Welcome to the latest edition of Pi-rates of the Caribbean, The Sun willtake you through the life of the swash-buckling buccaneer Stede Bonnet in thiscolumn. Major Stede Bonnet was oneof the more unique pirates commonlyknown as the “gentleman pirate.” Hisbackground was not that of a typicalpirate and he was not entirely success-ful as one either, but he became wellknown for his actions, in particularwhen he traveled with the notoriousBlackbeard. Contrary to modern popu-lar belief, Bonnet was also known asone of the very few pirates who hadprisoners “walk the plank.” Bonnet was a retired Major in theKing’s Guards who lived with his wifeon his large estate in Barbados. He wasa proper well-educated man who waswell respected by those who knew him.Then sometime in 1717, Bonnet be-came a pirate even though he knewnothing of seamanship. He earned thenickname of the “gentleman pirate”because of his cultured backgroundwhich he continued to portray while he

was a pirate – he was well groomed,wore fancy clothing and a periwig. Ithas been suggested that Bonnet snappedone day as a result of his wife’s con-stant nagging. At that point, he decided

he had enough so he bought a sloop andoutfitted it with ten guns using his ownmoney (an unheard of practice for apirate)! He rounded up a crew of 70for his newly christened sloop Revenge

and set sail for his new pirate life. As a pirate, Bonnet was merely anamateur. Unlike stealing or capturinga ship, as any respectable pirate woulddo, he purchased his own. This wascompletely unheard of in the archivesof piracy. This fast little ship was pur-chased in early 1717. It had ten piecesof artillery, secured to her single gundeck. For unknown reasons, he re-named her “The Revenge”. Bonnet didanother unheard of thing: he paid hiscrew out of his own pocket, instead ofdrawing up a contract for them to sign.It was this strategy however, that kepthim from being deposed by the crew,

Reef BriefReef BriefReef BriefReef BriefReef Brief Of the approximately 5,000 differentspecies of reef fish that inhabit Carib-bean waters, perhaps one of the bestknown is the Parrotfish. There are manyspecies of this beautifully colored fish,found not only in the Caribbean, but alsothroughout the Atlantic and Pacificoceans. Like other fish found in the sea,parrotfish possess many curious quali-ties that have baffled scientists for years. Named for an odd-looking beak thatresembles that of a parrot, this fish playsan important role in maintaining thehealth of the reef. Parrotfish can be foundeating the algae off the surface of thereef, and occasionally they are foundfeeding directly on the coral. For years,scientists believed parrotfish were de-stroying the reef, but studies have proventhat when parrotfish are prevented fromfeeding along an area of the reef, the coralis “smothered” to death by the growth ofalgal mats. The grazing activity ofparrotfish keeps this in check. In fact, itseems that these fish evolved their strongbeak-like jaws and teeth primarily for thepurpose of grinding up pieces of coral.Parrotfish have molar-like teeth in theirthroats that chew up coral so that stom-ach acid can digest the algae found in andaround the coral. This ground up coral isreleased as sand, creating the sandy bot-tom and white beaches found in andaround coral reef ecosystems. Unbeliev-

After spending the day in a school ofother parrotfish feeding on algae, sea-weed, and coral, each fish separates atnight to search for dwellings in which tosleep. When the parrotfish has found aplace to nest in the coral, it begins to se-crete a sticky mucous forming a trans-parent cocoon around its body. This un-usual process takes up to thirty minutesto complete and another thirty minutes isneeded to get out of the cocoon in themorning. Scientists were puzzled by this

activity, but it is now believed that thecocoon helps to protect the fish frompredators by masking the scent of the fish. Another curious feature of parrotfishis that throughout their lifecycle, thesefish change their sex. A sexually maturefemale parrotfish will lay its eggs, even-

tually to be fertilized by males. As thefemale ages, she will transform into amale, a change made apparent by a colortransformation, in which the light femalewill turn into a dark male. The evolu-tionary explanation behind this sex changeis that many of these fish die young so

there is a need for many females to re-lease eggs and only a few males to fertil-ize them. Parrotfish are an excellent exampleof animals that have evolved traits, pe-culiar as they may be, to help the sur-vival of the species. As with other reeffish, parrotfish greatly depend on the reeffor food and protection. Likewise, the reefgreatly depends on parrotfish to main-tain its health. So, the next time you aresnorkeling or diving, don’t be alarmedby the munching sound you may hear –it’s just a parrotfish doing its job.Unbelievable as it may sound; one parrotfish is capable of creating one ton of sand a year!

needs to be showcased!What are your favorite Belizean sounds orbands? Oh, there are many! But definitelyGilharry 7 is my favorite band. Then musiciansare definitely Andy Palacio, Grandmaster, World

