Important installation information

This Range Cooker can be used in countries other than thosespecified on the appliance. It is, however, set up for connection tothe gas and electricity supplies in the countries specified. Fortrouble-free operation of the appliance, it is best to use it in thecountries specified for use.

For use in other countries, please contact Miele in your country.

Deadly danger from tipping!If the Range Cooker is not yet secured it could tip over and fatallyinjure children or adults.

Secure the Range Cooker with the anti-tip device in accordancewith the installation instructions.

The Range Cooker must be secured and connected according tothe installation instructions.

If you have moved the Range Cooker, slide the locking latch ontothe anti-tip device until you feel it lock into place.

Do not use the Range Cooker if the anti-tip device has not beenproperly installed and engaged.

Safety precautions to take if you smell gas Turn off the gas emergency control valve immediately.

This is usually located near the gas meter.

Eliminate all sources of ignition in a safe manner.Do not smoke, light cigarette lighters or matches.

Do not operate electrical lights or switches, i.e. do not switch them "On" or"Off".

Open all doors and windows to ventilate the area.

If the smell of gas persists, evacuate the building.

In the UK you must now: Call the Gas Emergency Contact Centre (Tel: 0 800 111 999).

For any gas work in the UK always use a Gas Safe registered engineer.

In other countries please follow relevant country specific procedures on gas.

Correct application

This oven is intended for use in domestic households and similarworking and residential environments.

The oven is not intended for outdoor use.

This oven is intended for domestic use only to cook food, and inparticular to bake, roast, grill, cook, defrost and dry food. Any otheruse is not supported by the manufacturer and could be dangerous.

People with reduced physical, sensory or mental capabilities, orlack of experience or knowledge who are not able to use theappliance safely on their own must be supervised whilst using it. They may only use it unsupervised if they have been shown how touse it safely and recognise and understand the consequences ofincorrect operation.

This oven is supplied with a special lamp to cope with particularconditions (e.g. temperature, moisture, chemical resistance, abrasionresistance and vibration). This special lamp must only be used forthe purpose it is intended for. It is not suitable for room lighting.

Safety with children

Children under 8 years of age must be kept away from theappliance unless they are constantly supervised.

Children 8 years and older may only use the oven unsupervised ifthey have been shown how to use it safely and recognise andunderstand the consequences of incorrect operation.

Children must not be allowed to clean or maintain the applianceunsupervised.

Please supervise children in the vicinity of the oven and do not letthem play with it.

Danger of suffocation. Packaging, e.g. plastic wrappings, must bekept out of the reach of babies and children. Whilst playing, childrencould become entangled in packaging or pull it over their head andsuffocate.

Danger of burning. Children's skin is far more sensitive to hightemperatures than that of adults. External parts of the oven such asthe door glass, control panel and the vents become quite hot duringuse. Do not let children touch the oven whilst it is in use.

Danger of burning. Children's skin is far more sensitive to high temperatures than that ofadults. The oven gets hotter during pyrolytic cleaning than it does innormal use. Do not let children touch the oven whilst the Pyrolyticcleaning programme is running.

Danger of injury. The door can support a maximum weight of15 kg.Do not let children sit on the door, lean against it or swing on it. Theycould injure themselves.

Technical safety

Unauthorised installation, maintenance and repairs can causeconsiderable danger for the user. Installation, maintenance andrepairs must only be carried out by a Miele authorised technician.

Damage to the Range Cooker can compromise your safety. Checkthe appliance for visible signs of damage. Do not use a damagedRange Cooker.

Do not lift or carry the Range Cooker by the oven door handle orcontrol panel.

Reliable and safe operation of the Range Cooker can only beguaranteed if it is connected to the mains electricity supply.

The electrical safety of the Range Cooker can only be guaranteedwhen correctly earthed. It is most important that this basic safetyrequirement is present and tested regularly. If in doubt, consult asuitably qualified electrician.

Before connecting the Range Cooker to the mains supply, ensurethat the connection data on the data plate (voltage and frequency)match the mains electricity supply. This data must correspond inorder to avoid the risk of damage to the appliance. Compare this before connecting the appliance to the mains. Consulta qualified electrician if in any doubt.

Multi-socket adapters and extension leads do not guarantee therequired safety of the appliance (fire hazard). Do not use these toconnect the Range Cooker to the mains electricity supply.

This Range Cooker must not be installed and operated in mobileinstallations (e.g. on a ship).

Any contact with live connections or tampering with the electricalor mechanical components of the Range Cooker will endanger yoursafety and may lead to appliance malfunctions.Do not open the Range Cooker housing under any circumstances.

While the Range Cooker is under warranty, repairs should only beundertaken by a Miele authorised service technician. Otherwise thewarranty is invalidated.

Miele can only guarantee the safety of the appliance whengenuine original Miele replacement parts are used. Faultycomponents must only be replaced by Miele spare parts.

The connection to the gas supply must be carried out by asuitably qualified and competent person in accordance with currentlocal and national safety regulations (GasSafe in the UK).

If the plug is removed from the connection cable or if the cable issupplied without a plug, the Range Cooker must be connected tothe electrical supply by a suitably qualified electrician.

During installation, maintenance and repair work, e.g. if the ovenlighting is faulty (see "Problem solving guide"), the Range Cookermust be completely disconnected from the household electricitysupply.). The gas inlet valve must be closed To ensure this:

– disconnect the mains fuse, or

– completely unscrew the screw-out fuse (in countries where this isapplicable), or

– switch off at the isolator switch, or switch off at the wall socketand withdraw the plug. Do not pull on the cable, but pull the pluginstead in order to do this.

– Close the gas inlet valve.

The Range Cooker requires a sufficient supply of cool air forefficient operation. Make sure that the supply of cool air is nothindered in any way. Furthermore the required supply of cool airmust not be excessively heated by other heat sources (e.g. solid fuelstoves).

If the Range Cooker is to be built in behind a furniture front (e.g. adoor) do not close the door while the Range Cooker is in use. Heatand moisture can build up behind the closed door. This can result indamage to the Range Cooker, surrounding cupboards and the floor.Leave the furniture front/door open until the Range Cooker hascooled down completely.

In areas which may be subject to infestation by cockroaches orother vermin, pay particular attention to keeping the appliance andits surroundings clean at all times. Any damage caused bycockroaches or other vermin will not be covered by the warranty.

Correct use

Danger of burning. The oven becomes hot when in use. You could burn yourself on the heating elements, oven interior,cooked food or oven accessories. Wear oven gloves when placing food in the oven, turning orremoving it and when adjusting oven shelves etc. in a hot oven.

Due to the high temperatures radiated, objects left near the RangeCooker could catch fire.Do not use the Range Cooker to heat up the room.

Oil and fat can ignite if overheated. Never leave the ovenunattended when cooking with oil and fat. If it does ignite do not put the flames out with water. Switch the ovenoff immediately and then suffocate the flames by keeping the ovendoor closed.

Grilling food for an excessively long time can cause it to dry outwith the risk of catching fire.Do not exceed recommended grilling times.

Some types of food dry out quickly and can self-ignite if high grilltemperatures are used.Never use the grill to finish baking part-cooked rolls or bread or todry flowers or herbs. Use Fan plus  or Conventional heat  forthis type of procedure.

If using alcohol in your recipes, please be aware that hightemperatures can cause the alcohol to vaporise. The vapour cancatch fire on hot heating elements.

When using residual heat to keep food warm, corrosion from highair humidity and condensation can occur in the oven and the controlpanel can sustain damage.Do not switch the oven off. Instead, select the lowest temperatureavailable for the selected function. The cooling fan will then continueto run automatically.

Food which is stored in the oven or left in it to be kept warm candry out and the moisture released can lead to corrosion damage inthe oven. Always cover food that is left in the oven to keep warm.

A build-up of heat can cause the enamel on the floor of the ovento crack or shatter.Do not line the floor of the oven with anything, e.g. aluminium foil.If you wish to place dishes on the floor of the oven during cooking,or place crockery on the floor of the oven to heat it up, you can doso, but only with the Fan plus  or Gentle bake  function. Rapidheat-up must be switched off.

The enamelling on the oven floor can become damaged by itemsbeing pushed around on it. If using the oven to store pots and pans, ensure that you avoidpushing them around on the oven floor.

If cold liquid is poured onto a hot surface steam will occur, whichcan cause scalding. The sudden change in temperature can alsodamage enamel surfaces. Do not pour cold liquid directly onto hot enamelled surfaces.

During cooking processes using moisture and during the residualmoisture evaporation process steam is produced which can causeserious injury by scalding. Do not open the door whilst a burst ofsteam is being released or during the evaporation process.

It is important that the temperature in the food being cooked isevenly distributed and sufficiently high. Stir and / or turn it to ensureeven heat distribution.

Plastic containers which are not suitable for use in an oven canmelt at high temperatures and can even damage the oven or catchfire. Only use plastic containers which are declared by the manufactureras being suitable for use in an oven. Follow the manufacturer'sinstructions on use.

Do not heat up food in closed containers e.g. tins or sealed jars inthe oven, as pressure will build up in the container, causing it toexplode.

You could injure yourself on the open oven door or trip over it.Avoid leaving the door open unnecessarily.

