TALK of the TOWN!• Oak Bay author Maggie Bolitho’s most recent book, Outback Promise, was recently released by HarperCollins Australia. Bolitho, who grew up in Victoria but lived several years in Australia, has published adult short stories in various anthologies in Australia, the U.S. and Canada, and her young adult novel, Lockdown, was published last year. Outback Promise touches on issues of trust, forgiveness, grief and bitternesss — all to the backdrop of the wilderness of Australia’s outback.

• Local jazz legend Joe Coughlin will celebrate Frank Sinatra’s 100th birthday at the new Oak Bay High School Community Theatre on December 12. Described as the “best jazz singer Canada has ever produced,” Coughlin will mark the birthday of one of his musical idols by bringing the 18-piece Vancouver Island All-Star Big Band to the new, 440-seat community theatre for a once in a lifetime musical celebration. “Out of all the tribute shows, this one will be unique. It won’t impersonate Mr. Sinatra,” Coughlin explains. “It’s designed to illuminate the incredible contribution he’s made over a 60-year period. He had a great infl uence on my singing

style, but I’d be arrogant to say that I sound like him.”The Frank Sinatra 100th Birthday Celebration will use Sinatra’s original big band arrangements to bring his songbook to life. The concert is also a benefi t for the Rotary Club of Oak Bay Foundation’s Sno’uyutth Legacy Fund. Tickets are $45 and available in advance at The Oak Bay Recreation Centre and Scotia Bank.

• Both the “upstairs” and “downstairs” teams at the Oak Bay Beach Hotel are preparing for the fi nal premiere of the immensely popular TV series Downton Abbey — to be held on Sunday, January 3, 2016 in the David Foster Foundation Theatre. Tickets are $99 per person, plus taxes, with only 120 spaces available for the event. The evening begins at 6 p.m. and includes a cocktail reception, three-course themed meal prepared by Executive Chef Kreg Graham, and a one-hour simulcast of the premiere of the fi nal season of Downton Abbey. Guests are encouraged to dress in 1930s era outfi ts to match the theme, décor and staff uniforms. A professional photographer will be taking complimentary guest photos in front of a Downton Abbey backdrop.

EDITOR'S LETTER

A few days before Christmas one year, I rushed up and down the aisles of a grocery store and in a joyous consumer frenzy, plucked once-a-year specialty items from the shelves, reciting

the mantra “’tis the season!” My buggy grew more and more full, and as I

passed the poultry section, I tossed a turkey onto the pile. And then I stopped. I’d never, ever cooked a turkey (the feel of an uncooked bird makes me queasy) and both my daughters are vegetarians. Why on earth would I buy a turkey? Sheepishly, I put it back.

In the midst of all the seasonal buying chaos, I try to remember that it’s often the little things — the eggnog and not the turkey-that-I-can’t-cook — that are most momentous at this time of year.

For example, my daughters have cre-ated their own unique gift-giving tradition. They, who both have magnificent, long manes of golden curly hair, present each other with … wigs. Over the years, the wigs have ranged from blond to pink to black; and curly to straight to tangled tresses. Last year, my younger daughter — who was time crunched amidst an overwhelming school program — didn’t manage to purchase a wig gift for her sister. So she crept down to the tree on Christmas Eve while the rest of us slept, found the package containing the wig her sister had bought and placed her own tag on it. Christmas dawned and my elder daughter ended up opening — amid much chortling — the wig gift she herself had placed under the tree.

As Shelagh Guild’s story in this edition of Tweed (Bits, bobs and books, page 18) exemplifies — it’s the creation of memories at this time of year that can be the most enduring. And my family will always remember the Great Christmas Wig Caper.

These magical memories didn’t have much to do with consumerism at all, but, back to my grocery store revelry… the joy of purchasing specialty food items and the fun of gift-giving is all part of the sea-son, creating its own sense of elation. To be truthful — as long as the money is there —shopping at this time of year can be a lot of fun. And if it’s shopping thrills you’re after, this edition of Tweed offers lots of

gift-giving ideas from our many advertisers, beautifully displayed throughout the following pages and in our special gift guide (page 21).

And there’s more! Stories in this edition feature an Oak Bay man and his unique hand-

crafted gift idea (Shinekits, page 14). We also meet Maggie Gong, a Chinese woman run-ning a French restaurant (New kid on the block, page 24); read some thoughtful comments by Oak Bay High School principal Dave Thompson (Tea With, page 32); step through the rooms of a splendidly renovated, century-old home (Visualizing Space, page 10); and travel the world with Joe Blake, who for 20 years has participated in a house ex-change travel program.

Columnist Chris Causton takes us to Uplands Park; Ivan Watson takes us through some poetic Oak bay history; photographer Don Denton presents a

visually stunning selection of contrasting gates, and of course, the stars of the magazine (dogs on the avenue) can be spotted on pages 34 and 35.

All of us here at Tweed hope you enjoy this edition. And we wish you all the joy of the season — whether that be indulging in once-a-year items, finding perfect gifts, feasting, switching the tags on presents or creating enduring memories.

