The Prodigal SonHalf Empty or Half Full People
You have the choice of seeing the glass as either half empty of half full has to be one of the most often used statements by parents in dealing with their children whose desire for more seems to have no end. For those of us raising more than one child, it may not be the desire for more but the constant battle of why one sibling gets something that the other one doesnt.
Jesus was recorded to have told a story in the Book of Luke, chapter 15, about a son returning home after squandering his inheritance. The story is as much about the son returning home as it is about the son who stayed home faithfully and worked for the father. The son who was openly dissatisfied with his life had to move away and lose everything to appreciate what he had, while the one who stayed home was equally guilty of not appreciating what he had been given by his father. They were both looking at the circumstances from a half empty point of view. The one who left thought things were better elsewhere, the one who stayed resented that he was there and didnt want to share when his brother returned.
I have written about it several times, but it can never be said too much, the greatest lovers of Memphis are those who have moved here from other places. The ones who complain the most are the native Memphians who are stuck in the mind set of the brother who stayed home unappreciative of what they have been given.
I do not want to be accused of writing a half-empty letter, one the great things about publishing 4Memphis is the outcry of support for the mission and message of the magazine from native Memphians and transplants alike. I like to think we have had a positive impact and have helped that positive outcry grow, but we are only a voice calling peoples attention to what others are doing. The Mos Bow Ties and the Midtown Movement pieces are such examples in this issue of 4Memphis. The Memphis Ownership Group of the Grizzlies joined with the outsiders Robert Pera and Jason Levien to make a huge half full outcry.
I believe that if one studies successful people, companies or cities, you find that they are dominated by half full thinking people. They are people who have an appreciation/understanding of all that life has brought them and work to overcome the difficulties. They view the half full condition as an opportunity to improve and build and not as an opportunity to complain and quit.
The father celebrated the return of the son. May we all celebrate the Mid-South and all that it has to offer, and work to fill the rest of the glass.

Truffle Egg with Cranberry Tarragonerling Jensens
2 eggs2 T whipped soft creamMinced truffle to taste. May substitute truffle oil if no
truffles are available. Remember its easier to add more than take away.
Mix egg and cream together. Heat a crepe pan to just before smoking. Add butter allow to brown then add oil to cease browning. Add egg cream mix to pan, season and allow to cook until just done to personal liking. Add truffles or oil and fold over and over on itself. Add truffle last as flavor fades with heat. Serve with rye and or brioche toast. Compote and minced onion.
Cranberry tarragon:2 cups cranberry2 T sugar1/4 cup tarragon vinegar
2 large shallots, minced2 T tarragon, minced1 T anise alcohol
Place cranberries, sugar, vinegar and shallots in a heavy bottom sauce pot. Stir often. Cook until vinegar is au sec and berries thicken with sugar. Once cool add tarragon and anise.

Jalapeo Green Eggs & HamItta Bena
2 large eggsPork of your liking: bacon, sliced ham, pork chop, etc.1 T butter1/2 a jalapeo (seeds removed and rough chopped)1 T chives, choppedFresh cracked black pepper
Over a mixing bowl, crack open each egg and pour insides back and forth between the shells allowing the egg whites to fall into the bowl. Once the yolk has been separated from the egg whites, carefully pour the yolk into a spoon, and set aside. In a food processor, combine rough chopped jalapeos and chives. Do not chop jalapeos very small, you want the food processor to do most of the work. Turn food processor on high. as the jalapeos and chives
are chopped they will release their natural oils. Once they are chopped fine, pour in the egg whites. Blend very briefly, 5 to 10 seconds. The oils from the jalapeos and chives should turn the egg whites green.
Set a medium sized non-stick skillet over low to medium heat. Once hot melt 1 T butter, making sure the entire bottom of the pan is coated. Pour in green egg whites. If they immediately begin to rapidly bubble, then the pan is too hot. Using the spoon, carefully place the egg yolks in the center of the green egg whites, being careful not to break the yolk. Cook for 1 or 2 minutes, or until egg whites are cooked, but the yolk is still runny. Remove from heat, and using the rim of a drinking glass carefully cut the eggs in a perfect circle around the yolks. Remove and season with fresh cracked black pepper. Serve with your choice of pork, for a fun conversation-starting brunch!

