Besides great events, this fall has been full of exciting accolades. I’d like to take the opportunity in this issue of

The River to touch on the highlights.

Colleton River Plantation Club has received its fourth consecutive Platinum Club of America designation, and is ranked among the Top 4% of Private Clubs in the country by Club Leaders Forum. This prestigious recognition is based on five aspects of private clubs:

• Quality of Membership• Tradition and Culture• Amenities• Governance• Quality of Management & Staff

Colleton River Plantation Club was one of only two communities in South Carolina to be included on the distinguished list of Top Private Clubs. The Platinum Clubs of America rankings are determined by questionnaires sent to club managers and presidents of approximately 5,000 private clubs belonging to the Club Managers Association of America (CMAA). This is the seventh compilation of The Platinum Clubs of America, which is conducted every three years. In addition to residential communities, other categories of club recognition include country clubs, golf, city/dining, athletic, and yacht.

Colleton River has also been designated a Distinguished Emerald Club of the World by BoardRoom Magazine. The Distinguished Clubs award program was developed to help vitalize and preserve the institution of private clubs by fostering a ceaseless

drive to ever improve the “Member Experience” provided by private clubs

throughout the world. Distinguished Emerald Club status is awarded to only the top 5 percent of clubs. To be a Distinguished Emerald Club, the club must provide a Member

Experience at a level attained by only the finest clubs in the world. The

distinction between a Distinguished Gold and a Distinguished Emerald Club is subtle yet

thoroughly recognizable, for it is based on the most important of all intangible qualities, i.e., reputation, reverence, admiration, brand equity and fame. Whatever you call it, it is that “X” factor that separates two clubs that both provide superlative Member Experience, but where one is a great club, while the other is the most prestigious of memberships. This distinction came after extensive onsite interviews and amenity tours, a cottage stay and dining on site by a representative of BoardRoom Magazine.

Comprehensive questionnaires/surveys were also submitted post-visit. Colleton River is one of only three clubs in South Carolina to hold this distinction.

You will particularly proud to know that Colleton River is the only community in South Carolina to have received both the Platinum Club and Emerald Club designation. But the accolades don’t stop there…

In addition to the Platinum Club and Emerald Club of the World, GolfWeek’s Ultimate Guide to Golf Course Living and Great Escapes has named Colleton River to its 2015 list of 100 Best Residential Courses. What makes this particularly significant is the fact that Colleton River is one of only five residential communities in the country with two golf courses to have both courses listed.

And… this fall’s Special Real Estate Issue of LINKS Premier Properties has included Colleton River in its list of the 40 “Best for Golf” communities in the country.

We are extremely honored to have received such recognition by our peers and the golf and club communities. It is a true testament to the unwavering dedication of our devoted board and committee representatives, outstanding members and professional staff who take pride in the ownership of the Club, serving as ambassadors of Colleton River.

General Manager’s Report


Hello from Colleton River. Fall finally arrived and brought some beautiful weather to the Lowcountry. Our grounds, roads and golf courses have undergone continued improvements. Also, it looks like all the extra “love” has worked on the Dye greens, and they are healthy going into the winter season.

Instead of reporting on what we have done as a community, I will allow the others writing for this edition of The River to tell those accomplishments. This will allow me to spend a few minutes describing a great opportunity that lies ahead of us. The opportunity I am referring to is the USGA 2015 U.S. Junior Amateur Championship, to be held at Colleton River, July 20-25, on the Dye Course. 156 of the world’s best young men under the age of 18 will compete, and while they do, we have an excellent opportunity to showcase Colleton River.

Being a realist, I know some members remain skeptical about the decision to host the event, and question the benefits to Colleton River. I respect their opinion, and we are doing everything possible to stay within our projected budgets for the tournament. We will provide members with a thorough accounting at the conclusion of the Championship. However, the optimistic side of me says – “Boy, do we have a great opportunity available to us, due to the hard work of the Host Committee and a little good fortune.”

