Por Tor Red Turtle Chinese FestivalTill 8 September @ Phuket TownDuring the seventh Chinese month, Phuket celebrates the Por Tor Festival or the 'Hungry Ghosts' Festival – an important merit-making event for ethnic Chinese. Ancient Chinese tradition states that the gates of Hades burst open to unleash restless spirits, or 'Hungry Ghosts'. Relatives of these spirits make merit to pay their respects and appease the ghosts with gifts of food. Red turtle-shaped cakes are the most popular off erings. The turtle not only symbolises longevity therefore off ering the belief of longer lives to worshippers but also of fortune and success since it is also believed that the cake passes on the blessing to ‘Por Tor Kong’, the God of Devil.

Phuket Times.com Amateur Golf Open5 September @ Blue Canyon Country ClubThe Phuket Times.com Amateur Golf Open is the third round of the tournament of the Phuket Amateur Golf Open, which consists of ten monthly Open Competitions. Each Tournament has a six fi gure prize fund with prizes for fi rst, second and third places in each category. Any player who fi nishes in the top two of any category in each tournament, as well as any player fi nishing in the top 20/25 order of merit will be automatically entered into the end of season Phuket Amateur Golf Masters Open Final free of charge to be held in May 2011.

Capt Marty was writing after the last day of the 2010 Six Senses Phuket Raceweek, held at Evason Phuket & Six Senses Spa from 21-25 July, where yachts and crews from all over the world compete across six classes for the top prizes – and 500 sailors mix with island revellers for fi ve nights of 5-star parties.

At the same time, one of the multihull fl eet, Little Soul, having sailed all the way from Bali to join the regatta, lost its mast and drifted across the start line, holding up proceedings for the remaining classes while its sagging mast and tangled rigging was sorted out.

The delay meant the remaining classes got away in relatively calm conditions, on a course heading into the more ‘sheltered’ part of the bay – but not before a number of participants had decided to call it a day, opting for an early beer in the post-regatta bar rather than put fortitude and gear to the test.

After four days of very mixed winds, ranging from perfect 10-15 knots down to almost dead calm, the racing yachts on the last day were treated to not one, but two squalls rolling over the island into Chalong Bay, bringing winds up to 40 knots with them. Rain-laden black clouds gathered on the horizon as Race Offi cer Simon James started to get the diff erent classes away on what was planned to be the fi rst of two last-day races.

“If I saw that coming at us at home, I’d be dropping the sails and going home,” said Tasmanian sailor, John Bourke, veteran of many Sydney-Hobart races who – like many of the Raceweek regatta crews – had fl own into Phuket to fi nd out what racing in Southeast Asia was all about. John, who revelled in the conditions, has vowed to return for Phuket Raceweek next year, if not before.

It wasn’t long before things started to unfold… the fi rst squall hit just after the racing class had crossed the start line; a newly-launched frisky Phuket 8, Surf Patrol, broached, catapulting two crew members overboard. The Andaman Cabriolet catamaran, Niña, waiting for its own multihull class start, dropped sails and was quickly on the scene hauling the two out of the increasingly heavy swell. The irony of dripping crew shirts proudly boasting ‘Surf Rescue’ was lost on neither the rescuers nor the camera-shy rescued…

Those who eschewed the onshore comforts and raced on were in for an added ordeal. Looming over the Kata hills was another ominous black cloud, which descended on the ‘sheltered’ waters without remorse. Again 35 knots or more, this time bringing with it enough rain to create a ‘white-out’, saw ghost-like shapes hurtling around marks, avoiding boats moored in the crowded anchorage as well as unforgiving concrete navigation marks, racing towards each other with collision seemingly inevitable, but always miraculously keeping clear.

All-in-all a superb start to a day that was to end with the fabulous gala closing party and prizegiving, where 5-star food, top-class live music and a no-limits free bar combine with the exhilaration of a challenging week on the water and the famous ‘Phuket party mood’ to create THE Phuket social event of the season for Thais and expatriates alike (see Page 16).

