If you plan on seeing everything on the trail, the suggested route starts at Mountainoak Cheese and continues to Bright Cheese & Butter, Woodstock, Gunn’s Hill Artisan Cheese, Norwich, Tillsonburg and Ingersoll (or Ingersoll – Tillsonburg- Norwich works, too). By the 20th century, Bright Cheese had grown, along with the demand for Canadian cheddar – making it the country’s no. 2 export. This success sparked the establishment of 1,242 cheddar factories in Ontario. Smooth of texture, the colour is white to light straw. This cheese starts on the palate mild but finishes with a robust flavour reminiscent of Parmesan. The flavour enhances with age. EXTRA OLD CHEDDAR A firm structured cheese, smooth and buttery with nutty notes throughout, and a hint of salt with a slight crystallization. Bright Cheese & Butter HANDECK This firm, washed rind cheese is made in a similar method to typical Swiss mountain style cheeses. Handeck, aged 16 months, is firm, rich with complex flavours and a nutty aroma. 5 BROTHERS 5 Brothers, named for the cheese maker & his 4 brothers, combines traits from Gouda and a Swiss variety called Appenzeller. It has a firm yet creamy texture and rich diverse flavours with sweeter overtones. Gunn’s Hill Artisan Cheese FARMSTEAD PREMIUM GOLD GOUDA Starting off with fresh, raw milk that is thermalized, creates the full, rich flavour in this cheese, which is slightly sweet and nutty. Aged 15 to 18 months, the hints of butterscotch and caramel on the finish, is characteristic of aged goudas. WILD NETTLE GOUDA Wild Nettle provides an herbal, earthy flavour. When combined with the creamy farmstead gouda, these combinations create an exceptional taste experience. Mountainoak Cheese OAXACA Similar to mozzarella, Oaxaca (pronounced oh-hock-ah), is a hand stretched curd cheese, kneaded and gently wound in balls. Oaxaca has a savoury mellow buttery flavour and is an excellent melting cheese. A little salty and mild flavour makes it one of the most popular cheeses for preparing quesadillas, tacos and other dishes calling for mozzarella. PANEER Paneer is a soft unripened cheese made only from milk and vinegar that has a very mild and fresh flavour.