The door can support a maximum weight of 15 kg. Do not sit onor lean against an open door, and do not place heavy objects on it.Also make sure that nothing can get trapped between the door andthe oven cavity. The oven could get damaged.

Stainless steel appliances

Adhesives will damage the stainless steel surface and cause it tolose its dirt-repellent protective coating. Do not use sticky notes,transparent adhesive tape, masking tape or other types of adhesiveon the stainless steel surface.

The surface is susceptible to scratching. Even magnets can causescratching.

Cleaning and care

The steam from a steam cleaning appliance could reach electricalcomponents and cause a short circuit.Do not use a steam cleaner to clean the Range Cooker.

Scratches on the door glass can result in the glass breaking. Donot use abrasive cleaners, hard sponges, brushes or sharp metaltools to clean the door glass.

The side runners can be removed for cleaning (see "Cleaning andcare").Ensure that they are replaced correctly.

Coarse soiling should be removed before running the Pyrolyticcleaning programme. If not removed, coarse soiling can smoke andcause the Pyrolytic cleaning programme to switch itself off.

Accessories

Only use genuine original Miele accessories and spare parts withthis appliance. Using accessories or spare parts from othermanufacturers will invalidate the warranty and Miele cannot acceptliability.

Only use the Miele food probe supplied with this oven. If it isfaulty, it must only be replaced with a suitable original Miele foodprobe.

The plastic on the food probe can melt at very high temperatures.Do not use the food probe when using the grill functions (exception:Fan Grill ). Do not store the food probe in the oven if it is not inuse.

The high temperatures used during pyrolytic cleaning will damageaccessories that are not designed for cleaning in the Pyrolyticprogramme. Please remove these accessories from the oven interiorbefore starting the Pyrolytic cleaning programme. This also appliesto non-pyrolytic accessories purchased separately to the oven (see"Cleaning and care").

Disposal of the packingmaterialThe packaging is designed to protectthe appliance from damage duringtransportation. The packaging materialsused are selected from materials whichare environmentally friendly for disposaland should be recycled.

Recycling the packaging reduces theuse of raw materials in themanufacturing process and alsoreduces the amount of waste in landfillsites.

Disposing of your oldapplianceElectrical and electronic appliancesoften contain valuable materials. Theyalso contain specific materials,compounds and components, whichwere essential for their correct functionand safety. These could be hazardousto human health and to the environmentif disposed of with your domestic wasteor if handled incorrectly. Operating controlsThe rotary controls are used to ignite the burners and regulate the strength of theflame. The burners can be regulated at any level between the strongest andweakest flame.

The rotary controls are backlit with an illuminated ring. When a burner is lit theappropriate rotary control immediately lights up.

On/Off sensor The On/Off sensor is recessed and reacts to touch.

It is used for switching the oven on and off.

Sensor controlsThe sensors react to touch. Each touch is confirmed with a keypad tone. Thiskeypad tone can be switched off (see "Settings – Volume – Keypad tone").

You can lift up and close the control panel for theoven automatically or manually (see "Settings – Liftpanel").

The control panel closes automatically as soon asa Pyrolytic cleaning programme is started.

If a menu is showing in the display or if a cookingprocess is running, you can enter a minute minderduration (e.g. when boiling eggs on the hob) or setan alarm, i.e. a specific time, at any point (see"Alarm and minute minder").

If the display is dark, this sensor will not react untilthe oven is switched on.

For switching theoven interiorlighting on and off

If a menu is showing in the display or if a cookingprocess is running, touching will switch theoven interior lighting on or off.

Touch display

The display can be scratched by pointed or sharp objects, e.g. pens.Only touch the display with your fingertips.

Touching the display with your finger creates a tiny charge which releases anelectrical impulse. This impulse is recognised by the display.

Universal tray and rack with anti-tipsafety notches

Universal tray HUBB 30-1:

The enamelled surface has been treatedwith PerfectClean.

Rack HBBR 48-2:

These accessories are inserted into theoven between the two rails of a siderunner.

Safety notches are located on the shortedges of the rack. These prevent therack from being fully pulled out of theside runners when they only need to bepulled partially out.

The rack is inserted into the ovenbetween the two rails of a side runner.

Side runners and the rack are suitablefor pyrolytic cleaning.

FlexiClip telescopic runners HFC 92

The FlexiClip telescopic runners can beused with any shelf level.

Push the FlexiClip telescopic runnersright into the oven compartmentbefore placing accessories on them.The accessories will thenautomatically sit securely in betweenthe stoppers at either end of eachrunner and be prevented from slidingoff.

The FlexiClip telescopic runners cansupport a maximum load of 15 kg.

Fitting and removing FlexiCliptelescopic runners

Danger of burning.Make sure the oven heatingelements are switched off and cool.

The FlexiClip runners are fitted inbetween the two rails that make up ashelf level.

The FlexiClip runner with the Miele logois fitted on the right.

When fitting the FlexiClip telescopicrunners do not extend them.

Hook the FlexiClip runner onto thefront of the lower rail of a side runner(1.) and then push it along the rail intothe oven compartment (2.).

Then secure the FlexiClip runner tothe lower of the two rails as illustrated(3).

If the FlexiClip runners are difficult topull out after fitting, you may need topull firmly on them once to releasethem.

To remove a FlexiClip runner:

Push the FlexiClip runner in all theway.

Remove the FlexiClip runner byraising it at the front (1) then pulling itforwards along the rail and out (2).

Perforated baking tray HBBL 71

The perforated baking tray has beenspecially designed for baking freshyeast and quark dough items, breadand rolls. The fine perforations help to brown theunderside of food. The tray can also be used for dryingfruit and vegetables.

The enamelled surface has been treatedwith PerfectClean.

The round perforated baking trayHBFP 27-1 can be used for the samethings.

The perforated baking tray can beplaced on the rack.

Anti-splash insert HGBB 30-1

The anti-splash insert fits in theuniversal tray.The juices from the food being grilled orroasted collect under the insert. Thisprevents them from spitting and makingthe oven dirty. The juices can then beused for making gravy and sauces.

Round baking tray HBF 27-1

HUB Gourmet oven dishes HBD Gourmet oven dish lids

The oven dish is larger than thepermitted base size for pans overgas burners.The base of the dish would force thegas flames outwards causingdamage to worktops andsurrounding furniture and fittings,with the risk of setting them alight.The temperature within the gasflames is also too high for the ovendish and could damage the non-stickcoating.Do not use the oven dish on a gashob.

Miele Gourmet oven dishes can beplaced directly on the rack. They have anon-stick coating.

Gourmet oven dishes are available intwo sizes. The width and the height arethe same for both.

Lids are also available. These areordered separately. Please quote themodel number when ordering.

Food probe

Your oven is supplied with a wirelessfood probe which enables thetemperature during the cooking processto be monitored simply and accurately(see "Roasting - Food probe").

It is located in a holder in the front rightof the Gourmet Warming Drawer.

Rotisserie HDGR 30+

The rotisserie can be used to grillthicker items such as stuffed meat andpoultry. The food is rotated so that itbrowns evenly all over (see "Grilling -Grilling with the rotisserie").

The rotisserie is placed on the universaltray and connected to the motor in theback wall of the oven.

The rotisserie can hold a maximum of5 kg.

Handle HEG

Miele microfibre cloth

Light soiling and fingerprints can beeasily removed with the microfibrecloth.

Oven controlsThe oven controls are used to operatethe various cooking functions forbaking, roasting and grilling.

Safety features

Oven system lock 

The system lock prevents the oven frombeing used unintentionally (see"Settings – Safety – System lock ").

The system lock will remain activatedeven after an interruption to the powersupply.

Sensor lock

The sensor lock prevents the ovenbeing switched off by accident orsettings being altered whilst food iscooking. Once activated, the sensorlock deactivates the sensors and fieldsin the display a few seconds after aprogramme has been started (see"Settings – Safety – Sensor lock").

Safety switch-off

The oven switches itself offautomatically if it is used for anexceedingly long period. The length oftime depends on the oven functionbeing used.

Cooling fan

The cooling fan will come onautomatically when a cookingprogramme is started. The cooling fanmixes hot air from the oven cavity withcool room air before venting it out intothe kitchen through vents locatedbetween the appliance door and thecontrol panel.

The cooling fan will continue to run for awhile after the oven has been switchedoff to prevent any humidity building upin the oven, on the control panel or inthe oven housing unit.

The cooling fan will switch itself offautomatically after a certain period oftime (see "Settings – Cooling fan run-on").

Vented oven door

The oven door glass panes have a heat-reflecting coating.

When the oven is operating, air ispassed through the door to keep theouter pane cool.

The door can be removed anddismantled for cleaning (see "Cleaningand care").

Door lock - Pyrolytic cleaning

For safety reasons the door is locked assoon as the Pyrolytic cleaningprogramme is started. After thePyrolytic cleaning programme hasfinished, the door will remain lockeduntil the temperature in the oven hasfallen below 280 °C.

PerfectClean treated surfacesPerfectClean surfaces have very goodnon-stick properties and are mucheasier to keep clean than conventionalenamel surfaces, if cleaned regularly.

Food can be taken off these surfaceseasily, and soiling from baking androasting is simple to remove.

Food can be sliced or cut up onPerfectClean surfaces.