Nevertheless, the soul of any regatta is the racing and here is what one Phuket Raceweek regular, Keith Garry up from Malaysia on BeauX Esprits, had to say the day after it was all over: “Thanks for a great regatta as usual. This regatta had just about everything in terms of weather and conditions. We had some fi rst time Southeast Asia sailors from West Australia on board who were impressed to say the least with the regatta and the great functions. They are all keen to come back next year!”

Recipe

Main ingredients:270 gm salmon (sliced into even • cubes −3 per portion)8 gm keta (salmon caviar)•

2 ml olive oil • Micro-cress salad•

Miso cream

20 ml miso paste• 100 ml whipping cream• Bring cream to the boil and mix in the miso paste. Leave to cool.

Mango sauce80 gm mangoes• 20 ml white wine•

4 gm sugar • 2 ml lime juice •

Mix all ingredients and liquidize. Pass through a fi ne sieve.

Miso, lemongrass and crispy prawn crust25 gm miso paste• 5 gm lemongrass• 20 gm deep-fried dried prawns•

2 gm kaffi r lime leaf• 20 ml groundnut oil• 60 ml water•

Chop the prawns and slice the lemongrass fi nely. Mix with the rest of the ingredients and blend to form a smooth paste. Use this to marinate the salmon for four hours before frying.

About Master Chef Ronnie Macuja

Ronnie graduated from a marine engineering course back in the Philippines and found himself working in a hotel a few months later, almost by accident. Even now he fi nds it hard to believe. Manila Hilton International then off ered him a two-year apprenticeship programme followed by exams which he passed with fl ying colours. He then became part of a team that, two years running, won top prizes in culinary competitions against teams from other international hotels. He was then off ered the post of a commis chef with the Hyatt Regency in Auckland, New Zealand. From there he rose to be the Chef de Cuisine at the Top of the Town restaurant: the hotel’s famous fi ne dining restaurant.

Ronnie is known for his inventiveness in preparing seemingly ‘simple’ dishes in a completely original way. Khun Wallee Pachantabutr sampled one of his culinary creations in New Zealand and invited him, on the spot, to come to Phuket and work as a chef in her resort. He managed Salabua for ten years, and transformed it into one of the best dining experiences on the island. His innovative cuisine has earned him well-deserved accolades from the culinary press.

As with most true chefs, Ronnie is the essence of humility and courtesy. He's so dedicated to his art that he spends hours a day in the kitchen creating new dishes. He also spends time training new employees, using a 'hands on' approach, to ensure that his staff achieve his sky-high standards of innovation and creativity. After spending many years at Salabua, he’s now found a new home in Chalong Bay. With the help of the Pachantabutr family he’s opened a very exciting restaurant called Vset which means ‘Extraordinary’ in Thai.

Slice the avocado and mango into small cubes and add the rest of the ingredients. Soak the rice paper in a warm water to soften, and pat dry with a clean cloth. Lay fl at, and spread with the mango salsa to make fl at rolls.

5 gm Madras curry powder • Salt•

Heat the oil and add the sliced green onion leaves, curry powder and a pinch of salt. Liquidize and wrap in a muslin cloth. Leave to strain overnight.

To assemble the dish, put the mango rolls in the middle of the plate, paint the miso sauce in straight lines on both sides and arrange the keta caviar at both ends. Put the fried salmon on top of the rolls. Sprinkle with mango sauce, scallion oil and micro-cress salad. Garnish with fried lemongrass and julienne of spring onion.

You may remember that in previous articles I talked about the New Earth Solutions Fund which aims to provide long-term capital growth, by investing directly and indirectly in the development and ownership of recycling and renewable energy facilities in the UK. Depending on the location and the waste stream itself, these industrial facilities handle both the recycling and treatment of waste, and the conversion of waste to energy. The fund has grown signifi cantly over the fi rst two years, achieving a return over that period of 23.50%. Since inception, the Fund has never posted a losing month and was completely unaff ected by the recent credit crunch.