In addition to having over 5,000 family, friends, college coaches, local spectators and USGA officials from around the country on property to experience Colleton River, we have been assured by the USGA and FOX SPORTS that they will televise live from Colleton River both the Friday semi-finals and final round on Saturday. This is a major commitment by FOX SPORTS, and they will also be highlighting the upcoming tournament in their broadcasts from the US Open, US Women’s Open and US Senior Open which precede our tournament. This coverage really is “priceless” for Colleton River, as our marketing budget could never support national TV coverage like we will have during the entire week, and featured live coverage on Friday and Saturday. Teams are working overtime to refine and capture our messaging during the broadcasts.

The beauty of Colleton River will also be featured on the cover of the USGA 2015 Championships Calendar, which is a tremendous opportunity for additional exposure to the golfing world and our targeted customer. Add to this the opportunity to align our tournament with The First Tee Of The Lowcountry as they get started in our area, and the good work of Colleton River gets multiplied throughout the year.

So, help us capitalize on this opportunity and find a way to get involved as we have fun telling and selling the magic of owning and living at Colleton River. Even if you still question the tournament, jump on board to support the marketing opportunity to expose Colleton River, and the potential to enhance real estate values or attract new owners. Volunteer for a committee, house a young golfer, contribute to Club 68 if you so desire, get your property looking good and understand the opportunity we have ahead of us. Then, balance this against the minor inconveniences we will experience while sharing our golf course and community with thousands of potential members.

I believe we will make the most of this GREAT OPPORTUNITY and thank all of those working so hard to make this a success.

2015 Spring Tournament Schedule

The Fall Mens’ Member-Guest fell on a COLD day, but the tournament was still a great event!


The New Year is upon us and the golf staff is looking forward to carrying over a successful fall season into

2015. We had a very active fall term with several events reaching our highest number of participation in many years. Our Ladies’ One Day Member-Guest Tournament had a field size of 76 players, the Nine-Hole Ladies’ “Spooktacular” had 56 players, and our Men’s Member-Guest field size was expanded twice to accommodate the 71 two-man team event! Registration for our 2015 spring

events will be available in mid-January as we know several members need to plan accordingly.

On a side note, our Spring Men’s Member-Guest format will be changed back to match play, with the event being conducted over three days, including a practice round. This means we will be playing three matches on Friday and two on Saturday, with the practice round on Thursday. The golf staff is eager to continue professionally conducted events, exceptional customer service, top of the line merchandise, and superior golf instruction. I would like to thank you for your support of the Colleton River golf programs!

The 2015 U.S. Junior Amateur Championship is quickly approaching, and volunteer registration is now open! The Championship will be conducted from July 18-25, 2015. If you are interested in volunteering and being involved in this national Championship, please visit our club website for more information.

Congratulations to golf staff members Mark Reilly and Derrick Garrou. Last month, Assistant Professional, Mark Reilly, was recognized and honored with the Hilton Head Island PGA Chapter “Assistants of the Year” award. This honor is awarded to an assistant professional who exhibits the promise and dedication that will lead the game of golf in the coming years. A candidate for the award continually demonstrates a high level of excellence at his or her facility as well as service to the Hilton Head Island Chapter/Carolinas Section while promoting the game of golf and projecting the image of a golf professional. Congratulations to Mark for being recognized for his dedication, knowledge and commitment to the game of golf!

Our Head Professional, Derrick Garrou, was also nominated for the Carolinas Section PGA “Horton Smith” award. The Horton Smith Trophy is awarded to the PGA professional who continually exhibits a commitment to the development and improvement of golf education for the PGA Professional. This includes contributions to the section’s education program, including meetings and seminars held within the Carolinas Section, development of articles and materials that benefit and relate to education, building the image of both the PGA golf professional and the Association. The winner of the Horton Smith award will be recognized in February of 2015. It certainly is pleasing to see our Colleton River staff be recognized for their involvement in the PGA Section and Chapter associations.