Do not use ceramic knives as thesewill scratch the PerfectClean surface.

Surfaces treated with PerfectCleanenamel can be cleaned as you wouldclean glass.Read the instructions in "Cleaning andcare" so that the benefits of the non-stick properties and easy cleaning areretained.

The Range Cooker may only beoperated after it has been installedproperly.Read the Installation instructionscarefully before installing the RangeCooker.Read the Operating instructionscarefully before using the RangeCooker.

You will then be asked when you wantthe time of day to show in the displaywhen the oven is switched off (see"Settings - Time of day - Display").

The time always shows in the display.

– Off

The display appears dark to saveenergy. Some functions are limited.

– Night dimming

The time only shows in the displaybetween 05:00 and 23:00. It switchesoff at night to save energy.

Select the option you want.

Confirm with OK.

Some information about energyconsumption will appear in the display.

Heating up the oven for thefirst time and rinsing the steaminjection systemNew ovens can give off an unpleasantsmell on first use. Heating up the ovenfor at least 1 hour with nothing in it willget rid of this smell. It is a good idea torinse the steam injection system at thesame time.

Ensure that the kitchen is wellventilated during this operation.Close doors to other rooms toprevent the smell spreadingthroughout the house.

Remove any stickers or protective foilfrom the oven and accessories.

Before heating the oven up, wipe theinterior with a damp cloth to removeany dust or bits of packaging thatmay have accumulated in the ovencavity during storage and unpacking.

Fit the FlexiClip runners (available toorder) to the side runners and insertall trays and the rack.

Switch the oven on with the On/Offsensor .

The main menu will appear.

Select Oven functions .

Select the Moisture plus  function.

The recommended temperature willappear (160 °C).

The oven heating, lighting and coolingfan will switch on.

Set the maximum possibletemperature (250 °C).

Confirm with OK.

Select Automatic burst of steam.

The prompt to draw in water thenappears.

Fill a suitable container with therequired amount of fresh tap water.

Open the door.

Pull the water intake pipe forwards(located below the control panel onthe left).

Immerse the end of the water intakepipe in the container with tap water.

Confirm with OK.

The water intake process will begin.

The amount of water actually drawn upinto the oven may be less than theamount specified as required, leaving asmall amount in the container.

Remove the water container after thewater intake process.

Confirm the message telling you thatthe process is complete with OK.

Close the door.

The message will then disappear.

You will hear the pump briefly as theremaining water in the water intake pipeis drawn into the oven.

After a short time a burst of steam isinjected automatically.

Risk of injury!Steam can cause scalding.Do not open the door during a steamburst.

Heat the empty oven for at least anhour.

After at least an hour:

Switch the oven off with the On/Offsensor .

After heating up for the first time

Danger of burning. Allow theoven to cool down before cleaningby hand.

Switch the oven on with the On/Offsensor .

Switch the oven light on with the sensor.

Take all accessories out of the ovenand clean them by hand (see"Cleaning and care").

Clean the oven interior with a cleansponge and a solution of hot waterand washing-up liquid or a dampmicrofibre cloth.

Dry all surfaces with a soft cloth.

Switch the interior lighting and theoven off.

Leave the oven door open until theoven interior is completely dry.

Tips on saving energy

Oven cooking processes Remove all accessories from the

oven that are not required for acooking process.

Try not to open the door duringcooking processes.

In general, if a range of temperaturesis given in a recipe or chart, it is bestto select the lower temperature andto check the food after the shortestduration.

Use dark, matt bakeware andcooking containers made of non-reflective materials (enamelled steel,heat-resistant glass, coatedaluminium). Shiny materials such asstainless steel or aluminium reflectthe heat and therefore can give amore uneven result. Do not cover theoven floor or the rack with heat-reflecting aluminium foil.

Monitor cooking durations to avoidwasting energy when cooking.

Wherever possible set the cookingduration, or use a food probe.

Fan plus  can be used for cookingmany types of food. Because the fandistributes the heat to food straightaway, it allows you to use a lowertemperature than you would withConventional heat . It alsoenables you to cook on several shelflevels at the same time.

Gentle bake is an innovativefunction that makes optimum use ofheat. You can save up to 30 %energy compared to cooking with astandard oven function as long as thedoor is kept shut during cooking.

Fan grill can be used for a widevariety of food. With Fan grill you canuse lower temperatures than withother grill functions which use themaximum temperature setting.

Whenever possible you should cookseveral dishes at the same time.Place them next to each other in theoven or on different shelf levels.

Dishes which you are unable to cookat the same time should, if possible,be cooked one after the other in orderto make use of existing heat in theoven.

Tips on saving energy

Using residual heat

The temperature in cookingprogrammes using temperaturesabove 140 °C which take longer than30 minutes to cook can be turneddown to the lowest possibletemperature about 5 minutes beforethe end of cooking. The residual heatin the oven is sufficient for cookingthe food. Do not switch the oven off(see "Warning and safetyinstructions").

If you have set a duration for acooking programme, the ovenheating elements will switch offautomatically shortly before the endof cooking and Energy saving phasewill appear in the display. Theresidual heat in the oven is sufficientto complete the cooking process.

If you are using the Miele food probeto cook food, the oven heatingelements will switch off automaticallyshortly before the end of cooking.The residual heat in the oven issufficient to complete cooking andEnergy saving phase will appear in thedisplay.

If you wish to run the pyrolyticcleaning programme, it is best to startit immediately after a cookingprogramme. The residual heat in theoven will help reduce the amount ofenergy required to run theprogramme.

Settings Switch the clock display off if you

wish to reduce energy usage (see"Settings").

Set the oven lighting so that itswitches off automatically during aprogramme after 15 seconds. It canbe switched on again at any time bytouching .

Energy save mode The oven will switch itself off

automatically to save energy if aprogramme is not being run andcontrols have not been operated. Thetime of day will appear in the displayor the display will remain dark (see"Settings").

Using the oven

Simple operation Switch the oven on.

The main menu will appear.

Place the food in the oven.

Select Oven functions .

Select the function you want.

Function and recommendedtemperature will appear.

The oven heating, lighting and coolingfan will switch on.

Change the recommendedtemperature if necessary.

The temperature will be automaticallyaccepted within a few seconds. Ifrequired, touch Change to go back tothe temperature selection option (see"Further functions - Changing thetemperature").

The required and the actual temperaturewill appear.

You will see the temperature increasing.A buzzer will sound when the selectedtemperature is first reached. See"Settings - Volume - Buzzer tones".

After cooking:

Take the food out of the oven.

Switch the oven off.

Cooling fanThe cooling fan will continue to run for awhile after the oven has been switchedoff to prevent any humidity building upin the oven, on the control panel or inthe oven housing unit.

The cooling fan will switch itself offautomatically after a certain period oftime (see "Settings – Cooling fan run-on").

Language You can set the language and thecountry you want.

Clock display

Display

Select how you want the time of day toshow in the display when the oven isswitched off:

– OnThe time always shows in the display.You can use the sensors showndirectly and switch the lighting  onand off or use the Alarm + Minuteminder  functions.

– OffTo save energy the display does notlight up. The oven has to be switchedon before it can be used. This alsoapplies for using the Alarm + Minuteminder  functions and thelighting .

– Night dimmingTo save energy, the time is onlyvisible in the display between5:00 am and 11:00 pm. The rest ofthe time it is not visible. The oven hasto be switched on before you can useit.

The time of day can be displayed inanalogue (in the form of a clock face) ordigital (h:min) format.

Cooling fan run-onThe cooling fan will continue to run for awhile after the oven has been switchedoff to prevent any humidity building upin the oven, on the control panel or inthe oven housing unit.

– Time controlledThe cooling fan switches off after aperiod of about 25 minutes.

Condensate can damage the ovenhousing unit, damage the worktopand lead to corrosion in the oven.If you have set the cooling fan toTime controlled and leave food in theoven to keep warm moisture levels inthe oven will increase, leading tocondensation forming on the controlpanel and surrounding kitchenfurniture and drops of moisturecollecting under the worktop.Do not leave food in the oven tokeep it warm if you have set thecooling fan to Time controlled.

Recommended temperaturesIf you cook with different temperaturesoften it makes sense to change therecommended temperatures.

After selecting this option a list offunctions will appear in the display.

Safety

System lock 

The system lock prevents the ovenbeing switched on by mistake.

The system lock will remain activatedeven after a power failure.

Select On to activate the system lock.

The alarm and minute minder can stillbe used when the system lock isactive.

– OnThe system lock is now active. If youwant to use the oven touch the symbol for at least 6 seconds.

– OffThe system lock is not active. Youcan use the oven as normal.

Sensor lock

The sensor lock prevents the ovenbeing switched off by accident orsettings being altered whilst food iscooking. Once activated, the sensorlock deactivates the sensors and fieldsin the display a few seconds after aprogramme has been started.

– OnThe sensor lock is activated. Touchthe  symbol for at least 6 secondsto use the sensors again. The sensorlock is then deactivated for a shortperiod.

– OffThe sensor lock is not active. Allsensors react to touch as normal.

Using the  sensor you can set aminute minder duration to time anyactivity in the kitchen, e.g. boiling eggs,or set an alarm time.