Bobby Duchowny studied aromatherapy – a healing art that promotes massage, when combined with specifi c herb and spice oils, as a method to reduce stress, boost energy and heal certain physical ailments – at the American Aromatherapy Association.

Gearing up the sense of total relaxation, and gearing down even further my stress levels, I next experienced the signature massage – a combination of Lomi-Lomi and Aromatherapy techniques and principles. Lomi Lomi, also called ‘Loving Hands’, derives from ancient Polynesian massage using long continuous, fl owing strokes to get deeply into tired muscles. Aromatherapy, using essential oils to stimulate or relax, is the perfect complement. While my therapists’ hands

worked their magic on my body, I felt I had left all my worldly cares and tension behind.

By now in sensory heaven, the Sawasana angels prepared me for a Rejuvenating Anti-Stress Facial. A blend of facial massage with natural creams, this treatment cleansed and rejuvenated my skin and facial muscles. With all my senses heightened, I detected the fragrance of guava fruit – good enough to eat, but alas just one of the natural ingredients in the creams my therapist was using. This one is a must for anyone thinking of having a ‘face lift’!

Sukko means "Beyond Happiness". My fi rst feeling when I stepped through the impressive gates of the Sukko spa was, "I’m in paradise". The Sukko staff are dressed beautifully in traditional Thai style and the spa design, infl uenced by the ancient Siamese capital, creates a haven of calm yet regal serenity. I felt I had left all my troubles behind.

Chilled out by the soothing background music, my mind was fi lled with a peaceful wellbeing as I enjoyed the warm traditional welcome (again from Sukko culture) of the ‘Flower Floating Ritual’ – similar to ‘Loy Kratong’, where the idea is to fl oat away past stresses and wish for luck and joy from that moment on.

A variety of 40 spa treatments – prepared by Sukko's certifi ed Thai Herbalist and based on ancient Thai medical theory – is off ered at Sukko, in packages lasting from 2 hours to 4 hours. Each package has a specifi c purpose and can be selected to suit your lifestyle or the way you feel on the day. These herbal recipes and procedures have been handed down through generations and are totally free of petrochemicals, synthetic perfumes or colouring. I was pampered with the ‘All-Soother’ package, a 2 1/2 hour experience that left me feeling relaxed and refreshed. How is Phuket from your point of view? An interesting mix of cultures; a beautiful island set in a dream archipelago: a great tourist destination with a bright future.

What advantages to you see that gives Phuket an ‘edge’ in international tourist markets? The people are wonderful and Phuket is situated in close proximity to all the major cities in Asia.

What do you think Phuket’s administration could improve upon? Traffi c control and the education of children regarding the dangers on the roads.

How old are you? I’m 29 years old.

What is you marital status? I’m still single.

Are you planning to start a family soon? OK, I ‘m in a relationship but I’ve got no immediate plans in that direction.

What are the activities that you like to share with your partner? Travel, boating and enjoying a good dinner with fi ne wines.

What do you consider most important for the enjoyment of your lifestyle? Having people around me who I trust and love. I’m also particularly devoted to music.

What music do you like best? My tastes are eclectic: everything from R and B and Hip-Hop through to classical music from Boccelli and Pavarotti.

What did you do before you come to Phuket? After my MBA graduation in sales and marketing in France, I worked in an import-export business in Europe and then in the hospitality industry In Krabi.

How did you come to be part of the Twinpalms Cruises management team? By meeting the Twinpalms Phuket General Manager who off ered me the opportunity to manage their yachting division. I recognised this as a business with huge potential. At the same time, I would be able to contribute to the overall development of the yachting business in Phuket.

Please tell us about your job. What are the duties of the GM of Twinpalms Cruises? Twinpalms One is a fractionally-owned, 23-metre fl y-bridge yacht with modern, exciting and stylish lines. I supervise all operations including maintenance, managing the crew, the optimisation of charter bookings and the maintenance and development of a high standard of service on board. Most importantly, I handle all contacts with each of the yacht shareholders.