Farm to table has come and gone- yes I said it! Some chefs out there are still beating that drum, but the music is over. I never thought that chasing the trend was necessary, but luckily I realized early on that keeping your kitchen current is always necessary!

To our kitchen brigade, honoring tradition and blending classics is part of staying current. Recognizable preparations, high quality, and seasonality is always in style.

Savvy kitchens and bar operations will now (and have for some time) employ the 100-mile radius principal in regard to product and services procurement. For our purposes, it has always made sense. Buying local supports good economic value, and gives real meaning to stewardship, both of which are extremely important to business success and value to our membership.

Examples shine brightly through our purveyor-consumer relationships. Our primary vendors, the food trucks you see every day on your plantation, work hard to keep the seasonal produce plentiful, and our seafood very fresh, very cold and moving fast!

Beef and center-of-the-plate items require careful attention to quality, and I discriminate when it comes to these sources; very few will meet our exacting standards. On the global market front, shellfish will continue to be among the highest items in demand, therefore creating niche opportunities that need to be considered. For example, open water oyster farming, being experimented with in the Lowcountry, may provide a new source of quality and uniqueness that we demand for Colleton’s kitchen.

Regarding seasonality, hopefully you have noticed fall flavors and braised items making their way to your tables. It is so important that we honor the change of climate and seasons, however short it may be, in support of the suppliers that help guide our menu item choices.

All said, we have the world’s best connections for north Atlantic seafood, Alaskan king crab, and mid-western corn-fed beef. If it’s out there, we can certainly get it. But as chefs and stewards, it is important that our food is sourced within the 100-mile radius, and we continue to seek out the best possible options for you, our valuable and adventurous dining community.

Take ApartThat Turkey!Are you happy with the finished quality of your holiday turkey dinner? Such an important and traditional meal requires planning, shopping, organizing and then the work! Are you willing to try something different? If so, read on. There are three easy steps to making the perfect brined turkey. Thawing is of course important! Be sure to thaw the turkey so it is ready to process three days prior to your meal.

DAy ONE - BuTCHErINg• Remove the liver and giblets, reserving for gravy, if desired• Carve off and reserve the leg & thigh joints to roast• Carve off and reserve the breasts to brine• Cut up frame then roast for stock & gravy, if desired

DAy TWO - BrININg / rOASTINg / gIBlET PrEP• Brine the breasts in Cranberry Brine for 12 to 18 hours in the refrigerator• Season, cover and slow roast the leg & thigh joints at 300F for 1 hour until done• When leg & thigh joints are fully done and cool to touch, pick the meat & reserve for the meal• Simmer liver and giblets with a sliced shallot, salt & pepper, and port wine to cover until done• Rough chop or puree the drained giblet mixture and use to flavor and thicken the gravy

DAy THrEE - FINISHINg• Prepare the brined breasts for roasting by draining and patting dry; season with salt & pepper• Roast at 375F for 25 - 30 minutes to brown, turn down to 325F, finish roasting 45 - 55 minutes• Meat thermometer should read 160F, allow to rest before carving

1 qt cranberry juice 1 qt water1/2 C brown sugar1/4 C saltA few black peppercorns1 bay leafA few cloves

Simmer to dissolvethe sugar and salt; cool before use

Colleton River is honored to announce the dedication of the 2014 Employee of the Year Award in memory of Liz Berney. As you may recall, Liz worked for Colleton for twelve years in the food & beverage area, and was an invaluble member of our team. In July of this year, she

peacefully passed away after battling a medical condition.

By all accounts, Liz is remembered as the Server Extraordinaire. She will always be the perfect example of “family serving family” at Colleton River. In this spirit, the 2014 Employee of the Year Award was to be presented to the employee who has consistently served the Colleton River “family” in this manner and to this standard.

The Colleton River team is rich with dedicated, intelligent, professional employees who are THE BEST at providing exceptional service - it was a truly difficult task to narrow down the selection for the award. The management team cast votes, using specific criteria to determine the recipient. In fact, management participated in two voting events because the results presented a consistent tie, and so we are presenting this award to two employees!! It is with great pleasure that we announce the 2014 Employee of the Year has been awarded to Jhon Hernandez, F&B Dining and Kevin McNally, Golf Services.