Two alarms can be set simultaneously,two minute minder durations or analarm and a minute minder duration.

Using the alarm The alarm can be used to specify aparticular time for a buzzer to sound.

Setting the alarm

If Time – Display – Off has beenselected, you will need to switch theoven off before you can set the alarm.The time for the alarm will now appearin the display when the oven isswitched off.

Select .

Select New alarm.

Set the time for the alarm.

Confirm with OK.

When the oven is switched off, thealarm time and will appear in thedisplay instead of the time of day.

If you are cooking at the same time or ifyou are in a different menu, the alarmtime and will appear in the top righthand side of the display.

Using the minute minder The minute minder can be used to timeother activities in the kitchen, e.g.boiling eggs.

The minute minder can also be used atthe same time as a cooking programmein which the start and finish times havebeen set, e.g. as a reminder to stir adish or add seasoning etc.

A maximum minute minder duration of9 hours, 59 minutes and 59 secondscan be set.

Tip: Use the Minute minder when usingMoisture plus  to remind you toinject the bursts of steam at the desiredtime.

To set the minute minder

If you want to use the minute minderand Time – Display – Off has been set,you will need to switch the oven onbefore you can set the minute minder.The minute minder can then be seencounting down in the display when theoven is switched off.

Example: You want to boil some eggsand set a minute minder duration of6 minutes and 20 seconds.

To alter the temperatureAs soon as a cooking function isselected, a recommended temperaturewill appear in the display together withits possible range (see "Overview offunctions").

Confirm with OK if the recommendedtemperature is suitable for yourrecipe.

If it is not suitable for your recipe, youcan change it for this particularcooking programme.

You can also permanently reset therecommended temperature to suityour cooking preferences. See"Settings - Recommendedtemperatures".

Example: you have selected Fanplus  and 170 °C and can see thetemperature increasing.

You want to reduce the targettemperature to 155 °C.

Select Change.

Change the temperature.

Confirm with OK.

The altered target temperature is saved.The target and actual temperatures aredisplayed.

Rapid heat-upRapid heat-up can be used to speed upthe heating up phase.

The Rapid heat-up function switches onautomatically if you set a temperature ofmore than 100 °C for Fan plus , Autoroast , Conventional heat  andMoisture plus .

Rapid heat-up should be switched offwhen cooking pizza and delicate items(e.g. sponge or biscuits). These willget brown too quickly on the top.

You can switch-off "Rapid heat-up" fora relevant cooking process.

The top heat/grill element and thering heating element come ontogether with the fan to enable theoven to reach the requiredtemperature as quickly as possible.

– Off

Only the heating elements for theoven function selected are switchedon.

To switch off the Rapid heat-upfunction:

Select Change.

Select Open further settings.

Select Rapid heat-up.

Off will appear in the Rapid heat-up field.

Confirm with OK.

Rapid heat-up has been deactivated.

Instead of Rapid heat-up, Heating-upphase will appear.

Select the required oven function andthe temperature.

Rapid heat-up should be switched offwhen baking pizza, biscuits and smallcakes.

Wait for heating-up to finish.

Using the Crisp function(moisture reduction)It is a good idea to use this functionwhen cooking items which are moist onthe inside but which should be crispyon the outside, e.g. frozen chips,croquettes or pork with crackling.

It is also suitable for deep filled freshfruit cakes, such as plum or apple cake.

You have placed the food in the oven,selected a function and set thetemperature.

You can activate the "Crisp function"with any function. For best results,activate it at the beginning of thecooking process.

Select Change.

Select Open further settings.

Select Crisp function.

Setting durationsYou have placed the food in the oven,selected a function and set thetemperature.

By entering Duration, Ready at or Start atyou can automatically switch thecooking programme off or on and off.

– DurationEnter the cooking duration yourequire. Once the duration set haselapsed, the heating will switch offautomatically. The maximum durationwhich can be set is 12:00 hours.

A cooking duration cannot beentered if you are using the foodprobe. When using the food probe,the cooking duration is determinedby when the set core temperature isreached.

– Ready atYou can specify when you wantcooking to finish. The oven willswitch off automatically at the timeyou set.

A Ready at time cannot be entered ifyou are using the food probe. Whenusing the food probe, the end of thecooking duration is determined bywhen the set core temperature isreached.

– Start atSet the time you want cooking tostart at. The oven will switch onautomatically at the time you haveset.

Start at can only be used togetherwith Duration or Ready at, exceptwhen using the food probe.

Switching off automatically

Example: it is 11:45. The food takes 30minutes to cook and should be ready at12:15.

Select Duration and set a duration of0:30 h or select Ready at and set thetime to 12:15.

The oven will switch off automaticallyafter this duration has elapsed or thetime set has been reached.

Switching on and off automatically

We recommend using automaticswitching on and off when roasting.For baking do not delay the start fortoo long as the cake mixture or doughwill dry out, and the raising agents willlose their effectiveness.

To switch a cooking programme on andoff automatically you have a choice ofhow to enter the time parameters:

– Duration and Ready at

– Duration and Start at

– Ready at and Start at

Example: it is 11:30. The food takes 30minutes to cook and should be ready at12:30.

Select Change.

Select Open further settings.

Set a duration of 0:30 h in the Durationfield.

Set a time of 12:30 in the Ready atfield.

Confirm with OK.

The Start at time will be calculatedautomatically. Start at 12:00 will appearin the display.

The oven will switch on automaticallywhen this time is reached.

Sequence of a programme thatswitches on and off automatically

Up until the start time the function, theselected temperature, Start at and thestart time will appear in the display.

After the programme has started youcan follow the heating-up phase in thedisplay until the required temperaturehas been reached.

Once this temperature is reached abuzzer will sound, if this option hasbeen switched on (see "Settings -Volume - Buzzer tones").

After the heating-up phase the timeremaining will appear in the display.

You can follow the time counting downin the display. The last minute countsdown in seconds.

At the end of the programme a buzzerwill sound, if this option has beenswitched on (see "Settings - Volume -Buzzer tones").

The oven heating and lighting willswitch off. Process finished will appear inthe display.

You have the option of saving theprogramme as a User programme (see"User programmes") or increasing theduration of the programme via Change.

During the cooling down phase thecooling fan will continue to run for awhile.

Your oven is equipped with a steaminjection system for cooking withmoisture. Baking, roasting and cookingwith Moisture plus  guaranteesoptimised steam and air conduction forexcellent cooking and browning results.

After selecting Moisture plus  youneed to set the temperature and thenumber of bursts of steam.

The options are:

– Automatic burst of steamThis requires enough water for oneburst of steam. The burst of steamwill be injected into the ovenautomatically after the heating-upphase.

– 1 burst of steam2 bursts of steam3 bursts of steamYou need to add the appropriateamount of water for the number ofbursts of steam. You have to releasethe bursts of steam yourself.

Fresh tap water is taken into the steamsystem via the tube underneath thecontrol panel on the left.

Liquids, other than water, can causedamage to the oven.Only use tap water when cookingwith the "Moisture plus" function.

The water is then injected as bursts ofsteam into the oven compartmentduring the cooking programme. Thesteam inlets are located at the rear leftcorner of the roof of the oven.

One burst of steam takes approx. 5–8 minutes. The number of bursts ofsteam and when they are injected willdepend on the type of food beingcooked:

– Yeast mixtures will rise better ifsteam is injected at the beginning ofthe programme.

– Bread and rolls also rise better ifexposed to steam at the start.Injecting a burst of steam at the endof the programme will give the breadand rolls a glistening crust.

– When roasting meat with a high fatcontent injecting steam at thebeginning of roasting will help renderthe fat.

Additional moisture is not suitable formixtures which already contain a lot ofmoisture, such as choux pastry andmeringues, as the addition of steamdoes not allow them to dry outsufficiently.

Moisture plus function

It is quite normal for condensation toform on the inside of the door duringsteam injection. This will dissipateduring the course of the cookingprogramme.

Prepare the food and place in theoven.

Select Oven functions .

Select the Moisture plus  function.

The recommended temperature of160 °C will appear.

The oven heating, lighting and coolingfan will switch on.

Set the temperature

Set the required temperature.

Confirm with OK.

Set the number of bursts of steam

Select Automatic burst of steam if youwant the oven to release a burst ofsteam automatically at the end of theheating-up phase.

Select 1 burst of steam, 2 bursts ofsteam or 3 bursts of steam if you wantthe oven to release one or morebursts of steam at specific timesduring the cooking duration.

When to add the steam

This option will only appear in thedisplay if you have selected 1, 2 or 3bursts of steam.

Tip: If the food has been placed in acold oven, and more than one burst ofsteam has been selected, the 2nd burstof steam should not be released until atleast 10 minutes after the start of thecooking process.

Manual bursts of steam

If you are cooking food, e.g. bread orrolls, in a pre-heated oven it is best torelease the bursts of steam manually.The first burst of steam should bereleased as soon as you have placedthe food in the oven.

If you want to inject the bursts ofsteam manually, select Manual. Setthe minute minder  to remind youwhen to do so.

Time-controlled bursts of steam

If you want to time when to releasethe bursts of steam, select Timecontrolled.

Set the time for each burst of steam.The oven will then release the steamat the specified times. The timecounts down as soon as theprogramme is started.