Culture Band, Titiman Flores, Lord Rhaburn (greatsoca and calypso), Ernie Smith from Progresso, andthis gentleman John who sings some of the most amaz-ing original Jamaican folk songs. Oh there are somany!So you mention starting a school program? Oh, that’svery tentative and still in the list of future plans. I justneed to work on forming a group of people who arewilling to work hard to help bring the Belizean musicindustry to life.You are the Entertainment Director at Fido’s as wellas a musician/performer. When do you play? I playsolo on Monday. I am also a part of “The Crew” and“The Rhythm Section”, and we play several nights aweek.So you’re completely immersed in the music atFido’s? I’m just rockin’ 7 nights a week, that’s all!(big laugh!).

Tony Brown’s musical career spans forty years. His style of music has diversified while maintaining his musicalintegrity and has blended into a high quality professional hybrid of all the cultural, musical experiences of his life.His R&B and blues (mixed with gospel and country blues) background influenced his funk concept which created animpact on his Yank Skank embellished Reggae. After years of being a road musician, production manager, roadmanager, developer of musical events, Tony has now organized his music into a professional business based on theinspirations of his works and experiences.

Musicians need an outlet fortheir art, and for many visitors andaudiences, there aren’t nearly enoughBelizean musicians to fulfill their in-terest. There might be many artistsout there, but several don’t have theprofessional management or thestarting point that will give themproper exposure to a wider audience.Through his interests in improving themusic scene, Tony is trying to createa platform whereby both audiencesand musicians are equally happy. One of his future interests involvesa school program. His plans includerecruiting students who want to makemusic a part of their life and theirlifestyle. De-licious! Following the calamari was theLobster Rangoon, a house favorite: deli-ciously crispy wontons stuffed with freshCaribbean lobster, cream cheese andscallions. Served with Asian slaw,mango syrup and Hoisin sauce, it wasjust the perfect blend of flavors. The ThaiStyle Chicken satay was amazing; ten-der chicken strips seasoned with lime,

chili and cilantro, grilled and served withan unbelievably scrumptious peanutsauce. The only drawback to such a deli-cious sauce is that it’s gone way too soon!And for those seeking a yummy vegetar-ian appetizer, the Bruschetta is perfect,with its toppings of locally grown freshtomatoes, olives, basil and capersdrizzled with a balsamic vinegar reduc-tion and toasted olive oil crostini. It’s theperfect, light appetizer to start your meal. With a refreshing drink in hand, thewind caressing your hair and the cool is-land ambiance; it was time for the main

course. First up, we enjoyed an islandplate called Coco Loco Chicken which isa boneless chicken breast sautéed withgarlic, ginger, cilantro and crushed redchilli paste. Finished with coconut milkand toasted shredded coconut, it was atreat to the taste buds. Another entrée,the Szechwan style braised shrimp waspan seared and tossed with ginger, gar-lic, and a sweet and sour sauce. Finishedwith a drizzle of roasted sesame oil andserved with scallion cilantro rice andmixed tempura vegetables. Those whodine in pairs, there is an extra specialplate for couples to enjoy called the Sea-food lovers platter for two. This is a su-per-sized version of their Caribbean plat-ter plus more. The dish is a medley ofseafood; fresh lobster tail, succulentshrimp, scallops, New Zealand green lipmussels, conch, calamari and snapper,all perfectly grilled, broiled and sautéed,a seafood lovers delight. Fish lover? A

nice steaming platter of Blackened Grou-per, ohh la la, is the perfect choice foryou! A pan seared, blackened grouperfillet, topped with a delicious avocado andtomato salsa. And speaking of fish, asnapper fillet fresh from the Barrier Reefis finger licking good. It was flavored witha paste of exotic spices and herbs fromSoutheast-Asia, pan sautéed and servedwith a pineapple and tomato relish. A de-lightful platter for diners labeled the Ma-laysian Snapper. Finally, a lobster in asavory batter of sweet peppers, onions,herbs and fried to perfection. Served witha habanero aioli and mango syrup. Witha tummy full of good eating, the eveningaffair came to a close, and boy, talk aboutbelly busters! The entire dining experi-ence was flawless, the food was remark-ably delicious, the setting, the island vibeand of course the wait staff all made theevening a splendid and fulfilling one.

