The sensei chef in charge of all this is none other than Chef Keith Mitchell, formerly of Mitchell’s in Linwood and member of the United States Army in 1983. Keith was a member of the 82nd Airborne Division and 3rd Ranger Battalion.

Shortly after joining the Caesars Atlantic City team in 2002, Nero’s was named the top rated steakhouse in the country by Epicurious Magazine. During his time at Caesars, Keith has continued his culinary development by working with several high profile chefs including David Burke, Wolfgang Puck, Guy Fieri, Giada De Laurentiis, Rachel Ray, and Tom Colicchio.

What makes The Brunch at Nero’s a unique brunch experience? The atmosphere is a huge reason people choose to dine with us for brunch. You will be hard pressed to find better views of the Atlantic Ocean and the historic Atlantic City Boardwalk anywhere else inside the city. Our incredible seasonal menus as well as our holiday offerings really set us apart from the pack, not to mention our staple selections like Handmade Crepes, Loaded Belgium Waffles, Three Chocolate Fountains, Coffee Crusted Rack of Lamb, Fresh Carved Prime Rib, Eggs Benedict, and so much more. What were your influences growing up that led you to pursue a culinary career?

Watching my Grandmother cook. She always had a spoon in her hand and family

in her heart. I think that’s why I personally love when my kids help me out in the kitchen. There is no better bonding experience than cooking with your loved ones. We understand you recently cooked for the James Beard Foundation, can you please tell us what that was like and what dishes you created for the dinner?

The James Beard Foundation is a truly humbling event, to be invited is such an honor, but to be able to do a dinner with my mentor Philippe Chin was amazing. He made me into the chef I am today. For this dinner, we created a Truffle-Edamame Dumpling with Foie Gras Sauce, an everything Crusted Salmon with Green Onion Espuma, Big Eye Tuna Crudo with Avocado Mousse Santa Barbara Prawns with Uni Foam, Milk poached Veal Tenderloin and Deconstructed Osso Bucco, and to finish on a sweet note, a Sesame Pann a Cotta with Passion Fruit. What accolade or accomplishment given in your professional career are you the most proud of?

Next to making cookies and decorating them with my son Connor’s kindergarten class, I would say having the privilege to work with the legendary Julia Child during a taping of her show. I’m also grateful to have been named as one of the 13 rising new chefs to watch at The Ritz-Carlton Philadelphia by the National Restaurant Association in August of 1995.

Also, I take great pride in opening Mitchell’s American Bistro

with my wife, Marla in 1998, we even earned some prestigious honors like being named best new restaurant by New Jersey Magazine and New Jersey’s best BYO restaurant by Zagat from 2000 – 2003. What is your signature dish at The Brunch at Nero’s?

The 36 hour Braised Short Ribs. Believe me, you can literally taste all that extra time that goes into these ribs. What is the best piece of culinary advice or cooking tip you would give to an amateur home chef?

Cook fresh and local and don’t be afraid of the salt (sea salt that is). How does Keith Mitchell like to unwind?

When I want to relax, believe or not, I like to practice Brazilian jiu-jitsu, and train using Tang Soo Do. It is here where I’ve actually earned a first degree black belt.

What is one thing about yourself that most people wouldn’t know?

I’m a vegan.

SUPPER CLUBBy: Kelly Horn

It’s that time of year again when the supper club spins the bottle points at me! I usually try to pick a place that I’ve never been to, and I was successful in that this month. The Inn at Sugar Hill is a restaurant that I’ve driven by a few times and even once enjoyed their outside deck bar, but never made it a point to eat inside. I didn’t make a reservation and the four of us were easily seated in one of their many rooms. The decor is old fashioned and cozy. I don’t know how many others were dining as there weren’t that many cars in the parking lot, but I didn’t see anyone else while we were there. Perhaps they were up-stairs, as this quaint Mays Land-ing building also doubles as a bed and breakfast.

We ordered drinks to start, which consisted of wine for my three friends and a lemon drop mar-tini for me. The bread was up next. There was plain bread and “everything” flatbread crackers. The sweet whipped butter was delicious, but a little too hard to spread. The taste more than made up for this minor annoyance though. I will say that the server took about 30 minutes to actually take our order, but we were on

our second basket of bread by this time so we were all doing okay.

The appetizers came out first: two salads and two soups. The Caesar Salad was green and crisp, and I wished I had ordered it after I saw it. The chicken Florentine soup I had was the only disap-pointment of the meal. It was 99% broth with a few tiny pieces of spinach and chicken floating in it. They could have thrown in a few tortellinis and it would have been a lot better. The menu was really varied and had a little bit of everything and so it was tough to decide what exactly to try.

Jen, the only one of us who had eaten here before ordered the same thing she had last time: The Emerald Scallops. Seana got the grilled veggie lasagna and Deneen got a Chicken topped with Crab Meat dish. Since I love pesto with pasta I zeroed in on the seafood with pesto - the jumbo shrimp, lump crab meat, and scallops were plentiful and served with a pesto-like sauce and pasta. This was really good and

I liked that they didn’t skimp on the seafood.

We were all really full by this point, but would I be doing you guys any favors if I didn’t at least look at the dessert menu? I think not. The desserts looked great: cheesecake, bread pudding with a ‘fosters’ sauce, black forest brownies, and the piece de resis-tance: The House Dessert. Seana and Jen split the brownies and said they were really good. I defi-nitely wanted dessert in any case and so I took the House Dessert to go. There was a minor problem with the dessert when it arrived. It contained an ingredient that I don’t eat that wasn’t listed on the menu. The server, although not looking totally thrilled, did take it back to the kitchen and had it remade. Have I kept you in suspense long enough yet? This dessert was a puff pastry heart sandwich filled with fresh straw-berries and vanilla mousse.

The drive home from the restau-rant was just long enough to clear a spot to eat this dessert. The Inn at Sugar Hill was worth the wait for me and I will be back there for sure to try some of their other interesting looking items, includ-ing that salad! Meg’s pick is up next month!
