With a passion for the hospitality industry spanning over 50 years, Joe & Margaret had the vision to create Cork city’s first 5 star hotel over 20 years ago in the grounds of an old manor house, renowned locally for its easily accessible apple orchard! With careful hands-on planning, Hayfield Manor emerged onto the Irish market in 1996 and so began our mission to become Ireland’s top leisure destination. With the help of their current team, Joe & Margaret are committed to ensuring that guests of Hayfield Manor receive the service that they deserve, delivered with the authentic (charmingly off-beat!) hospitality for which Corkonians are known.

Joe and Margaret Scally are also proud owners of Hayfield Manor’s little sister, Killarney Royal, the family’s original hotel, where they have been warmly welcoming guests for 3 generations. Most recently, The Malton Killarney, has joined the family’s collection. This 171 bedroom majestic Victorian hotel, set in the the heart of Killarney town, is one of Ireland’s most iconic hotels and it is the aim to restore The Malton to its rightful place as Killarney’s premier historic hotel.

Ettienne Van VredeCEO

Ettienne studied Hospitality Management in Cape Town Hotel School, graduating top of his class. He honed his skills in world class hotels such as the 5 Star Cape Grace Hotel before embracing the opportunity to work overseas at Hayfield Manor. Ettienne held several positions including Restaurant Manager, Accommodation Manager and Deputy Manager, before assuming the role of General Manager in 2008. Joe and Margaret Scally were proud to officially welcome Ettienne into their family in January 2010 when he and their eldest daughter Annemarie were married.

A desire to provide guests with service that exceeds their expectations is what drives Ettienne and has led him to his current position of CEO of The Hayfield Family Collection. Ettienne is an uncompromising and inspiring leader. He is constantly searching for new ideas and methods to ensure that guest satisfaction is maximised. For Ettienne, our collection of properties are not simply hotels, but are a home away from home. He delights in meeting with guests personally, and in doing his utmost to make their stay memorable.

Annemarie is the eldest daugheter of Joe and Margaret Scally. Having been immersed in the hotel industry from an early age, Annemarie took up one of her mother’s passions as a career and trained as an Interior Designer. Having earned her degree, Annemarie set up her own design business where she learned the practicalities of her trade for a number of years. When the time came to begin a new project at Hayfield Manor, the construction of Perrotts Garden Bistro, it was a natural choice for Annemarie to take on the project on behalf of her parents. The introduction of Perrotts Garden Bistro lead to a relaunch of the hotel’s original dining room which, with Annemarie’s inspired stamp, emerged as Orchids at Hayfield Manor, the properties signature gourmet restaurant.

As tends to happen with family businesses, one project led to another and today Annemarie, somewhat unconsciously, has become the resident Creative Designer for each of the family’s hotels. The challenge for Annemarie is to ensure the comfort and functionality of guest space is optimised while simultaneously maintaining the individual historic character of each of the properties.

At Hayfield Manor, we pride ourselves on filling our beautiful hotel with staff that embrace its character and extend to you, our guest, a personal service that is uncompromising in its delivery. Each team member is a stone in the foundation that makes Hayfield Manor Cork’s finest 5 Star Hotel.

TJ’s passion for hospitality developed from working as a teenager in summer jobs in hotels throughout the picturesque town of Killarney.

He completed his honours degree in Hotel Business Management that also included a one year apprenticeship at the five star Adare Manor Hotel & Resort. Following his studies, and with the prospect of learning more about our business, he moved to London in May 2000 to put all his good theory into practice. TJ’s first role was Assistant Reception Manager at the Hilton London Metropole, followed by Front office Manager at the Novotel London West. He joined the Red Carnation hotel team in 2004, as Rooms Division Manager at their Montague on theGardens hotel. He returned home to Ireland in 2007 to become Deputy General Manager at the five star Ashford Castle.

TJ was appointed as General Manager at Hayfield Manor in February 2017. He is both delighted and honoured to lead the team at Hayfield Manor and support all our team members in the achievement of our ambition; to provide our guests with an experience Beyond the Best.

Mark StaplesExecutive Head Chef

Mark commenced his culinary career in Scotland at the renowned Gleneagles Hotel, where he débuted as a 1st Commis. Motivated to evolve his skill set further, Mark embarked on the life changing move to London’s Teatro Restaurant where he worked alongside celebrity and Michelin star chefs including Gordon Ramsey & Stuart Gillies. Mark met his Irish wife and (naturally!) a move to Ireland followed. Mark’s talent and determination allowed him to progress from the bottom up at The Merrion hotel in Dublin to become Executive Sous Chef, a post which he held for 9 years. Mark joined our team at Hayfield Manor in November 2014 in his first role as Executive Head Chef. Since joining, Mark has focused on building, training and developing a brigade of 24 chefs through his own personal passion and expertise. It is said that a good chef has to be a manager, a businessman as well as an exceptional cook and Mark certainly exceeds this expectation.