Confirm with OK.

The prompt to draw in water thenappears.

Preparing and starting the waterintake process

Fill a suitable container with therequired amount of fresh tap water.

Open the door.

Pull the water intake pipe forwards(located below the control panel onthe left).

Immerse the end of the water intakepipe in the container with tap water.

Confirm with OK.

The water intake process will begin.

The amount of water actually drawn upinto the oven may be less than theamount specified as required, leaving asmall amount in the container.

The intake process can be interruptedand restarted at any time by selectingStop or Start.

Remove the water container after thewater intake process.

You will hear the pump briefly as theremaining water in the water intake pipeis drawn into the oven.

The oven heating and the cooling fanwill switch on. The required and actualtemperatures will appear in the display.

You will see the temperature increasing.A buzzer will sound when the selectedtemperature is first reached. See"Settings - Volume - Buzzer tones".

If you have selected Time controlledafter the heating-up phase, the time atwhich to release the next burst ofsteam will appear in the display. Ifnecessary, you can change this timeby selecting Change.

Changing the function

Steam can cause scalding.Do not open the door during burstsof steam. Also, condensation on thesensors will cause them to have aslow reaction time.

Automatic burst of steam

Automatic burst of steam appears in thedisplay.

Once the heating-up phase has beencompleted, the automatic burst ofsteam is injected.

The water will vaporise in the ovenwhilst steam is being released and Burstof steam active will appear in the display.

After the burst of steam Burst of steamfinished will appear in the display.

Continue cooking until the end of thecooking duration.

1, 2 or 3 bursts of steam

Manual bursts of steam

If you have selected Manual you canrelease the bursts of steam as soon asStart Manual burst of steam appears in thedisplay.

Please wait until the heating-up phaseis completed to allow the steam to bedistributed evenly by the warm air inthe oven.

Tip: Set the minute minder  to remindyou when to do so.

Select Start Manual burst of steam.

The burst of steam is released and Burstof steam active appears in the display.

Residual water evaporationWhen cooking using the addition ofmoisture, the water will be equallydistributed between the number ofbursts of steam and used up as long asthe programme is not interrupted.

However, if a programme using theaddition of moisture is manuallyinterrupted before all the bursts ofsteam have been injected or if there is apower cut, the water for these unusedbursts of steam will remain in the steaminjection system.

Next time the Moisture plus function is used, Evaporate residualmoisture? appears with the options Skipand Yes.

It is best to start the evaporation ofresidual water straight away so thatonly fresh water is used during acooking programme.

The residual water evaporationprocess

The oven will heat up and the residualwater in the oven cavity will evaporate.

Depending on the amount of water thiscan take up to 30 minutes.

Steam can cause scalding.Do not open the door while theresidual water is being evaporated.

During the evaporation processmoisture will condense on the door andthe oven interior. This condensationmust be wiped off after the oven hascooled down.

To start residual water evaporationimmediately

Steam can cause scalding.Do not open the door while theresidual water is being evaporated.

Select the Moisture plus  function.

Evaporate residual moisture? will appear.

Select Yes.

Evaporate residual moisture and a timethen appear in the display.

The Evaporate residual moistureprocess will then start. You can followthe time counting down in the display.

The time shown in the display willdepend on the amount of residual waterleft in the steam injection system.During the evaporation process, theduration may be adjusted by the systemaccording to the amount of watercurrently present.

At the end of the residual waterevaporation process Process finished willappear.

Touch .

You can now carry out a cookingprocess with the Moisture plus function.

During the evaporation of residualwater, moisture will condense on thedoor and the oven compartment. Thismoisture needs to be removed afterthe oven has cooled down.

To skip residual moisture evaporation

Skipping the residual moistureevaporation process can, in certaincases, cause water to overflow intothe oven compartment.It is best not to cancel theevaporation process.

Select the Moisture plus  function.

Evaporate residual moisture? will appear.

Select Skip.

You can now carry out a cookingprocess with the Moisture plus function.

Next time you select the Moistureplus  function and when you switchthe oven off you will be prompted againto evaporate the residual moisture.

You can create and save up to 20 Userprogrammes.

– You can combine up to ten cookingstages to accurately programme yourfavourite or most frequently usedrecipes. In each cooking stage youcan select settings such as function,temperature and duration or coretemperature.

– Specify the shelf level for the food.

– Enter the programme name.

When you call up and start yourprogramme again, it will runautomatically.

You can also save a cooking processwith a set duration after it has run. Thenenter a programme name.

To create a User programme Select User programmes .

Select Create programme.

You can now specify the settings forcooking stage 1.

Follow the instructions in the display:

Select and confirm the settings youwant to change.

Depending on the cooking functionselected you can switch on the Rapidheat-up and Crisp function functions viaOpen further settings.

Settings for the 1st cooking stage havenow been set.

You can add more cooking stages, forexample, if you want to add anothercooking function to follow on from thefirst.

If additional cooking stages arerequired, select Add and proceed asfor the 1st cooking stage.

Eating food which has been cookedcorrectly is important for goodhealth.Only bake cakes, pizza, chips etc.until they are golden. Do notovercook them.

FunctionsDepending on how the food isprepared, you can use Fan plus ,Intensive bake , Moisture plus or Conventional heat .

BakewareThe choice of bakeware depends onthe oven function.

– Fan plus , Intensive bake ,Moisture plus :Baking tray, universal tray, bakewareof any ovenproof material.

– Conventional heat :Dark baking tins with a matt finish.Avoid using bright, shiny metal tinsas they give an uneven and poorbrowning result and in some casescakes might not cook properly.

– Always place baking tins on the rack. Position rectangular tins with thelonger side across the width of therack for optimum heat distributionand even baking results.

– When baking cakes with fresh fruittoppings and deep sponge cakesplace the tin in the universal tray tocatch any spillages.

Baking paper, greasing the tin

Miele accessories, e.g. the universaltray are treated with PerfectCleanenamel (see "Features").

Surfaces treated with PerfectCleanenamel generally do not need to begreased or covered with baking paper.

Baking paper should be used with:

– anything prepared using a lyecontaining sodium hydroxide (e.g.pretzels, bread sticks) because thelye can damage the PerfectCleansurface,

Notes on using the bakingchartsIn the charts the recommended functionis printed in bold.

Temperature

As a general rule, select the lowertemperature given in the chart.

Baking at temperatures higher thanthose recommended may reduce thecooking time, but will lead to unevenbrowning, and unsatisfactory cookingresults.

Duration 

Check if the food is cooked at the endof the shortest time quoted. To check ifa cake is ready, insert a wooden skewerinto the centre. It is ready if the skewercomes out clean, without dough orcrumbs sticking to it.

Shelf level

Operating modesDepending on method you can use Fanplus , Moisture plus , Autoroast  or Conventional heat .

ContainersYou can use any heat-resistantcontainers:

Miele Gourmet oven dishes, roastingpans with a lid, ovenproof china orglass, roasting bags, dishes made fromearthenware or cast iron, the universaltray, the universal tray with anti-splashinsert.

We recommend roasting in a coveredpot as this ensures sufficient stockremains for making gravy.The oven stays cleaner, too.

Tips– Browning only occurs towards the

end of the roasting time. Remove thelid about halfway through the roastingtime if a more intensive browningresult is desired.

– At the end of the programme, takethe roast out of the oven, wrap inaluminium foil and leave to stand forabout 10 minutes. This helps retainjuices when the meat is carved.

– For a crisp finish, baste poultry10 minutes before the end of thecooking time with slightly saltedwater.

Unless otherwise stated, the durationsgiven are for an oven which has notbeen pre-heated. With a pre-heatedoven, shorten durations by up to10 minutes.

Temperature

As a general rule, select the lowertemperature given in the chart. If highertemperatures are used, the meat willbrown on the outside, but will not beproperly cooked through.

When cooking with Fan plus ,Moisture plus or Auto roast select a temperature approx. 20°Clower than for Conventional heat .

For cuts which weigh more than 3 kg,select a temperature approx. 10 °Clower than that given in the roastingchart.Roasting will take longer at the lowertemperature, but will be more even.

Pre-heating

Pre-heating is generally only requiredwhen roasting beef sirloin joints andfillet.

Roasting duration 

The traditional British method forcalculating the roasting time is to allow15 to 20 minutes per lb/450 grammes,according to type of meat, plus approx.20 minutes, adjusting the length of timeas roasting proceeds to obtain therequired result. The roasting time canalso be determined by multiplying thethickness of the roast [cm] with the timeper cm [min/cm], depending on the typeof meat:

– Beef/venison: 15–18 min/cm

– Pork/veal/lamb: 12–15 min/cm

– Sirloin/fillet: 8–10 min/cm

Check if the meat is cooked after theshortest duration quoted.

Shelf level

As a general rule, use shelf level 3.

Food probe

The wireless food probe enables theroasting process to be monitoredsimply and reliably.

How the food probe works

The metal tip of the food probe must befully inserted into the centre of the food.It contains a temperature sensor. Thismeasures the so-called coretemperature inside the food during thecooking process.

The temperature sensor is locatedapprox. 2 cm behind the tip of theprobe. Push the metal tip into the foodso that the temperature sensor is inthe middle (see "Important informationfor using the food probe").