Terminal Classic Period Changes leading to the TerminalClassic seemed to have been quantita-tive rather than qualitative. Most sitesshow a continuation of the patternswhich had been developed earlier. Ma-jor construction at these sites, however,was replaced by repeated refurbishingson a smaller scale. Trade goods wereabundant and interaction is seen withYucatan, Campeche, and southern Be-lize, as well as mainland northern Be-lize. A mortuary pattern of repeated,very shallow burials reflects the lowlevel of energy invested in all such ac-tivities. During this period Ambergriscontinued to participate in the maritime

trade system. However, we do notknow what stresses were exerted uponthe system which reduced constructionactivity. At the end of the Terminal Classicperiod, though, major changes oc-curred on Ambergris. With the excep-

tion of Marco Gonzalez, nearly all siteson the coast were abandoned, and, asa result, trade activities on Ambergriswere limited to, or more correctly,consolidated at Marco Gonzalez. AtSan Juan, small buildings were con-structed on the flanks of the site at the

end of this period. The most recent ra-diocarbon date of approximately 1000A.D. comes from this context andnearly marks the abandonment of thesite. While some activity continues atChac Balam after 1000 A.D., it is prob-able that the site was no longer fullyoccupied and may have been used pri-marily for mortuary purposes.

Postclassic Period The data from the Postclassic pe-riod reflect a major restructuring ofboth settlement on Ambergris Caye and

Spanish map shows a settlement in thisgeneral area of Ambergris which maywell be Basil Jones (Grant Jones, per-sonal communication), so occupationalcontinuity may have occurred. The growth of Basil Jones, then, re-flects an adaptation with a more terres-trial focus. Even so, trade may have con-tinued to be an important focus, and Ba-sil Jones could have functioned similarlyto San Gervasio and Buena Vista onCozumel (Sabloff and Rathje 1975). Nev-ertheless, a complete structural shiftclearly occurred. The only Middle Postclassic site foundso far on Ambergris Caye is LosRenegados. The very large quantities ofobsidian, a volcanic glass which is oneof the finest raw materials for the chip-ping of stone tools, recovered from thesite indicate that coastal trade was flour-ishing. However, its impact on the is-land was much different than previously.Los Renegados includes no formal ar-chitecture, only dense residential debris,and the floors of perishable buildings. Wecannot know if, at this time, Basil Jonesor other sites were occupied. However,Graham and Pendergast have found evi-dence of residential and mortuary activ-ity at the San Pedro site dating from thisperiod.

at the Marco Gonzalez site and, per-haps, the Basil Jones site. At Marco Gonzalez, Graham andPendergast (1987, 1989) found continu-ous occupation from the Late Classicinto the Postclassic. Importantly, con-tinued major construction occurred inthe Postclassic at Marco Gonzalez. Itis very possible that the close ceramicaffinities between Marco Gonzales andLamanai are associated with thecommunity’s apparent independencefrom the factors that influenced theabandonment of the coastal margin ofthe northern part of the island(Pendergast 1990). Basil Jones, in the interior of the is-land, and the San Pedro Lagoon site arebelieved to be Postclassic. These assess-ments are based upon the presence of thevery crude stone buildings and, in the caseof Basil Jones, the field walls. Also, theelaborate Postclassic burial excavated byThomas Gann on Ambergris, at “the larg-est mound,” was probably at Basil Jones.We initially believed this site to be SanJuan but we presently think that it wasone of the now nearly demolished moundsof Basil Jones. However, A. Andrewshas suggested that the Gann mound wasat the San Pedro Lagoon site (personalcommunication). Interestingly, an early

Fido’s Courtyard has been serving theisland with superb cooking for more than30 years, in fact, it is among the firsthotels established on the island. Owner,Malcolm Hitchcock, took the time toshare some of his experiences since hisarrival and commented on his establish-

ment, stating that Fido’s is the “most suc-cessful bar on the island”. Hitchcock wasborn and raised in London, England, be-fore his arrival to the island, he had manyprofessions, including serving in the Brit-ish Navy and as a special effects and artdirector in Hollywood. Hitchcock cameto the island on vacation, became fasci-nated with the laid back life and decidedto live here. Malcolm moved away fromHollywood and became a resident of ”LaIsla Bonita,” arriving in March of 1995and after inquiring about many busi-nesses, he bought Fido’s Courtyard andPier with his partner, Jim McGee. Racer is the name for several re-lated swift, slender snakes, especiallythose of the genus Coluber. All of theracers are nonpoisonous, non-constrict-ing, day-active snakes. The SpeckledRacers (Drymobius margaretiferus) arefound in the extreme south of Texas,USA, where it is endangered and pro-tected. Further south it is found alongthe Gulf Coast into Mexico, the YucatanPeninsula and throughout CentralAmerica to northern Colombia. Thisfast-moving, nervous snake is ex-tremely common in Belize. Not a robust snake, the adult Speck-led Racer averages 30 to 40 inches long.At first glance the snake appears black,but closer up a distinctive speckled pat-tern is visible. The dorsal scales areblack-edged with a yellow spot in thecenter and a blue base creating the ap-pearance of an overall black-green huethat glistens like sequins in the sunlight.The under belly is white to yellow togreen in color. Speckled Racers occur in both for-ested and open settings, but seems toprefer dense thickets heavily litteredwith plant debris, palm groves or brushyriver bottoms. It often frequents humansettlements and is generally terrestrial.Typically they live near water wheretheir amphibian prey may be located.A diurnal predator, the Speckled Racerfeeds primarily on frogs and toads. Oc-casionally it will eat lizards, reptile eggsand small mammals. Females lay clutches of two to eightsmooth-shelled whitish eggs betweenApril and August. Hatchlings emergeafter an incubation period of approxi-mately eight weeks, and measure onlyabout six inches long and are vividlycolored. The Speckled Racer can be foundmainly in the early morning daylighthours, just after sun-up. Quick mov-ing and very shy, this is a very diffi-

