Spain - La ManchaPAGO DE LA JARABAIn the heart of the up and coming La Mancha region is the 800 ha estate of Pago de La Jaraba, a newly founded single vineyardestate with a very well equipped state of the art winery. The technology used in the development of this winery is of the mostadvanced yet the philosophy is still very traditional. By only allowing the movement of the wine by gravity, without the use ofpumps, and producing wines without filtration, Pago de La Jaraba can assure a very fruit driven low acidic wine. The 800 hectaresof Tempranillo, Cabernet Sauvignon, and Merlot vineyards in Pago de la Jaraba are maintained and controlled exclusively by theWine Maker to obtain the highest quality grapes. Once harvested only the highest quality grapes are rigorously selected to producethe four products of Pago de La Jaraba. A maximum production level of 500,000 bottles allows this winery to maintain a productionof only high quality fruit driven wines. Only when the wines are ready to be released will Pago de la Jaraba make the winesavailable, requiring a minimum of at least 12 months in the bottle before release. Because Pago de La Jaraba manages theirvineyards exclusively and cultivates those using traditional techniques in a diverse terrain on the Jaraba, they can assure consistenthigh quality wines.
