RETREAT - CELEBRATING MAGICAL ATTRIBUTES OF ROSESRosa damascena is a symbol of beauty and love in the collective memory of humanity yet it is also an important medicinal plant. It has a significant place in our culture since the Ottoman Empire.
During the retreat you will learn about the history of rose, its place in the perfume world and how its fragrance have been a major attraction both in the East and the West for centuries. We will visit one of the the largest rose plantation cities in the world, Isparta located in the Mediterranean region of Turkey. We will harvest roses early in the morning with the locals followed by a trip to a Rose Oil Factory to observe the traditional way as well as the modern way of rose oil distillation. You will have the opportunity to create your personal rose perfume at our workshop. There will be a special lecture about the importance of rose in healthcare and culinary practices since the Ottoman times.
During your trip, you will also visit historical monuments of Istanbul; the Capital of East Roman Empire and the Ottoman Empire.

ISTANBULIstanbul is a magnificent city with a wealth
of culture, history and nightlife. Split into
two by the Bosphorus Strait, it is the only
city in the world to straddle two continents,
Europe and Asia, thus has two contrasting
atmospheres. Istanbul was founded in the
7th century BC on a naturally defensive site
from which trade along the Bosphorus could
be controlled. For 16 centuries it was a great
imperial capital, first of the Byzantine and
then of the Ottoman Empire. Some
knowledge of the histories of these two
civilizations will help visitors to appreciate
the magnificent monuments found
throughout the city.
Hagia Sophia, Hippodrome and Underground Cisterns are from the Byzantine times; Blue Mosque, Topkapi Palace, Spice Market, Grand

Day 1 • 30 May 2020 - SaturdayGuests will get together at the Legacy Ottoman Hotel
Lobby upon individual international arrivals at the Istanbul Airport.
Welcome remarks will be presented by Mrs. Meltem
Kurtsan, NAHA Regional Director. At 6.30 pm, welcome cocktail with finger food will follow. Overnight in Istanbul.
Day 2 • 31 May 2020 - SundayFollowing breakfast, at 9 am, depart for a full day tour including a two-hour long private Bosphorus Cruise and a visit to Spice Market followed by lunch served at Hamdi Restaurant.
After Lunch, the guests will walk through Galata Bridge to Karakoy and then will take the 2nd oldest underground subway in the world to Galata Mevlevi Lodge for Whirling Dervish Performance. Dinner will be served at Firuzende Restaurant with the view of Galata Tower and Golden Horn.

The Bosphorus is a natural strait that is the world’s narrowest used for international navigation. It connects the Black Sea with the Sea of Marmara and is a continental boundary between Europe and Asia. With old seaside mansions, mosques, palaces, restaurants and beaches along its shores, the Bosphorus resembles a wide river. Woods and residences cover the hills rising behind its shores.
The BosphorusLocated in the old city, Spice Market is very lively and colorful with its shops and small side streets, operating since mid-17th century to this date. It is a dreamland for spice and herbal tea lovers with its numerous variations. Called "Egyptian Bazaar" in Turkish as it used to be endowed with the Cairo imposts. Holds 88 vaulted shops and a tiny mosque.
Spice MarketMevlana Celaleddin Rumi Known as Rumi, he preached love, tolerance and charity, believing it possible to get closer to God through meditation, music and dance. This is what gave rise to the sema dances – the whirling long coated dervishes – which are a truly impressive spectacle. One hour Whirling Dervish Dance will be performed at The Galata Mevlevi Lodge which was built in 1491.

The Golden Horn, or Haliç in Turkish, is a horn-shaped fjord on the European side of Istanbul and is fed by two small streams. It is a natural harbor where Byzantine and Ottoman fleet and commercial ships were anchored. Today, it's surrounded by parks and promenades with ancient sites around it. Its name comes from the color of the water when at sunset it shines with a gold color because of the reflection of the sun. There are three bridges on Golden Horn.
The Golden HornIn 1867, French engineer Eugène-Henri Gavand was inspired to make the area easier to access for pedestrians. He proposed the construction of Tunnel Funicular. Sultan Abdulaziz approved the project that would propel the neighborhood upward began. The funicular reflected the multicultural spirit of Constantinople. Karaköy and Galata, the two neighborhoods that Tunnel Funicular connects, historically was home to Jews, Greeks, and Italians. Today, the influence of the different cultures is apparent in present-day Beyoğlu, from Taksim to Galata to the Golden Horn, where Ottoman and international styles converge.

Day 3 - 1 June 2020, Monday
After breakfast, lecture will be given by Pharmacist
Meltem Kurtsan and M.D Kıvılcım Kayabalı about the
importance of Rosa damascena essential oil and hydrosol
during Ottoman Empire time and today. Transfer to the
airport. Flight to Isparta by TK2860. Drive to Lake Egirdir
for early Dinner. Overnight in Ramada Hotel Isparta.