Remember those psychology inkblot tests where one person sees a rabbit but the next person sees only a blob? Great designers and builders are like the former. They see potential where others see nothing.

Where one person sees an impossibly steep lot, a masterful de-signer imagines a home stepping up to the sky with open vistas. A great designer looks past walls and doorways, and envisions grand spaces. Others just see obstacles.

This capacity to see promise is very apparent in the renovation of a 1913 classic house on Windsor Avenue in Oak Bay.

This home was one my husband and I left to downsize into a smaller, more contemporary house. After living here more than two decades, we grew tired of caretaking the century-old place.

Creating a sleek, contemporary lookto a grand-dameclassic

VisualizingSpace

Visions from old to newDuring the period that we lived in the house, we made some

improvements we believed were sympathetic with its heritage. No-tably, we brought in Edy Bradley of Banfp Design Group, and she guided the selection of exterior colours and alterations to the front façade, in keeping with the house’s legacy.

We often fantasized about renovating the interior, but the ideas we had did not involve reconfiguring space. Mostly, we adjusted to its shortcomings and idiosyncrasies. These included the inconvenience of the most used entrance — through the back door — that landed immediately in the kitchen with no place to put boots or coats.

Fortunately for this grand-dame home, it is now in the care of new owners — the sixth since it was built — and they are people

Page 11: Special Features - TWEED Winter 2015

who like to visualize different things. Today the home is vastly improved from when we lived there

and, most important, it now belongs to this century, both in design and structure. Gone is the awkward back entry. There is now cover from the rain on the back landing and inside, a place for coats and shoes.

The kitchen is brighter, more spacious and more private. A previ-ously marooned, useless landing space at the foot of the staircase is now open and useable. And the main floor guest room and bathroom has emerged as a comfortable enclave, providing space for both guests and owners.

All of this was achievable because the new owners agreed to flip the guest bedroom and kitchen at the back of the house, something I would have never visualized for its space-changing potential. This was not an insignificant decision; it had a domino effect on a wide range of elements in the house, including electrical, plumbing and windows. But ultimately, it profoundly changed the flow and func-tionality of the space.

Piecing the renovation puzzleCoaching the owners through the renovation was designer Lau-

rel Hodgins, who for 20 years worked alongside architect Pamela

At left, the spacious and cosy living room and outside pond; here, the kitchen in its new location.

Charlesworth, a name associated with some of the fi nest Victoria homes. Charlesworth died in 2008, but not before she passed along some of her design styles and approaches to Hodgins.

“I give a lot of credit to the time I spent working with Pam,” she says.

One of Charlesworth’s philosophies was to avoid being typecast for do-ing any one particular design style. So she was comfortable designing both traditional and contemporary spaces. Her designs were “familiar enough to be understood but different enough to be interesting.”

Charlesworth was a great listener, Hodgins adds: a characteristic that’s critical to coming up with a design for an owner.

“I like renovations. So much depends on what the client needs. [Reno-vations] are a bit like doing a puzzle. You start with an existing layout and then you try to adapt it to how [the client] lives nowadays — as opposed to 40 or 50 years ago, when a home might have been built.”

Hodgins says this home had “a great character and charm of its own,” but the kitchen wasn’t working as the owners desired, and they wanted more storage and space for recycling. The connection of the kitchen to the rest of the main fl oor also troubled them. The guest room seemed underused, “and I thought, ‘let’s see what would hap-pen if we moved the kitchen over.’ It took a bit of courage for [the owners] to give us the go ahead [as] the proposal now involved open-ing up walls and moving things here and there. But they were thrilled when it was done.”

At right: dining room, exterior and bathroom — the renovation to this 1913 home has entirely changed its space, making it more functional and ... gorgeous.

Renovations are a bit like doing a puzzle. You start with an existing

layout and then you try to adapt it to

how the client lives nowadays.

LAUREL HODGINS

Domino effectLike many renovations, one change

necessitates others — including some that weren’t anticipated at the time. The owners wanted the dropped ceil-ing in the former kitchen returned to its original grand height. An earlier renovation, however, hid a maze of plumbing, and once it was removed, it made sense to renovate the upstairs bathroom at the same time.

Those involved in the construction are glad not to relive the day they had to move a tremendously heavy, cast iron claw foot tub from upstairs. But no one regrets the modernized bath-room that resulted.

The reconfi guration of walls necessi-tated addition of new structural beams, making the house more earthquake resistant and enabling other changes inside. Garth Korberg, who runs a construction business focusing on renovation work and small additions, says making the structural improvements to the house was the trickiest part of the job.

He added beams in the basement, bringing necessary stability to the structure, which was built when building codes were minimal. With the new beams properly bracing the structure, it’s now ready to stand many more decades.

If you’re looking to buy local this Christmas and stumped on what to get the guy who has everything, help may be just a few blocks away. That’s where you’ll find Oak Bay resident Jamie Neilson and his covetable shoe shine kits.

“We’re creating memories,” says Neilson, co-founder of shinekits.com.

