    tsp bicarbonate o soda1 tsp pure cocoa powder cup vegetable oil cup buttermilk1 tsp white wine vinegar tsp natural vanilla extract1 large ree range egg20 ml red ood colour

    1. Preheat the oven to 160C and line a 12 hole mun tin with large cupcake cases.

    2. Put the butter and the sugar in a reestanding electric mixer with a paddleattachment (or use a handheld electric whisk) and beat on medium speed until light

    and ufy and well mixed. Add the egg and mix well.

    3. Stir in the buttermilk, oil and salt, keep mixing and adding the our till the mixtureis well incorporated. Add all the remaining ingredients and beat or 5 minutes till themixture is smooth and glossy (yes, it is that simple but trust me this works).

    4. Spoon the mixture into the paper cases until two-thirds ull and bake in thepreheated oven or 2025 mins, or until the sponge bounces back when touched or askewer inserted in the centre should come out clean.

    5. Leave the cupcakes to cool slightly in the tray beore turning out onto a wire coolingrack to cool completely.

    6. Pipe and serve your avourite cool cream cheese rosting or get creative by usingondant. Smooth a layer o buttercream using a palette knie and nish by cutting aondant disc using a circle cutter to place on each cupcake.
