Genji’s supermarket sushi bars offer our customers a wide variety
of sushi and sashimi of the highest quality in convenient ‘grab-and-
go’ packages, made fresh daily on-site by our skilled sushi chefs. In
addition to the freshly-prepared packaged sushi, customers have
the option of placing individual orders for items, customized to their
particular tastes, usually ready in less than 5 minutes!

ChefsEvery day a team of over 1000 Genji chefs go to work at over 200
Whole Foods Market locations in the US and in the UK, ready to
passionately prepare delicious, nutritious and exciting sushi and
Japanese-inspired dishes. Representing over 40 nationalities, Genji
team members come from as far away as Japan and Mexico, Spain
and Nepal, China and Indonesia. They share one common language
(English), and one common passion (making their customers happy).
Training & DevelopmentThe skills which Genji team members learn are truly cutting edge and
ahead of the competition. From knowing how to prepare vegetables,
slice fish, roll maki, make nigiri, and properly plate and display
products to understanding interacting with customers, our chefs learn
every detail of the foodservice operation. Through continuous on-
the-job training and instruction, these hard-working team members
eventually graduate into experienced professionals with top-of-the-
line expertise.
Quality Assurance & Food SafetyThe superior quality of Genji’s ingredients, packaging, product
preparation and customer service are second to none. Our standards
are our promise to the customers that they can always trust Genji to
provide them with the best. We issue clear and precise manuals with
instructions for every procedure, and go to great lengths to ensure
that our team members adhere to our standards.
Likewise, food safety is the foundation of our business. We will stop at
nothing to ensure that our product is first and foremost safely sourced,
safely prepared and handled, and safely delivered to the customer.
District Managers in every district are also dedicated food safety
specialists. Our District Managers are tasked with training, testing,
assessing and, if necessary, correcting each team members’ food
safety skills in an ongoing basis. We maintain full chain-of-custody
of our products, and are able to trace every step in the process from
ocean to plate.
Product Development & PromotionsThe heart and soul of Genji’s products are inspired by Japan, where
the art of sushi was perfected. Some of our products are as authentic
as one would find in the best restaurants in Tokyo or Osaka. On
the other hand, Genji is a modern and progressive company, which

love Japanese cuisine. Therefore, the product development team
continuously innovates recipes and combines influences and aspects

Sushi BarsGenji began as a sushi bar in Philadelphia, PA. Therefore, it is only
natural that the basis for our strength lies in sushi. Over the years,
Genji has been at the forefront of defining the identity and purpose of
the supermarket sushi bar.
Genji has played an instrumental role in transforming supermarket
sushi from an assembly-line operation to an evolved form of fast
fine dining, complete with elegant and eco-friendly trays, real grated
wasabi, creative and elaborate sushi items and expert customer
service.
Genji sushi chefs undergo extensive and intensive training through
a series of karate-style belt-levels to reach the coveted “Black Belt”
status. From there, our chefs can then go on to “Sushi Team Leader”

Genji RamenGENJI RAMEN brings an authentic Japanese Ramen Shop experience

your meal or opt to take your ramen on the go. The menu includes
various classic ramen styles. In addition, you will find a new dry-style
ramen called “mazemen” made with thick whole wheat noodles and

Logistics Solutions
Distribution & Warehouse: GHG Logistics is a wholly-owned
subsidiary of Peace Dining Corporation. With the main warehouse
located in Allentown, PA, at the crossroads of multiple regional and
national roadways, GHG Logistics is ideally situated to meet all of
the group’s warehouse and distribution needs. A satellite warehouse
in New York’s Long Island City (Queens) is just minutes away from
Manhattan. With these two strategically located facilities, GHG is the
warehousing and distribution vendor of choice for several national
food service companies.
Warehouse Space & Fulfillment: 35,000 square feet of dry goods
storage space, 3,000sq ft racked refrigeration unit at +38°F and
2,000sq ft racked freezer unit at -30°F. Orders are shipped daily to
over 150 locations in 19 states.
Green Practices: Operations include low-energy motion-sensitive
lighting; low-energy electric forklifts and pallet jacks; cardboard box
reuse and recycling; and pallet exchange with suppliers also vetted for
their green-friendly practices.
State of the Art Equipment: GHG’s custom-designed trucks
are outfitted with industry-leading triple-temperature storage
compartments (ambient, +38°F, and -30°F) to maintain temperature
integrity throughout delivery. California certified for low emissions,
the trucks connect to electric circuits during the loading process to
prevent burning excess diesel fuel.
Routes: GHG presently distributes on the East Coast from Portland,
ME, to Miami, FL, and all the way to Los Angeles, CA on the West
Coast.