It might not sound like a lucrative business plan, but in 2014 the company went from idea and launch to $2,000 in sales within 10 weeks.

Neilson and his partner, Jamie Gagan, have been friends since nursery school in Burlington, Ontario. Neilson married an Oak Bay girl and has been here ever since, while Langford-based Gagan is an IT specialist.

“He knows a lot about websites and analyzing online traffic. He saw that men’s care products are underrepresented and that tens of thousands of people were searching for shoe shine kits, but that there was really nothing available that had kept pace or had a contemporary feel. The websites all looked like they were made in 1997.”

The two of them decided it was an interesting challenge. Neil-

son would build the brand and Gagan would build the site. “We knew we couldn’t make it work with a store, but with

50 thousand people a month searching for shoe shine kits, we thought maybe we could make it work online.”

They initially took the route of searching for a cheap product in China, importing it and brand-ing it.

“It was difficult to get excited about,” admits Neilson. “We couldn’t find anything we liked. We found boxes for a couple of dollars and then read reviews about how they cracked or warped. The other end was luxury — rosewood and ebony boxes for thousands of dollars. You’d have to be a hedge fund trader to buy it,” he recalls.

“Then we thought, ‘we live here.’ We’ve got all this wood — Douglas fir, red cedar. We started to think about making products with

local crafts people from our island. We wanted carpentry that was nicely finished.”

The boxes are each hand built and sanded and waxed until they’re smooth to the touch. They’re durable, shippable and have a warm glow that makes you want to pick them up, slide open the lid and peer inside.

ShinekitsThinking inside the box

“They even have a secret compartment,” laughs Neilson. “It’s great to be making something here. To know that you can make a quality product in your own country, pay a fair wage and feel good about it.”

The boxes are filled with high-end brushes from Brazil, made from horsehair that sells for $17 per pound.

“It makes a really nice shine,” explains Neilson. There’s also Angelus Wax from California — “it’s a 107-year-

old beeswax and carnauba wax based recipe. The smell is unique but not awful. Stinky polish is no fun to work with.”

In the lead up to Christmas, their sales jump to three to four orders a day.

“We have to hire another carpenter and set up shop in my garage in the run up to Christmas,” Neilson says. “It keeps growing. It’s gradually turning into a full time job.”

Their product continues to evolve. “The boxes get more finesse. We had a couple hundred

feet of mahogany from the smoking lounge of the Princess Mary that we used to add accents to some of the boxes,” says Neilson.

There are also plans to have a local Native artist silkscreen his or her artwork on the lids of a cedar box they recently added to their inventory.

Neilson and Gagan also have 500 pounds of Cowichan Valley Beeswax and have starting testing out their own wax production, mixing it with orange oil.

“We’re not launching it yet,” explains Neilson. We’re just dipping our toes in the water.”

He adds: “We want the boxes to be unique. We want them to be heirloom pieces — something you’d pass down through generations and that becomes part of a family’s story. Everybody has a shoe shine story —whether it’s the beat up metal box that your grandfather kept his kit in or the values instilled in you as a kid to take care of your stuff. The most rewarding part has been hearing those stories, the interactions with clients.”

Buying local. Creating community. Making memories. Who knew all of that could be inside a shoe shine box?

It is Christmas morning. The opening of our stockings completed and a bit of breakfast nibbled, my brother and I await the bus that will bring our Granddad to our

home for the opening of the presents under the tree.We sit impatiently by the kitchen window, which looks

out over a neighbour’s garden towards Windsor Avenue, where the bus will eventually drop Granddad at a bus stop located a block away on the corner of Windsor and St. Patrick. We soon spot the bus when it passes our vision in the distance, but cannot see the bus stop itself, so the burning questions is “was he on it?” Or did he miss the appropriate coach at his end? If he has, that means we will have to wait impatiently for the next bus, as my brother and I are not permitted out of respect for our elders to open gifts until he arrived.

In years past, he sometimes arrived on time, other times not. It was a good time to practise the adage “patience is a

Bits, bobs and booksSketches of Christmases past

virtue,” though it meant nothing to us at that moment — just the opposite.

Yet, finally there he is. Finally, we can spot him trudging along Windsor Avenue with a determined expression beneath his fedora. We can get under the tree at last. However, his hat and coat need to be carefully hung up and a hot cup of tea placed in his chilly hands — these two considerations seemingly take an endless amount of time. We both adore him so we always forgive him — it wouldn’t be the same without him, we know that. He leaves no doubt as to how much he enjoys watching our expressions as we open our gifts each year.

For me, there are books — an armload of books —wrapped beneath the tinsel laden tree. I am in heaven with all of them heaped around me, and I’m longing to escape with them up to my bedroom — all bundled up and falling out from my enfolding arms as I take to the stairs to shut myself away with the excitement of choosing which will be the first to tuck into? Such a difficult decision because they all look so enticing.

There were other bits and bobs of gifts, of course, and all thoroughly enjoyed, I’m sure. But it was the books I remember — as well as the treat of a juicy tangerine in the toe of my stocking earlier.