Fried Green Tomato BLTJims Place Grille 1-2 green tomatoes, sliced2 thick-sliced Bentons Smokehouse Bacon1 medallion pork tenderloinArugula greens1 egg 1/3 cup seasoned white cornmeal 1/3 cup all-purpose flour
Hollandaise sauce (one egg yolk, two tablespoons salted butter, dash of cayenne, dash of Colmans dry mustard, squeeze of fresh lemon juice) Dredge a tomato slice and pork tenderloin medallion in egg wash batter and seasoned cornmeal mix. Season
the cornmeal with 1/2 tsp salt, black pepper and a dash of cayenne. In a cast iron skillet, heat vegetable oil and fry to golden. Set aside. Next, fry the Benton s bacon slices and set aside to cool. Fry egg, sunny side up.
Layer the sandwich on bread of your choice, starting from the bottom up: arugula, 1 slice fried green tomato, 1 bacon slice, pork medallion, 2nd bacon slice, 2nd fried green tomato slice and place fried egg on top. Drizzle with fresh Hollandaise sauce (1 egg yolk, 2 T salted butter, dash of cayenne, dash of Colmans dry mustard, squeeze of fresh lemon juice).

Bolognese1/2 white wine1 cup diced onion1 cup celery2 cups roasted whole
tomatoes1/2 lb chorizoSalt and pepper to taste
Brown chorizo in skillet. Drain. Add onion and celery with a dash of olive oil. Deglaze pan with white wine. Add over roasted tomato. Simmer until tomatoes are broken down.
Grits1 cup stone ground grits2 cups milk1 cup heavy cream
1 cup gouda Velveeta2 tbl butter
Combine all ingredients except grits. Heat to a simmer. Add the grits and cook until grits are al dente (softened but has crunch).
To build the dish:2 tbl scallions1 tbl queso fresca1 poached or fried egg Pour grits into an individual skillet or bowl. Add chorizo Bolognese on top. Top with fried egg and garnish with queso and scallions.

Bring a pot of water with several tablespoons of vinegar (to help the eggs hold together) to a simmer. Gently crack the eggs and drop into the water, slow poach for 5 minutes or until the white is set. Spoon creamed spinach onto the plate. Warm the artichoke bottoms and place on top of the spinach. Remove the eggs with a slotted spoon and place in the artichokes. Top with hollandaise sauce, and garnish with paprika and chives .Serve with fried Brabant potatoes and fresh fruit.

Its the immutable law of renting a vacation home at the beach: You lose the first half day just getting yourself set up for the business of vacationing. Youve got to hit the grocery store, the liquor store, rent the bikes, maybe a kayak, make some reservations at your favorite restaurant, arrange a tee time.
While the string of beach towns along Northwest Floridas Highway 30A from Rosemary to Alys to Watercolor to Grayton - is paradise, renting a home at one of these resort-like communities comes with the hefty price tag of losing a half day of precious vacation time.
During his own visit to Seagrove Beach in 2008, John Wellborn realized there was plenty of demand for a concierge-style service for the 30A communities. The Columbus, Georgia native, whose childhood included family vacations at Seagrove, was taking a break from work when genius struck.
I realized there was a big need for second home owners to have someone locally to help with all of the issues that come with second home ownership, says Wellborn. After one day of cold calling, I had twenty homes on our program.
Wellborns company, Live Well Bikes, was the first concierge service available for 30A vacationers and homeowners and has grown from providing bikes and paddle board rentals to doing grocery runs, airport pick-ups, providing high chairs and cribs, and even arranging full-service beach bonfires for its clients.
Need groceries? Simply write up a list and email it in; the fee is $50 for the first 20 items, $75 for 40 items. A crib and high chair combo is $150 for a week, while two beach chairs
and an umbrella is $150 per week about $21 a day. A beach bonfire complete with the essential county permit includes setup and cleanup, tiki torches, a table and an iPod dock / speaker costs $385, a cost easily split by multiple families. Coolers with ice, chairs, hot chocolate and even the makings for smores can be added to the package.The bikes are the most requested, but the beach fires are the most fun and the thing that all of our guests remember and talk about for years, says Wellborn.
When a client arrives at their rental, everythings ready to go food put away, wine chilling, bikes and helmets at the ready. All thats left for you to do is unpack, and get those toes in the sand.
Wellborn says experiencing the slice of paradise that is 30A is what inspired him to begin Live Well, and its what he hopes inspires others to follow their hearts to work they love.
I have found happiness in a way I didnt know existed before moving to 30A, he says. It is my mission to share that experience with the guests we work with every week.