cult snake to observe or catch. If cor-nered or provoked it will not hesitateto bite. Although it is a non-venomoussnake, the bite bleeds copiously, sug-gesting an anticoagulant in the saliva.Therefore, if by rare chance you spotthis beautiful, elusive snake, it is rec-ommended that you observe it from adistance.

The San Pedro Sun’s Virtual Taste Trip

who let him remain in command. Bonetfound his band from the taverns andgrogshops of Bridgetown and ended upsigning on about seventy destitute sea-men. For several days after the pur-chase, the Revenge remained in theBridgetown harbor, which Bonnet ex-plained as his intention of pursuing aninter-island trade. But one night, hecast off without a word to his friendsor his wife. He set his course for theVirginia Capes, where he captured afew vessels, the first of which wereonly plundered and the last of which,the ship known as the Turbes, wasburned. After this, every Barbadianship taken by Bonnet was burned, as ifto conceal his trail. After sailing and capturing prizes offthe New England Coast and some in thenorthern waters, he returned to thesouth. At this time however, there wastrouble brewing. His inexperience be-gan to manifest itself to the crew, whowere slowly becoming hostile and be-gan whispering amongst themselves.During the increasing hostilities, Bon-net dropped anchor in the Bay of Hon-duras, where he met up with the QueenAnne’s Revenge, along with her cap-tain, the fearsome Edward Teach, nick-named “Blackbeard”. The two quicklybefriended each other and this strangeduo, a veteran and an amateur decidedto cruise together. This alliance how-ever, soon proved a big mistake on thepart of Bonnet. Teach became awareof his inexperience and invited Bonnetaboard the Queen Anne’s Revenge,where Bonnet became pretty much aprisoner. Teach tried to convince himthat a man of his education and manner-isms, should not be forced to the rigorsof commanding a ship like the Revengeand to transfer himself to the more com-fortable and spacious quarters of theQueen Anne’s Revenge. There waslittle Bonnet could do or say and soonone of Blackbeard’s lieutenants, by thename of Richards, took over command

of the Revenge and quickly stifled thethreat of mutiny by imposing stern dis-cipline and gaining the crew’s confi-dence. Eventually Bonnet convincedBlackbeard to allow him to commandthe Revenge again. Soon after, the twoparted and Bonnet left his ship for thetown of Bath and surrendered himselfas a reformed pirate to the Governor ofNorth Carolina, Charles Eden. This acthowever did not subdue Bonnet’s desirefor piracy, and he continued to scour thesea for vessels until he was capture byColonel William Rhett, from whom heescaped only to be recaptured andbrought to trial under a Court of Vice-Admiralty in Charleston, South Caro-lina. Sir Nicholas Trott, who at that timewas the judge of the Vice-AdmiraltyCourt, sentenced Bonnet to death on thegallows. Stede Bonnet was hung for pi-racy on December 10th, 1718.

BEAT cream cheese and butter inlarge bowl with electric mixer on me-dium speed until well blended.Add sugar; beat until light and fluffy.Blend in vanilla.Gradually add flour, beating until wellblended after each addition.

Add baking soda; mix well.Add pecans; mix just until blended.Cover. Refrigerate 30 min. PREHEAT oven to 350°F. Shapedough into 1-inch balls. Place, 2 inchesapart, on ungreased baking sheets. In-dent centers. Bake 10 min. FILL each cookie with about 1 tsp.preserves. Continue baking 8 to 10 min.or until golden brown. Cool completelyon wire racks.

Thumbprint Cookies - these cookies are delightful and gooey, es-pecially with good jam or preserves. Of course, for the perfect Belizean twist,try Marie Sharp’s jams, especially guava and pineapple, to give it the right tropi-cal taste twist.

For an added bonus, add coconut flakes over the dough rightbefore baking.
