The olive tree is the iconic symbol of the Mediterranean par excellence, an ancient tree of biblical connotations that is identified with the cuisine and traditions of the Mediterranean basin, producing one of the healthiest and most versatile natural fats for a rich and balanced diet. Our passion for olive oil led us to try to produce the best olive oils in the world, that smell and taste of what surrounds us, our Earth! The 120 olive trees of Quinta do Isaac are carefully preserved in organic production. Predominantly of the Madural, Verdeal and Cordovil varieties, olive trees can be found all over the estate, where they line the paths that criss-cross the vineyard or form olive groves in areas where no vines are planted. As well as producing exceptional olive oil, the olive tree also contributes to the vineyard's biodiversity. In the production of this olive oil, only mechanical processes were used in its extraction at low temperature, in order to preserve its natural characteristics and quality. It is classified as Organic and Extra Virgin. Tasting note: Light green, fruity, with notes of tomato stalks, mown grass and some banana. In the mouth it presents green banana, green nuts, sweetness, a slight bitterness, and medium and prolonged spice. The finish is nutty, with a very interesting balance of bitterness and sweetness. Use and accompaniments: Should be used cold. Ideal for boiled vegetables, fresh pasta, steamed or grilled dishes, lean fish, various salads, seasoning chocolate and even simply spread on toast.
