Every few months I seem to find another wine varietal to get passionateabout. It started about three years ago with dry French Roses, I had to tryevery one I could find. After that I moved on to Malbec from Argentinawhich I still enjoy. Last year my grape of choice was Carmenere, a littleknown varietal grown widely in Chile which is quite value priced (i.e.cheap!). A special thanks to PCC Wine Committee member Larry Fellmanwho recently brought me a bottle of Bonarda, a wine I had never heard offrom Argentina. The beautiful fruit flavors and well balanced tannins maymake this the next to receive Malbec level popularity.. My big varietal ofchoice at the moment is Grenache.
Grenache is one of the world's most widely planted grapes. It's used ineverything from France's Châteauneuf-du-Pape and Tavel to Spain's Priorat and Garnacha rosés.It was Australia's top grape until it was supplanted by Shiraz. And it has been widely grown in Cal-ifornia for decades. I have especially been enjoying the Garnachas from Spain. Widely used in thepast only as a blending grape, Grenache is now being grown in better areas with more care and nowis able to stand on its’ own. Grenache is enjoying a surge of popularity with winemakers in theUnited States now and there is buzz that it will be the next Pinot Noir sized hit, especially as PinotNoir prices have risen so high. My favorite wine writers, Dorothy Gaiter and John Brecher of theWall Street Journal recently conducted a tasting of American Grenache and were quite impressedwith the quality of the wines. They also wrote about white wine versions called Grenache Blancand Grenache Gris which I have not tried but will be on the lookout for. Next time you are inyour neighborhood wine store pick up a bottle of Grenache in any form and let me know what youthink and find. I am on the lookout for the perfect ones to add to the new PCC Wine List comingout in May.
Grenache is a great warm weather wine, and speaking of warm weather or should I say HOTweather, Chef Michael and I are planning our first "Summer Wine Dinner" in July. In the past wehave presented a Summer Wine Tasting, this time we will have a full dinner matching great Sum-mer Cuisine with wonderful wines suited to our Texas climate. This is an event I am very excitedabout, look for more details soon.

“ALIVE” from Méxicoby Nancy Nicol MartínezChiles en Nogada…VIVA!It is May and the siren song of chiles en nogados beckons.
Unexpectedly, my presence is required in Mexico City. It has rained for weeks, and the air is fresh.I have a few hours to spend before an afternoon engagement. Should I visit a favorite museum,search for wild mushrooms in local markets, or buy elegant, fantastically intricate wax tapers at adecades-old family business, steps from the Zócalo? No, I opt for a bee-line three block walk frommy hotel to the FONDA EL REFUGIO, the cornerstone of the Zona Rosa for fifty years.
Perhaps no other dish says “MEXICO” to me, with the possible exception of mole, also a Pueblacreation, than this elegant, complex dish, which trumpets the arrival of the month of Septemberand almost non-stop regional festivities. Its presence becomes ubiquitous, as it appears on menusfrom the meekest meson to the great culinary shrines of the city.
RED - WHITE - GREEN. The colors of the Mexican flag. Legend is that the recipe originated inPuebla, and was first served in 1821, at a banquet on the occasion of the saint’s day of GeneralAgustín de Iturbide, August 28. The honoree was a man who, in spite of having fought on bothsides of Mexico’s war for independence, finally loosened the stranglehold of the Spanish, only tocrown himself emperor in 1822. His eight month imperium came to an end when he was forced toabdicate by none other than Antonio López de Santa Anna, of Alamo infamy. The tale does not endthere. But I digress.
According to the recipe, a chile poblano is broiled, peeled, and filled with a seasoned meat mixturesweetened with dried and fresh fruits. It is then egg battered and fried, smothered with a walnutsauce, garnished with pomegranate seeds and parsley, and served cold or slightly warm.
At the Fonda, a riotous tangle of Italian parsley crowns a plump chile and pomegranate seedsswath the lower third, like a lap towel in a sauna. But it is the enshrouding sauce, a white creamyconcoction made with the peeled tender meats of new walnuts, hence enogado, that raises the dishto sublime. Few restaurants offer an authentic version, peeling the walnut meat is a time consum-ing effort, and the nuts must be fresh or it is all but impossible - making this a seasonal dish ofshort duration. La Fonda sprinkles a generous portion of chopped, peeled walnuts across the“shoulder” of the chile, announcing authenticity in ingredients and technique.
The vendors roll towering wagons down the street, almost toppling with their loads of tri-coloredbanners and flags. My nod to national pride is to sit quietly at my place by the window, white nap-kin in lap, and offer a sigh of appreciation for the visual pleasure of the chile en nogada, red, whiteand green, and smacking my lips inanticipation of the tastes to come.
