We bring you all kinds of information about several different types this sweet treat, from bundt to sponge. • Ancient Egypt was home to the world’s first large-scale bakeries, which were the first to use yeast to make cakes rise before baking them on hot stones. To the ancient Romans, cake meant a small bread, as there was no sugar, and honey was an expensive commodity. • Cake-baking underwent a dramatic change in the mid-1800s. Previously, yeast was used as a leavening agent, but yeast was replaced with the introduction of baking soda and baking powder, both of which are greater raising agents. Temperature-controlled ovens also contributed to increased success. • Flour is classified by its protein content. The higher the protein, the harder the flour. All-purpose flour has a protein content of 10-11 percent and is a good choice for cookies. Bread flour’s content is much higher, 15 percent, and is not suitable for cakes. Cake flour’s protein measures 7-8 percent, and its low gluten content makes it a perfect choice for delicate cakes. • Sponge cake uses only eggs, sugar and flour in its preparation, with no fat or leavening. This week’s Tidbits really takes the cake! We bring you all kinds of information about several different types this sweet treat, from bundt to sponge. •Ancient Egypt was home to the world’s firstlarge-scalebakeries,whichwerethefirst touseyeast to make cakes rise before baking them on hot stones. Ladyfingers, light sweetsponge cakes about four inches long, have been around since the late 1400s, when they were createdtocelebrateavisitoftheKingofFranceto Italy.Theyarealsoused in trifles,a layereddessert that incorporates cake, jam, custard, fruit andwhippedcream.Thetrifleisservedinaclearglass bowl so that all the beautiful layers can be seen.

•Bundtcakeshavebeenaroundsince1950,whentheflutedtubularpanwascreatedbythefounderofthekitchenwaremanufacturerNordic.Agroupof Jewish women in Minneapolis approached David Dahlquist, asking him to design a panbased on an old European kugelhopf moldbrought from the old country. The name “Bundt” was derived from the German word bund, which translates “community” or “gathering of people.”

• German chocolate cake, that rich chocolatelayer cake with coconut pecan filling toppedwith chocolate frosting and more coconut, has nothing to do with Germany or its inhabitants. Back in 1852, an employee of the Walter Baker chocolate company developed a milder, sweeter

• SmithIsland,Maryland, located inChesapeakeBay, is home to that state’s official cake, aptlynamedSmithIslandCake.Therecipedatesbackto the late 1600s and consists of 10 to 12 thin layers of yellow cake sandwiched together with chocolate fudge icing.

•Adome-shapedcakefilledwithmousseand/orcustard isknownasabombe, from theFrenchword meaning domed or rounded. The cake is flipped from its dome-shaped mold onto aplate, then covered with a layer of chocolate or meringue.

•What’sfullofspices,frequently“re-gifted”andthe subject of comedians’ jokes? PICKSOFTHEWEEK“The Muppets” (PG) -- The felt hasn’t faded a bit. The Muppets return with all of their innocence and silliness without coming off as too dated. The story follows Walter, a young, puppet-like fellow, and his friendsGary(JasonSegel)andMary(AmyAdams)as they go on a journey to reunite the Muppets and save the Muppet Theatre from evil oil tycoons.Abitofself-referentialhumorhelpsblowthedustoff the franchise, but the rest of the show is pure new energy. The freshness has even been endorsed bytheAcademy,as“TheMuppets”wontheOscarforbestoriginalsong.Segel,whohelpedwritethescript, is a musically inclined, goofy-grin kind of guy who beams real admiration for the Muppets and fitsrightinasahumansidekick.

“The Girl with the Dragon Tattoo” (R) -- Da-vidFincher(“FightClub,”“Se7en”)directsthismystery-novel adaptation with his eye for the dark andgrungy.Awealthyoldbusinessmancallsonalegallytroubledjournalist(DanielCraig)tosolveadecades-oldmissing-personmystery.Craigenliststhe help of the titular inked young woman (Rooney Mara), a damaged, deviant, sneering, whip-smart computer hacker.Thefilmstumblesabitinstorytelling,butsellsitallonstyle.Ifcomplicatedcharactersandrelation-ships taking a grim look at the demons beneath surfaceofSwedishsocietyappealtoyou,thenpickupthebookorseetheSwedishfilmadaptation.Ifa slightly sillier, more veneered version is all you have time for, then this Hollywood take will do fine.

