She’s mature for her age, and in the way she speaks, it’s immediately apparent how intelligent and observant she is. Sensitive, too. She’s close with her mother. She has an after- school job at The Dog House in Sterling. She thinks about her future, and what she might do when she grows up. “I kind of want to be a police officer,” she says. When she was 10, her father died – his life cut short by suicide. It’s an event that shaped Ciara Dickson’s interests and the trajectory her life has taken. She’s now an advocate for suicide awareness. It’s a cause she’s pas- sionate about, and some- thing she doesn’t shy away from talking about, although not really a topic she broaches with her friends. It makes them uncom- fortable, especially because they know about her dad. But, she says, that’s just the problem. Suicide and the mental illnesses that lead to a person’s deci- sion to take his own life shouldn’t be a closed- door discussion. Educa- tion is the key to open- ing that door, experts say, and it’s what needs to happen to people in the Sauk Valley, even for those as young as mid- dle-schoolers. After the training, Ciara started to recall the signs in her dad’s actions, too.

“He was doing a lot of stuff that my dad wouldn’t have done,” she says. “My parents owned a business, and that was his baby. ... He closed that. He would’ve never done that. He just closed it down one day and left. He cheated on my mom. He would’ve never done that. He

stopped talking to me. He would’ve never done that. ... He signed all of

his checks before he left. He left cash on my floor, and then he just walked

out.”

THE PEOPLE’S VOICE | SCHOOL PROGRAM CUTS

Heard this one? A band director, a football coach,

and an autistic teenager walk into a bar. The bar-keep, his back turned as he cleans glasses, says, “We don’t serve your kind here.” All three patrons turn around and leave.

Why? Because they’re all one and the same.

Did I mention I’m really bad at telling jokes? But I’m willing to stick my neck out and write, attempt and self-depre-cate, thanks to the arts.

Trust me, this will all make sense by the last line of this column.

Given, it’s a small sample size. But two con-secutive column subjects of mine have been pro-foundly affected by cuts to music programs.

I would guess that if I spoke with a music edu-cator every week, there would be little deviation.

Two weeks ago, I chat-ted with Dave Johnson, whose wife, Ruth, was recently assigned to teach second grade after 28 years of directing the band at Reagan Middle School.

Two days ago, I had a very inspiring conversa-tion with Matt Eaton. We’ve got a ton in com-mon, and I thought one of those things was that we both had been told by an employer, “Look, you’re great, but we’re slashing your position.”

Turns out, Eaton wasn’t let go by Stillman Valley School District, 7 years removed from winning one of five prestigious Mr. Holland’s Opus awards (more on that next weekend, when I’ll profile Eaton in the latest

People’s Voice column and podcast).

Perhaps worse yet, Eaton was told that he would no longer direct/mold/inspire sixth- through eighth-graders. His band would now include high-schoolers, too, approxi-mately tripling its size.

“I’d have two full-time jobs, is basically what they told me,” Eaton said.

I’m not going to pretend I’m oblivious to the state’s economic plight, and that the rebuilding of pension funds is hitting schools in a way they’ve never been hit before.

But try to tell me the arts department isn’t the first to get hit – nay, often obliterated. And tell me there aren’t administra-tors everywhere who slash the easy target, balance the Rubik’s Cube that is their budget, then dash in a year or 2 for a job in a bigger, perceivably better district.

Rather than wait for your dissent, I’ll proceed to explain why such logic is flawed.

Bear with me, as this is personal. But, then, the arts are very personal. For me, when I got hurt playing hoops, the choir, musicals and plays were my saving grace, allow-ing me to express myself. Because of the opportu-nity to perform, I didn’t forget that I was talented. Special, in my own way.

It helped me to open up, make friends, land dates to dances, and just be a better-adjusted teenager, in general.

For so many youngsters, mastering a piece, an instrument, that one line in the play – or just get-ting on stage, period – is

the first domino. When it falls, it knocks down bar-riers, whether academic, athletic, interpersonal, you name it.