A great logo tells a story - and our new Junior Amateur logo is all about this wonderful place we call Colleton River. It’s three elements - the key, arrow and golf club - represent the long history of the land upon which Colleton River sits.

THE ArrOW represents the Native Americans that lived on this land for thousands of years, as demonstrated by the numerous Native American artifacts found during the construction of Colleton River. Moreover, those Native Americans chose our land because it is a peninsula surrounded by over seven miles of marsh and waterfront, making it defendable to potential invaders.

THE KEy is an actual key found during the building of Colleton River that dates to the colonial days of our land. The key is on display at the Dye clubhouse. As the handle of the key is rusted through, when looked at vertically, the handle forms a “C” for Colleton.

THE gOlF CluB represents our primary activity today and is at the heart of our community, being blessed with two outstanding golf courses by two different, outstanding golf course architects.

In choosing the placement of the three symbols, our designer chose the key for the central location in the logo as a symbolic representation of the key being the key to our community and the key to our friends and life at Colleton River.

We are also excited about our new affiliation with The First Tee of the Lowcountry and the Junior Amateur Championship. Involving an internationally respected youth organization that promotes life skills and leadership through the game of golf with our Championship creates a dynamic relationship. Not only will it enhance our Championship and The First Tee, it provides another opportunity for Colleton River members to give back to the community. And joining Club 68 is the perfect way to be a part of this new affiliation.

Finally, what better way to share the experience of Colleton River, showcase the Pete Dye golf course, and publicize the Junior Amateur Championship than a live national broadcast on FOX SPORTS. With their preliminary site visit complete, Fox has already determined placement of course towers, a broadcast booth (to the right of the 10th green) and their broadcast compound (behind the 16th green). Over 100 personnel from FOX will ensure the live broadcast of the semi-final matches on Friday, July 24th, and the final match on Saturday, July 25th is spectacular!

Sports & Wellness We had a very active fall at the tennis club. We wrapped up a successful ladies interclub season where our Colleton ladies joined forces with the TLC Rosehill ladies. Even though the interclub season is social and for fun, we managed to

win most of our matches.

We started a new Rusty Rackets program this fall to introduce or re-introduce tennis to our members. Participation was awesome, and a 4-week program has now turned into a new weekly program (we’ve renamed the program the Shiny Rackets). The season closed with the highly anticipated Nick vs. Dye tennis challenge. It was a battle from the first serve of the matches, but the Dye pulled out a slight victory over the Nick by only two games. Bragging rights for another year!

There is no bigger name in the history of oyster cultivation than that of Victor Coste. As early as 1839 Coste

was doing successful experiments on the cultivation of oysters. By 1845, when the Crassostrea virginica, or American/Eastern oysters, were diminished in Connecticut from overharvesting, disease, and destruction of their habitat, attempts were made to farm them. Oyster farming most likely developed in tandem with pearl farming, a similar practice in which oysters are farmed for the purpose of developing pearls. It was practiced by the ancient Romans as early as the 1st century BC, and later in Britain for export to Rome. The French oyster industry has relied on aquacultured oysters since the late 18th century.

Oysters naturally grow in estuarine bodies of brackish water. When farmed, the temperature and salinity of the water are controlled (or at least monitored), so as to induce spawning and fertilization, as well as to speed the rate of maturation – which can take several years.

Three methods of cultivation are commonly used. In each case oysters are cultivated to the size of “spat,” the point at which they attach themselves to a substrate. The loose spat may be allowed to mature further to form “seed” oysters with small shells. In either case (spat or seed stage), they are then set out to mature. Maturation is where the cultivation method choice is made.