The rise in the core temperature of thefood reflects the progress of cooking.Set a lower or higher core temperature,depending on whether you want yourroast to be medium or well-done.

The core temperature can be set up to99 °C. Information on food andrespective core temperatures can befound in the roasting chart and in "Lowtemperature cooking".

Cooking processes with or without thefood probe take the same amount oftime.

Transmission of the core temperature tothe oven electronics occurs via radiosignal between the transmitter in thehandle of the probe and the receiverantenna in the back panel, as soon asyou place the food in the oven with thefood probe inserted.

Efficient radio transmission is onlyguaranteed if the oven door is closed. Ifthe door is opened during a cookingprocess, e.g. to baste the food, radiosignal transmission is interrupted. It willonly resume when the door is closed. Itwill take a few seconds before thecurrent core temperature appears againin the display.

The temperature sensor will bedamaged at temperatures over100 °C. However there is nodanger of damage occurring if it isinserted into food as the maximumcore temperature that can be setis 99 °C.If you are not using the wireless foodprobe, do not keep it in the ovenduring cooking. Always put it backinto the holder in the Gourmetwarming drawer.

– Do not use another proprietary metalfood probe at the same time.

– Ensure that the handle of the foodprobe is not sitting in the cookingliquid, on the food or on the edge ofthe cooking container.

In addition please note:

– You can also place the meat in a potor on the universal tray with the anti-splash insert.

– The metal tip of the food probe mustbe fully inserted into the centre of thefood so that the temperature sensorreaches the core. The handle shouldpoint diagonally upwards and nothorizontally towards the corners ofthe oven or the door.

– When cooking poultry, insert themetal tip into the thickest part of thebreast. Press the breast with yourindex finger and thumb to find thethickest part.

– Do not let the metal tip touch anybones, and do not insert it into aparticularly fatty area of the meat.Fatty tissue can cause the probe toswitch off early.

– If the meat is very heavily marbledwith fat, select the highest coretemperature given in the roastingchart.

– When using roasting bags, insert theprobe through the bag into the centreof the meat. You can also place themeat, with the roast probe inserted,inside the bag. Follow the roastingbag manufacturer's instructions.

– The food probe can only be insertedalmost horizontally in very flat piecesof food such as fish. Therefore cookflat food in glass or ceramic cookingcontainers as the walls of a metalcooking container would disrupt theradio signals.

A message will appear in the display ifthe food probe is no longerrecognised during a cooking process.Change the position of the probe inthe food.

Using the food probe

Remove the food probe from itsholder in the Gourmet warmingdrawer.

Insert the metal tip of the food probecompletely into the centre of thefood. The handle should be pointingdiagonally upwards.

Place the food in the oven.

Close the door.

Select a function.

Continue cooking with the food probe? willappear.

Select Yes.

Change the recommendedtemperature if necessary.

Change the recommended coretemperature if necessary.

You can set the cooking process tostart at a later time. To do this selectOpen further settings and enter a time inthe Start at field.

The finish time can be calculatedapproximately because the duration ofa cooking process is about the same,whether or not the food probe is used.

A Duration and Ready at time cannot beentered because the total cookingduration is determined by when the setcore temperature is reached.

Time left display

If the temperature set for a cookingprocess is above 140 °C, the estimatedtime left for the cooking process willappear in the display after a short while.

The time remaining is calculated fromthe cooking temperature selected, therequired core temperature and thepattern of the increasing coretemperature.

The time remaining first shown is anestimate. As the cooking processcontinues the time remaining is revisedcontinuously, and a more accuraterevised figure shown.

Altering the cooking or coretemperature or selecting a differentfunction will delete the time leftinformation. The time remaining will berecalculated if the door is kept open fora long period of time.

To display the core temperature

As soon as the time remaining appears,you can also display the actual coretemperature.

Select Change.

Using residual heat

The heating in the oven switches offshortly before the end of the cookingprogramme. The residual heat in theoven is sufficient to complete thecooking process.

Using the residual heat in the ovensaves energy.

Energy save phase will appear in thedisplay to show that the oven is inenergy save mode. The measured coretemperature is no longer visible.

The cooling fan continues to run, asdoes the hot air fan if a "fan" settinghas been chosen.

When the core temperature selectedhas been reached:

– Process finished will appear.

– A buzzer will sound if the buzzer isswitched on (see "Settings – Volume– Buzzer tones").

Tip: If the food is not yet cookedsufficiently, insert the food probe intoanother place and repeat theprogramme.

This method is ideal for cooking beef,pork, veal or lamb when a tender resultis required.

First sear the meat all over at a hightemperature on the hob in order to sealit.

Then place the meat in the pre-heatedoven where the low temperature andlong cooking duration will cook it toperfection and ensure it is very tender.

The meat will relax and the juices insidewill start to circulate evenly throughoutthe meat to reach the outer layers. Thiswill give very tender and succulentresults.

Tips

– Use lean meat which has beencorrectly hung and trimmed. Bonesshould be removed before cooking.

– For searing, use a suitable cooking oilor fat that can withstand hightemperatures (e.g. clarified butter,vegetable oil).

– Do not cover meat during cooking.

Cooking takes between 2-4 hoursdepending on the size and weight ofthe meat and on how well cooked youwant it as well as the level of browningrequired.

Preparing food for grillingTrim the meat. Do not season meat withsalt before grilling as this draws thejuices out.

Add a little oil to lean meat if necessary.Do not use other types of fat as theycan burn and cause smoke.

Grilling with the rotisserie

The rotisserie is an optional accessorythat can be used with the Full grill and Economy grill  functions.

The rotisserie can hold a maximum of5 kg.

Push the holders for the rotisserieinto the notches on the universal tray.

Fix the food centrally on the roastingspit with the clamps.

Feed the tip of the roasting spit into(1) and place the curled end intoholder (2).

Place the universal tray and rotisserieon shelf level 1. Insert the drive shaftfor the rotisserie motor into the slot atthe back of the oven.

Close the door.

Select the grill function you want.

Set the temperature.

Select Open further settings.

Select Rotisserie.

On will appear in the Rotisserie field.

The grill motor will switch on after ashort time. The food will be grilledevenly on all sides as it rotates.

Testing to see if cooked

One way of finding out how well a pieceof meat has been cooked is to pressdown on it with a spoon:

Rare: If the meat gives easily tothe pressure of the spoon,it will still be red on theinside.

Medium: If there is some resistance,the inside will be pink.

Well-done: If there is very littleresistance, it is cookedthrough.

Check if the meat is cooked after theshortest time quoted.

Tip: If the surface of thicker cuts ofmeat is cooked but the centre is notcooked, continue grilling at a lowertemperature setting or use a lower shelflevel to allow the food to cook throughto the centre.

DefrostUse the Defrost function to gentlydefrost frozen food.

The temperature can be set between 25and 50 °C.

Air is circulated throughout the cabinetto gently defrost the food.

Danger of salmonella poisoning.It is particularly important to observefood hygiene rules when defrostingpoultry. Do not use the liquid fromthe defrosted poultry. Pour it away,and wash the tray, the sink and yourhands.

– Where possible, remove thepackaging and put the food to bedefrosted on the universal tray or intoa suitable dish.

Prepare the food for drying

– Peel and core apples, and cut intoslices 0.5 cm thick.

– Stone plums, if necessary.

Sabbath programmeThis programme is for religiousobservance.

Select the Sabbath programme andthen select the oven function andtemperature.

The programme will only start after thedoor is opened and closed:

– The cooking process will begin afterapprox. 5 minutes usingConventional heat  or Bottomheat .

– The oven will heat up to thetemperature you have set and willmaintain this temperature for amaximum of 72 hours.

– The interior lighting does not comeon, even when the door is opened.

If, in the Settings menu, you haveselected Lighting – On the lighting willremain switched on throughout theprogramme.

– Sabbath programme appearsconstantly in the display.

– The time of day display is switchedoff.

A Sabbath programme that has beenstarted cannot be changed, nor can itbe saved under User programmes.

Gentle bakeGentle Bake is suitable for smallamounts, e.g. frozen pizzas, bake-offrolls, biscuits and for meat dishes androasts. The optimal use of heat enablessavings of up to 30 % energy to bemade compared to cooking with astandard oven function withcomparably good cooking results.

This function is not suitable for largeramounts of food such as sponge cakesand fresh fruit cake where the cake mixneeds to be thoroughly bakedthroughout. No energy savings wouldbe achieved.

The temperature can be set between100 and 250 °C.

Cakes, pizza, baguettes

– Large frozen items such as cakes,pizzas or baguettes cover anextensive area of the baking tray oruniversal tray. The temperature difference if largefrozen items are cooked in these trayscan cause the tray to distort in such away that it cannot be removed fromthe oven when it is hot. Further usewill make the distortion worse. Placethis type of food on bakingparchment on the rack to prevent therisk of this happening.

– Use the lowest temperaturerecommended on the manufacturer'spackaging.

Oven chips, croquettes or similaritems

– Small items of frozen food such asoven chips can be cooked on thebaking tray or universal tray. Place baking parchment on the trayso that they cook gently.

– Use the lowest temperaturerecommended on the manufacturer'spackaging.

– Turn several times during cooking.