“Everything,” Eaton said. “It knocks down everything.”

Perhaps the greatest case Eaton has seen is Jer-emy Van Drew, a 27-year-old man he taught for more than 10 years, until Eaton and his wife, Lisa, moved to Oregon 4 years ago.

Eyebrows raised and uneducated opinions flew when Eaton said he was sharing his passion with an autistic child.

“The way that he devel-oped, and the way he processed information, … people say autistic kids can’t do that. … Baloney,” Eaton said. “He’s the per-fect example of ‘Yes, you can; yes, you can do all those things.’”

Suffice it to say, the arts unlock potential. And their relationship with other realms inside and outside the walls of class-rooms is more symbiotic than you might think.

“Music incorporates everything,” Eaton said.

Linguistics are vital to the arts, whether learn-ing to sing in Italian or exploring Shakespearean vernacular.

Math is equally integral in music. From the first time a student learns the value of a dotted eighth note to his mastery of complicated time signa-tures, that’s math, baby.

How about anatomy? Physical education? When Eaton learned a new breathing technique from a colleague in New Jersey and applied it to his band, he says, the results were

“amazing.”“That one little thing

changed everything about the way I approached the band, started the band, taught lessons,” he said. “It made the band sound bigger and made them pay attention better.”

In turn, lessons learned in the band or choir room, or on stage, feed into other classrooms.

Oh, and that wall between the band room and locker room isn’t as thick as you’d think. Eaton has been tight with football coaches wherever he has taught. In fact, he thinks that if he had not gone into music, he might have gone into scouting.

It’s just another piece of evidence that there isn’t the rest of the school, then the arts. The best schools use the arts to enrich the rest of their departments, and vice versa.

I’m not one to shed light on a problem without proposing a solution. I realize there’s a lot of pressure on districts to balance their budgets, and there are no collateral damage-free decisions.

But it’s unfair to take the blade straight to the arts. Cut across the board. Ath-letics, too. The director, the football coach, and the autistic teenager are all the same. All humans with potential, hopes, dreams and limitations. They all deserve fair treat-ment.

It’s not going to be easy. It’s not supposed to be. And that’s why I hope the consciences of those who take the easy way out and gash the arts have very comfortable pillows.

Most herbs defy easy description. Try-ing to discuss the

flavor of thyme or oregano leads only to vague adjec-tives. Calling rosemary “woody” doesn’t quite cut it.

But tarragon is easy. Tar-ragon tastes sort of like licorice.

It does not taste entirely like licorice; if it did, people would just put licorice in their food, and that would be gross. But tarragon is certainly reminiscent of it, in a mild way.

This is not to say that tarragon itself is mild. It is quite strong; a little goes a long way. But when that little bit is applied to the right dishes, the result can be divine.

Most frequently, it is used as a bright punctuation to chicken, both in its later form (chicken) and its early one (eggs). Snip a few tar-ragon leaves over scram-bled eggs and you have instantly elevated your breakfast. Mix a bit into chicken salad or egg salad and you have turned lunch from ordinary to grand.

Tarragon is also used frequently to bring out the best in seafood. A little tar-ragon added to shrimp, olive oil, shallots and garlic makes an outstanding top-ping for pasta. Most fin fish, too, benefit by being lightly blessed with tar-ragon.

And what about the other white meat? Pork is paired less frequently with tarragon, but the herb is an excellent complement to it. And you can even find respect-able recipes for tarragon sauces to be served with big-flavored beef, though you won’t find them here. What you will find here are two recipes for chick-en, one for pork and one for salmon.

The recipes for chicken are not just among my favorite recipes for tar-ragon and not even just among my favorite reci-pes for chicken. They are among my favorite recipes, ever.

The first comes from the Trellis restaurant in Wil-liamsburg, Virginia, which used to be great until the chef became famous, and then the quality of the cooking dropped consid-erably (I haven’t been in years, so I don’t know how it is now). While it was still great, they came up with a grilled chicken dish with Dijon mustard and tar-ragon.

