Wines for seafoodMitch’s picks“I like to drink wine with my seafood and there’s nothing better than getting a perfect match, the experience of eating seafood can be so much enhanced - here’s a few of my favourites at the moment.”

Xarel lo - a wonderful crisp wine, really fresh and like a squeeze of lemon on the tongue. Perfect with grilled hake and anything cooked on the plancha, the lovely caramelised fish works so well with its zingy freshness. Extra special this year because some of the Rockfish team helped to blend it.

Albariño - I call this the perfect fish wine. Its grown by the sea in Northern Spain and has an affinity with all fish like no other, its fresh taste and rounded taste will bring out the best in any fish.

Bourgogne Blanc - its hard to imagine a wine list for seafood without something from Burgundy listed. The richness and minerality from that area adds something special. This wine is perfect with oysters, even better try it when we have large thick cuts of plaice or look out for fresh turbot, it was made for eating with Burgundy!

SustainabilityAt the very heart of fishing here is the fish market at Brixham, where buyers from all over the world are each day looking to secure some of the catch. We buy a selection of the best of the landings each day for our restaurants, from gurnard, Dover sole, lemon sole & lobster, we have over 30 species to choose from. If we don’t have your favourite today try tomorrow as it’s probably still in the sea. Brixham is a highly regarded and well managed local fishery, the hake is MSC certified for instance. Our cod and haddock is fished in the ice cold waters of the Barents Sea in Norway, where the stocks are really healthy, growing in numbers and certified sustainable by the MSC.

who buys our fish?Lee, who has worked with us for over 5 years as head chef in Dartmouth, is now our Fish Room Chief! Lee buys our local fish from the Brixham fish market every morning choosing the best of the local catch for all of our restaurants, The Seahorse and Rockfish. “Every day is different on the market”, says Lee, there is a great buzz, lots of competition for the best of the landings and lots of fun amongst the buyers, many of whom will come round to Rockfish and enjoy breakfast when the market is finished”. The fish is prepared by Lee and his team, weighed, filleted, pin-boned, cut to size, whatever is required. Consistency is really important so that customers know what they are getting when they eat with us. “Getting the cut just right is harder than you think as fish is not a uniform size and shape! There is the fat end of the fish and the thinner end, then there is how it will look on the plate, it’s not rocket science, more of an art form!” Our fish cutting room is located next to our takeaway in Brixham, right by the fish market.

Who we’re helpingCleaning our seasTill the Coast is Clear is a Social Enterprise working with caring businesses, organisations and charities to help tackle the issue of marine plastic pollution on our stretch of the coastline. They have a specialist rib called Coast Clear One capable of accessing the remote and difficult to reach locations that general beach cleans can’t get to. We love their “zero to landfill policy” where they aim to get all waste either recycled or used for energy generation.

Helping our communities with your helpAt Rockfish we believe in being a part of our neighbourhood. Supporting local organisations and charities is part of that belief. We work hard to make a positive contribution where we can and have an optional £1 table donation on the bill, and the money from this goes to a neighbourhood organisation that’s doing really good things locally. In Brixham we support Till the Coast is Clear (see more info ->) & Pride in Brixham. Pride does what it says on the tin and takes great pride in keeping the town looking tip-top, decorating, planting and tidying all the public areas, run by a team of volunteers headed by local Mary Thompson. We love what they do and how much they care about our town.

Heron ValleyA JUICY STORYHeron Valley is a family business in Devon, and they have been making award winning organic juices, ciders and soft drinks for nearly 30 years. Their business has grown organically (excuse the pun!) over the past two decades, and is run and owned by Tasha & Barney Green. They come in and train all of our staff regularly and for our new restaurant openings.

Heron Valley has a very clear plan; they make the best possible drinks, by hand, using only the best ingredients. Their drinks have won a raft of national awards including Gold and Double Gold at the Great Taste Awards, and winners of The Soil Association Organic Food Awards.

ABOUT THE INGREDIENTSTheir apples are sourced from their own orchards, and similar growers. They have planted over 2000 apple and pear trees in the past year, and work closely with local bee keepers and the wildlife trust to help create a bee and pollinator friendly environment in all of the orchards. They also farm organically, and only use whole, honest ingredients in their drinks.

At Rockfish we love the sea; many of us are sailors or paddle-boarders and we like to support ambitious young sailors locally. These guys are part of the current Team Rockfish. They follow in the footsteps of Henry Bomby, a sailor from Devon who we supported through local sailing and later in the prestigious offshore Figaro series. We are proud that he took part in the round the world Volvo Ocean Race where he crewed with Dee Cafri on the Turn the Tide on Plastic vessel - an initiative close to our hearts.

Morgan Peach & Rhos HawesTwo of sailors who we sponsor locally are Morgan Peach and Rhos Hawes who teamed up a couple of years ago and are now racing in 49ers with their sites firmly set on Tokyo 2020. The under 23 rowers have both just graduated from university and are now training full time with some big challenges on their way to Tokyo 2020. THE CHART RooM - DARTMOUTHWith 40 covers, a bar and a small South facing terrace the Chart Room is the perfect space for a celebration. It is decorated with maritime charts and has a very relaxed feel with its own log burner and bi - fold doors that open one side of the restaurant on to the terrace.