Normal soiling

The fibre glass seal around the frontof the oven should be handledcarefully. Do not rub and scour it. If possible you should avoid trying toclean it.

It is best to remove normal soilingimmediately using a clean spongeand a solution of hot water andwashing-up liquid or with a clean,damp microfibre cloth.

After cleaning make sure all residualcleaning agent is thoroughly removedwith clean water.This is particularly important whencleaning PerfectClean surfaces ascleaning agent residues can impairthe non-stick properties.

After cleaning, wipe the surfaces dryusing a soft cloth.

Food probe

The food probe can be cleaned in thedishwasher.

Stubborn soiling

Spilt fruit and roasting juices maycause lasting discolouration or dullpatches on enamelled surfaces. Thisdiscolouration is permanent but willnot affect the efficiency of the finish.Do not attempt to remove thesemarks. Clean these following theinstructions given here.

Baked on deposits can be removedwith a glass scraper or with a non-abrasive stainless steel spiral pad,warm water and washing-up liquid.

For very persistent soiling onPerfectClean coated enamel, applythe Miele oven spray to coldsurfaces. Follow the instructions onthe packaging

Non-Miele oven cleaner must only beused in a cold oven and for no longerthan a maximum of 10 minutes.

You can then also use the scouringpad on the back of a washing-upsponge to remove the soiling.

After cleaning, remove all ovencleaning agent residues thoroughlywith clean water, and dry with a softcloth.

Pyrolytic cleaning  of theoven interiorInstead of cleaning the oven manuallyyou can run the Pyrolytic cleaningprogramme .

During pyrolytic cleaning the oveninterior is heated up to over 400 °C. Anyresidual soiling is broken down andreduced to ash by the hightemperatures.

This oven has three levels of pyrolyticcleaning, each with a different duration.Select:

– Level 1 for light soiling

– Level 2 for heavier soiling

– Level 3 for very heavy soiling

The oven door locks automatically assoon as the Pyrolytic cleaningprogramme starts. It cannot be openeduntil after the programme has finished.

The timer can be used to delay the startof pyrolytic cleaning, for instance tomake use of cheaper electricity tariffs.

At the end of pyrolytic cleaning anyresidues such as ash from the pyrolyticprocess can be easily wiped away.

Preparing for pyrolytic cleaning

Non-pyrolytic accessories will bedamaged by pyrolytic cleaning.Remove all non-pyrolytic accessoriesfrom the oven before starting apyrolytic process. This also appliesfor optional accessories that are notsuitable for pyrolytic cleaning.

The following accessories are suitablefor pyrolytic cleaning and can be left inthe oven:

– Side runners

– FlexiClip telescopic runners HFC 92

– Rack HBBR 48-2

Remove all accessories that are notsuitable for pyrolytic cleaning fromthe oven.

Place the rack on the top shelf level.

Heavy soiling in the oven can causethick smoke to develop and canresult in the Pyrolytic cleaningprogramme being switched off.Burnt-on residues can cause lastingdiscolouration or dull spots onenamelled surfaces.

Before starting the pyrolytic cleaningprogramme remove coarse soilingfrom the oven and scrape any burnt-on residues off enamelled surfaceswith a glass scraper.

Locking of hob during pyrolyticcleaning

It is not possible to carry out pyrolyticcleaning and operate the hob at thesame time.

If the hob is in use and thenpyrolytic cleaning is started, the hobswitches off automatically.

– The gas supply is switched off.

– The flame goes out.

– The lighting on the rotary controlgoes out.

Turn the rotary control clockwise tothe  (Off) position.

As soon as pyrolytic cleaning is finishedthe burners can be switched on again.

During pyrolytic cleaning the hob islocked and cannot be switched on.

Turn the rotary control clockwise tothe  (Off) position.

Switch the oven off.

The visual and acoustic signals areswitched off.

Danger of burning.Do not remove any pyrolytic residuesuntil the oven compartment hascooled down.

Clean the oven compartment andpyrolytic accessories to remove anypyrolytic residues (e.g. ash) that canbuild up depending on the degree ofsoiling in the oven cavity.

Most residues can be removed withwarm water, a little washing-up liquidand a clean sponge or a clean, dampmicrofibre cloth.

Depending on the level of soiling, avisible deposit could build up on theglass on the inside of the oven door.This can be removed with adishwashing sponge, a glass scraperor a stainless steel spiral and a littlewashing-up liquid.

Extend and retract the FlexiCliptelescopic runners several times afterrunning the pyrolytic cleaningprogramme.

Please note:

– There is a delicate fibreglass sealaround the oven compartment to sealthe glass in the oven door. This canbe damaged by rubbing or scouring.Do not clean it if possible.

– After cleaning discolouration or lightpatches can remain on the rails of theFlexiClip telescopic runners and rackand on the knurled nuts. Howeverthis does not affect their operation.

– Enamelled surfaces can bepermanently discoloured by spilt fruitjuice. Such discolouration does notaffect the properties of the enamel.Do not attempt to remove thesemarks.

If pyrolytic cleaning is cancelled

If pyrolytic cleaning is cancelled theoven door will remain locked until thetemperature inside the oven drops tobelow 280 °C.

The following will cause the Pyrolyticcleaning programme to stop:

– Switching the oven off.

– A power cut.

If you turn the oven off Switch applianceoff? will appear in the display.

Select Yes if you want to cancel thePyrolytic cleaning programme.

The door will unlock once thetemperature in the oven has droppedbelow 280 °C and the oven will switchoff.

If you would like to continue runningthe Pyrolytic cleaning programme,select No.

The Pyrolytic cleaning programme willcontinue running.

Removing the door

The door weighs approx. 14 kg.

The door is connected to each doorhinge by retainers.Before the door can be removed thelocking clamps on both hinges mustfirst be unlocked.

Open the door fully.

Release the locking clamps byturning them as far as they will go.

Do not attempt to take the door offthe retainers when it is in thehorizontal position as the retainerswill spring back against the oven.

Do not use the handle to pull thedoor off the retainers as the handlecould break.

Raise the door up till it rests open.

Holding the door securely at bothsides lift it upwards off the retainers.Make sure you take it off straight.

Refitting the door

Hold the door securely on both sidesand carefully fit it back into the hingeretainers.Make sure that the door goes backon straight.

Open the door fully.

If the locking clamps are not locked,the door could work loose resultingin damage.Ensure that the locking clamps arelocked after refitting the door.

Flip both locking clamps back up asfar as they will go into a horizontalposition.

Removing side runnersYou can remove the side runnerstogether with the FlexiClip telescopicrunners. If you wish to remove theFlexiClip telescopic runners separatelybeforehand, please follow theinstructions in "Features – Fitting andremoving FlexiClip telescopic runners".

Danger of burning.Make sure the oven heatingelements are switched off. Make surethe oven has cooled down.

Remove the universal tray and therack from the oven compartment.

Do not allow any parts such as e.g.the knurled nuts to fall onto theenamelled oven floor.This could chip the enamel.Place a soft covering on the floor ofthe oven (e.g. a towel) to protect it ifanything falls on it.

Loosen knurled nuts (1).

Pull the side runners out of holder (2)and remove them (3).

Reassemble by following theseinstructions in reverse order.

Descaling the steam injectionsystem

When to run the descaling process

The frequency of descaling will dependon the water hardness level in yourarea.

The descaling process can be run atany time.

However, to ensure that the ovenfunctions correctly you will beautomatically prompted to run thedescaling process after a certainnumber of programmes.

The last ten processes before descalingare displayed and counted down. Afterthat the Moisture plus  function islocked. It can only be used again whenyou have carried out a descalingprocess.

All other functions without moisture canstill be used as normal.

Sequence of a descaling cycle

Once the descaling process has beenstarted it must be completed throughto the end. It cannot be cancelled.

The descaling cycle takes approx.90 minutes and consists of severalsteps:

Preparation

You will need a container of approx. 1litre capacity.

A plastic tube (with suction cup) issupplied with your oven so that youdo not have to hold the container withthe descaling agent underneath thewater intake pipe.

We recommend using the descalingtablets supplied. They have beenspecially developed for Miele foroptimum results.

Other descaling agents, whichcontain other acids besides citricacid and/or other undesirablesubstances, such as chlorides forexample, could cause damage.Moreover, the descaling resultrequired could not be guaranteed ifthe descaling solution was not of theappropriate concentration.

Tip: Miele descaling tablets areavailable to order from the Mielewebshop, from Miele or from your Mieledealer.

Fill the container with approx. 600 mlof cold tap water and thoroughlydissolve one descaling tablet in it.

Carrying out the descaling process

Select Maintenance .

Select Descale.

If the Moisture plus  function isalready locked, you can start thedescaling process immediately byconfirming with OK.

Push the universal tray into the topshelf level as far as it will go to collectthe descaling solution after it hasbeen used. Confirm the messageshown with OK.

Place the container with thedescaling solution on the floor of theoven.

Attach one end of the plastic tube tothe water intake pipe. Place the otherend of the plastic tube in the bottomof the descaling solution containerand secure the plastic tube to thecontainer with the suction cup.

Confirm with OK.

The water intake process will begin. Youwill hear the noise of the pump.

You can interrupt and resume theintake process at any time byselecting Stop or Start.

