» Ingredientes: 500 gr de almendras
crudas, 500 gr de azúcar, ½ litro de
agua, 8 yemas de huevo, ralladura de un
limón y 1 cucharadita de canela molida.
» Preparación: Hacer el almíbar con
azúcar, agua y ralladura de limón. Añadir
las almendras peladas y molidas y la
canela. Remover hasta que espese.
Dejar enfriar y añadir las yemas batidas.
Poner al fuego y mover por 5 min.
» Ingredients: 500g raw almonds, 500g
sugar, ½ litre of water, 8 egg yolks,
zest of 1 lemon, 1tsp ground cinnamon.
» Preparation: peel and grind the
almonds and make a syrup with the
sugar, water and lemon zest. Add the
almonds and cinnamon. Stir until it
thickens. Allow to cool, then add beaten
egg yolks. Stir over heat for 5 minutes.

La Red de Senderos de La Palma atraviesa todo el territorio insular por caminos tradicionales que los habitantes de la Isla Bonita han recorrido durante siglos y que han sido rehabilitados. Caminar por estas vías, que suman más de 1.000 kilómetros perfectamente señalizados, permite descubrir la sorprendente variedad de paisajes palmeros desde el mar a las cumbres y de los bosques a la Ruta de los Volcanes. Se trata, además, y debido a la escarpada orografía local, de la única ma-nera de llegar a conquistar algunas de las mejores vistas de tesoros naturales como los parques nacionales de la Caldera de Taburiente y de Cumbre Vieja y los bosques de Los Tilos y Cubo de la Galga.
La Palma’s footpath network crosses the entire island with the (now restored) traditional walking trails used for centuries by the inhabitants of the ‘Isla Bonita’. Hiking these routes – which total more than 1,000 well-signed kilometres – allows visitors to discover the surprising variety of La Palma’s landscapes, from the sea to the summits and from the forests to the volcanoes. Junto a bonitas playas de arena negra como la de Nogales, en Puntallana, la Isla Bonita disfruta de numerosas piscinas naturales donde el agua del océano queda atrapada en cavidades de roca volcánica. La mayoría son completamente salvajes, mientras que otras como La Fajana, que abre los fines de semana en Barlovento, cuentan con pasare-las de acceso levantadas alrededor.
Hay además lugares únicos como Porís de Candelaria, en Tijarafe, un pequeño asen-tamiento al abrigo de una gran gruta con casitas construidas a partir de cuevas –se cree que usadas por los aborígenes–, que daban albergue a pescadores. El descenso hacia Porís por los acantilados ofrece vistas impresionantes al atardecer.

As well as spectacular black sand beaches – such as Nogales Beach in Puntallana – the ‘Isla Bonita’ boasts natural pools along its coastlines formed by seawater seeping into the cavities of volcanic rock. Most are completely wild, while some others – such as those at La Fajana in Barlovento, which are open at weekends – have access paths built around them.
La Palma is also home to unique corners, such as Porís de Candelaria in Tijarafe. This settlement of tiny houses is built into an enormous cave. It’s believed that they were used by the island’s Guanches people to shelter fishermen. The trek downhill towards Porís offers stunning views of the sunset.