The entirety of Christmas Day, I can only bring back in snatches. I’m called down from my room occasionally to politely greet visiting family and friends, or to listen to the King’s annual Christmas speech around the mantel radio. And I enjoy the wonderful fragrance of roasting turkey wafting up the staircase and beneath my door as I read the chosen story.

Then, when I’m finally ordered to come down and be part of the family, I watch my father perched on a stool stirring the gravy now bubbling in the drippings of the roasting pan, with the added vegetable juices from their cooking water, whilst the bird stands magnificently browned atop the table in the process of settling itself down for my father’s expert carving.

“If you can keep your head when all about you are los-ing theirs” are the famous opening words to Rudyard’s Kipling’s “If” — one of the best loved poems in the English language.

Less well known are Kipling’s many evocative descriptions of Canada, penned during his three visits to this country. In 1907— glowing with the recent success of his Nobel Prize in Literature — Kipling and his wife Caroline embarked on his only offi cial Dominion tour where he was invited to deliver a series of speech-es to the Canadian Clubs in several cities. Between September 30 and October 22, Kipling travelled from Montreal to Victoria and back again, on a private rail car accompanied by a personal porter. At every stop, he was feted as the great Bard of Empire, and was cheered by large and adoring crowds of patriotic Canadians.

The Kiplings arrived in Victoria on October 8 and were chauf-feured to lodgings in Oak Bay. Kipling had visited Vancouver Island twice before — in 1889 and 1892 — and had developed a fondness for the area, which he described as a “quiet English town of beautiful streets” with “quite a colony of old men doing nothing but talking, fi shing and loafi ng at the club” and a place where the “retired go.”

The Kiplings settled into the best room at the Oak Bay Hotel

“A quiet English town of beautiful streets”Rudyard Kipling’s visit to Oak Bay

at 1420 Beach Drive, then the grandest hotel in the city, as the Empress was still under construction.

Designed by Francis Rattenbury as a replacement for the Mount Baker Hotel, which was destroyed by fi re in 1902, the Oak Bay Hotel was built in just 45 days and opened in 1905. Scarcely two years old at the time of Kipling’s visit, its staircase had already developed a noticeable squeak, which some say added to its old world charm.

The visit of such an esteemed guest sent the hotel staff into a frenzy of preparations. Seeking to spruce things up, the hotel’s pro-prietor, John Virtue — an affable and popular man about town — relied heavily on his society friends, who lent their silverware, exotic plants and Persian carpets in order that the hotel’s dining room and lobby lounge would be suitably dressed for the special visit.

The Times newspaper sent a reporter to interview Kipling and he described the scene of their meeting on the hotel’s verandah over-looking the beaches of Oak Bay: “A smiling blue sky was refl ected in radiance on the water,” wrote the unnamed journalist, “beyond which the snow-wrapt heights of Mount Baker shone glistening in the sun.” Kipling was described as a “short, dark man whose face bespoke a virile and active nature,” and who was clearly enjoying “basking in the sunshine” of Oak Bay’s warm autumn weather.

A gilded mirror, and a polished bar,Myriads of glasses strewn ajar,A kind of faced man all dressed in white,That’s my recollection of last night.

The streets were narrow and far too long,Sidewalks slippery, policemen strong,The slamming door, the sea-going back,That’s my recollection of getting back.

A rickety staircase and hard to climb,But I rested often, I’d lots of time,An awkward keyhole and a misplaced chair,Informed my wife that I was there.

A heated interior and a revolving bed,A sea-sick man with an awful head,Cocktails, Scotch and booze galore,Were all introduced to the cuspidor.

And in the morning came that jug of ice;Which is necessary to men of vice,And when it stilled my aching brain,Did I swear off?—I got drunk again.

Charmingly, the Times reporter recorded Kipling exclaiming, “What a beautiful country,” at the very moment a salmon repu-tably leapt forth from the waters in front of him. Kipling spoke of “immense possibilities for the future in the growing cities and communities of this province” and remarked on the “wonderful progress” since his previous visit 15 years earlier.

The main event of Kipling’s visit was his address to the Cana-dian Club, where the capacity crowd was described as Victoria’s “greatest assemblage of business and professional men that ever met at one time.” Kipling spoke about Canada’s bright future, immigration challenges and key role in the British Empire. The crowd rose for a standing ovation and sang “Rule Britannia.”

Across town, Mrs. Kipling was guest of honour at Tidaldeane, the estate of Captain James Troup, head of CPR’s BC Coastal Service, overlooking Victoria’s scenic harbour panorama. Mrs. Troup invited several high society ladies for the occasion. The newspapers described Mrs. Kipling as: “delightful ... with a charming personality.”

At the Oak Bay Hotel, Kipling and Virtue got on famously. In the evening, Virtue invited his guest on a motor tour of the city, including taking in local watering holes and the novelty sights of Chinatown. Returning in an inebriated state, Kipling immortal-ized his night out in a poem which he penned at the desk in the lobby and presented to Virtue, who framed the original. (See full poem at right.)

