HEALTHY WAYS

TASTE OF GOOD LIFE

Here comes the recipe of a delicious, Rajasthani dessert, most popularly made during the festive seasons.

Ingredients: 1-1/2 cups All Purpose Flour, 1/2 cup Ghee, 1/2 cup Milk, 1-1/2 cups Water Few strands of Saffron. For sugar syrup: 1-1/2 cups Sugar, 1 cup Water

Recipe: Pour ghee and cold milk in a bowl and whisk till both emulsify into a smooth paste and do not separate.

Sieve the flour in the above mixture and whisk again till batter is smooth and no lumps are left. Now add some water and mix it well into a smooth consistency. Add saffron for color. The consistency of the batter should be one string. Heat ghee in a frying pan. The quantity of ghee should be half of the density of the vessel. Check the ghee temperature (should be very hot) by dropping a small amount of the batter and see if it immediately comes up without any delay. Pour batter into the ghee slowly in one continuous thin stream in the center of the pan to make a big circle depending on the how thick Ghevar you want.When bubbles start spluttering in the oil, let the foam settle down. If the center point is totally covered, then use ladle to make little space and keep on pouring the batter.

Take 1-2 min interval between pouring of batter. Turn flame low once you have poured batter into the ghee. Let it fry until till it turns from light brown in color to brown in color, which means it is cooked now. Take out the Ghevar in a plate lined with tissue paper. A beautiful net shape would have formed.

To prepare sugar syrup: Add water & sugar to saucepan and boil with occasional stirring. Now dip the Ghevar into sugar syrup for 1 to 2 min & take it out. Keep the Ghevar dipped in the syrup on a plate and tilt it, so that any excess syrup gets drained. Your delicious Rajasthani Ghevar recipe is ready.

Duration : 40 minutes.

regular coffee.

Ingredients:60 ml Coffee Double Shot, 120 ml Coca Cola

Method:Mix double shot coffee with Coca Cola in a mixing jar and pour

it in a Martini glass. Garnish with lemon slice & olive skewer.

Duration : 5 minutes.Serves : 1 person.
