Theres no other way to describe the experience of first tasting cured bellota porkin this case, the loin made from heirloom Ibrico pigs whove feasted on acorns (bellotas) the last months of their lives.     american mountain pioneerTarentaise from VermontWe focus a lot of our cheese collection on mountain dairies of Switzerland, Northern Italy, and France where big wagon wheels of extra-aged cheese are common. America has never really had a mountain cheese tradition and the new cheese movement thats grown in the last two decades is often known for its small, soft, local cheeses. Not so with Spring Brook Farm. Their Tarentaise, made in Reading, Vermont from raw Jersey cows milk, has much in common with the classic mountain cheeses like Gruyre and Comt. It's a semi-hard, brine-washed cheese thats aged for about a year. Its mouthfeel is creamy in spite of it being a hard cheese. The mountain cheese flavors of hazelnut and fruit are there too. In fact it holds its own against Europes Alpine heavyweights and can be used in similar ways: melting over vegetables, in omelets, or straight up with a few other top flight choices on a cheese board.     syrup and SPiceKozliks Maple MustardKozlik isnt the worlds oldest mustard maker, but they have been at it since 1948 which counts as a lot of experience in my book. While the Kozlik name is well known in Canada, most of us in the states have never heard of them. This jar would be a fine beginning to what promises to be a lovely relationship. Yellow mustard seeds are ground fine and mixed with a bit of water, vinegar and Canadian maple syrup to create a sweet mustard that goes great on ham, as a glaze, as part of a marinade, or, as we all arrive at eventually, on a sandwich.     Zingermans Buttercream CakesThe pastry magicians at Zingermans Bakehouse love baking cakes above all else. Wedding cakes, birthday cakes, coffee cakes, everyday cakeswhenever there are cakes to bake you can bet theyll be excited and what comes out of the oven will be incredibly tasty. The fondant cakes are the show-stoppers, with their intricate decorations (see our birthday cake, p. 38). Coffee cakes are our everyday best sellers (p. 48). But here in Ann Arbor, special occasions are marked most often by buttercream cakes. They're something our mail order customers probably don't know about because weve never shipped oneuntil now. This marks the first time these local heroes make the trip out of state. Why the wait? They are delicate, and it took us a couple of years of practice to engineer the packaging so they could travel by UPS. Now they can, and your next celebration is going to be all the better for it.

    The showpiece on each cake is traditional buttercream frosting. Swiss style, it's made by whipping fresh eggs and sugar into a meringue, then mixing in real Wisconsin butter and Mada-gascar vanilla. Our cakes are also marked by what they don't contain: no artificial anything, no mixes, no shortening. These are the ingredients your grandmother would use when she baked.

    Each cake is six inches in diameter, four inches high, about 1 lbs and serves 6-8. Ships frozen. Defrost and serve at room temperature for maximum flavor and attractiveness.

Long a grape grower and wine producer, Kurt Amman took the family farm in Stel-lenbosch on the southwest coast of South Africa organic in 1994, then biodynamic in 2001. From the method of conversion from wine to the decision not to pasteurize (to protect the positive aceto-

    bacters) to the many years of patient maturation to the careful selection of herbs and flowers for the infusion into the vinegarflavor, spirit, and environ-

    ment are all honored in the Ammans work. Fynbos vinegar starts with natural conversion of the

    Ammans own, already well made, and nicely matured wines. The natural conversion takes months and protects the flavors of the wine and also the natural health benefits of the vinegar. The herbs are then added to the vinegar and the infusions are allowed to mature another four or five years. Fynbos is infused with an array of the regions herbs and flowerSouth African honeybush, buchu, wild olive, wild rosemary, and rose geranium. The total maturation is about 12 years, all done in oak barrels.

    The results are superb! Imagine maybe a great balsamic: the com-plexity, the soft, round, sweetness, the long lingering finish, all are there in force. Then there's big, slightly tingly, subtly sweet, fantastic flavors with great complexity and a very, very long, very lovely, finish. For me, the choice was made almost as soon as I met Emanuele Lolli, the man who makes Tiburtini olive oil. In the foothills to the east of Rome, the Lolli family has been tending their groves of olive trees for the past three centuries. They grow more than 15 varieties of olives, and some of the trees are seven or eight hundred years oldtwo factors that help to create a bold, complex olive oil. Emanuele does all the little things right: the olives are picked by hand, and pressed into oil within 24 hours. But what re-ally sold me on his oil was the incredible lunch that his wife, Rita, prepared for the three of us when I visited their home in Tivoli, Italy last spring. Tiburtini olive oil was featured everywhere: in the well-dressed salad; over a plate of mozzarella and tomato; in a spaghetti dish with garlic and wild asparagus. The flavor of the oil is assertive but smooth, a little grassy, with a warming peppery kick in the finish. This wild ricenot at all like the wild rice youll see in most shopsis one of Americas oldest foods. It was definitely on Native Americans diets four hundred years ago, which meant it was probably an early settlers' food, too. The plants were part of the Great Plains ecosystem, a thousand mile stretch of grasses whose biodiversity was as great as the Amazon. Today, the rice harvest still happens in ways a person from four centuries ago would have recognized. The grasses are gathered by hand in canoes, threshed by simple machines and parched over open fires. To cook some I sweat half a sliced onion in a pan, add the rice and warm it, stirring it into the onion and oil, then pour in chicken broth and cook it for half an hour with the lid open till the grains crack and split and fray. The flavor is absolutely stunning. Its mild but extremely complex, with woody, green and grassy flavors mixed in with nutty, yeasty, earthy notes.
