February’s here - along with two days that hold special meaning in my heart. Super Bowl Sunday (that’s right - the game’s now played in February) and Valentine’s Day. Both are catalysts for passion and physicality, but at completely opposite ends of the spectrum. Super Bowl celebrates the culmination of another rough and tumble football season, while Valentine’s Day fosters acts of love and tenderness.

Super Bowl Sunday is a day I eagerly await with somewhat mixed feelings. It’s the perfect opportunity to hang with friends and indulge in unhealthy food and a few adult beverages. The game itself is usually a blow-out, although the last few years have produced some incredible finishes. As the whistle blows at the end of the fourth quarter, I immediately sense the oncoming withdrawals, knowing I must wait another seven months for my next football fix.

Valentine’s Day provides an opportunity to share precious moments with the one’s we love. I recall a special Valentine’s Day in 1993. Visiting from Hermosa Beach, my girlfriend and I spent a romantic weekend in Dana Point, only to return a few years later, eventually calling the city home. We’ve stayed local since.

This month’s issue features the innovative and exceptional JSerra Catholic High School. Learn about their new Magnet Program; preparing bright minds for bright futures. We’ve also highlighted a few local venues where you and your friends can soak up some Super Bowl festivities. Read about Paws Pet Resorts’ Chris Pernick, whose efforts to place dogs with loving families through their Rescue Program will warm your heart this Valentine’s Day.

Thanks for taking the time to check out The Local DISH!

Here is Her remarkable approacH to emotional over-eating...

diet/bingeCycle

If you are one of the millions of Ameri-cans who try to lose weight each year—and fail— the Hun-gry Heart owner Lauren Grant wants you to know the so-

lution could be locked in your brain.

“I struggled for years gaining and losing the same weight over and over again,” Lauren shares. “I had tried every diet in the book, and struggled with stress eating and yo-yo dieting for years. I didn’t have a program like Hungry Heart to help me. If I would have, I know I could have achieved my goals a lot easier. It has now been over sixteen years that I’ve kept the weight off.”

“I consult with emotional over-eat-ers, yo-yo dieters, binge eaters and people who are constantly making poor food choices,” she says. “What I share with my clients is that we have to change our thinking before we can be permanently successful at losing weight.”

Most people try a diet, do well, and then gain the weight back, Lauren

Hypnosis helps us to get out of our own way so that we can efficiently achieve our goals.”

“All hypnosis is self-hypnosis,” Lauren mentions. “You cannot be made to do anything that is not a part of your personal value system. The only things I can suggest during hypnotherapy are the things that you truly want to do.”

She likens the feeling of being hypno-tized to driving a route you’ve traveled hundreds of times. “After awhile, your subconscious takes over. You might even miss your exit on the freeway, but you know that you are driving and could stop if the car in front of you stops.”

“Sessions are conducted on an indi-vidual basis, so we can personalize them to your own core issues,” Lau-ren says. “The privacy of personal sessions allows clients to get com-fortable and get their mind in the state it needs to be in.”

“We focus on two things,” she de-scribes. “First we find out how to help them discover what their motivations are for eating when they aren’t hungry. Then we replace eating behavior with something that serves them better.”

says. The Hungry Heart helps its cli-ents handle their emotions indepen-dently of the food.

It’s not a diet, she notes, instead, it’s about changing one’s mindset. Hypnotherapy, behavior modification, and nutritional counseling work together to help you lose the weight—and keep it off.

“We do an initial one-on-one consulta-tion with questions and answers, then decide how to put a plan in place,” she says. “Everyone is different and deter-mining what type of changes need to be made are unique to the individual.”

The hypnotherapy portion of the program, she points out, “is very effective in helping us to work with ourselves rather than against our-selves. Most of us know what we want to do but for some reason we are not doing it.

her at 877-486-4797 ext. 301.

The nutritional counseling buffers the hypnotherapy by helping clients learn how to shop for the right foods. Part of The Hungry Heart program also includes suggestions for exercise. Incremental changes are best,” she says. “We don’t just refer everyone to a big gym. This is about having our clients come out of the program with a better quality of life, having made healthy decisions because they want to, not because they’re supposed to.” Lauren shares that with her program, 85% of clients will stop overeating in the first two or three sessions.

some high school students know early in life where their career paths will lead. doctor. lawyer. cEo. Why wait until college to get pointed in the right direction? Jserra catholic high school in san Juan capistrano agrees that a student’s future success can be fostered today. their extensive professional magnet program, the first of its kind in southern California, offers students an opportunity to receive in-depth knowledge about specific vocations before stepping foot on a college campus. this fresh approach exposes young adults to professional interests early, enabling them to gain valuable insight and experience for college and beyond.

JSerra is already one of the nation’s best. The Catholic High School Honor Roll ranks JSerra in the top 50 Catholic high schools, among more than 1,200 in the nation, according to the National Catholic Educational Association. “There’s no doubt that any conversation about the best private high school education in southern California has to include JSerra,” says JSerra President and CEO Frank Talarico.

