The only resort and restaurant on Ambergris Caye awardedthe selection of Fodor’s Choice in the 2007 Fodor’s Guide

To Belize

Dining in Ambergris Caye has beendescribed as one of the most excellent;from Asian, to European, American andCaribbean influences, restaurants offeryou only the best. Maybe it has some-thing to do with the freshness of the in-gredients, from the vegetables to the poul-try and seafood, you can be certain thatwhat is being served to you has been re-cently been caught or picked. However, to have a delicious, exquis-ite meal, you do not need to visit a four-star restaurant. The streets along SanPedro Town are lined with many delis, many of whom serve all three meals, breakfast, lunch and dinner. This week,we feature a few other Delis in our Visi-tor Guide. We start with Dianita’s Takeout, lo-cated on Caribeña Street. Ana NajarroCal opened her own deli seven years ago.She first arrived in San Pedro Town 10years ago from the Cayo District. Origi-nally from El Salvador, Ana first workedat Fido’s Courtyard as a breakfast cookand later, after a year and a half, went towork at the Splash Bar (Belize YachtClub) as a waitress. After helping hersister at her establishment, the GreenHouse, Ana decided to open her ownbusiness. Now, Dianita’s Takeout is known forits delicious meals and great choices. Thepopular eatery is open from 6:00 a.m. to4:00 p.m. and 5:00 p.m. to 9:00 p.m.Mondays to Saturdays, Sundays from

flour tortilla, fried jacks, or Johnny cakesstuffed with beans, ham or chicken andcheese, add egg to make it extra special.

It is said that the truemark of a good restau-rant is if locals frequentthe establishment; witha dish like combiningRice and Beans, home-style fried chicken, coleslaw and plantains,it’s not hard to see whyDianita’s is a success!

Celi’s Deli officially opened itsdoors to the public in 1989 and sincethen has been serving clients withsmiles, laughter and efficient ser-vice. Celi’s Restaurant had beenopening for breakfast, lunch and din-ner, however proprietor CeliMcCorkle thought that since the res-taurant was not going to be open forbreakfast, a deli seemed like a goodoption,

Dr. Herman Smith was the only PhD archeologist to reside in Belize. Hewas noted in his field as a foremost researcher and expert in the coastal trad-ing of the Maya and headed the archaeological development of Lamanai inBelize. Herman discovered and contributed much to the body of knowledge ofthe Maya once living on Ambergris Caye. If asked about this subject, he wouldgladly inform his listeners of the Maya past with detailed length and expansivearm waving. His humor accompanied these mini-lectures, eliminating any aca-demic dryness and endearing him to the students and groups that he workedwith on sites around the island. He lived in Belize for over 12 years and eventually obtained Belizean citizen-ship. Dr. Herman Smith - U.S. Marine Corps pilot, decorated Vietnam veteran, archeologist, friend, and husband died on March 10th, 2000. Above all his manyaccomplishments from fighter piloting to practicing archeology – is that Hermanwas a friend to all in San Pedro. He contributed countless articles to The SanPedro Sun, articles that we are pleased to share with you once more.

This column which appears at ratherirregular intervals in The Sun deals witharcheology in its many facets. Thisweek is no exception, but it takes a littletime to develop, so please bear withme. In San Pedro Town for the pastcouple of years, my wife and I haveestablished a favorite watering holewhere we can meet with friends afterwork and enjoy a few adult beverages.BC’s Beach Bar and Grill is likewise ahangout for a number of ex-patriotsfrom all over the world and the late

afternoon conversation is usually livelyand friendly. This atmosphere, largelythe result of the graciousness of themanagers, Bruce and Charlene (neeWoods) also attracts quite a few visi-tors to the island who are always madeto feel welcome. Now that I think aboutit, “gracious” is probably a bit of astretch in Bruce’s case since he is, af-ter all, an Australian. In any event, the bar is equipped withashtrays made from coconut shells, which visitors consider “quaint” and I

consider an abomination. Although I amnot a heavy smoker I enjoy an occa-sional nicotine bon-bon with my bever-age of choice and there is a single ash-tray, a round white plastic one withbright red letters that spell CAMPARIon the side, which over the last coupleof years I have come to regard as MYpersonal ashtray when I am in atten-dance. I confess I have become ratherpossessive. Now I said this is about archeology,so hang in there. Last week my wife and daughter andI accepted a long-standing invitationfrom Tom and Josie Harding, the man-

ing into the pyramids in search of tombsof ancient rulers. In years past enterprising farmerswould come to this remote area to growmarijuana and while waiting for theplants to mature they would bludgeontheir way through the large burialmounds in hopes of finding a burialchamber containing artifacts such asjade and intact polychrome ceramicvessels that represented a bonus interms of extra money that could be ob-tained through the sale of these objectsto tourists or front men for art dealersand collectors. The damage done to thesite and the information forever lost ishard to assess but the shear labor re-quired to dig through a sixty foot stonepyramid with hand tools is remarkableand the deep holes that still exist in thesemounds are silent testimony to the de-termination of the looters to extractevery piece of salable material pos-sible. Tom Harding, our guide for the trek, led me into one of the trenches in whichthe looters had successfully broken intoa burial chamber and removed the con-tents for later sale. The walls of the