Kipling received visitors at the hotel, including renowned architect Samuel Maclure. Maclure’s daughter Catherine recalled them enjoying “a glorious afternoon talking about everything.”

A year later, Kipling published “Letters to the family: notes on a recent trip to Canada,” which included his famous description of our city: “To realize Victoria, you must take all that the eye admires most in Bournemouth, Torquay, the Isle of Wight, the Happy Valley at Hong-Kong, the Doon, Sorrento, and Camps Bay; add reminiscences of the Thousand Islands, and arrange the whole round the Bay of Naples, with some Himalayas for the background,” Kipling enthused.

Catherine Maclure remembers her father’s enchantment with these words and their potential to attract tourists.

“I made hundreds of copies — typed them for him,“ she said. “He was giving them to everybody. It was such a beautiful de-scription of Victoria.”

Kipling departed Victoria on October 10 on the S.S. Princess

Victoria, pledging that upon his return to England he would promote “the scenic and other advantages of Victoria.”

Kipling’s one-time drinking companion John Virtue remained at the helm of the Oak Bay Hotel until his death in 1929 at the age of 67. In 1938, the hotel was purchased by Jane Ewing and subsequently renamed the Old Charming Inn. It was known for hosting popular Christmas and New Year’s Eve parties. In 1962, the hotel and all its furnishings were purchased for $135,000 and the building was demolished to make way for the aptly named Rudyard Kipling apartments.

The owners kept the desk upon which Kipling wrote the evocative description of his night out on the town.

With the low hum of conversation and a gentle clinking of cutlery, the dining room at Confit gradually fills up over a weekday lunch hour. Friends, longtime married couples

and young families all naturally sink into a slower rhythm at their tables, pausing between bites to savour each forkful.

The restaurant, a little piece of France on Oak Bay Avenue, has undergone a rather drastic transformation under new owner Mag-gie Gong from its previous incarnation as Chez Michel.

Bringing in warm and neutral colours, clean lines and rich woodwork, Confit is a blend of modern design, elegance and organic textures, with a menu that is well thought out.

Maggie Gong makes the French connection

New kidon the block

Restaurants are notoriously difficult businesses to run successful-ly, but purchasing Chez Michel seemed a perfect fit for Gong, who moved from China to Richmond in 2014 with her family, before she fell in love with Oak Bay this summer.

Gong says she and her husband hadn’t wanted to start a brand-new restaurant — with all the extra challenges it would bring — when they first moved to their new community. Being able to step into an existing situation and then rebranding gave them the opportunity to gain a foothold in Oak Bay, both on professional and personal levels.

Having run a 50-seat restaurant in Beijing, Gong and her hus-band already had a good sense of what it takes to run a successful eatery. Gong herself was particularly excited to jump at the chance to run a French restaurant, having fallen in love with French cuisine during her many sojourns into France while completing her Masters in marketing at the University of Edinburgh.

And though her passion for French food is evident, Gong says, she has encountered a few people who have been surprised that she and her husband didn’t opt to open a Chinese food restaurant.

WINTER 2015/2016 TWEED 2524 TWEED WINTER 2015/2016

“But Canadian people can run Chinese restaurants, so why can’t a Chinese person run a French restaurant?” she muses. “I’m just a human being. I do my best, and I hired a local chef with lots of expertise.”

“I think Chinese and French food have similar concepts,” she adds, explaining that both cultures use a wide variety of ingredients, from frog’s legs to snails to sweetbreads (or organ meats). Nearly all parts of the ani-mal are put to good use, adding flavours and textures that, while occasionally unfamiliar to a North American diet, offer an exquisite dining experience.

Confit is no exception, offering bacon-wrapped escargot, sizzling sweetbreads and duck fat fried frites on the menu, but Chef Dwane MacIsaac also brings plen-ty of tamer dishes to the table.

The selection of thinly sliced charcuterie from Oak Bay butch-ers at The Whole Beast, or the rack of lamb with house-made dijon, duck fat roasted fingerling potatoes and local vegetables are enough to make any mouth water. Follow it with a vanilla bean crème brulee and a digestif, and it’s a recipe for decadence.

But Canadian

people can

run Chinese

restaurants, so why

can’t a Chinese

person run a French

restaurant?.

“It’s comfort French food,” says MacIsaac, who came on board in the summer after making the move back to the island from Vancouver.

After 17 years working as a chef in the film industry, MacIsaac jumped at the chance to join the team at Confit, with grand ideas for a complete redesign.

“It was more of a special occasion restaurant,” he says of the former business, Chez Michel. “I wanted to build a community restaurant.”

As a strong supporter of local farmers, the vast majority of Con-fit’s supplies come in small batches from growers and producers from all over the island. The menu changes every week to reflect the best available in-season options, something of paramount importance to Gong.

“I just want to make everything local, even if it’s at a higher cost,” she says.