Here is how easy it is: You take a chicken and coat it with a mixture of mustard, wine and tarragon. You wait 24 hours. Then you grill it.

It is easily among the best grilled chicken you will ever have. It is cer-tainly among the best grilled chicken I have ever had. And the genius of the recipe is you don’t even have to grill it. It makes a great baked chicken or pan-sauteed chicken. Or you could do what I did and combine each of these methods. I put the chicken on a hot, cast-iron grill pan to get some of the flavor of a grill, flipped it over and then finished it off in the oven.

It was outstanding.The other favorite chick-

en-and-tarragon recipe comes from Turkey. What

makes it so outstanding is that the flavors all get trapped in bulgur, which adds a nutty taste of its own.

Also, there is a lot of but-ter. The butter helps. The butter also gets trapped in the bulgur. Yum. There, it also mixes with onions, tomatoes, green peppers and chicken stock. As I said, yum.

The bulgur makes the dish stick-to-your-ribs fill-ing, so I often make it in the winter. But it is so delir-iously good you will want to make it year-round. Though the flavors are bold, they are light enough to make it a perfect meal for the summer, too.

For a dish with fish, I went the salmon-with-mayonnaise route. A dollop of mayonnaise mixed with herbs is a delicious way to add elegance to poached salmon, and tarragon goes with mayonnaise the way peanut butter goes with jelly.

Then, I found an addi-tional element online that, frankly, I would not have thought to do. I did not poach the salmon in water, stock or wine, or any combination of them. I poached it in beer.

As it turns out, salmon and beer go together like, well, tarragon and may-onnaise. And the creami-ness of the tarragon mayo makes a perfect foil for the flavor of the beer.

The tarragon is also part of the sauce for the pork dish, pork chops with mushroom-tarragon sauce. Mushrooms, tarragon and wine make up one of those classic gravies that can be paired with any number of dishes.

In this case, we did it with pork chops. The mildness of the meaty chops really allowed the flavor of the tarragon to come through. And also the flavors of the mush-rooms and wine.

Tarragon. It goes with everything.

Chicken with Bulgur, Tomatoes,

Peppers and Tarragon

Yield: 4 servings1 chicken6 tablespoons unsalted

butter13⁄4 cups finely chopped

onions1 cup seeded and

chopped red and/or green bell peppers

1 or 2 red or green jala-peños

3 tablespoons fresh tar-ragon leaves

2 ripe tomatoes, peeled and chopped

Salt and pepper2 cups bulgur3! cups chicken stock

(preferably homemade)Cut chicken into 8 serving

pieces: thighs, legs, each breast cut in half.

Melt the butter in a large,

heavy pan on medium heat and cook the onions until they turn almost reddish brown. Remove onions from the pan, add the chicken pieces and saute until golden on all sides.

Push the chicken to one side, add the peppers and tarragon and cook, stir-ring, for 1 minute. Stir in the tomatoes and reserved onions. Season with salt and pepper. Combine all the ingredients, cover and sim-mer for 20 minutes.

While the chicken mixture is simmering, heat chicken stock until hot. Wash and drain the bulgur.

Remove the chicken pieces to a plate; stir in the bulgur, and toss it with the vegetables and sauce for 3 minutes until it is well coated with the sauce. Add the hot chicken stock, let boil 1 minute, replace the chicken pieces – except the breasts – cover, and simmer over low heat for about 15 minutes, until all of the liquid is absorbed. Add the breast pieces to the pan, remove from heat, and keep covered in a warm spot for 10 min-utes. Serve with a salad.

Per serving: 885 calories; 42 g fat; 18 g saturated fat; 180 mg cholesterol; 57 g protein; 71 g carbohydrate; 9 g sugar; 16 g fiber; 435 g sodium; 100 mg calcium.