The amount of solution specified can bemore than the amount which is actuallytaken in. Some of the solution maytherefore be left in the container at theend of descaling.

A message will appear to confirm thatthe intake process is completed.

Confirm with OK.

The Activation phase will begin. Youcan follow the time counting down inthe display.

Leaving the container together withthe tube connected to the fill pipe inthe oven compartment, pour inapprox. 300 ml water, as the systemsometimes draws in more liquidduring the activation phase.

The system will take in more liquid atapproximately 5 minute intervals. Youwill hear the noise of the pump.

The interior lighting and cooling fanremain switched on for the wholeduration of the process.

At the end of the activation phase abuzzer will sound if switched on (see"Settings - Volume - Acousticinformation").

At the end of the activation phase thesteam injection system will need to becleaned to remove all traces ofdescaling solution.

Cleaning is carried out by flushingapprox. 1 litre of fresh tap waterthrough the system. The water iscollected in the universal tray. Thisprocess is repeated three times.

Take the universal tray out of the ovenand empty it. Place the tray back inthe oven again on the top shelf level.

Detach the plastic tube from thecontainer.

Rinse the container and fill withapprox. 1 litre of fresh tap water.

Place the container back in the oven,insert the plastic tube, secure it to thecontainer and close the door.

Confirm with OK.

The intake process for the first rinsestarts.

Water will be flushed through the steaminjection system and will then collect inthe universal tray.

Messages will appear in the displaywith advice about the second rinsingprocess.

Take the universal tray out of the ovenand empty it. Place the tray back inthe oven again on the top shelf level.

After the third rinse residual moistureevaporation will commence.

Remove the container and tube fromthe oven.

Close the door.

Confirm with OK.

Steam can cause scalding.Do not open the door while theresidual water is being evaporated.

The oven heating will switch on and theduration of residual moistureevaporation will appear.

The duration is amended automaticallydepending on the actual amount ofresidual moisture.

At the end of residual moistureevaporation an information windowappears with tips on cleaning after thedescaling process.

Confirm with OK.

A buzzer will sound if switched on (see"Settings - Buzzer tones"). Prog. finishedwill appear in the display.

Switch the oven off.

Danger of burning.Allow the oven interior andaccessories to cool down beforecleaning them.

Remove the universal tray with thecollected liquid from the oven andwhen the oven has cooled down,clean away any precipitation anddescaling agent residues.

Leave the oven door open until theoven interior is completely dry.

Many malfunctions and faults that can occur in daily operation can be easilyremedied. Time and money will be saved because a service call will not beneeded.

The following guide may help you to find the reason for a malfunction or a fault,and to correct it.

Problem Cause and remedy

The display is dark. The time of day display is deactivated, so when theappliance is switched off, the time of day display isswitched off. As soon as the oven is switched on, the time of

day will appear. If you want it to be displayedconstantly, the setting to switch the time of daydisplay back on must be changed (see "Settings –Time of day - Display").

There is no power to the oven. Check whether the mains fuse has tripped. If it

has, contact a qualified electrician or MieleService.

System lock appears inthe display when theoven is switched on.

The system lock has been activated. It can be released for a programme to be run by

touching the  symbol for at least 6 seconds. The system lock can be permanently deactivated

(see "Settings – System lock ").

The oven does not heatup.

Demo mode has been activated.The oven can be operated but does not heat up. Deactivate demo mode. See "Settings -

Showroom programme".

Power cut - processcancelled appears in thedisplay.

There has been a power cut which has caused acurrent process to stop. Switch the oven off and then back on again. Start the programme again.

12:00 has appeared inthe display.

The power supply was interrupted for longer than 200hours. Reset the time and date.

Maximum operating durationreached appears in thedisplay.

The oven has been operating for an unusually longtime and this has activated the safety switch-offfunction. Confirm with OK. Touch to delete the message

Process finished.

The oven is now ready to use.

 Fault XX appears inthe display

There is a problem that you cannot resolve. Call Miele Service.

Door not locked appearsin the display.

The Pyrolytic cleaning programme door lock is notlocking. Switch the oven off and then back on again. Then

restart the Pyrolytic cleaning programme. If the message appears again, call Miele Service.

Door not released appearsin the display.

The door lock for the Pyrolytic cleaning programme isnot being released. Switch the oven off and then back on again. If the door lock still does not deactivate itself,

contact Miele.

No signal to food probe.Reposition food probe in theoven. appears in thedisplay.

The food probe is no longer recognised by the oven. Reposition the food probe in the food.

If the oven still does not recognise the food probe itmust be faulty. A replacement food probe can beordered from Miele or from your Miele dealer.

The steam injection system is faulty. Call Miele Service.

Fault with moisture control -Moisture plus programmenot available appears inthe display afterselecting Moisture plus.

Moisture plus  function.

Programmes usingmoisture will not take inwater.

Demo mode is activated. The oven can be operatedbut the pump for the steam injection system does notwork. Deactivate demo mode. See "Settings -

Showroom programme".The pump for the steam injection system is faulty. Call Miele Service.

A noise can be heardafter a cooking process.

The fan remains switched on after a cookingprogramme (see "Settings - Cooling fan run-on").

The oven has switcheditself off.

The oven will switch itself off automatically to saveenergy if no other action is taken within a certain timeframe after switching it on or after the end of acooking programme. Switch the oven back on.

Cakes and biscuits arenot sufficiently baked inthe times given in thechart

A different temperature from the one given in therecipe was used. Select the temperature required for the recipe.

The ingredient quantities are different from thosegiven in the recipe. Double check the recipe. The addition of more

liquid or more eggs makes a moister mix whichwould take longer to cook.

Problem Cause and remedy

Browning is uneven. The wrong temperature or shelf level was selected. There will always be a slight unevenness. If the

unevenness is pronounced, check that the correcttemperature and shelf level have been selected.

The material or colour of the baking tin is not suitablefor the oven function. When using Conventional heat  use matt, dark

coloured pans. Light coloured, shiny pans will notproduce as desirable results.

The catalyser has been set at too high a level. Thiscan lead to an uneven browning result on moredelicate food such as sponge cakes. Set the odour reduction catalyser to a lower level

or switch it off (see "Settings - Catalyser").

The oven lightingswitches off after ashort time.

The oven lighting is set to switch off after 15 seconds(default setting). You can change the default settingfor this (see "Settings - Lighting").

Problem Cause and remedy

The oven lighting doesnot switch on.

The halogen lamp is faulty.

Danger of burning.Make sure the oven heating elements are switchedoff. The oven must be cool.

The lamp cover can get damaged if it falls down.Hold onto the lamp cover while removing it so itdoes not fall down. Place a cloth over the ovenfloor and the open door to protect it.

Disconnect the appliance from the mains. Switchoff at the wall and withdraw the plug from thesocket, or switch off at the isolator or the mainsfuse board.

Remove the lamp cover from the frame frombehind with the tool supplied.

Do not grasp the halogen lamp with your barefingers. Please follow the manufacturer'sinstructions.Remove the halogen lamp.

Replace the halogen lamp (Osram 66725 AM/A,230 V, 25 W, G9).

Engage the lamp cover at the front and push itback into the holder.

Reconnect the appliance to the mains.

The side oven lightingdoes not turn on.

The halogen lamp needs replacing.

Danger of burning.Make sure the oven heating elements are switchedoff and that the oven cavity is cool.

Disconnect the appliance from the mains. Remove the side rails. Release the lamp cover from its holder using the

tool supplied. Replace it with a new halogen lamp (Osram 66725

AM/A, 230 V, 25 W, G9). Press the lamp cover back into its retainer and refit

the side runners. Reconnect the oven to the electricity supply.

There is soiling in theoven after the Pyrolyticcleaning programme.

The Pyrolytic cleaning programme burns off soiling inthe oven and leaves it as ash. Remove the ash using warm water with a little

washing-up liquid with a soft sponge or a clean,damp microfibre cloth.If coarse soiling remains, run the pyrolytic cleaningprogramme again. Select a longer duration ifnecessary.

The hob cannot beused.

The hob is locked during pyrolytic cleaning.This is not a fault.

Turn the rotary control to the  (Off) position. Assoon as pyrolytic cleaning is finished the burnersand the griddle plate can be switched on again.

The hob switches offduring use.

Pyrolytic cleaning has been started and the hob hasbeen automatically switched off and locked.This is not a fault.

The rack and otheraccessories make anoise when beingpushed into or pulledout of the oven.

The pyrolytic resistant surface of the side runnerscreates friction when accessories are being pushedinto or pulled out of the oven. To reduce the friction, add a few drops of heat

resistant cooking oil to some kitchen paper anduse this to lubricate the side runners. Do this afterevery pyrolytic cleaning programme.

– Testing is undertaken using the Gentle bake  function.

– Only accessories that are required for testing should be in the oven during tests.Do not use any other available accessories such as FlexiClip runners.

– An important pre-condition for the determination of energy efficiency class isthat the door is tightly shut during testing.Depending on measurement devices used, the functioning of the door seal canbe affected to a greater or lesser extent. This has a negative impact on the testresults.Pushing against the door will compensate for this. In certain unfavourablecircumstances suitable technical aids can also be necessary for this. This doesnot occur in normal use.