Further shrinking the distance from farm to table to just a few dozen feet, MacIsaac even took over a portion of the backyard and transformed it into a herb and vegetable garden. With nine varieties of tomatoes, beans, carrots, beets, sunchokes and edible flowers, the small space offered up a little slice of Eden, but even that paled in the shadow of the canopy of the grape vines growing throughout the summer and early fall.

“I got 95 pounds of Concord grapes,” says MacIsaac, smiling. And with those baskets of heavy, dark purple fruit, he crafted a Concord port, and a Concord balsamic, revelling in the opportu-nity to grow and preserve his own food.

Chef Dwane has certainly made the kitchen his own, but Gong is more than just a name on the deed; she often slips behind the bar and mixes drinks or offers her advice on wine pairings as she chats up the customers.

“I don’t cook like Dwane,” she says emphatically. “But I like working here. I like talking with people.”

It’s been a way for her to forge relationships with the regular crowd of customers and get to know some familiar faces.

Gong says she and her husband have talked about the possibility of also opening a Chinese restaurant at some point, but their focus

right now is establishing Confit as a staple in the Oak Bay com-munity, and settling into their new neighbourhood with their two young daughters. While Gong spends her time at the restaurant, her husband is busy at home with the kids.

“He’s Mr. Mom right now,” she says with a laugh. “We just want to have a simple life. The most important thing is to take care of them and spend time with them. Family is the most important thing.”

Christopher Causton was Mayor of Oak Bay for 15 years. He is now the Goodwill Ambassador and a Captain with Victoria Harbour Ferries. He is the former owner of Rattenbury’s Restaurant where his landlord was the Provincial Capital Commission.

OAK BAY INSIDER

Between Thanksgiving and Christmas, there is a holiday and a ceremony that reminds us all of how, in this far off corner of the world, we are still

able to celebrate all those other festivals in any way we like. The day is November 11 and the ceremony is at the Oak Bay Memorial Cenotaph in peaceful Uplands Park.

The original interest in The Uplands came from the Hudson Bay Company (HBC), which saw the open space, including Uplands Golf Course, as good grazing ground for cattle.

So they built a cattle-landing station at Loon Bay and proceeded to ship cattle over from the Mainland. The animals were driven overboard at Cattle Point and they either swam or waded ashore.Residents have often been surprised to learn that the fi rst business in Oak Bay was an abattoir. (I often used this little known fact to make a point about change!)

William Hicks Gardner optioned 465 acres from the HBC in 1907, which, in turn, he optioned to the Franco Ca-nadian Trust. War and The Depression meant that development was diffi cult, and it ended up that in 1946 both Gard-ner’s company, which had to take back much of the land, and Franco Canadian Trust were behind in their property taxes.

In a referendum to buy the 76 acres of park for $65,000, Oak Bay residents voted overwhelmingly in favour. It should be pointed out that historically in Oak Bay referendums, residents vote “no” the fi rst time around. Furthermore, this vote was taken only shortly after the end of the war. However, Reeve Walker and his council not only strongly supported the referendum, but they proposed building a Memorial Cenotaph on a rocky incline of the land, with a clear view to the water.

James Saull, using his wife as the model fi gure, completed the task by November 11, 1948. Now, I would argue, on almost any day — but especially Remembrance Day — it is one of the most peaceful, spiritual spots in the municipality.

Many other peaceful activities are taking place in the park and all of them, each in their own way, contribute to a sense of wellbeing and connectedness. Sitting on a bench in the park, with Jeremy Jones Island in the distance, you can spot all kinds of marine life, tidal currents and wild birds.

And with a renewed interest in the Salish Sea, the outdoors and migratory bird routes, volunteers are keen

to engage the public. In the works is a new information kiosk that will join the others in helping explain this unique piece of Oak Bay.

“Others” include an educational sign about First Nations’ history that was installed in 2005 thanks to generous donor support. It’s interesting to note that the natural Garry oak meadows were actually the result of land management practises by aboriginals that included burning and hunting.

And if William Grant had just stuck to his favourite drink and not introduced broom in the 1850s, all that pulling might have been avoided. Dedicated teams of Girl

Guides, Boy Scouts and volunteers working with very capable leaders have toiled mightily to remove that Scottish pest as well as English ivy, European ash and Daphne laurel.

The fact that the park has never been developed has also led it to recently acquire the status of only the sec-ond Urban Star park in Canada. It has always been the place to “hang” in Oak Bay and watch submarine races. Now it’s offi cial. On a clear night, the dark skies are captivating.

We are all very fortunate to have this gem in our midst. I think it is best described as a “a peaceful island of nature in an urban landscape.”

own way, contribute to a sense of wellbeing and

connectedness.

By Joseph BlakePortrait photos by Don Denton

For the last two decades my family has travelled all over the world by house exchange.

Last year, we undertook a three-week house exchange with a family in Reykjavik, Iceland, and at

Christmas we house-exchanged with a family in San Miguel de Allende, Mexico — our second seasonal visit to the charming art colony in the mountains.

Now, we’re working on an exchange with a family at a seaside villa in southern Italy for spring.