chamber were smoothly plastered anda good bit of the original red paint (acolor much favored by the ancientMaya) remained intact on the walls ofthe chamber. Moving to another largemound, Tom gave me a flashlight anddirected me along a narrow passagesome forty feet or so into the side ofthe structure, cautioning me to go onlyso far as the first chamber as there hadbeen a recent cave-in further along thetunnel. Again the looters had achievedtheir goal and I could see potsherdsscattered around the floor which I rec-ognized as Classic period pieces sug-gesting the treasure hunters had burstinto a tomb that had lain undisturbedfor some 1500 years. Tom then directedme to make a sharp right turn into yetanother burial chamber where the redpaint on the walls was illuminated bythe narrow beam of my flashlight. Ona shelf where at least one body had beenlaid to rest I caught a flash of whiteand bright red. It was my CAMPARIashtray from BC’s Beach Bar andGrill. I had been had!

agers at the Chan Chich Resort nearGallon Jug to come out for a few days.I was hardly prepared for what I sawupon arrival at the resort. The place, aside from the beautiful jungle setting, was nestled squarely in the middle ofan ancient Maya site, a plaza complexconsisting of a number of un-excavatedbut well-manicured mounds that in theClassic period (250 to 900 A.D.) wouldhave been teeming with activity of botha religious and secular nature. Thewildlife was abundant – monkeys, birdsand a variety of small mammals wereeverywhere. Of more direct interestto me however, were the huge moundsjust outside the resort area that overthe years had been more or less lootedby treasure seekers no doubt burrow-

Trivia Tidbits *Herman Melville’s classic and most famous novel, Moby Dick, was origi-nally titled The Whale. Two big-screen versions have been produced: one in1930, with John Barrymore starring as Captain Ahab, and the other in 1956,this time starring Gregory Peck. Critics feel the latter, directed by JohnHuston, is the superior film. *When cows graze in their natural head-down position, their saliva pro-duction increases by 17 percent. *The West Wind Drift, one of the main ocean currents in the southernhemisphere, carries 2,000 times more water than the Amazon River. Itflows more than twice as fast as a person can swim. *According to scientists, gold exists on Mars, Mercury, and Venus. *Physicists now believe the universe to be three billion years younger thanpreviously thought. New information gathered by the Hipparcos satellite, combined with a reanalysis of other distance data, has enabled researchersto refine the lower age limit of the universe to 9.6 billion years. *There are only four words in the English language which end in “dous”:tremendous, horrendous, stupendous, hazardous. *Albert Einstein never learned how to drive a car. *The “save” icon on Microsoft Word shows a floppy disk, with the shut-ters on backwards. *The blue whale is maintained by its blubber and can go up to half a yearwithout eating.

“That back brace looks painful,” I said to Valerie, as she eased up on thebarstool next to me at BC’s. “How did you hurt your back?”

“I’d really rather not say,” she told me. “It’s very embarrassing.”

“Oh, come on,” I said. “You know I wouldn’t tell anyone.”

“Well, if you must know, it happened while I was jet skiing.”

“Wow! I didn’t even know you could jet ski.”

“I can’t,” she said. “You couldn’t pay me to get on one of those machines.”

“Well, how in the world did it happen?”

“Chuck had gone fishing and I decided to go down to the dock at CrazyCanuck’s and wait for him to come in. While I was sitting on the end of the docka young man drove up on a jet ski and stopped a few feet away. He told me hehad an urgent need to go to the bathroom at Crazy Canuck’s but he was afraid toturn the jet ski off because the battery wasn’t charging right.”

“What did he want you to do?

“He asked me if I would sit on the little lower ledge and reach out to hold thelittle handlebar grip that works the throttle. If the engine started to die he said toturn it a little bit to give it some gas. I said O.K. and he made a run for thebathroom.”

“I gather it didn’t work out right.”

“I was doing fine until I decided to reach for my cigarettes. When I reachedI must have twisted the throttle because all of a sudden the engine said ‘Vroom!’and the next thing I knew I was in the water being pulled by the jet ski. I held onwith all my strength and finally pulled myself up into the seat. I was horrified tofind that being dragged by the jet ski had pulled my bathing suit off. I was starknaked going fifty miles an hour on a machine that I didn’t know how to stop.”

“My God! What did you do?”

“I was all the way down by the Yacht Club when I finally figured out that bytwisting the handle backwards I could slow it down. I mustered all the dignity Ihad left and drove back to Crazy Canuck’s.”

“What an incredible story!”

About that time a guy on crutches came hobbling into the bar and sat down onthe other side of me.

“I see you’re another one of the walking wounded,” Valerie said. “How didyou hurt your leg?”

“It was the strangest thing,” the guy said. “I’ve got a condo down at theYacht Club and yesterday when I was walking down the pier a lady came by ona jet ski and she was stark naked. I was so startled that I tripped over a mooringline and sprained my ankle. How did you hurt your back?”