This spring, a light launch of the magnet program’s pre-med track will be offered to current freshmen, sophomores and juniors. Incoming freshmen in the 2010-2011 academic year will have the first opportunity to participate in the full, four-year pre-med program. The curriculum combines advanced classroom courses with practicum and simulation instruc-tion, along with lectures, demonstrations and internships.

Partnerships within the community are a key tool in broadening and strengthen-ing the program. Mission Hospital, for example, is assisting with formulating the pre-med offering, allowing students to shadow doctors and hospital staff. This practical knowledge offers students a first-hand view of what may be their fu-ture vocations.

“Students in the professional magnet program will graduate not only with a diploma from JSerra but with several

other things,” says Talarico. “They will graduate with an understanding of what they like or don’t like in medicine. Depending on how far through the program they go, they may earn a certificate in professional magnet studies, which is going to make their college application even more attractive. They’re also going to leave with contacts in the professional world that will serve them well after college.”

Once enrolled at JSerra, students may apply to the professional magnet pro-gram. Requirements include maintain-ing a minimum GPA, fulfilling practicum hours and completing a senior project. Business, law and religious vocations will be added next.

While immersion into the professional world is an appealing prospect to those in the magnet program, JSerra is fully committed to providing a well-rounded and dynamic experience for all students on its $110 million, state-of-the-art campus. Academic, college preparatory, spiritual study and community service create a foundation of excellence at this innovative high school. A variety of extra-curricular activities, including twenty plus athletic teams and a variety of clubs and community service projects fulfill a wide range of student interests. “There’s a genuine sense that everyone and everything is here to help students

reach their highest potential,” says Talarico. “Anything less and we just wouldn’t be JSerra.”

JSerra opened its doors in 2003 and graduated the first class in 2006. As the fifth class of seniors prepares to don their caps and gowns in just a few short months, they’ll join JSerra alum at some of the nation’s most prestigious universities, including Princeton, Yale, Cornell, USC and Baylor.

As JSerra continues to evolve, so will the very definition of a private high school education in southern California. Students from various backgrounds, including non-Catholics, travel from as far away as Yorba Linda and San Diego to attend the school. To accommodate those students commuting from outlying areas, JSerra provides a complimentary shuttle service to and from the San Juan Capistrano Amtrak station.

JSerra continues its commitment to offering financial assistance to families seeking help with tuition costs. For the current academic year, JSerra provided $800,000 in financial aid – an increase of 45 percent from just two years ago.

JSerra welcomes interested families to attend an Information Night and Campus Tour on Thursday, February 18th from 6:30 to 8 p.m. in the JSerra Center Room. To learn more, call 949.493.9307.

trevor cutler, from the class of 2010, has already received his acceptance letter from the United states Air Force Academy. “Jserra provided leadership and academic opportunities that prepared me for becoming a UsAFA candidate,” says cutler, 18. “From here, i hope to serve as a pilot or intelligence officer possibly followed by political service later in my career.”

dog, until his deployment days were over. He adopted little Hannah after she’d been hit by a car at only nine weeks of age, providing her with the skull sur-gery she needed and nursing her back to health. Unfortunate-ly, duty called and Mike was de-ployed once again.

Mike needed to find a loving home for Hannah. With no other options, he turned to Chris and Paws Rescue for their assistance. During an emotional departure, Mike handed Hannah over with tears streaming down his face. He knew Chris would find Hannah the home and care she needed. After only three months, Han-nah was placed with a local fam-ily and lives with her big brother, Cabo, a golden retriever. Love has found Hannah again. Her new family hopes to see Mike once he returns, reintroducing him into Hannah’s life.

Who needs candy when you can give something so much sweet-er for Valentine’s Day? What about a gift that keeps on giv-ing? Bring love and joy into your home through dog adoption at Paws Pet Resorts.

Paws has been a staple in the doggie daycare community for over five years. Their two family-owned facilities, in San Clemente and Lake Forest, are beyond your wildest doggie dreams. Each location is furnished with four playrooms, including an indoor pool and more toys and doggie playmates than you can shake a stick at.

Not only does Paws entertain and care for our canine buddies, but they have also been rescu-ing dogs since last February. It started with owner, Chris Per-nick, who began fostering ani-mals and setting up adoptions

for some of their clients who found themselves in difficult circumstances. “Unfortunately, sometimes dogs and families don’t match, or someone gets ill, or passes away,” shares Per-nick. When dogs need a new home, Chris has been willing to find one for them.

Since the beginning of 2009, Chris has been able to place 15 dogs in happy homes. At Paws Pet Resorts, they also spay and neuter the dogs, update their shots, potty train, instruct the dogs on how to walk on a leash and even teach simple com-mands like “sit” and “stay.”

Adoptions are now very close to Chris’ heart. She recently assist-ed a local Marine named Mike with his gut-wrenching situation, a redeployment and separation from his beloved Hannah. Mike had waited for years to adopt a

Paws adoption program would not be possible without the support of many local businesses and community organizations. These invaluable partnerships make Paws Rescue possible. ProJeCT FoundATion, where Chris has been a board member for two years, ALiCiA PeT CAre, MonArCh veT and PACiFiC CoAST veT, provide Paws with much-needed medical care and are vital to its success.

