As we roar into another Holiday sea-son, we have certain expectations: there will be a Christmas lighting ceremony down-town, St. Mark’s will host a pageant, people will flock to the Country Pastimes Market in Lemonville, and the Stouffville Lions Club will be selling Christmas trees at Canadian Tire. Each year around this time the Lions also hold a toy and gift drive for children. Drop off points such as the Fire Halls, Town offices and recreation facilities, and private businesses are organized, while gifts of toys and food are deposited by the public. Families in need are self-identified and given the opportunity to apply for a Christmas Basket.

In the hustle-and-bustle of everyday life, we sometimes forget that our expectations include the generous activities of others, with-out recognizing the significance.

Without the Stouffville Lions Club, the Stouffville community would not be the same as it is today. The Stouffville Lions is coming up on its 81st anniversary (formed January 13, 1938). Over the years, Stouffville Lions have contributed to the social fabric of the community, from organizing Christmas light tours for seniors, fishing derbies at Burd’s Trout Pond and funding student art shows, to participating in annual events and supporting local sports teams. A brief historical media scan reveals the following:

In the mid-1940s the Lions Club Winter Carnival routinely drew crowds up to 800 people, while at the same time the Lions bought shares to help build a new local ice arena, and they supported British bomb victims. Between 1950-53, Stouffville Lions continued providing free eye exams and TB chest x-rays for children, installed new base-ball bleachers, hard-topped the tennis courts, coordinated the Easter Seals campaign, and supported overseas flood victims.

In 1965, they installed a swimming pool heater, held a music festival, and sponsored a teen dance at the Stouffville High. In 1972,

the 2nd annual Lions Bike-a-thon attracted 550 cyclists, and they purchased and oper-ated a 40-seat bus for the transportation of local sports teams and organizations. In 1986, Stouffville Lions hosted Ontario Premier David Peterson at their Barbecue in Town Park, held an Elimination Draw & Dance at Cedar Beach, and subsidized a new heating system in the Rec Centre.

I fell short of reading the more than 5,200 articles available in the WSP Library’s online database. However, evidence abounds – they helped reconstruct the pavilion in Memorial Park, built the gazebo on Main Street and installed the plumbing and electrical work in the Stouffville Train Station. They operated Stouffville’s outdoor swimming pool for many years. The Stouffville Lions Club also supports the work of Lions International.

It is important to note that Stouffville Lions Club, as do all other Lions Clubs, devote all monies raised from the public to our philan-thropic activities. The cost of administering the club is borne by all club members directly through fees, raffles, dinner meetings, etc., and does not come from any public source. The Club is not political or religious nor does it allow members to use club activities to pro-mote their own personal advantage. They exist only "to Serve".

As for the Christmas Tree sales, they start at the end of November and continue until all trees are sold or Christmas happens, which-ever comes first. Each year Canadian Tire has helped them by providing this space togeth-er with fencing, security and the use of their electricity. Their sales personnel come from club members and a wide army of volunteers from the WSP Library, Hagerty Insurance, High School students accruing service hours, and Stouffville Boy Scouts. Tree sales account for about 50% of Stouffville Lions’ income for the year. All profit goes into the Club’s Activity Fund for philanthropic pursuits.

For the rest of the year, Stouffville Lions are busy with their School Vision Screening Program, offering assistance to people and families on a case by case basis, and operating the Rubber Ducky Races during Strawberry Festival. Recently they financed the early lit-eracy child learning computer section at the “new” Library. The Lions assist the Stouffville Scouts group to attend a Jamboree, the St.

James Student Music Program, the High School Music Program, and The Latcham Art Centre Student Awards.

The Stouffville Lions Club have an accom-plished record. The Club is stable with 26 active members coming from all walks of life; however, more members equate to more community activity. The organization is open to all genders and ages, and meets on 2nd and 4th Mondays of every month at Latcham Hall starting at 7pm.