In one method the spat or seed oysters are distributed over existing oyster beds and left to mature naturally. In the second method, the spat or seed may be put in racks, bags, or cages, or they may be glued in threes to vertical ropes. In the third method the spat or seed are placed in a cultch within an artificial maturation tank. The maturation tank may be fed with water that has been especially prepared for the purpose of accelerating the growth rate of the oysters.

Twenty five years ago, the New York/New Jersey Baykeeper began restoring the health of the Hudson–Raritan Estuary and in 2003, a unique high school, the New York Harbor School, was formed to focus on restoration of the local marine environment (American Catch by Paul Greenberg). More than 20 years ago Virginia began oystergardening.org for amateur growers to help revive the Chesapeake Bay. Maryland Sea Grant also began a program of supplying floats with bags of spat for their Oyster Gardening for Restoration and Education.

The History of Oyster Farming

A quick note before I get real busy up here at The North Pole to tell you what a great job you all did on

Operation Santa Claus this year. I have to say for the 15th year in a row your ornament tree continues to grow with donations topping $40,000 again this year. I can only say incredible and thank you one and all.

My lead elf tells me a record number of Colleton River shoppers bought beautiful clothes and toys for their neighbors in need. Mrs. Claus is so proud that you all met your goal of gifting over 500 pieces of quality children’s literature! A record number of homeless children and their

families at Family Promise received toys, warm clothes, and household goods. I sure appreciate all the teenagers you sponsored again this year.

My elves are envious of all those beautiful packages you wrapped in the Nicklaus Ballroom and the joy of the season you shared. I understand the Delivery Teams in their trucks, SUVs, and cars have already delivered all those packages. That sure beats my run in the sleigh!!

I’ve been getting glowing reports from the agencies you support. Family Promise of Beaufort County is so happy that I’ll have a sack full of gifts to deliver on Christmas morning to the homeless families being housed in our area churches. Some children in need from our hard fighting Marines stationed at Parris Island are getting some clothing, shoes, and toys. At Bluffton Self Help, the Toy Store was decorated and stocked in time for its December 10th opening with your donated clothes and children’s books, and toys from the Ladies Holiday Tea. Some teens identified by the McCracken and Bluffton Middle School social workers are having a holiday that’s a little

brighter. Mrs. Claus reports the teens at the Boys and Girls Club are wearing their Club hoodies with honor, and they sure enjoyed the cookies and pizza party. Island House reports their program participants now have much needed warm clothing, housekeeping supplies, and a stocked pantry ready to teach life skills.

It warms my heart to see the clothes closets for children in need filled at MC Riley, Red Cedar, Pritchardville Elementary, Bluffton Elementary, McCracken and Bluffton Middle Schools with pants, shirts, sweaters, hoodies, and socks to keep the children warm. I just love to see the 300 pre-Kindergarten children cherishing their first gift of a fine piece of children’s literature. But not to worry, funds are reserved for BackPack Buddies, the local food pantries, shoes for kids in the spring (their little feet grow so fast) and school supplies in the fall. Colleton River has once again done a wonderful job. I know that all of you have enjoyed the opportunity to give, and enjoy your time together through sharing this Colleton River holiday tradition. Children participating in the Backpack Buddies program during the school year were provided with vouchers for fresh fruits and vegetables to redeem this summer at the Bluffton Farmer’s Market.

ColletonCaresThis year was the 19th annual Ladies’ Holiday Tea. As is tradition, the attendees brought toys which helped stock the Bluffton Self Help Toy Store.


The Art Society’s mission is to possess and preserve one of the best collections of

original Lowcountry art in Beaufort County. Along with this mission of maintaining and expanding this collection, the Art Society retains the original charge of only Beaufort art in the Nicklaus clubhouse that was established at the time of its building. Expansion of the collection is done by sales from the art walls in the Nicklaus and Dye clubhouses, special events featuring local artists, special projects such as the painted wine glasses, as well as pieces on loan from generous members.

The group is also responsible for the changing of the art walls in both clubhouses and for organizing classes for the members.

