Fact: The use of dehydration as a food

-preserving method has been around

for thousands of years. Prior to the

advent of refrigeration, people only

had two options—dehydration and canning. Canning requires a supply of

airtight glass jars and equipment to

boil those jars. Dehydration requires

only a gentle source of heat. The de-

hydration process used by our ances-

tors could be as simple as hanging

meat, vegetables or berries over wood

frames in the sun and wind.

RAW FLAX SEED CRACKERS

2 cups whole flaxseed

2 cups (approx) water

1/4 cup tamari or low sodium soy sauce

Sea salt to taste

1T fresh minced herbs (optional)

In a medium bowl, cover the flax seeds with water and allow to

soak for at least 1 1/2 hours. The water will turn to a gelatinous

goo. Check the mixture, add more water if needed (you want

mixture to be gooey, but not runny). Stir in the tamari or soy

sauce, sea salt and fresh herbs. (Experiment with different fla-

vours—ginger, chilli or lime juice—depending on your tastes)

Spread the mixture 1/8 inch thick on your dehydrators fruit

leather sheets.

Set the dehydrator to 100 degrees and dry for 5 hours, turn the

mixture over and dehydrate another 4 hours. If you like a crispy

cracker dehydrate for an hour longer. Break or slice your crack-

ers into pieces when finished dehydrating.

LOVIN’ FROM THE OVEN

CHICKEN AND BROCCOLI BAKE Filling: 3 OR 4 skinless boneless chicken breasts 2 lbs. Broccoli trees (cooked) 1 bag baby carrots (cooked) Sauce: 1 can cream of chicken soup ½ cup milk ½ cup mayonnaise 1 cup grated sharp cheddar cheese 2 tsp. Lemon juice 1 package stove top stuffing (or 2 ½ cups home-made stuffing)

Cook chicken breasts in Pressure Cooker with an inch of water for 10 min. until thoroughly cooked. Put hot chicken breasts, one by one, in the Bosch Universal with the whips and turn on speed one for 10 sec. to shred chicken. In 9”x9” baking pan, layer broccoli, carrots and chicken. In a pan on stovetop, heat soup, milk and mayo until smooth. Add cheese. Stir until par-tially melted. Add lemon juice and season with salt and pepper to taste. Pour sauce of chicken. Prepare stuffing and cover chicken mixture in baking pan. Cover with foil and bake in a 350 F. degree oven for 1 hour. Remove the foil for the last 20 min to brown the stuffing.
