Spanish Empanada de Manzana (Apple Pies) + Sorbette de Manzana preheat+zest+whisk Preheat your oven to 425 degrees. Have your kids zest 1 lemon and set to the side (this will be used in both the dough and the filling). Then have them measure and whisk together 1C all purpose flour, ¼ C fine cornmeal, heaping ½ tsp salt, 1 tsp sugar (or 1 pack stevia), and ½ tsp baking powder in a large bowl. Make a well in the center and add 7 T (½ C less 1 T) olive oil, ¼ C cold water, and ½ tsp of your lemon zest. Mix with a fork until it makes a ball and then separate out into about 12 small balls. flatten+fill+fold Have your kids flatten the balls of crust into rectangular shapes (or circles cut out with a circular cookie cutter or lid of a jar). Place a small amount of apple filling (see recipe below) either on the lower half of each rectangle (leaving a ¼-inch border or in the middle of each circle). Fold the dough over the filling and press the edges to seal well. bake+cool Place your empanadas on a greased or parchment-lined baking sheet and bake in your preheated oven for about 20 minutes or until puffed and golden brown, rotating the pan after 10 minutes for even browning. measure+combine In a medium bowl, have your kids measure and combine ⅓ C sugar (or 6-8 packs Stevia), 2 tsp flour, ¼ tsp salt, and ½ tsp ground cinnamon.

peel+dice+toss Have your kids peel 3 large apples and then dice into small bits. Add the diced apples, ½ C applesauce, ½ tsp lemon zest, 4 heaping T ricotta cheese (if using), and a squeeze of lemon juice to the bowl with the dry ingredients. Toss the fruit to coat it with the rest of the mixture. Set to the side and fill in the empanada crust when ready.

combine+blend While the empanadas bake, measure and combine 1 C applesauce, 5 T honey or sugar (or 2-3 packs stevia), 2-4 C ice, pinch of cinnamon, a squeeze of lemon juice, and a little water in your blender (or a pitcher to use with an immersion blender). You can drink the Spanish ice in a cup if it is on the thinner side or scoop it onto your apple expands as “sorbet” if it is on the thicker side!

Empanada History Empanadas are eaten in Latin America, Spain, Portugal, the Caribbean, and the Philippines. They are essentially a stuffed pastry. The name comes from the Spanish verb empanar, meaning to wrap or coat in bread (pan means bread). Usually the empanada is made by folding a thin circular-shaped dough patty over the stuffing, creating its typical semicircular shape. Empanadas are also known by a wide variety of regional names. It is likely that the Latin American empanadas were originally from Spain, where an empanada is prepared similarly to a pie that is cut in pieces, making it a portable, easy, and hearty meal for working people.
