Our next Tenants Association meeting will be on May 2 at 6 PM In the Community Room. This will be our last meeting before the summer hiatus. Our next regularly scheduled meeting will be in September. If it becomes necessary, our president, Fred Haviland, will call for a special meeting at anytime.

At the May meeting there will be a lot to discuss, especially regarding specifics about our summer picnic, as well as old and new business. Even though there will be no meetings this summer, your Tenant's Association officers will still be working hard for you.

KINGSBORO TOWER TALK

A big thank you goes out to everyone who helped make our Rummage Sale a big success. We had a net profit of $815.76 after expenses.

Also, a big thank you goes out to our maintenance staff, who take care of the building and made sure that the sidewalks and parking lot were clear and safe during the past winter (hopefully we have seen the last of the "white stuff").

A special thank you goes out to Margaret Anderson, who does such a great job decorating the Community Room and the Lobby.

Thank you to Maggie and Joe Sierra for putting on the breakfast and dinners for a special price (Please check the bulletin boards for dates, time and menus).

Tenant's Association April Meeting Notes

Discussed at our April Tenant's Association meeting: The front office closed on April 8th. The front doors will remain locked. Do not let anyone into the building that is not a resident. Guests must use the intercom to contact the resident they wish to visit to be admitted into the building. Don't forget - to schedule maintenance assistance you need to call the emergency number listed in the brochure we were sent recently. Also, you must attend 4 Tenants Association meetings per year in order to qualify for special prices on dinners and events. You are responsible for signing in at the door for every meeting, so that your attendance can be recorded.

There will be a Mother's Day dinner on Saturday, May 7th, in the Community Room. There will be sign up sheets posted on the bulletin boards.

As a short reminder, it is a good idea to periodically check the bulletin boards during the summer months while Tower Talk is on hiatus for the months of July and August.

In Remembrance

Helpful Hints for Food Storage

•Uncooked potatoes can be stored in the refrigerator for three or four days if they are kept in water that has a few drops of vinegar added to the water.

•Store leftovers in the refrigerator in clear containers that allow you to see what is inside so that you don't have to take everything out. Square or rectangular containers take up less space and stackable containers take up even less space.

•Popcorn that's been kept in the freezer not only will stay fresh longer, but there will also be fewer un-popped kernels.

•To keep ice cream fresh, top with a piece of plastic wrap or waxed paper before closing the lid. Press it down over the un-used portion in the container.

•Toss out moldy bread without opening the package. Mold spores can live a long time in the air: An opened package may contaminate the kitchen and hasten spoilage of the the next loaf.

•Surfaces that have been in contact with mold should be wiped down thoroughly with a solution of vinegar and water.

Slow Cooker Beef Pot Roast

"The real secret here is making sure you sear the meat before the long, slow braising."

Ingredients

1 (5 pound) bone-in beef pot roastsalt and pepper to taste1 tablespoon all-purpose flour, or as needed2 tablespoons vegetable oil8 ounces sliced mushrooms1 medium onion, chopped2 cloves garlic, minced1 tablespoon butter1 1/2 tablespoons all-purpose flour1 tablespoon tomato paste2 1/2 cups chicken broth3 medium carrots, cut into chunks2 stalks celery, cut into chunks1 sprig fresh rosemary2 sprigs fresh thyme

Directions

• Generously season both sides of roast with salt and pepper. Sprinkle flour over the top until well coated, and pat it into the meat. Shake off any excess.

• Heat vegetable oil in a large skillet over medium-high heat until hot. Sear the roast on both sides for 5-6 minutes each, until well browned. Remove from the skillet and set aside.

• Reduce the heat to medium and stir in mushrooms and butter; cook for 3-4 minutes.

• Stir in onion; cook for 5 minutes, until onions are translucent and begin to brown. Add garlic, stir for about a minute.

• Stir in 1 1/2 tablespoons flour; cook and stir for about 1 minute. Add tomato paste, and cook for another minute.

• Slowly add chicken stock, stir to combine, and return to a simmer. Remove skillet from the heat.

• Place carrots and celery in the slow cooker. Place roast over the vegetables and pour in any accumulated juices. Add rosemary and thyme.

• Pour onion and mushroom mixture over the top of the roast. Cover slow cooker, turn to high and cook the roast for 5-6 hours, until the meat is fork tender.

• Skim off any fat from the surface and remove the bones. Season with salt and pepper to taste.

Ricotta Pie (Old Italian Recipe)

"This is an old Italian recipe for a pie with a sweet crust--just like from the old country. My in-laws are Italian and they say that this is the best pie. It is always requested for Christmas. Mini chocolate bits and lemon rind can be mixed into the batter."

Ingredients

Pie Filling:12 eggs2 cups white sugar2 teaspoons vanilla extract3 pounds ricotta cheese1/4 cup miniature semisweet chocolate chips, or to taste (optional)

Sweet Crust:4 cups all-purpose flour5 teaspoons baking powder1 cup white sugar1/2 cup shortening, chilled1 tablespoon shortening, chilled4 eggs, lightly beaten1 teaspoon vanilla extract1 tablespoon milk (optional)

Directions:

Beat the 12 eggs, 2 cups sugar and vanilla extract together in a large bowl. Stir in the ricotta cheese and the chocolate chips. Set aside.

Combine the flour, baking powder, and 1 cup sugar together. Cut in 1/2 cup plus 1 tablespoon shortening until the mixture resembles coarse crumbs. Mix in 4 beaten eggs and 1 teaspoon vanilla extract. Divide dough into 4 balls, wrap in plastic, and chill for at least 30 minutes.

Preheat oven to 325 ° F (165 ° C). Grease two deep-dish pie plates.

Roll out 2 of the balls to fit into the pie pans. Do not make the crust too thick, as it will expand during cooking. Do not flute the edges of the dough. Roll out the other 2 balls of dough and cut each into 8 narrow strips for the top of the crust. (Alternately, you can use cookie cutters and place the cutouts on the top of the pies.)

Pour the ricotta filling evenly into the pie crusts. Top each pie with 8 narrow strips of dough or cookie cut-outs. Brush top of pie with milk for shine, if desired. Place foil on the edge of crust.

Bake in preheated oven for 20 to 30 minutes; remove foil. Rotate pies on the rack so they will bake evenly. Continue to bake until a knife inserted in the center of each pie comes out clean, 25 to 30 minutes more.

Cool completely on wire racks. Refrigerate until serving.
