Here is a recipe for a traditional sweet

made from tatties.

Its easy! Why not try it at home.

Primary 4 made some in class.

IngredientsCold and thoroughly mashed boiled potatoes - 1½ heaped tablespoons of mashed potato per barIcing sugar (have a packet ready – quantity depends on how stiff your mashed potato is)2 tsp vanilla essence8 oz Melted chocolate for coating1 Cup Toasted desiccated coconut (makes 12)

Method Cook potatoes in boiling water for 20 minutes before mashing.Mix potatoes with icing sugar; add enough sugar to make the mixture firm. Chill, then roll the mixture into balls or shape into bars.Toast desiccated coconut in a hot pan or on a tray in the oven, at 350°F (180°C/Gas Mark 4) until golden brown.Melt chocolate slowly in a warm pan; stirring constantly to prevent sticking.Coat the balls with melted chocolate (You could use a pastry brush!) and cover with the toasted desiccated coconut on all sides.

Made from sugar and condensed milk.

Ingredients Makes: 35 squares2 lbs caster sugar4oz/125g butter1 tin condensed milk1/4 pint milk1/2 teaspoon vanilla extract

Preparation method1. In a large deep pot place all ingredients, stir over a medium heat until all melts, stirring frequently.

2. Bring to boil, simmer for 40 minutes stirring now and again. 3. Remove from the heat stirring all the time; be careful. 4. Spread mixture in a flat tray leave to cool for at least 1 hour. Cut into squares and enjoy.