It was not too long ago that the mention of Midtown Memphis provoked disappointment and wasted opportunity. With the exception of Cooper Young, much of what had been historically bustling was abandoned and served as little more than a reminder of what Memphis used to be. However, as of late, 38104 has and continues to develop into something much greater than simply the hub for alternative living. In fact, four different areas, or boroughs, are working together in one great Midtown Movement. Thanks to the efforts being put into Cooper
Young, Overton Square, Broad, and Crosstown, Midtown is seeing an urban revival that was long overdue, and now people are taking note.
Cooper Young neighborhood is boxed by East Parkway to McLean, Central to Southern Avenue. The streets are lined with mid-20s architecture and blooming azalea bushes, and residents are notoriously friendly and walk to the conveniently located businesses. The entrance to the neighborhood is marked by the Cooper-Young Trestle, a 150-foot long steel sculpture by artist Jill Turman, which depicts homes and businesses found in the neighborhood. The sculpture serves as a source of pride and identity for the artistic neighborhood, as do the ginkgo trees that line the sidewalk. Cooper Young hosts dining and entertainment from a handful of Memphis notable talents. Karen Carrier owns CY staple Beauty Shop Restaurant as well as the neighboring Bar DKDC. The Beauty Shop is a must-visit for Sunday brunch, and diners sit in repurposed hair dryer chairs and enjoy do-wop nostalgia while sipping their notorious Bad Boy Mimosas. Caf Ole has seen a facelift with new owner Sandy Robertson, who owns Alfreds on Beale, Automatic Slims, and Ubees (just to name a few). A new menu offers hits like the lobster tamale and grouper tacos, and the inside and patio has seen massive renovations,

including a cutout community table for more seating and palm trees on the patio. Down the road, Chef Ryan Trimm masses a packed restaurant at Sweetgrass, which was voted Best New Restaurant and Best Chef by Memphis Magazine. Its neighboring waterhole Next Door, which is also owned by Trimm, boasts a huge beer list and televisions on every wall for Grizzly and Tiger fans alike. The Growler of Memphis is the new guys on the block and a huge hit with craft beer lovers. The quaint Java Cabana is Memphis oldest coffee house and offers free WiFi and fair trade coffee. Walk east on Young and you stumble upon Greencork, a newer addition to Cooper Young. The neighborhood is buzzing about the state-of-the-art wine dispensers in the quaint bistro. The mother-daughter ownership duo offers guests the ability to try over 32 wines with two, four, or six ounce pours. They also offer a picnic basket, which contains a mixed charcuterie as well as a selection of cheeses, all served in a wicker basket. The neighboring Strano, a Sicilian-style eatery, is opening their doors soon and right in time for diners to enjoy the updated gazebo in front of their restaurant.
Tamara Cook is Director of the Cooper Young Business Association, and she could not be more pleased with the growth of the area. We have never had such a high level of business capacity: nearly everything is occupied. And with a few exceptions, most everything is occupied by local businesses with involved owners. The Cooper Young Business Association hosts the Cooper Young Festival, and the festival is attended by over 130,000 guests and 425 artisans from all over the world. Live music from celebrated talents like Lucero and Free Sol have graced the stages at the Cooper Young Festival. This year, the festival weekend will be kicked off by the Cooper Young 4 Mile Run on Sepember 13, and it is a truly unique experience for runners: the course snakes down the residential area, which was recently named one of Americas Top Ten Places to Live. The enthusiastic residents line the sidewalks and yards, some offering water, all cheering, and a few even donning costumes and handing out glow sticks. The proceeds from the festival go back into keeping the neighborhood beautiful, and last years earnings afforded the beautifuly updated gazebo, which is available free of charge for any musicians that want
to be heard. The gazebo also acts as the home base for the CY First Thursday Night Out, which is held on the first Thursday of every month. People can enjoy live music and get specials from all of the Cooper Young businesses; Burkes Books has a $1 sidewalk sale, and even the notorious House of Mews has specials that evening on cat adoptions. Cooper Young has been a thriving community on the rise for years, so it was only a matter of time before the borough down the road got in on the fun.
Bob Loeb of Loeb Properties acts as front man in the revitalizing Overton Square. Bob is of the generation that gets glassy-eyed in remembering the good ol days at Bombay Bicycle and Lafayettes (though he laughingly retracts and said he spent much of that time studying). It was only several years ago that the bustling Overton Square of yesteryear was a deserted grouping of abandoned storefronts. When we started planning for the updated Overton Square, we recognized when looking at an aerial map of the neighborhood that Overton Park is the center of the Overton universe. Since December of 2011, the Overton Park Conservancy has a 10 year management agreement with the city and is given the authority to manage 184 acres of public parkland, including the Greensward, Rainbow Lake, the formal gardens, Veterans Plaza, the 126-acre Old Forest State Natural Area, and the East Parkway picnic area. We just want to be a part of some of that energy. Great things are going to happen here because of that agreement, says Bob. The conservancys goal is to preserve Overton Park and utilize it as a location for people to socialize, create, learn, and play. If the energy provided by Overton Park is what sparked the restructured Overton Square, Memphis owes the park much gratitude. What was once a desolate area is now booming a few short years later. Jeff Johnson opened another Local Gastropub in the Square, and that is when the Overton Square fervor really began. After what seemed to be never-ending construction, the modernized strip known as Overton Square provides local business a sleek and updated space to operate in a highly-anticipated area. Bar Louie is an upscale sports pub and boasts dozens of televisions and craft cocktails. Chef David Scott Walker is opening a Bavarian-style restaurant called Schweinhaus. Bob Loeb is eager for