“TinkerTailorSoldierSpy”(R)--ThisBritishspyflickisallaboutsubtlety,paranoiaandbrain-rakinganxiety.GaryOldmanplaysGeorgeSmiley,adis-graced spy brought back into the agency to ferret outadoubleagent.It’sdense,darkanddarngoodfor those who can get their teeth into it.Thisisasfarfrom007asaBritishespionagethriller can get. Make no mistake, it is a thriller -- in its own, gaunt, dimly lit, grey-skies kind of way. The twisted mysteries and intrigue can pay off as much as any chase-scene with a rocket-powered submarine/automobile.

“Carnage”(R)--Inashortopeningsequenceinthe park, one kid hits another. When the respective parents meet in a nice Brooklyn apartment to settle things amicably and maturely, things spiral into a collective tantrum by the supposedly put-together couples.JodieFoster,JohnC.Riley,KateWinsletandChristophWaltzalldigintotheirroles,butifyou’re not pulled in by the forced smiles and un-derlying hypocrisies, you’ll be put to sleep by this single-setting dark comedy.

was prepared by the head baker of the Naval Armed Forces, a process that took 14 weeks.Two identical cakes were made, in the event one mightbedamaged.Thebottomlayerrequired12hours to bake.

• A roulade iswhatmostofusknowas a jellyroll,aspongecakethatisfilledwithbuttercream,fruit, lemon curd, whipped cream or ganache, then rolled up. THE CHANNEL TUNNELConsidered one of the Seven Wonders of theModernworld,theChannelTunnel,orChunnelasit is commonly called, links England and FranceunderneaththeEnglishChannel.Learnmoreaboutthis engineering accomplishment that takes travelers through the world’s longest marine subway. • TheideaofanunderseatunnelbetweenEnglandand France was conceived as early as 1802.AFrenchminingengineerenvisionedapassagewaylit by oil lamps and serviced by horse-drawn coaches.Theproposalincludedanartificialislandmidway as a stop for changing horses. Severalplans were presented over the next several decades,but itwasn’tuntil1988 that theactualexcavation began.

•Constructioncommencedin1988andconcludedin 1994. Three of those years were devoted tothe actual boring of the chalky earth beneath the sea. The boring machines spanned the length of two football fields and could bore 250 feet(75m) a day. There are actually three tunnels,two of which are full-sized, large enough to accommodaterailtraffic.Betweenthesetwotraintunnels is a service tunnel, a smaller tube that is an emergency escape route. During the peak of construction, 15,000 workers were employed.

•The Chunnel bridges a distance of 31.4miles(50.5 km) between Folkestone in the UnitedKingdom and Coquelles, France, near Calais.The tunnel actually runs underwater for 23 ofthose miles. Boring machines worked from both the English side and the French side in a raceto the middle, a contest won by the British. The

tunnel’s average depth is 148 feet (45 m) below theseabed,withitsdeepestpointat250feet(75m).

• Onthedayoftheofficialdedicationceremony,England’s Queen Elizabeth traveled throughtheChunnel on a Eurostar train,while FrenchPresident Mitterrand traveled from Paris. Their trains stopped nose to nose as part of the festivities. Over the next six years, 12millionpassengers utilized the new rail service. Last year, close to 10 million people rode the rails undertheEnglishChannel.

• TheChunnel certainly couldn’t be consideredan economical venture. Itwas oneof history’smost expensive construction projects, carrying a pricetagof$21billion,(about700timesthecostof San Francisco’s Golden Gate Bridge!), 80percent above the forecasted budget, and taking over a year past the estimated completion date. The project claimed the lives of 10 workers, eightBritsandtwoFrenchmen.

• Since itsopening, therehavebeen threemajorfires in the tunnel, producing serious damage.Oneyearintooperation,31peopleweretrappedinafire,buttheservicetunnelproveditsworth,asallpassengerswereabletoescape.Inaddition,there have been other incidents when passengers havebecometrappedbyelectricalfailures.Onesuch failure kept passengers stranded for six hours, while another incident trapped 20,000 under the sea overnight.
