Bonjour, Burgundy is a region we have a huge passion for, in fact of all the regions of France it is the area we spend the most time in every year (normally about 3 weeks). The people, the landscape, the small villages, the food, and of course the wine - what’s not to love. Unfortunately ever increasing demand is putting huge upward pressure on the prices. However don’t despair there is still value to be had, maybe not in the Grand Crus, but virtually next door, either just down the slope or maybe in the neighbouring village. We spend all our time in Burgundy looking for the value, whether it be an up and coming young producer or an under-rated appellation that flies beneath the radar. From antiquity (1st century AD), Burgundian vineyards have had a reputation synonymous with quality and prestige. From the Gauls to Napoléon, monks in the middle ages and the Dukes of Burgundy, all have played an integral part in influencing the vineyards, winemakers and the reputation of Burgundy’s wines.

What makes Burgundy unique?

What makes Burgundy’s wines so special? On one hand you have the unique vineyard sites and the other the winemakers who cultivate them. With mainly only two grape varieties (Pinot Noir for the red wine and Chardonnay for the white) and 1247 “climats” (individually classified vineyard sites), you have a complex geographic breakdown made up of a plethora of “human size” wine estates (between 7 and 8 hectares on average). Nowhere in the world has the land been classified in such minutiae, with such tiny productions creating so many AOC (Appellation Origine Controlee) which highlight the subtle yet profound differences as here in Burgundy.

The other part of the equation is the Burgundian winemakers. Perhaps nowhere else are they more closely attached to their vineyards than here. It’s normally a family affair with many domain having passed from generation to generation for centuries. When you visit a Domaine in Burgundy you know that the person you shake hands with in the cellar will also be the person getting their hands dirty in the vineyard.

The changing face of BurgundyLike the rest of France there is a massive changing of the guard, and now Burgundy is overflowing with young, educated and talented winemakers. In the last 20 years we’ve really seen the benefits of the french education system as sons and daughters join their parents at the family domaine. The big difference from previous generations though, is that instead of learning everything on the job, they’ve been to wine school, they’ve done vintages in other regions and other countries and so they bring a fresh perspective. This combination of modern techniques and innovations (mainly in the winery) combined with century-old know-how in the vineyard has kickstarted a revolution in quality. Amazingly it is also the young generation at the forefront of the move to more sustainable and environmentally friendly winemaking. Many practices developed in the 60s and 70s have been ditched in favour of the traditional biodynamic and organic principals employed more than fifty years ago.

There are still challenges however. The French land tax causes enormous financial stresses, the cost of land itself, a fickle global market (Burgundy is on a high at the moment, but it hasn’t always been like this), and then unexpected new enemies like the Suzuki fly.

Between past and future, Burgundy’s winemakers are walking a tight-rope, one that keeps the very high level expected balanced with contemporary concerns for the environment. A job they are excelling at.

Domaine Pierre GelinLocated in Fixin (pronounced fee-sin) at the northern end of the Côte de Nuits, Domaine Pierre Gelin is above all a family affair.Created in 1925 by Pierre Gelin, then operated by his son Stephen and since 2000 by his grandson Pierre-Emmanuel, the 13 hectare estate is more than a business, it’s a heritage, where knowledge, values and skills pass from one generation to the next.

The main focus at the domaine has always been quality, and for Pierre-Emmanuel this pursuit of excellence has allowed him to bring new skills in the winery (education, techniques and equipment) to compliment those of his father and grandfather. In the vineyard the approach is one of great respect for the environment. He follows organic princples, traditional viticultural practices such as lutte raisonnee, ploughing between the vines, and the use of natural fertilisers where necessary. Ultimately there is no secret - great wine is made in the vineyard.

The jewel in this crown is their monopole, Clos Napoleon. One of only six 1er Crus in Fixin, the two hectares of 50 year old vines produce around 10,000 bottles a year.

Domaine Pierre Gelin is the perfect illustration of the evolution in Burgundy today. The successful mix between tradition and the new generation.

RED - EARTHY - SAVOURY Beginning directly south of the bottom of the Cote de Beaune, the limestone is no

longer a continuous escarpment as in the Cote d’Or, it surfaces around the villages of Mercurey and Givry. Terrific wines that punch well above their level.

JOBlOT No-one who knows Burgundy would argue with the assertion that Joblot is the greatest estate in south-ern Burgundy. It is a very exclusive Domaine that we have been lucky to represent for more than 15 years. The wines have so much purity and precision!

Abbaye de Cîteaux mild, Creamy, semi-soft cheese

The Abbaye de Cîteaux cheese takes its name from the order of Cistercian monks who founded

a monastery in Burgundy. This handcrafted cheese is rarely found outside the region (even in France!)

as production is limited to 70 tonnes annually, from the milk of 70 Mont-

béliarde cows. We are extremely lucky to obtain a small supply of

such at L’Atelier du Fromage (available in April-pre-order is a must)

Roasted chicken “fermier” à la Dijonnaise • 1 Free range chicken 1.5kg• 2 Tbsp “Fallot’ Dijon mustard• 500ml fresh cream• 50g butter• 50g grapeseed oil• 200g aged Comte cheese

- Split the chicken in 4 (breast and legs).- Brown the chicken pieces, in a skillet , with oil and butter.- Season with salt, pepper and smoked paprika.- Roast the chicken pieces, in an oven tray at 180c for 30mns, with thyme and garlic heads split in two.- Rest the chicken pieces on a tray.- Keep the chicken juice.- Add the wine to the skillet, on medium heat, reduce down until you get 2 tbsp spoon of liquid left.- Add the cream and the chicken juices, cook down for 2 minutes.- Add 150g of Comte, the mustard, salt and pepper to taste.- Put the oven on grill function.- Place the chicken pieces on a oven proof dish, coat evenly with the sauce.- Add the rest of the cheese and the bread crumbs and brown until golden. Would be best served with a delicious mashed potato and a green garden salad. Don’t forget to match it with a bottle of Christophe Cordier Macon Milly-Lamartine 2013 Bon appetit!
