• Crab ravioli with dill and champagne cream with fennel, baby caper and cress salad
• Sticky caramelised pork belly with bok choy, wild mushrooms and a dark soy, plum and chilli sauce

MAIN• Chicken Supreme with colcannon, baby Dutch carrots and mustard cream sauce
• Lamb Rump with creamy mash, green bean and prosciutto bundle and tomato and onion ragout
• Atlantic salmon fillet with a warm salad of artichoke, asparagus, roast cherry tomato and kipfler potato with red pepper rouille