What’s the best part of the job? The satisfaction of operating a stunningly beautiful vessel in an absolutely breathtaking archipelago, and delivering 100 per cent satisfaction to a discriminating clientele.

How you approach your job? Well it’s very interesting but challenging at the same time. The sea always brings surprises. It’s really like running a small luxury hotel with the considerable complication that it’s on the water. Twinpalms One can accommodate up to 20 guests on day cruises and up to eight on overnight cruises. At the end of the day, it’s managing the human relations aspects in dealing with staff and clients that is the crucial focus. It’s people that make the diff erence, not just the product (even when it’s a beautiful 76-foot fl y-bridge motor yacht).

What is your motto for running the job? Discipline and professionalism in the ‘land of smiles’.

Tell us about your style of leadership. Straightforward and respectful.

Do you think you’re successful in your line of work? Well, it would be arrogant to claim perfection (even though I’m French) but seriously, I believe all the team is doing its best to achieve the company goals and to meet our passengers’ expectations. After two years of operations, we’re proud to see more and more returning passengers on board.

How do you handle stress? Learning Thai culture and playing sports helps.

Whereabouts do you live in Phuket? What determined your choice of location? I’m currently living close to Jungceylon, 20 minutes from my offi ce on Surin Beach. It’s also close to Phuket Town and all the shops, restaurants and sports facilities.

Which parts of the province do you like best? I think Kathu Lake and the Phang Nga national park. They both off er a sublime combination of magnifi cent vistas and serenity; plus they both have good wakeboarding spots.

Join the crowd at the weekend marketThe most popular week-end market in Phuket Town is offi cially called Chao Fa Variety but is universally referred to by its Thai name Talad Tai Rot. From Central Festival Phuket intersection head south on Chao Fa West for about one kilometre and then turn left. The market is opposite Wat Naka (Naka Temple). There’ll fi nd a bewildering choice – everything from clothes to electronics. If you’re after handicraft items like tooled leather goods, Buddha images or second-hand books you’ll also not be disappointed. Wheels and Wi FiThe problem with running a successful airport is that the devil’s often in the detail. Here are some ‘details’ to which our local airport management might well pay attention.

News that Phuket International Airport’s 5.70 billion baht expansion is moving ahead will delight anybody on the island who depends on tourism (which one way and another, is just about everybody). Despite political and economic upheavals all the signs are that Phuket will continue to attract ever-increasing numbers of visitors in the coming years.

The upgrade will modernise an airport that many people still see as a somewhat dowdy dowager standing at the gateway of a fabulously glamorous paradise location. The plan is to increase the capacity by 92% over the next fi ve years. In numbers, that translates to around 12 to 13 million customers per annum.

This eff ort to increase volumes is all well and good, but the powers-that-be also need to look at what can be done to give the airport that little bit of extra ‘value-added’.

The Airports Council International, the global body representing airports around the world, gives airports ‘marks out of ten’ for the quality of services off ered to passengers. At the moment PIA doesn’t even qualify for rating – though, to be fair, this is partly because it’s quite small. However, the council’s research into what constitutes good service is salutary. This month we look at two areas which might touch a nerve at PIA: internet services and baggage trolleys.

First, let’s look at internet services. ACI estimates that over nine billion passengers will use the world’s airports by 2025 – up from four billion in 2006. The vast majority of these will demand that connectivity is routinely available particularly if they have an hour or so to kill in the departure lounge. Just consider this. Indonesia, where English is not commonly spoken, ranks third behind the US and UK in numbers of Facebook users.

Phuket attracts huge numbers of tourists from the likes of Japan, India, China, Korea and Malaysia. It’s worth noting that as of 2009 China had 384 million Internet users; Japan, 96 million; India, 81 million; Korea, 37.5 million and Malaysia, 16.9 million. Oh, and don’t forget Thailand itself with 16 million.

An ACI survey on the provision of airport Wi-Fi services around the world found:

These numbers tell their own story.