the Oktoberfest- style beer hall to open later this summer, as it lends to the vibrant array of tenants in Overton Square. The famous Lafayettes is reopening its doors and will host live music. Belly Acres is a new restaurant opening later this summer, and it will offer burgers with farm fresh ingredients. The guys at Belly Acres are making the restaurant very kid-friendly, decorating the space almost like a theme park. They will also host nutritional classes for children and impress upon them the importance of eating well. Grocery chain giant Fresh Market is opening where the old Ikes was located. The healthy lifestyle theme is throughout Overton Square, with Breakaway Running having relocated to the area. Several yoga studios and fitness facilities are also in the Square, offering locals an area to live well.
Bob is eager to see all four boroughs succeed. I am not myopic enough to think that we are the only thing happening. We want to be a part of the whole Midtown fabric. Bob has collaborated with Todd Richardson, who is an art professor and on the board for the Crosstown Project. He applauds Todds eagerness in remolding Crosstown. Transforming the old Sears building, the Crosstown Project focuses on Memphians quality of life. Building on three of Memphis strongest community assetsarts, education, and healthcarethe historic Sears Crosstown building is being preserved and redeveloped as a mixed-used vertical urban village. Crosstown is sandwiched between the Medical District and Brooks Museum and Memphis College of Art. This location is ideal for the project, which aims to incorporate both the art community as well as the medical community into their holistic approach to urban living. Both ALSAC and the Church Health Center are relocating to Crosstown. Dr. Scott Morris of Church Health Center says, The Church Health Center will thrive at Crosstown because having all of our services under one roof will make us more efficient and effective. This urban village will become a creative cauldron for the arts, education and health of our city, and we are proud to be a part of this effort. Crosstown Arts will also be managing five types of spaces that integrate varying components of exhibition, performance, production, education and retail. Crosstown Arts is a contemporary arts organization dedicated to further cultivating the creative community in Memphis and supports multidisciplinary and collaborative
projects that interconnect people and organizations. Primary components include exhibition space, multidisciplinary artist residency program, and shared art-making labs. The top floors of Crosstown will serve as residential space for those pursing medical and art education. The Memphis Teacher Residency is a program in which residents commit to teaching in a high-need Memphis school for three consecutive years immediately following their residency year. So while Sears building has proven to be a headache for the city of Memphis, these young visionaries have the motivation and resources to make the historical landmark a resource for a massive positive impact on the city.
Todd also notes that the synergy between Broad and Crosstown is important. He and Bob Loeb both worked in making Memfeast Dinner, an event held to promote the Water Tower Pavilion and the Art to be depicted on it. The Water Tower Pavilion is funded by a ArtPlace America grant and will launch on May 10th with Dance on Broad. It will serve as an artistic performing space for the Broad Avenue area, which has already been enjoying the successes of spots like Three Angels Diner and the classic Broadway Pizza. The Pavilion will feature interactive programming in addition to featuring local performing arts groups. It is also is adjacent to the Hampline, a best-in-class, on road cycle track funded in part by the community. The combination of active, community-based programming with an innovative, transportation facility further promotes Memphis as a place to live, work and play. Victory Bicycle Studio has just relocated to Broad and are cashing in on the Hampline (or the Hamp as locals are calling it). The Hamp will connect bikers to the Greenline and Overton Park, furthering the synergy between Midtown boroughs. And with the newer bike lanes and upsurge of bicycling enthusiast, all of the representatives and leaders in these boroughs recognize a massive opportunity: A pedicab service that serviced the four boroughs would be huge, notes Michael Carpenter of Loaded for Bear agency, the creative group heavily responsible for much of the creative rethinking and approach to the Midtown revival. Whether or not a pedicab service finds its way into midtown, 4Memphis feels that it is time to break out the Midtown is Memphis bumper stickers again, because the movement is full steam ahead.

