When the doors opened at The Anthony School for the 2010-11 school year, students had a lot to cheer about. Faculty and staff greeted them with enthusiasm in colorful classrooms with new technology and innovative ideas ready to challenge students to reach their potential.

The educational landscape evolving now at The Anthony School is a powerful force for change. Professional leaders at all levels collaborate because they share a vision for the school and for each child entrusted to them, and they think beyond the boundaries of their own school.

The Anthony School continues to embrace the strong foundations of the past sixty-five years, the foundations that anchor the stability of the mission of the school. The mission of The Anthony School is to educate children from pre-kindergarten through the eighth grade in a challenging, loving environment which empowers them to become efficient, independent, excited learners.

Our school community is enjoying new additions in ever-expanding ways. The new cafeteria/activity area has opened more avenues of educational opportunities within the school as the students have taken advantage of every occasion to be onstage. This year, the cafeteria will also be available for events and groups that may need a large area for their special activity. The new soccer/multi-purpose field and the running trail have been a great workout area for our Anthony teams, as well as a walking area for our neighborhood community.

Investing in the future of a student at The Anthony School reflects your commitment to ensuring that the school continues to be a premier academic PreK 3 – 8th grade school in the state of Arkansas. I would like to welcome everyone back for another exciting, innovative year at Anthony. We are fortunate to have this school and its teachers for our children. I hope allof us will do our part, whether administrators, teachers, parents orchildren, to make this another successful year.

Anthony has had some exciting additions and upgrades to our facilities over the past year, but our school mission needs to be paramount. Our mission is to educate children from pre-kindergarten through the eighth grade in a challenging, loving environment which empowers them to become efficient,

independent, excited learners. I would like the Anthony community to continue its dedication to the fulfillment of this mission. I strongly believe that our board of trustees should lead the way in this effort. Our board has many talented members who are committed to this school and to our children. We want all Anthony children to be challenged to reach their academic and social potential in an environment of love and mutual respect.

We are the windows through which our children see the world. Join me and let’s make their world here at Anthony a worthwhile and uplifting vision.

Culinary ConsulTanTs Mission sTaTEMEnT

The Anthony School is fortunate to have a vast diversity and numerous cultures represented within our school. Culinary Consultants wants to expand the culinary ex-periences for our students, teachers, and staff by pro-viding a nutritious and well balanced lunch program. This culinary mission is designed to compliment The Anthony School’s innovative ways that has made The Anthony School the leader in education. The Anthony School Lunch Program will focus on limiting processed foods, added sugars and colored dyes while moving to-wards organic, healthy options for our students.

I believe we achieved the amount of success at The Anthony School by simply being different and unique. We do have very tasty, innovative fresh food, but the key is to give the students something different. It would be easier to serve hot dogs, pizza, and nuggets, but that would never inspire. When we offer a wide variety of cuisines, we make a lunch a culinary experi-ence rather than a time to eat between classes and recess.

The first year lunch program exceeded our original expectations. The previous year lunch numbers were very low due to the quality of the lunch program. Some records showed that 20-25% of the students ate the lunch program on a regular basis. At the end of our first year, we doubled that number to an average of nearly 50% of the total Anthony student base ate

from our lunch program. Some of the typical responses that I heard from parents were, “they never like to order off the kids menu at restaurants any-more” or “they want to try something new all the time”

The global menu concept focuses on fresh ingredients to expand the students’ culinary palettes. Most of the dishes are developed as authentic to develop and expand their current tastes for a specific region. We offered over fifteen different cuisines from regions all over the world. This concept alone inspires at least a conversation about what they were going to eat. The point of conversation is where it all begins either with the parents, students or with the chef to look outside the box.

We eliminated all of the dessert options to the lunch program. More refined sugar is not needed in a student’s daily diet. We also removed the carbonated beverages from the cafeteria. We include a choice of four bever-ages in each lunch; milk, chocolate milk, fresh orange juice and bottled wa-ter. With the deletion of the dessert option, we replaced it with an assort-ment of fresh salads, fruits, and side dishes that accompany the main dish.

Culinary Consultants encourages parents and grandparents to join their students for lunch. This is a great way for the students to spend added time with their special guardians. In addition, it allows the guardians to ful-ly understand the style and quality of The Anthony School lunch program.