Paws currently has seven dogs looking for a happy home. Ranging from young pups to mature adults, in all shapes, sizes and personalities. Among them are an Italian GREYhoUnd, a CoRGi Mix, a REd nosE Pit and a YEllow lAB. Any one of them would make a wonderful new member of your family, bringing endless love and companionship.

Was Your Last Carpet CleaningA Disappointment?BIG

• Were they in-and-out of your home in no time at all?

• Did the same spots come back within a couple of days?

• Did it seem to take forever for your carpet to dry?

• Did you end up paying more then you were led to believe?

I’m glad to tell you “not all carpet cleaners are created equal.”

5 Reasons You Should CallHAINES & CROSS

2MANY SATISFIED CLIENTS. On request, we will provide you with names and phone numbers of happy clients who live in your neighborhood.

3MOST THOROUGH CLEANING. If you feel our carpet cleaning wasn’t the best, most thorough cleaning you’ve ever had, you don’t pay.

4FREE PRE-CLEANING INSPECTION. We provide you with a firm, written price quotation before the job, no hidden or surprise charges.

5YOU’LL GET TRAINED, SKILLED TECHNICIANS. Not kids, not day-laborers, not unskilled spare-timers.

1MONEY-BACK GUARANTEE. If you are not totally delighted with the results of our cleaning, we will not accept your payment.

Wow! My white carpets look brand new! I’m

through with any other carpet company — it’s Haines & Cross for me.

They were delightful, personable and profess- ional. They didn’t try to

sell me any more services like the other carpet

cleaners. I am so happy I called Haines & Cross.

Tony Carbonara’s reputation as the “unofficial Mayor of San Clemente” is well-earned; he is known by practi-cally everyone in town. The fact that Tony is adored and held in high re-gard does not mean that he coasts on reputation. He and the entire Carbonara staff take tremendous pride in creating the perfect dining experience.

Carbonara’s welcoming space, with dark wood ceilings and bright ac-cents, generates feelings that are at once inviting and intimate. Large windows open up to a lovely view of Avenida Del Mar, offering diners a neighborly, bistro-style vibe. Add an impressive, versatile wine list to the mix and these elements create the ideal venue for a special Valentine’s Day rendezvous (yes, gentlemen, this

is your queue to pick up the phone and make your reservation now).

The classic Italian cuisine and variety of options at Carbonara Trattoria make it a great choice for family, casual and special oc-casion dining. The tasty caprese salad starter is a delightful way to begin and their calamari appetizer is executed to perfection – crisp, light and tender. The second course at Carbonara is a bounty of sumptuous selections, from the strawberry and candied walnut infused Insalata di Frutta e Noci to the earthy yet subtly sweet In-salata de Spinaci. Delicious soups, such as the classic Minestrone or Stracciatella (spinach egg drop soup), are a great way to ward off winter chills.

Any Italian restaurant worth their fromaggio would have certainly per-fected their pasta dishes, and Car-bonara is most definitely no excep-tion. The magnificent Tortellini con Porcini, with its spot-on arrangement of cheese tortellini, porchini mush-rooms and creamy marsala sauce is simply indulgent. If you’re looking for a more adventurous plate, then the uniquely tart tomato, goat cheese and garlic white wine sauce which composes the Taglioline Caprini is definitely worth a try. Popular favor-ites like the lasagna, Penne Vodka and the Capellini Puttanesca further prove Carbonara’s expertise with traditional Italian staples.

Carbonara’s cuisine extends well beyond pasta. Their succulently su-perb half rack of lamb, house favorite

MaMa Mia! Buon appetito!

carbonara trattoria is every bit a san clemente institution as the surf and sand. the reason is straightforward and simple. For the past two decades, owners tony and mary carbonara have made it their mission to provide locals and returning visitors with a neighborhood italian restaurant featuring delectable cuisine, warm service and a cozy atmosphere that will have you feeling like a member of the family.

Osso Bucco and always intriguing fresh fish of the day (which on my visit happened to be a supremely tasty halibut) round out their wide array of menu offerings.

Be sure to save room for dessert. Don’t miss out on the unapologetically luscious tira-misu or the sinfully sweet, fruity goodness of the white chocolate wrapped mango-passion fruit sorbet.

After experiencing Carbonara, you will instantly understand why it has not only attained legendary status, but it is the pre-ferred caterer of the Ole Hanson Beach Club, Dana Point Yacht Club and Casa Ro-mantica, among many others (your next pri-vate event included). More importantly, you will enjoy a dining experience that you will look forward to repeating often.

Carbonara is open for lunch, Monday through Friday from 11:30 a.m. to 2:00 p.m. Dinner is served daily from 4 p.m. to 10 p.m. Nightly dinner specials are affordably priced from $10.95 to $21.95.
