Ingredients—makes 15 servings • 2-8 oz. pkgs. cream cheese, softened • 1-1 oz pkg. ranch dressing mix • 2 green onions, minced • 4-12 in. flour tortillas • 1/2 cup red bell pepper, diced • 1/2 cup diced celery • 1-2oz can sliced black olives • 1/2 cup shredded cheddar cheese Directions 1) In a medium-size mixing bowl, combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, and cheese (if you'd like) over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil. 2) Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices. Easy!

LOW BRIDGE CAUSES BIG PROBLEMS FOR TRUCKS

For the most part, our transportation infrastructure has been designed to account for large vehicles on the road. Lanes are wide enough, on-ramps are long enough and, perhaps most importantly, bridges are high enough to allow passage underneath. But, at only 11-feet, 8-inches high, a rail bridge in Durham, North Caro-lina has been rammed into by so many trucks that the railroad com-pany had to specifically install a crash beam made out of reinforced steel simply to stop the tracks from being damaged so much. And the crash beam has already had to be re-placed. The bridge decapitates so many trucks, in fact, that an entire website

has been dedicated to it, complete with videos, t-shirts and an interest-ing history of the bridge. According to www.11foot8.com, a truck is visibly damaged by the low-clearance bridge about once a month. The bridge is over 100 years old, meaning that it was built at a time when there were no requirements for minimum clearance because there were no large trucks driving under-neath.