Now let’s look at the humble baggage cart – an item that Suvarnabhumi Airport originally forgot to provide. While PIA is a small airport (so distances walked are relatively short) the adequate provision of baggage carts is still important. The airport caters mainly for tourists who tend to carry more, and larger, bags than businessmen on a quick trip.

The ACI survey found:

60% of airports off er an airside cart service.•

62% of carts can be used on walkways.•

88% cannot be used on escalators – obviously a tricky one.•

90% can be used in lifts.•

44% of carts have a braking system.•

60% of carts carry advertisements – one wonders why, and for what.•

We want tourists to go home with armfuls of souvenirs and duty-free goodies, so let’s make sure that they can get them from the drop-off point to the departure lounge without hiring Sherpas.

Finally, PIA might like to consider participating in ACI’s Airport Service Quality survey system. This provides an impartial, unbiased, statistically-reliable appraisal of airport service levels as experienced by passengers. ASQ is the world’s leading airport benchmarking programme. Suvarnabhumi Airport in Bangkok participates in the Asia Pacifi c section of the survey.

Diabetes comes in three types. Gestational diabetes and type 1 and 2 diabetes.

Gestational diabetes aff ects mothers during pregnancy and usually corrects itself following the birth of the child. There is not much we can do to prevent this type of diabetes, but thankfully is only aff ects a very small number of mothers.

The incidence of diabetes is on the rise and health authorities are very concerned that it will have an increasing impact on health care costs, and life expectancy. During 2007, authorities estimated that there were around 247 million people with diabetes worldwide, and if current trends continue those aff ected are likely to number in excess of 380 million by 2025. If untreated diabetes also has the potential to contribute to a range of other illnesses, including blindness, kidney failure, heart attacks, strokes and even erectile dysfunction.

When we eat our body breaks down the food into diff erent substances most importantly into glucose. Glucose is the simple sugar that our body uses as the main source of energy. However our bodies cannot use glucose unless there is insulin also in our bodies to help the cells absorb it. Insulin is a hormone produced by the pancreas. Simply put, if our body is going to use the energy from that we eat, it must have insulin to modify it.

Type 1 diabetes, is where your body makes no insulin and you must have insulin injections in order to survive. Type 1 diabetes accounts for around 10-15% of people with diabetes.

Type 2 diabetes, which aff ect the majority, is a condition where the insulin levels whilst not non-existent, are defi cient. Type 2 diabetes is what is worrying the health experts because of the signifi cant rise in the population so aff ected. The condition is preventable by reduction of the risk factors. Being overweight, taking insuffi cient exercise and eating a poor diet all contribute to the likelihood of your getting Type 2 diabetes.

Being overweight and over 45 places you at much greater risk of developing diabetes and you defi nitely should get checked. If you're younger than 45 and overweight, and have a family history of diabetes, low HDL cholesterol and high triglycerides or high blood pressure, then a check of your diabetes status is strongly recommended.

Diabetes and pre-diabetes can be detected by completing a fasting glucose test, or fasting blood sugar test (commonly abbreviated to FBS on your laboratory result slip). This test measures your blood glucose when you've not eaten or drunk anything for at least eight hours before. This test is also best done in the morning and can indicate that you're normal, or in a pre-diabetic state, or have diabetes.

Normal results are generally between 70-110 mg/dl. If you have elevated blood sugar levels after an overnight fast of over 140 mg/dl on at least two occasions, this indicates that you have diabetes. You may return a level of between 110 and 126 mg/dl and this result could indicate that you have impaired fasting blood glucose function, and are at risk of getting diabetes in the future. Your doctor would most likely wish to check your fasting blood sugar again, as

impaired fasting blood glucose levels is a signifi cant risk factor which requires monitoring and possible treatment.

Completing a fasting blood sugar test is a simple and relatively cheap procedure, with most places in Phuket performing the laboratory check for less than 200 baht. If you have elevated blood sugar levels, increasing exercise and losing weight can make a great contribution in assisting your levels to return to normal. Get your blood glucose level checked and put it on the annual list of 'things to do' for your body.
