Super Summer Salads
Janet Brown, RD, LRD Valley Senior Services Dietitian
Summer is essentially here! What better way to cool things off than with salads. I’m not just
talking lettuce salads – there’s also fruit salads, potato and macaroni salads and of course, cookie
salads. Most folks feel the word ‘salad’ implies that the food is automatically healthful. However,
salad dressing, mayonnaise and other creamy goops can make salads quite calorie-ridden, full of
fat and unhealthy. Try these salad recipes using some healthier ingredients.
Ranch Dressing:
1/3 cup plain Greek yogurt 1 tsp Dijon mustard
1/3 cup lowfat buttermilk ½ tsp onion powder
3 Tbsp mayonnaise ¼ tsp garlic powder
1 ½ tsp lemon juice 1 Tbsp finely chopped chives
Stir all ingredients together – add salt to taste.
Yield: 1 cup 1 serving=2 Tbsp
Calorie comparison: Regular: 140 calories This recipe: 50 calories
Potato Salad Dressing:
½ cup plain Greek yogurt ½ tsp salt
½ Tbsp mustard ½ tsp pepper
½ Tbsp vinegar ¼ tsp onion powder
½ tsp sugar 2 Tbsp chopped dill or 1 Tbsp dry
Optional: onions, chopped celery and hard-boiled eggs.
Whisk ingredients and stir into boiled potatoes.
Yield: serves 6 1 serving: ½ - ¾ cup
Calorie comparison: Regular: 275 cals This recipe: 104 cals
Fruit Salad:
1 cup fat-free vanilla Greek yogurt with 2 Tbsp honey
blend together with your favorite fruits – make a healthy ambrosia salad.
To make any summer super, get creative with a variety of salads!

ND SMP Scam of the Month June 2017
Is this an IRS Scam?
The Internal Revenue Service (IRS) is now working with private debt collection agencies to recover unpaid tax debts.
Scammers could attempt to exploit individuals with the potential confusion created by this latest announcement. Here’s what you need to know:
How it works:
If you have a LONG overdue federal tax account, IRS will MAIL you a letter stating that the account is being
turned over to a private debt collection agency. The letter will contain the name of the company and their contact information.
The private debt collector will SEND you a letter confirming the account transfer before ever attempting to
contact you by phone. The private debt collector will be able to discuss payments options with you, but the only way you can pay
your tax debt is electronically or by check, payable to the U.S. Treasury.
What you should know:
The IRS authorized only four private debt collection agencies to collect tax debt, and only one of these agencies
will contact you if you owe federal taxes. They are: CBE Group of Cedar Falls, IA;
Conserve of Fairport, NY;
Performant of Livermore, CA; Pioneer of Horsehead, NY.
What you can do:
Remain vigilant to the IRS imposter scam. When it comes to fraud, caution is our number one weapon. You have
the power to protect yourself. If you DO NOT have a federal tax debt, then you WILL NOT receive a call from the IRS or a private
debt collector demanding payment. If you are unsure if you owe federal taxes, look up your account at www.irs.gov/balancedue
Keep your personal numbers (Medicare, Social Security, and bank account numbers PERSONAL.
Contact the ND Attorney General Consumer Protection office at 1-800-472-2600.
Call the ND SMP office if you have questions about Medicare fraud. Pass on this information. Chances are that someone you know has been scammed, even though they may
not talk about it. Sharing what you know can help protect someone from a scam. People will listen to you
because they trust you, a friend, neighbor or relative. Help to start the conversation about fraud.