Grilled or Baked Chicken with Dijon Mustard and Fresh

TarragonYield: 4 servings! cup Dijon mustard" cup dry white wine1 tablespoon chopped

fresh tarragonSalt and pepper2 (3-pound) chickens,

halvedAbout 24 hours before

serving, whisk together the mustard, wine and tarragon in a large stainless-steel bowl. Season with salt and pepper, and combine thor-oughly. Coat the chicken halves with the mustard marinade. Individually plas-tic-wrap them and refrig-erate for 24 hours before cooking.

If grilling: Season the chicken halves with salt and pepper. Set up the grill for indirect heat. Grill over indirect heat, beginning skin-side down and flipping once, 50 minutes to 1 hour, until done.

If grilling on a grill with no cover: Preheat oven to 400 degrees. Grill chicken directly over the coals, flip-ping frequently to avoid overcharring. When chicken looks like it will soon become too charred, trans-fer to a baking sheet and finish baking in oven, 30-45 minutes, until done.

If baking: Preheat oven to 400 degrees. Season the chicken halves with salt and pepper. Bake about 1 hour,

until done.If using grill pan: Preheat

oven to 400 degrees. Sea-son the chicken halves with salt and pepper. Spray grill pan with nonstick spray and heat on high heat until nearly smoking. Add chicken, skin-side down. Cook until skin has dark grill marks. Flip chicken and place pan in oven. Bake about 55 min-utes, until done.

Pork Chops with Mushroom-Tarragon

SauceYield: 4 servings4 pork chops, 3/4-inch

thick and 6 ounces each" teaspoon garlic salt" teaspoon freshly

cracked black pepper2 teaspoons olive oil,

divided12 ounces sliced fresh

mushrooms1 medium onion,

chopped2 garlic cloves, minced1/3 cup white wine, see

note2 tablespoons all-pur-

pose flour1 cup chicken broth2 teaspoons minced

fresh tarragon, see note2 teaspoons butterNote: If you prefer not to

cook with wine, use chicken

broth. If you do not have fresh tarragon, use ! tea-spoon dried tarragon.

Sprinkle pork chops with garlic salt and pepper. Spray a large nonstick skillet with cooking spray, heat over medium-high heat, and add 1 teaspoon oil. Sear the pork chops until brown on both sides. Remove pork and keep warm.

Add remaining 1 tea-spoon oil, and saute mushrooms and onion until almost tender. Add garlic; cook 1 minute longer. Stir in wine. Bring to a boil, and cook until liquid is almost evaporated. Combine flour and broth until smooth in a small bowl. Stir into pan. Bring to a boil; cook and stir 2 minutes or until thick-ened.

Return pork chops to pan and add tarragon. Cover and cook 6 to 8 minutes, until done, 145 degrees for medium rare, 150 degrees for medium or 160 degrees for well done. Stir in butter.

If cooked until medium rare, allow meat to rest 3 minutes before serving.

Beer-poached Salmon with

Tarragon Mayonnaise

Yield: 4 servings! cup mayonnaise (low-

fat is fine)" teaspoon dried tar-

ragon1 teaspoon minced

chives

1 teaspoon chopped green onions

1 teaspoon minced pars-ley

12 ounces beer2 tablespoons lemon juice1 medium onion,

chopped1 rib celery, chopped1 teaspoon salt1 bay leaf4 whole peppercorns4 (6-ounce) salmon fil-

lets, 1 inch thickCombine mayonnaise, tar-

ragon, chives, green onions and parsley in a small bowl. Chill until ready to serve.

In a large skillet, combine beer, lemon juice, onion, celery, salt, bay leaf and peppercorns. Bring to a boil, then lower heat and simmer 10 minutes. Add salmon fillets. If the liquid does not cover the fish, add more beer or water to just cover. Lightly simmer 10 minutes or until fish flakes easily with a fork.

Serve fish with a dollop of mayonnaise on each.

Per serving: 560 calories; 36 g fat; 5 g saturated fat; 130 mg cholesterol; 44 g protein; 6 g carbohydrate; 1 g sugar; 1 g fiber; 845 g sodium; 40 mg calcium
