Highlands for the classically rich and full-bodied Dalmore. As you go, note how the undulations in flavour are so extreme, that you need to sit down, source and sample as many as you can before stocking the bar.
Whisky is a spirit that keeps on giving, so bear in mind the more recent success of award-winning spirit from Japan, ensuring the likes of Chita is included on the bar. There are no shortcuts here, variety needs to go hand in hand with quality, because as well as bringing new whisky drinkers to the fold, you must stay ahead of an increasingly educated customer, and all will expect your range to represent an entire world of whisky.
When it comes to running a successful bar, the key to keeping customers happy is simply range and quality.
S P I R I T S S P I R I T S T H I N K I N G D R I N K E R S
even Japanese, whisky (and indeed whiskey with an ‘e’), is myriad in its merry giving, presenting an extraordinary playing field for storytelling and flavour. Gone are the days when whisky drinkers were simply a set of sneering, moustachioed, tweed-wearing, snobs.
Variety is the spice of the
spirit.

Named after the intrepid McAfee brothers, who carried out the original 1773 land survey of what later became Leestown, Kentucky, this bourbon is yet another exquisite product very much at home under the Buffalo Trace brand name.
Despite its entry-level bourbon price tag, this bourbon is nothing to be scoffed at. For over 200 years, the Buffalo Trace Distillery has been defined by a dedication to one craft; making fine bourbon whiskey, and this is no exception.
The nose bears caramel notes with a delicate stone-fruit backdrop. The bourbon has a robust and sturdy palate with some fine leather notes mingling with dry tobacco, a touch of oak and a hint of dried cherries. The finish is smooth and calming.

ELIJAHCRAIG
Small batch crafted whiskey
Reverend Elijah Craig was a Baptist preacher and active character in 1800’s Kentucky, however it was his gift as a distiller and entrepreneur that established his place in history as The Father of Bourbon. No one knows for sure how Elijah began charring barrels, but it’s easy to understand why he continued to develop the process, changing Bourbon forever. Inside, the clear unaged spirit transforms into an amber liquid with a distinctively smooth flavour
that makes Bourbon what it is. However it happened, Elijah Craig is credited with being the first distiller to age his whiskey in charred oak barrels.
Each bottle of our Bourbon is crafted with the same method used by Elijah over two hundred years ago: local corn and grains are milled and mixed with limestone-rich Kentucky spring water, then fermented, distilled and aged in charred barrels.

MANHATTANEvan Williams Extra Aged is 43% abv and aged far longer than is required to by law and is older than entry bourbons at 5 years maturation. That proof and age lead to a bourbon that is always rich, smooth and full of character. It is 3% abv higher than most entry level bourbons.
Evan Williams Extra Aged is a smooth, easy to drink bourbon named after a Welshman who, in 1783, opened Kentucky’s first commercial distillery along the banks of the Ohio River. Many years later Evan Williams is still being produced with the same time honoured methods that he originally used. Today it is distilled just a few blocks from the site where the original distillery was built.

We’re very proud to have produced this bourbon, which is the first whiskey made in New York since Prohibition and the first bourbon to ever be made in the state. The foundation is made with 100% Empire State corn, sourced within 40 miles of the distillery-keeping it local and keeping it green. Our whiskey is aged in 10, 26, and 53-gallon casks and then blended together to reach our unique flavour profile. Baby Bourbon is the perfect introduction to aged whiskey.

Like all Auchentoshan, American Oak is a really versatile Single Malt. It works wonders as an Auchentoshan & Ale, is happy to stand on its own neat or over ice but also shakes up some classic cocktails that you might not think work with Single Malt whisky.

Bunnahabhain est. 1881, lies on the isolated north-eastern tip of Islay close to the Margadale River. Bunnahabhain means ‘mouth of the river’ from the Scots Gaelic.
Bunnahabhain 12yr is 46.3% ABV and unchill-filtered –matured in ex-sherry casks, bourbon wood, and whisky refill. The casks used are chosen to obtain the correct balance in flavours between the sherry wood matured spirit and the non-sherried whisky.
A full-bodied spirit which is fruity and floral on the nose with hints of dried fruit and a subtle prevalence of smoke. The taste is light with fruit notes, nutty flavours and a malty sweetness with hints of vanilla and caramel.

Cardhu is one of the world’s leading single malt whiskies from a Speyside distillery that dates back to 1824; this was the first distillery to be bought by John Walker® and Sons. Originally created by two pioneering women, Helen Cumming and her daughter-in-law Elizabeth; the women hoisted a flag to warn neighbours of revenue inspectors, who were intent on prosecuting illegal distilleries in the 19th century.
Their generous behaviour is now synonymous with Cardhu as the generous malt.
Cardhu Gold Reserve is a rich and mellow liquid, with warm notes of baked apple and toffee.