Families from France, Spain, Portugal, Mexico, Iceland, Canada and the U.S. have stayed in our cozy cottage in south Oak Bay. Sometimes we exchange cars too.

House exchange vacations aren’t for everyone. They’re a little more work than booking a hotel, but for the last 20 years, we’ve used InterVac, to arrange vacation stays in tiny apartments, palatial estates, old farmhouses and gated suburbs. Short for

Around the world- in other people’s homesTwenty years of travelling via house exchange

International Vacations, InterVac was started in the early 1950s by a group of Swiss schoolteachers.

Besides saving hundreds if not thousands of dollars on accommodation and car rentals (we saved about $5,000 on our latest trip to Reykjavik, one of the most expensive places in the world), house exchangers also save money by having a kitchen, and making their own meals. Buying groceries and visiting farms and farmer’s markets are great ways to get to the heart of most destinations. And staying outside of the hotel zone, and in a neighbourhood, is another real advantage.

There are several house exchange organizations to choose from, but we’ve had such success with InterVac since our first exchange in Paris that we’ve gladly paid the agency’s annual fee (currently $129) and stuck with InterVac’s Euro-centric data base. Eighty per cent of InterVac’s 30,000 families live in Europe, 15 per cent in North America, 5 per cent in the rest of the world.

On our first exchange we were so nervous that we painted several rooms of our Oak bay home and completely cleared out one of the bedrooms for our guests.

As veteran house exchangers now, we simply clear one side of our closet and empty a couple of bedroom drawers for the visitors, and provide maps, brochures and a list of our favourite local restaurants, bakeries, coffee shops and tourist sites. Fresh-

cut flowers and a bottle of BC wine on the table completes our welcome offerings, and usually we’re greeted with similar courtesy.

On that first exchange in Paris, we were met at the airport by the host family and driven to our apartment in the Marais around the corner from the Pompidou Centre. Here, we were given a lovely meal and an offer to also stay in the family home near Bordeaux ... an offer we accepted and enjoyed during our three-week French adventure.

We’ve often experienced such hospitality during non-simultaneous house exchanges. We’ve made great new friends who stay in their second homes while we visit. Then we simply use their visits here to spend time hiking and camping in the Rockies, touring Okanagan’s wineries, reconnecting with grandchildren in Tofino and the Comox Valley, or house-sitting for friends in Victoria.

After a week in our Lisbon house exchange apartment, which overlooked the stunningly redeveloped 1998 Expo site, we took the train to the Algarve. Here, our hosts met us at the station and drove us to our seaside apartment with the offer to “pick you up at 6:00 and take you to our favourite restaurant for a local wine tasting.”

For the next two days they took us on a tour from the Spanish border to Lagos, pointing out — among many other things — the mansions owned by Hollywood stars and sports celebrities. One of our hosts was a real estate lawyer and knew the area well.

Our exchange family in San Sebastian, Spain, drove us from the airport in Bilbao to a tour of San Sebastian’s fabled tapas bars, before helping us settle into our apartment on a hill above San Sebastian’s Urumea River, near one of the city’s Michelin-star restaurants.

We’ve spent Christmas living in an apartment in Madrid and twice enjoyed the season while staying in a couple of the hippest neighbourhoods in New York City. Our house in Aix en Provence included a swimming pool and a brand new Renault that we used to tour the south of France. Our next door neighbour was French soccer star Zinedine Zidane, who lived in a gated mansion with his family and an entourage of 50.

In Montreal and in Granada, Spain, we stayed in newly built suburban homes, using the excellent mass transit system in Granada and our host’s car and downtown parking space in Montreal. We stayed in a gated community in Santa Fe, New Mexico, and on a coffee plantation with papaya and avocado trees on the big island of Hawaii.

Our house exchange home on Guatemala’s Lake Atitlan — a site that author Aldous Huxley described as the most beautiful lake in the world — came with a staff of five, including maids,

gardeners and an estate manager who brought us fresh fruit juice and distilled water every morning.

We spent a long weekend at a home in Seattle, a week in a tiny, studio apartment in San Francisco’s historic North Beach, and another pleasant week in Toronto’s Leaside neighbourhood. A proposed house exchange in the heart of Marrakesh, Morocco turned into a very reasonable rental with our own cook/maid.

People always ask, “Aren’t you afraid to have strangers in your home? Has anything ever gone wrong?”

Once we came home from a late-night flight to find our visitors hadn’t cleaned the bedding, and last summer our Berkeley house exchange hosts forgot to leave the key under the mat. By the time we finally got in, the whole neighbourhood had been alerted, and we had a dinner invitation from a pair of retired professors. It was a wonderful evening of political discussion and homemade crab cakes.

When that’s the worst thing to ever happen to you in 20 years of house exchanges, you know you’re on the right track.

Tweed editor Susan Lundy and Oak Bay High School principal Dave Thomson set up “tea” at the library of the bright, new school at the corner of Cadboro Bay and Cranmore roads.