Sobre los acantilados de Puntagorda, al noroeste de la isla, un rebaño de cabras palmeras pasea a sus anchas de regreso al redil en la Granja Las Cuevas, una de las 26 queserías adscritas a la Denominación de Origen Queso Palmero. Su propietario, Albert Gil, cuenta con 1.100 cabezas, de las que 300 son palmeras, una raza autóctona prehispánica, introducida por los primeros pobladores de la isla ‒se cree que de origen bereber‒, esencial para la economía de la isla en el pasado. La Palma exportaba ya su delicado queso en el siglo XVI a San Juan de Puerto Rico, Santo Domingo o Cabo Verde. “Cada vez hay menos gente que se incorpora a la ganadería ahora”, se lamenta Gil. Pero él sigue decidido a mantener la producción 100% artesana igual que antaño.
On the cliffs of Puntagorda, in the northwest of the island, Palmero goats amble back to their pen at Granja Las Cuevas, one of the 26 cheese dairies included in the Palmero Cheese Denomination of Origin. En la Punta de Fuencaliente, al extremo sur de la isla, el contraste de la sal sobre las piscinas de roca volcánica ofrece un espectáculo único al atardecer. Las Salinas Marinas de Fuencaliente, aquí creadas en 1967 para abastecer a la población local artesanalmente, reflejan la luz del sol en blanco y con matices rosas y verdes según el grado de evaporación de agua y condensación de salinidad. Conocidas como “jardines de la sal”, sobrevivieron a la última erupción del Teneguía en 1971 y su producción alcanza ahora las 600 toneladas al año. Una parte corresponde a la flor de sal, que se obtiene al recoger cuidadosamente la película que cristaliza en la superficie con el cedazo. El fascinante conjunto fue declarado Espacio Natural de Interés Científico en 1994.
At Punta de Fuencaliente, on the island’s southern end, the contrast of salt on the volcanic rock pools offers a unique view at sunset. The Salinas Marinas de Fuencaliente, created in 1967 to provide the local population with artisanal products, reflect the sunlight with white light tinged with varying hues of pinks and greens, depending on the degree of evaporation of the water and the condensation of salt. These ‘salt gardens’ survived Teneguía’s last eruption in 1971, and current production reaches 600 tonnes a year. Part of this is flor de sal, which is obtained by carefully collecting the film that crystallises on the surface with a sieve called a cedazo. Considerada uno de los tres mejores lugares de obser-vación astronómica del mundo, junto con Mauna Kea (Hawái) y Chile, La Palma alberga el Observatorio del Roque de los Muchachos (ORM) al borde del Parque Na-cional de la Caldera de Taburiente, a 2.397 m. de altitud. Entre su veintena de telescopios de diferentes países e instituciones, el de mayor participación española es el Gran Telescopio Canarias (GTC), “el mayor de tipo ópti-co-infrarrojo del mundo, con el que se pueden detectar los objetos más débiles y lejanos del universo en un tiempo razonablemente corto, algo inalcanzable para otros telescopios menores”, explica Antonio Cabrera, su jefe de operaciones científicas. Conocer su interior es uno de los reclamos más populares entre los visitantes al ORM ‒10.000 personas accedieron a él en 2019 y se espera reanudar muy pronto esta actividad‒.

El 20 de abril de 2007 se firmó en La Palma la Declaración sobre la Defensa del Cielo
Nocturno y el Derecho a Observar las Estrellas. Antonio González, experto en astroturismo
y guía Starlight, formó parte entonces de la iniciativa, que convirtió la isla en primera
reserva Starlight. “Nuestro objetivo era mostrar que el cielo, ahora ya protegido por ley de
la contaminación lumínica, es una parte de la naturaleza”, asegura él.
The Declaration in Defence of the Night Sky and the Right to Starlight was signed in La
Palma on 20 April 2007. Antonio González, an expert in astrotourism and a Starlight guide,
was part of this initiative, which made the island the first Starlight reserve. “We showed

Pocas estampas son más características de Santa Cruz de la Palma, la capital de la isla y uno de los núcleos urbanos mejor conservados del archipiélago, que los bal-cones de la Avenida Marítima. De influencia portuguesa, forman un pintoresco estandarte del Conjunto Histórico-Artístico, Bien de Interés Cultural desde 1975, que se extiende también por vías aledañas como la Calle Real y la Calle de San Sebastián, la Plaza de España, la Placeta del Borrero y el Barrio de San Telmo, el mejor lugar para descubrir la arquitectura tradicional canaria. La ruta por el casco histórico ofrece imponentes construcciones re-nacentistas, perfectamente conservadas, como la Iglesia del Salvador con su cantería de origen volcánico o el Ayuntamiento, el primero elegido democráticamente en España (en 1773). El Barroco aparece en la Casa Salazar, que hoy alberga exposiciones y venta de artesanías.
Few snapshots are more characteristic of Santa Cruz de la Palma – the island’s capital and one of the best-preserved urban centres in the archipelago – than the balconies along Avenida Marítima. With their Portuguese influence, they are one of the hallmarks of the Historical-Artistic Complex, a Cultural Interest Asset since 1975, which also extends along streets such as Calle Real and Calle de San Sebastián, the Plaza de España, the Placeta del Borrero and the Barrio de San Telmo – the best places to explore traditional Canarian architecture. The route through the historic centre features perfectly preserved imposing Renaissance constructions such as the El Salvador Church (built from volcanic rock) and the City Hall, the first to hold democratic elections in Spain (in 1773), along with Baroque buildings, such as Casa Salazar that, today, is home to exhibitions and the sale of handicrafts.
