MAORI CUISINE

Page 3: Villem ja rio

Contemporary cuisine approaches the ingredient with the utmost respect.

Largely driven by local ingredients and seasonal variations

Freshness is paramount.

Fewer flavors confuse the palate less and preserve the respect for each individual ingredient to a greater extent.

Better to use the finest, most outstanding ingredients u can find. Add items that will accentuate the flavor but wont mask the original flavor.

Usually people cook their own food and eat it with the whole

famliy.

In the summer, people tend to gril l more often.

Maori gatherings feature a hangi, a pit where meat or fish and

vegetables are cooked.

There is also a custom ‘bring a plate’ or ‘potluck’ custom, it

means that you take a plate with food with you to share it

with others.