Where Business meets CommunityMatthew Roncadin introduces Graydon Card and David Barthau

It was a warm autumn day. We were amid of a coffee-meeting at a sidewalk table in front of the Main Street Bakehouse when Matthew Roncadin walks by. I said, "Hey Matthew, name some great businesses in Town." Matthew said, "That's easy - Card's and Barthau."

Graydon Card runs the family business Card's Appliances & Televisions. His daughter Ainsley is often found at the helm as well. David Barthau owns a business with family members, named Barthau Jewellers.

David’s dedication to his craft is unmatched and really makes a difference. It’s a real jewel in Stouffville," laughs Matthew, regarding his pun.

Ironically, both Graydon Card and David Barthau have been in business for 51 years. They have both served on Town committees and in community organizations for decades. They have been business neighbours at different times.

Matthew Roncadin is a Financial Advisor for Edward Jones. He has lived in Stouffville for the last 11 years. "My wife Jacky and kids Virginia and Simon are so happy to be a part of a community. My clients are all over town and I’m always so proud to run into them over the weekends at local stores," he said. Matthew served 4 years on the board of the Chamber of Commerce and supports local community events whenever possible. "My favourite part of Christmas in Stouffville is the tradition of cutting down our tree at a local farm on Kennedy," reflected Matthew.

Unfortunately, Barthau Jewellers was robbed mercilessly last summer. It took both a physical and mental toll on David, and took many months to get the business back to normal.

Don't underestimate these little goodies. After leav-ing Karen and Guy's house on Warden, I ate one before reaching Springvale, and then another before reaching Ringwood...

• 1 cup all-purpose flour• 1/4 cup granulated sugar• 1 cup butter (divided)• 1/2 cup brown sugar• 1/2 cup sweetened condensed milk• 2 tbsp. corn syrup• 100 grams milk chocolate bar or 2/3 cup choc. chips

In a medium bowl combine flour and sugar. Using finger-tips, mix in 1/2 cup butter until mixture resembles coarse crumbs. Press into an ungreased 9-inch square baking pan. Bake 15 min. in preheated 350 degrees F. until it just begins to brown.

In a saucepan, combine remaining butter, sugar, con-densed milk, and corn syrup. Over medium heat, bring to boil stirring continuously. Cook & stir 3 more min. Pour mixture over cooked base. Cool slightly. Spread chocolate over caramel. Refrig. 30 minutes. Serve.

JOANNA VAN GINKELSteak and Guinness Stew

Joanna is the Chef at the popular and cozy Coach House Pub in Ballantrae. For the Holidays, she delivers dinner.

• 1 5lb boneless beef blade – large dice • 2 medium carrots – large dice• 2 medium onion – large dice• 3 celery stalks – large dice • ½ litre of quartered mushrooms (button or cremini)• 2 bay leaves • 1 sprig rosemary - fine chop• 1/3 can of tomato paste• 20 oz Guinness stout• 2 litres of flavourful beef stock• ¼ litre of beef thickener • Salt and pepper to taste

Season beef generously with salt and pepper. Heat Braising pan – medium heat (3-5 mins), add veg oil, and heat (until you see movement in the oil- like small waves) and add beef in batches, careful not to over-crowd the pan. (Beef chunks need room to breathe to brown properly, otherwise, the beef will boil - not achieving the browning we are looking for). Sear all the beef, remove from pan, add onions. Sauté until they begin to brown. Add tomato paste and cook out stirring constantly. Then add Guinness, and with a wooden spoon scrape all the brown bits from the bottom of the pan. This will bring more flavour to the sauce you are building. Add all the browned beef back to the pan, as well as all the vegetables. At this point, you can add your flavourful beef stock, bay leaves and rosemary. Let this simmer for about an hour on medium-low heat. Rapid boiling will not benefit the stew and will break down the vegetables. Stir occasionally and skim off any foam from the top of the surface (these are impurities). Once the beef is tender, stir in beef thickener until smooth. Check for seasoning and adjust if necessary. Serve with a crusty roll, or puff pastry.