Throughout the school year, I noticed a few keys of success that allowed me to know that we are on the right path. From the begin-ning of the school year to the end, there was a dramatic drop in the amount of Ranch dressing being requested to our homemade global options. Second, there were also many more inquiries and questions regarding menus and ingredients on a daily basis. Almost so many

that it would stop the lunch line completely. Third, when a student did not want to attempt the global option of the day, they would still order the global soup and salad option. These may seem like very small achievements, but when so many students only exposure to food is peanut butter and jelly, nuggets, and frozen dinners, these are great strides.

As innovative as the menus are for a school lunch program, there are a few basics that I created to bring the students into the culinary realm of possibility. The three favorite cuisines enjoyed are the Southwestern, Ital-ian, and French regions. These familiar cuisines were used more often to introduce to the students that we use fresh ingredients in a very tasty man-ner. Fajita Style Quesadillas with Grilled Peppers, Onions and Chicken and Jicama/Tomato Pico is the favorite Southwestern menu item. The Ital-ian favorite was the Four Cheese Manicotti with Rustic Marinara, Caprese Salad and Balsamic Vinegar and Croque Monsieur with Herbed Potatoes and Béchamel Sauce is the favorite French dish.

Chef Paul Novicky’s mission is to create a culinary experience for stu-dents, staff and even parents that will provide a nutritious lunch program while opening up a new world of culinary possibilities. This mission is designed to compliment The Anthony School’s innovative approach to education “where students become independent, excited learners.”

Anthony Spelling Bee was more exciting this year because several elementary students remained in the competition for a longer time than in past years. Tension mounted when the two finalists, Ankita Das and Ben Winter, remained to vie for the win. Since both are good spellers, finding a winner took several minutes. There were some misspellings from each of them, but when one would miss a word, the other would do the same.

Both students should be commended for their grace un-der pressure. Congratulations to Ankita Das for being the 2009-2010 Spelling Bee Winner. We are proud of her.

Gym Makeover Gives Panthers a Real Home Court Advantage

When I started at Anthony in 2005, Sharon Morgan (Head of School) shared a vision of having a modern gymnasium for the students to be happy with and proud to call their “home court.” That vision became active in October 2009, when I decided to raise the money to get this project done and completed over Christmas break.  

The gym was constructed in 1994 and had not been renovated since construction.  Fifteen-years later, we have the best looking middle school gym in Little Rock, if not in the state of Arkansas.  The renovation process consisted of a new gym floor logo, red wall pads with art work, and a new score table.

It was hard work putting my ideas on paper since I am not an artist. With the great staff we have here at The Anthony School it was not hard to find good dependable help. Laura Jones (PreK 3 teacher) was instrumental in putting my ideas on paper and revamping the logo. Without her, taking the vision from concept to paper would

not have been possible.

There were 16 families that contributed to this worthy cause. For more than fifteen years, the fifth-grade classes at The Anthony

School have selected Heifer Project International as a yearlong service project. Before visiting Heifer Ranch, the students are shown a video explaining the purpose and history of Heifer Project. They then take a field trip to Heifer Ranch in Perryville where they participate in several hands-on activities and tour the global village.

While in the global village tour, students begin to grasp the idea that many children in other cultures struggle for their basic needs. At this time, they are introduced to the “Seven M’s,” which are meat, milk, money, muscle, manure, materials and motivation. These seven words are what a Heifer animal provides for a family. Students also learn about “Passing on the Gift,” which is a requirement for receiving a Heifer animal.

Although participation in the service project is optional, most students are eager to become involved. The students may work individually or in small groups to

raise money. Everyone may participate in the quarter tube. Mrs. Glover keeps this tube in her classroom, and when it is filled with quarters, which holds $125.00, the students decide if they want to purchase a sheep, goat or pig.

This past year, several creative projects came into being. Dog blankets were made and sold, two students organized a traveling dog wash, candy kisses were bought and delivered for Valentine’s Day, and several bake sales were held. One project that involved the entire school was “Make the Teacher Do It.” Students paid to vote on what they wanted each participating teacher to do. After all the votes were

tallied, Mrs. Hesselbein dressed up in a heifer costume, Coach Tim wore a dress, and Ms. Morgan kissed a pig. Heifer Ranch thoughtfully brought the pig to our gym.

The fifth graders begin their project in October and end in May. The students, teachers, and school accountant keep up with the money collected. Many discussions are held in May when each group or individual decides which animals they wish to purchase. The Fifth Grade classes of the 2009-2010 raised $1,824.60. They were able to fill the quarter tube one and a half times. They decided to purchase everything from a water buffalo to chicks.
