KershawHealth Chief Nursing Officer Stacy Collier is pictured at right geng her 2015 flu shot. (Look how happy it made her.) Follow Stacys wise example and get your annual flu shot. Its your best defense against a nasty virus. Flu shots are now available at Urgent Care in Elgin, 30 Pinnacle Parkway, I-20 at Exit 87 on Monday through Friday, 7:30 am unl 7:30 pm, and on weekends from 8:00 am unl 4:00 pm. Flu shots for KershawHealth volunteers are available in the Occupaonal Health office Monday through Friday. Hours are: 7:00 am – 7:30 am, 9:00 am – 11:00 am, and 1:00 pm – 3:00 pm. Ingredients 1 1/2-2 pounds ground beef 2 large white onions, chopped 1 red bell pepper, chopped 1 (15 oz.) can black beans, drained 1 (15 oz.) can pinto beans, drained 1 (15 oz.) can kidney beans, drained 1 (15 oz.) can Mexican-style tomatoes

Healthy, Hearty Taco Soup

1 (4.5 oz.) diced green chiles 1/4 cup salsa 1-2 tablespoons taco seasoning mix, or to taste 1 package ranch salad dressing mix kosher salt and freshly ground pepper, to taste sour cream, garnish Corn or tortilla chips, optional

Directions In a large skillet or Dutch oven over medium-high heat, brown beef, using a wooden spoon to break up the pieces, until cooked through. Drain fat and add onions and bell peppers and saute until softened and translucent. 5-7 minutes. Add beans, tomatoes, chiles, salsa, taco seasoning, ranch seasoning, and season accordingly with salt and pepper. Stir everything together, reduce heat and let simmer for 1 hour, stirring occasionally. Note: after browning the meat, you could also transfer everything to a slow cooker and cook on low for 6-8 hours. Place corn chips in bowls, ladle soup over chips, garnish with sour cream and scallions and enjoy!

Winners: Hospital Auxiliary Golf Tournament, September 8, 2016 by Vince Bacchetta Thursday, September 8 was a scorcher for the Hospital Auxiliary’s twenty seventh annual scholarship golf tournament.

As temperatures hovered near the one hundred degree mark, nineteen teams participated in the captain’s choice tournament at the Camden Country Club.

The winning team consisted of Terry Hicks, Fred Hatfield, Alan Ward, and Cliff Brown. Second place honors went to Tyler Lofe, Josh Wilson, D.J. Creed, and Thomas Woolard. Third place went to Wes Dasher, Matthew Sheheen, Russ Cobb, and Bernie Cobb.

Closest to pin awards went to Chris Cameron (hole 2), Gibson Tucker (hole 6), Thomas Woolard (hole 8), Jimmy Stokes (hole 12), and Curt Teal (hole 16).

Longest drive in the fairway winners were Sandi Blanchard (ladies) and Jimmy Stokes (men).

The Auxiliary tournament is known for interesting play and stats. The best gross score was 16 strokes better than par, while the worst score was even par. Only three bogeys were recorded on the front nine, while nine bogeys occurred on the back nine.

The front nine had fifteen eagles and four double eagles. The back nine had only four eagles.

The overall results of this tournament reinforce the back nine’s reputation as being more difficult than the front nine at Camden Country Club.

Peggy Gettys, Auxiliary vice president and tournament chairman, singled out members of the golf committee for special recognition. In addition to Gettys, the committee consisted of Auxiliary board members Mary Clark, Pat Godwin, Marguerite Glasgow, Mary Sargeant, Linda Branham, Sharon Noeltner, Bobba Starnes, and Connie Haynes. Additionally, Bobbi Rush, Vince Bacchetta, and Debbi Appleton served as special assistants.

Proceeds from the Auxiliary golf tournament and other projects are applied to scholarships for Kershaw County students entering the medical field.