On a wintery night in 1943 at Foynes Port, the Irish Coffee was created to warm up cold and weary pas-sengers grounded at an airbase close to Limerick, Ireland. In light of a recent trip to Ireland, and the holiday season is a time to indulge...

Velvet Sunrise version of Irish Coffee • 2 oz. Irish whiskey (has to be Irish!!!)• 1.5 tbsp unsalted butter• 1.5 tbsp Demerara sugar • 2 oz. shot Velvet Sunrise Espresso (decaf works) • 3oz. hot water• 3-4 tbsp softly whipped cream, unsweetened

Dissolve sugar in the butter over medium heat. Be careful not to burn it! Turn off the heat. Remove pot from the burner. Pour 1oz. of whiskey into the hot sugar mixture. Use caution as it will splatter. Stir to dissolve. Pour the other 1 oz. of whiskey in your heatproof presentation glass. Pull your double shot of espresso and add it to the glass along with the water. Add the sugar mixture to the glass and stir briefly. Top with the softly whipped cream. It should be pourable, like thick cream. Serve immediately!

BRANDI PICKERINGChocolate Cake Donuts (no yeast)

I was raised by a mom who bakes lots of yummy things but most were always more appealing to the older generation than the kids. During the holidays I like to bake more for gifting purposes than anything else. These donuts look so festive and fun and can be given as host/hostess gifts or to your kids’ teachers and make you look like a champion baker with very little effort! I prefer to use a donut pan but you can create a makeshift one with tin foil – give it a google. These gems pair well with a glass of red wine or white milk.

• 1 cup all-purpose flour• 1/2 cup unsweetened cocoa powder• 1/2 teaspoons baking soda• 1 teaspoon baking powder• 1/3 cup brown sugar• 2 tablespoons sugar• pinch salt• 4 tablespoons butter, melted• 2 eggs• 1 teaspoon vanilla extract• 3/4 cup sour cream

Preheat oven to 350oF. Grease your donut pan or your makeshift foil one with cooking spray or margarine. Sift together the flour, cocoa powder, baking soda, baking powder, both sugars, and salt. In a separate bowl mix together egg, sour cream, and melted butter. Add the wet ingredients into the dry and gently mix to a smooth batter. Add batter to a piping bag or Ziploc bag (I find the Ziploc easier). Cut a corner off to pipe into donut pan wells. Fill them no higher than 2/3 of the way up so they don't bake over. Bake donuts for 10-12 minutes or until a toothpick comes out clean. After 3 minutes, pop them out of the donut pan and onto a cooling rack to cool until warm to the touch. Dip the top of each donut in icing and then sprinkles to make them super festive. Serve warm or at room temperature. Store in an airtight container for up to 3 days.

Mulled Red Wine Jellies with Cinnamon Cream

This delicious chilled dessert made of mulled wine and spices makes the perfect holiday treat.

For the Jellies:• 750ml bottle medium-bodied red wine, such as Merlot • 1 cinnamon stick • 1tsp cloves • Zest of 1 orange, plus 100ml• (3½fl oz) freshly squeezed juice • 1 bay leaf• 225g (8oz) icing sugar • 1 packet gelatin (such as Knox, unflavoured).

Place the wine, cinnamon stick, cloves, orange zest, juice, and bay leaf in a saucepan, and gently heat until almost boiling. Remove from the heat and leave to infuse for 15-30 minutes. Prepare gelatin according to package instructions. Meanwhile, strain the wine through a fine sieve into a clean saucepan.

Heat again until almost boiling. Stir in the sugar until dis-solved. Stir prepared gelatin into the wine until totally dis-solved, and then divide between wine glasses. Cool to room temperature, then chill to set in the fridge for about 3 hours, or overnight. When you are ready to serve the jelly, top with lightly whipped cream mixed with icing sugar & cinnamon, spoon on top of the jelly.

ANTONIETTA& HEATHERPlain Jane Cheesecake

Cheesecake made with Greek Yogurt makes for a guilt-free sweet dessert.