There are usually five to six classes a year taught by both local and visiting artists. These classes are generally three days and taught on the Dye clubhouse 3rd floor. Sign up for the classes is through the front desk and

the Art Society is continually looking for new members. If you’d like to be part of this group, please contact Barb Gates or Doris Beedie. This fall, the Art Society raised funds to commission a new wall sculpture, pictured above. The piece was installed in October in the Nicklaus clubhouse, with an unveiling and reception for the artist, Chris Walker, in November. The Society has also framed a work by Suzanne Churchill. It is placed on an easel on the table behind the sofa in the Ladies Locker room at the Nicklaus. Enjoy!! The new art wall at the Nicklaus clubhouse was hung on September 29th and several pieces are for sale. Contact the artist if interested in a purchase. The art wall on the Dye clubhouse 3rd floor was also rehung on November 5th. Please take a look. Several of those pieces are for sale as well.

What a great year 2014 was for the Colleton River Golf Academy! Looking back, it’s refreshing to see all of the programs and events that the Academy has conducted

from the Get Golf Ready classes for beginners to the PGA-HHI Teaching Seminar with 40 PGA Golf Professionals. Your PGA/CRGA Instructors can be proud of all the hard work they have done in keeping with our vision of “operating the finest teaching program for a club community in the U.S.A.” We would also like to take this opportunity to congratulate all of the champions, overall winners, flight winners, gross/net winners, runner up winners and all of the participants who competed in events during 2014.

It’s encouraging to see our members and students practice, play, succeed and benefit from all of the hard work that golf requires. Way to “Manage Your Golf Game!”

What’s in store for 2015? Starting with winter, whether you find yourself in the Lowcountry, farther north or south this winter, it is a good time to re-evaluate your golf game and set goals for 2015. The Golf Academy has a couple options for you to consider before we get into the full swing of spring. Our Winter Series & Pub Night will bring two popular venues together at the Dye clubhouse by starting with the Winter Series Seminars in the Penthouse (Saturdays at 4pm) followed by libations of the Bagger Pub (5 pm). In March, we will also be introducing the Titleist Performance Institute Fitness Classes, along with the popular “Get Golf Ready” classes for newer golfers. The summer brings our TPI Junior Golf Camps, alongside the 2015 U.S. Junior Amateur Championship which should be exciting. In addition to our yearlong programs of private lessons, clinics and golf schools, the Academy hopes to help you reach our goal of creating a fun and productive learning experience for our members and their guests. From the Full Swing Building Block: WindHave you ever wondered how much the wind really affects your golf shots? Once again, TrackMan has given us the answer. Below is a chart showing how a 10 and 20 mph head & tail wind change the distance of a PGA Tour player (among other factors).

Wow, I love this information! I have been using it for a year now, and find it very accurate. I noted in the chart that although the spin rate stays the same, the landing angle changes, thus the carry distance changes and affects the roll of the ball.

In a nutshell, if I am hitting into a 10 mph head wind I will add 10% to the yardage, which helps me decide what club to use. For a 10 mph tail wind, I will subtract 10% from the yardage. No more “guess work” or “feel” and so far the results are good.

One of the largest and committed golf groups here at Colleton River is our Lady Linksters. These lady golfers are a dedicated group of golfers ranging from beginners and Nifty Niners all the way to 18 holers. I am currently testing the effect of wind on an average golfers shot, and will get back to you when I have the answer. Until then, try the 10 mph/yd rule and see how it works for you.

Fall Golf Event Spotlight


Our Thanksgiving and Annual Tree lighting were a great turnout and a huge success. Thank you everyone for sharing your families and holidays with us.

As our fall season winds down and the winter season approaches we are excited for all of our group holiday parties to begin and our in home catering parties to take place. Please contact me if you would like any help during the holidays whether it be a full party or if you need a platter to take to a party!

Lifelong Learning

The Lifelong Learning Group had a wonderful fall season. The presentation by Jeff Fulgham, author of The Bluffton Expedition, was very engaging and interesting. In addition to a book signing, the author answered questions about the remarkable day that Bluffton was burned during the Civil War.