Turkey’s fourth largest lake and second
largest fresh water body. Also known
as Seven-Colored Lake as a result of its
daily and seasonal differentiations in its
color. It is a wetland of international
importance due to its distinctions as a
Drinking Water Reservoir, Natural
Protected Area and Important Bird
Sanctuary. Fishing has traditionally
been an important means of livelihood
for people living around the lake. Lake
fish will be served during dinner.

İstanbul. Since 1888, rose plantation
and rose oil/water distillation is
increasing progressively in city of rose,
Isparta. Turkey is the number one
supplier of Rosa damascena essential
oil in the world. Especially in May, all
the landscape smell beautifully and
scene is wonderfully pink because of
the Rosa damascena flowers. Since
2000, Lavandula officinalis plantation
and lavender oil distillation are also
growing in Isparta city.

Day 4 - 2 June 2020, Tuesday
At 7 am, depart from the Ramada Hotel to rose fields
for harvesting. Each participant will be given a small
bag to harvest rose petals from the fields. These bags
of petals will be kept by the participants as souvenir.
Traditional distillation house will be visited to observe
the ancient way of rose oil/water production.
Lunch at “Gülhane” (House of Roses), prepared by
local women at their backyard, followed by one of the
largest modern rose oil distillation factory “Erçetin”;
“Rose Perfume Atelier” with rose oil at the factory.
Dinner at the Ramada Hotel. Overnight in Isparta.
Isparta is the “City of Roses”. The whole region is famous for
the cultivation of Rosa damascena, blooms throughout May
and June. We will have the privilege to visit a farm and join
the rose harvesting with the locals. You are going to feel
intoxicated by the scent of whole village. We will have the
privilege to visit a farm for a "hands-on-experience",
harvesting with the locals. You can be intoxicated by the
beautiful smell of the roses as it takes over the entire village.

Erçetin Rose Oil Inc. was founded in 1983, and has been the
primary rose oil provider for French perfume companies.
Nuri Erçetin, the factory owner, is going to present a
briefing about the complete process of rose harvesting,
transportation to the factory, transferring the roses into the
distillation tank, the complete process of distillation as well
as other extraction methods, i.e. rose oil, rose hydrosol, rose
concrete and rose absolute. Rose Perfume Workshop is
planned at the end of the factory tour.

Day 5 - 3 June 2020, Wednesday
After breakfast, depart from the hotel for a trip to the
ancient city of Sagalassos. Lunch at Susamlık Restaurant
with Burdur Lake view.
Transfer to the airport for the flight to Istanbul, arriving
at 6 pm local time. Evening at leisure. Restaurant
recommendations will be provided.

Sagalassos is one of the best-preserved ancient city among
2000 cities in Anatolia. Conquered by Alexander the Great in
333 BC, Sagalassos flourished after joining the Roman Empire
in 25 BC. The city was an export center for pottery and
agricultural products throughout antiquity. Named the
Metropolis of Pisidia, Sagalassos underwent a period of
unprecedented building activity that began during the reign of
Emperor Hadrian (117-138 AD) and endowed the city with the
monuments visitors see today.

Day 6 - 4 June 2020, ThursdayAfter breakfast, depart for a full-day tour of the city,
including visits to Gülhane Park, Topkapi Palace,
Archaeological Museum, Blue Mosque, Hippodrome, Hagia
Sophia and the Underground (Basilica) Cistern. Lunch at
Yeşilev. Overnight in Istanbul.

Between 1459 and 1465, shortly after his conquest of Constantinople, Mehmet II built Topkapı Palace as his main residence. Rather than a single
building, it was conceived as a series of pavilions contained by four enormous courtyards, a stone version of the tented encampments from which the
nomadic Ottomans had emerged. Initially, the palace served as the seat of government and housed a school in which civil servants and soldiers were
trained. Sultan Abdül Mecit I abandoned Topkapı in 1853 in favour of Dolmabahçe Palace. In 1924 Topkapı was opened to the public as a museum.
The Palace’s Collections
During their 470-year reign, the Ottoman Sultans amassed a glittering collection of treasures. After the foundation of the Turkish Republic in 1923, this
was nationalized and the bulk of it put on display in Topkapi Palace. As well diplomatic gifts and articles commissioned from the craftsmen of the
palace workshops, a large number of items in the collection were brought back as booty from successful military campaigns. Many such trophies date
from the massive expansion of the Ottoman Empire during the reign of Sultan Selim (1512-20), when Syria, Arabia and Egypt were conquered.

Although this collection of antiquities was begun only in the mid-19th century, provincial governors were soon sending in objects from the length and breadth of the Ottoman Empire. Today the complex includes three different museums the Archaeological Museum, the Ancient Orient Museum and Tiled Kiosk Museum. It has one of the world's richest collections of classical artifacts, and also includes treasures from the pre- classical world.