For the Jellies:• 3 Eggs• 3 cups of non-fat plain Greek yogurt "or" non-fat plain yogurt (for thicker slices use 5 cups) • 1 (1oz) small box instant sugar-free or fat-free cheesecake or vanilla pudding • 1 Tbsp. vanilla extract • 3 Tbsp. sugar substitute • 1 can of the No Sugar Added Cherry Pie Filling and Topping

Preheat oven to 350 degrees. In a mixing bowl add eggs, sugar substitute, extract and mix well using a wire whisk Then add yogurt and dry pudding, mix well. Pour into a lightly greased with non-stick cooking spray pie dish or springform pan. Bake for 30 mins (it may look jiggly but once it’s chilled, it will set). Let it cool for about 15-20 mins before covering it with plastic wrap. Let it chill overnight in the refrigerator. Top it with the No Sugar Added Cherry Pie Filling and Topping.

Servings: Makes 4 slices / 1 Freestyle Smart Points each

Crosswalk coming to Main GO Station? Lack of signal crossing “leaves risk to residents” from vehicular traffic: CouncillorGlenn Jackson, Contributor

Main Street Crosswalk. The idea of having a crosswalk in the vicinity of the Main Street GO station has been a topic of discussion for many years. It has been the subject of, at least, three separate Council reports over the past ten years and was brought up again at the October 8 meeting.

Councillor Sue Sherban (Ward 6), tabled a motion at the meeting to direct staff to study the feasibility of a crosswalk and to proceed with an “Environmental Community Consultation Assessment.” Staff will also study costs and design options so Council can consider them during 2020 Capital Budget deliberations (scheduled for December 3, 2019).

In the report, Councillor Sherban cited three previous times when Council had debated the issue of building a crosswalk. According to her motion, all the reports recommended the implementation.

In the motion of October 8, Sherban notes that GO trains trips “have increased from 3 return trips a day” in 2000, to “7 morning and 8 evening trips with 12 cars on some busier trips to and from Union Station” in 2013. At the same time, as Sherban noted, the Town’s population has increased “from approximately 30 (thousand) to 49 (thousand) and those using the GO trains have increased with the population growth.”

As part of the study, staff will analyze various locations for a crosswalk. Previous studies and reports have identified Edward Street, Blake Street, Lloyd Street or Freel Lane, as the best possible location.

Extended School Zone. Earlier this year Council added new Community School Zones in nine school areas throughout the Town. During the process, it was recommended that the Community School Zone near Summitview Public School (Main Street and Stouffer Street), be extended nearly a half a kilometer to the east.

Council approved this change at the October 22, 2019 Council Meeting.

According to the staff report, “drivers traveling westbound (on Main Street) do not always adjust their speed from 50 km/hr. to 40 km/hr. when passing Tenth Line.” Because of this, “there is a need to bring increased attention to the importance of the change in speed, and ... provid(e)... an earlier warning of the approaching school zone.”

Development at Main & Weldon. On October 22, Council heard comments from the public regarding a number of zoning change requests from LivGreen Main Street Inc. LivGreen are wanting to build a 8-storey mid-rise residential building, with commercial retail stores on the ground floor, on the corner of Main Street and Weldon Road.

In order for LivGreen’s application to be accepted, a zoning by-law amendment and an Official Plan amendment must be made.

The zoning requests include a reduction in the size of the front yards, an increase in the maximum permitted residential density and an increase in the maximum allowed building

height from 20 metres to 29.25 metres.The Official Plan amendments include a

request to increase the residential percentage of a mixed-use development from 30-60% to 96.6%.

Staff are currently analyzing the public comments and will report back to Council for approval at a later date.

At the same Public Meeting, Council also heard the comments regarding a development of 141 single detached dwellings on Lakeshore Road at Musselman’s Lake. The developer, Far Sight Homes, is asking for an Official Plan Amendment, Draft Plan of Subdivision and Zoning By-law Amendment.