Where were you born and who is your family?I was born in Oshawa, Ontario. My parents made the choice

to move to Victoria back in the mid-1960s. That’s another story — a sort of modern homesteader’s journey. I met my wife here in 1969. She is a native Victorian. We were married in 1973 and have three children, a son and two daughters. Both of my daughters still live and work in Victoria, while my son and his spouse and our granddaughter live in Kelowna.

What do you love most about being principal at OB high?Getting to work with young adults has been very rewarding.

They provide energy to my life every day. The students have a tre-mendous empathy for their world. I’m so taken by their willing-ness to give back to the school, the community and their world. They give me confidence every day that the world can deal with the problems it faces. Their understanding of what is going on and their willingness to take on the issues is remarkable. I’m also fortunate to work with a very talented staff.

What do you love most about the new school? The school is so full of light. It recognizes the changing

demands of our society about how we will educate future genera-tions. The building has a flexibility to it that allows us to adapt spaces to meet emerging needs. Of course, the most important

thing is that the students love the new school. Watching them come into the building for the first time is something I’ll never forget. “Wide eyed and slack jawed” would be my best description.

What are your hobbies? For most of my life, coaching has been my “hobby.” Coaching

emerged as a natural extension of playing sports myself. I had so many people who contributed to my opportunities that I wanted to be sure to do the same. Basketball, baseball and lacrosse have been the big three in my coaching life. The opportunities to work with amazing young athletes — a number of whom became profes-sional athletes — has given me a window to the pursuit of excel-lence. Having had the opportunity to coach the likes of Steve Nash in basketball, Mike Saunders and Rich Harden in baseball and the Gait twins in lacrosse has allowed me to learn “what it takes.” It has also been rewarding for me to coach young people who have since grown into their roles as contributors to our community and our world outside of sport — athletes who have become caring parents and who have taken their lessons from their sports and used them to achieve excellence in their chosen fields.

Who is your hero/who do you admire? And why?Not surprisingly, even though he is much younger than me, I’m

drawn to what Steve Nash has done with his foundation and all of the charity work he has taken on. It can be so easy to get caught up with fame and success, but Steve has remained loyal to his core values. I once coached him … and now he “teaches” me. Steve

Dave ThomsonCLAIM TO FAME IN OAK BAY: Principal of Oak Bay High School for 14 years (vice principal for six years).

WHAT OTHER CONNECTIONS DO YOU HAVE TO OAK BAY?My wife Twyla has been working at Oak Bay High School since before I came here as principal. One of my daughters worked at Oak Bay Rec Centre, and as a coach, Oak Bay Rec is a primary training site that I have used extensively for more than 25 years. I’m also blessed with the work of mayors and councils in Oak Bay who saw the big picture.

refused to listen to the “naysayers” when his goal of playing in the NBA was shared. He worked hard, persevered and was rewarded. Another hero I have is my brother. I watched him manage an extraordinary family tragedy with courage and grace while support-ing the rest of his family through it. He taught me so much about the strength of family and I use those lessons all the time when I try to assist families in my school dealing with their tragedies. I have one more hero, a former student who overcame an extraordi-narily challenging childhood, medical challenges, addiction issues and a collection of what could have been “excuses.” Instead, this person emerged in adult life as a huge contributor, helping literally hundreds of people “win” their battles.

What brings you joy?My family brings me joy. I’m very fortunate that I married my

sweetheart and we have been together now for more than 46 years. I’m immensely proud of my three children who have grown into marvellous young adults, and my granddaughter who is just a wonder.

What do you see as your greatest accomplishment? The obvious thing to say would be the development of this

amazing school and being the longest serving principal in Oak Bay High’s history, but that has to take a backseat to being able to look at my family with so much pride and happiness. Accomplishments are normally the function of being given the opportunity to suc-ceed. My wife and my children provided me with the opportunity to be a good dad and a good husband. Although the new school is a wonderful legacy, even better is a successful family.

Anything else you’d like us to know?I feel so fortunate to have had opportunities to do things in my

life that are meaningful for me. Teaching and educating young adults is an “absolute blast.” To be around students every day, even after 44 years in the business, is something that I’m so happy to be able to do. It’s great to be able to get up in the morning and want to go to work. I guess I’m simply appreciative that people believed in me.

MT. BAKER MOONRISEParting Shot

This photograph was submitted to Tweed’s Parting Shot section by Christina Aitchi-son.

About the photograph, Aitchison says, “Whenever possible I take it upon myself to watch the full moon rise. Normally, I head down to Mc-Micking Point to watch it come up over the strait. On this particular evening it was to rise near Mt. Baker, so I made my way to the beach at Haynes Park. It was a gorgeous evening as the air and water were completely still. A bald eagle called

to its mate in the tree above me, while this heron gently landed on the rocks. As the moon began to show its face, the clouds parted just enough for the light to shine through and illuminate Mt. Baker. Another beautiful moonrise I was fortunate to enjoy.”

“Parting Shot” is a special photographic feature that runs in each edition of Tweed. Send your high-resolution images to Tweed editor Susan Lundy for consideration in an upcoming edition: [email protected].