This is a historical urban park in the Eminönü district. The park used to be the lower gardens of the Topkapı Palace. There were huge gardens situated on the south of the Palace full of scented roses. Also there were rose oil distillation unit built in that location and that’s why the park is called Gülhane (House of Roses Park).
Gülhane Park (House of Roses Park) St. Sophia, the Church of the Divine Wisdom, was dedicated by
Justinian in 537 A.D. For nearly a thousand years St. Sophia served as the cathedral of Constantinople and was the centre of the religious life of the Byzantine Empire, and almost five centuries after the Turkish conquest it ranked first among the imperial mosques of Istanbul. St. Sophia remains one of the truly great buildings in the world with its unique mosaics and marble decorations. The massive dome is surrounded by four minarets which were built during the Ottoman period. The architect Sinan was so vexed by the impressive dimensions and architecture of the Hagia Sophia, that he spent his life trying to better it.

Little is left of the gigantic chariot-racing arena which
once stood at the heart of the Byzantine city of
Constantinople. Emperor Constantine enlarged the
Hippodrome and connected its kathisma, or royal box, to
the nearby Great Palace. It is thought that the arena held
up to 100,000 people. The site is now an elongated
public garden, At Meydani, Cavalry Square. Constantine
adorned the spina, the central line of the stadium, with
obelisks and columns from ancient Egypt and Greece.
The four bronze horses that stood on the long-vanished
starting gate were pillaged during the Fourth Crusade
and taken to St Mark's in Venice. Three ancient
monuments remain, however.
HippodromeRight next to the Hippodrome rises the
Sultanahmet Mosque. It was commissioned by
Ottoman Sultan Ahmet I in 1616. Therefore, local
people call it the Sultan Ahmet Mosque whereas
tourists call it the Blue Mosque because of its blue
interior decorated with 21,000 blue Iznik tiles.
Lilies, carnations, tulips and roses bloom in
ageless stylized beauty, glowing in the light falling
from 260 windows. Also famous for having 6
minarets, Blue Mosque is an unmissable feature of
the Bosphorus skyline and is still in service as a
popular mosque.
Basilica CisternThis is the largest cistern of the
Byzantine era. It has 336 marble
columns and a capacity of 80,000
cubic meters of water. At the north-
western corner, two of the columns
are mounted on ancient classical
pedestals in the form of Medusa
heads -one of them upside down, the
other on its side; thought to be a
display of departure from old gods
and beliefs.

Day 7 - 5 June 2020, FridayFollowing breakfast, depart for a full day tour of the city including visits to Balat, Alfred Heilbronn Botanical Garden, Suleymaniye Mosque, Grand Bazaar. Lunch at Giritli Restaurant.

Ecumenical Patriarch of Constantinople, also known as
St.George Church, is among the holiest Greek Orthodox
churches in the world with its 300 million followers. The
Greek Orthodox Patriarchate Istanbul has been the
spiritual center of the Greek Orthodox world since around
1600. Officially the seat of the Ecumenical Patriarchate of
Constantinople, it is known locally as the Fener Rum
Patrikhanesi (Fener Greek Patriarch), it could be
considered the Vatican of Eastern Orthodox church, and
the 18th century Aya Yorgi Kilisesi, Istanbul (Church of St.
George, Istanbul), which stands in the grounds of it,
attracts coachloads of pilgrims from Greece for Sunday
mass, particularly at Easter time.

Balat is another of the Istanbul quarters in which Jews were settled after their
expulsion from Spain, enlarging a community which had lived here since Byzantine
times. Today Balat is a working-class district on the shores of the Golden Horn.
Though it once had as many as nineteen synagogues, only two of importance remain,
the famous Ahrida, and the neighboring Yanbol. The site of a Jewish school is close
by, and Or Ahayim Jewish Hospital is several hundred meters to the northwest, within
walking distance.

ISTANBUL
One of the largest and oldest covered
markets in the world, operating since
mid-15th century. Located in the old city, it
is the favourite place for big shoppers. In
its labyrinth of streets and passages are
more than 4,000 shops with each trade
having its own place: the goldsmiths’
street, the carpet sellers’ street, etc.
There is a wide selection of jewellery from
traditional to modern styles, while the
carpet shops display eye-catching wares
of vivid colours and intricate designs.
Grand BazaarThe Mosque of Suleyman the Magnificent, where he and
his wife, Hurrem Sultan (Roxelane), are buried, is
considered the most beautiful of all imperial mosques in
Istanbul. It was built between in mid-16th century by the
famous imperial architect Sinan. Standing on a hill, it
stands out with its great size, emphasized by the four
minarets rising from each corner of the courtyard. Inside,
the mihrab (prayer niche) and the mimber (pulpit) are of
finely carved white marble, and there are fine stained-glass
windows.
Alfred Heilbronn Botanical GardenThe initiative to establish a botanical
garden at Istanbul University came
from Ord. Prof. Dr. Alfred Heilbronn
when he started lecturing in Istanbul.
The garden is started operating in 1935
under the name of I.U. Botanical
Garden – Hortus Botanicus
Istanbulensis. Today there are 23 pools
in the garden of various sizes, 15 of
them are in the greenhouses, 8 in a
natural environment, and some of them
are heated. Huge Ginkgo biloba trees at
the entrance gate as well as herbarium
collection can be seen of the garden.