Friends of James Beard Benefit Dinner

On March 20th Flight Restaurant & Wine Bar hosted the Friends of James Beard Benefit Dinner. The dinners support the work of the James Beard Foundation. Founded in 1986 after the death of New York food icon James Beard, the foundation fosters the culinary arts through scholarships, educational programs, conferences, publications and a variety of public events.
Flights Joshua Perkins and Nick Scott served as hosts for the evening. The duo collaborated with Joel Miller of Ravine in Oxford, MS, Taylor Bowen Ricketts from Delta Bistro in Greenwood, MS, Wally Joe and Andrew Adams from Acre in Memphis, Jay Swift from 4th & Swift in Atlanta, GA and Phillip Prichard of Prichards Distillery in Kelso, TN to provide diners with an exceptional evening of food, wine, and spirits all for a good cause.
We opted to do it here because I think Memphis has a lot to offer and we
wanted Victoria Rodriguez, the representative from the JBF, to be exposed to our city/region. I chose the other chefs based on the similarity between their cuisine and mine and the fact that we all have southern influences, said Perkins.
Southern fare was clearly on display. Opening with a more coastal she-crab soup, lobster tamale tart and heirloom tomatoes, diners then found themselves in Mississippi with Millers smoked quail, served as a mousse with carrots and chives in a savory waffle cone, and Ricketts butter poached rabbit with pecan risotto, hen of the woods mushrooms and blistered cauliflower.
Joe and Adams added a delicate touch with a kogi duck breast with miso apple sauce, Tokyo cross turnips and Brussels sprouts, with Swift finishing diners off with rack of lamb, spiced crimson lentils, fried broccolini, and cucumber ratia. Flight concluded the feast with key lime pie, banana walnut bread and ice cream, and Memphis Belle pie.
Perkins was pleased with the outcome. The vibe was fantastic. Rodriguez sent me a letter to tell me how much she enjoyed the Southern hospitality and how great her first trip to Memphis was. I think it came together well because all the chefs were able to collaborate for a complete menu which flowed seamlessly from course to course.

Memphis latest local celebrity hasnt even cracked his teenage years. Moziah Mo Bridges, age 12, is the brains behind Mos Bows, a line of classic, handmade bowties that are sold around town at Oak Hall, the Dixon Gallery, and other local spotsand in seven states across the South. And hes well on his way to becoming a true fashion mogul.

Creating cheerful bowties is his way of making the world a fun and happier place, Mo says. And his ties have caught the eye of some of the biggest names in fashion. I talked to Tommy Hilfiger on the phone, Mo says. He called me himself and told me that he loved what I was doing and wanted me to come up to New York to meet him. Mo and his bowties have made headlines in O Magazine, the Huffington Post, British Vogue, and Esquire, and earned raves on the TODAY show.
Most recently, Mos Bows was featured on ABCs Shark Tank, the reality show that follows entrepreneurs as they pitch their business ideas to successful executives. Mos panel of potential investors included Marc Cuban and FUBU clothing line creator Daymond John. Mo made quite an impression, even though he admits to being very nervous when he was faced with the Sharks.
The Sharks were amused when Mo told them he is a NBT Next Big Thing! When they asked him about his future plans, he told them he wants to have his own clothing line by the age of 20. Again, this answer impressed the Sharks with his patience to grow into his business and not pushing to have his line tomorrow. Mo even dispensed a little philosophy on passion as he explained his own fashion passion: Figure Out Find Out your own passion. In the end, the Sharks did not give Mo the $50,000 he was requesting in exchange for 20% of his company. What he did get was something that may be even more valuable. Daymond John offered to personally mentor Mo, and to help him advance Mos Bows into the clothing line he envisions. And, Mo also said being on Shark Tank was a great experience. They flew me out to California, and I got to stay in a cool hotel!
How did a 12 year old become such a fashion sensation? Mo says, My dad inspired my style. He always dresses up in suits. At age nine, Mo became frustrated with his lack of options. I really like to dress up too and I just couldnt find any cool bowties, he says. So he got his grandmother to help teach him how to sew, and using her scrap fabric, he began making his own, much more dapper ties.
His bowties range from classic seersucker and gingham to bold patterns featuring puzzle pieces and chevron. Hes got a philanthropic streak too. Proceeds from his Go Mo Scholarship Bow Tie help to send underprivileged kids to summer camp. But Mos personal favorite is a simple tie called classic and cool with white polka dots and a blue background.
Mo has even become a style influence on some of his toughest critics: his friends. He says, Some of the guys wear my bowties. And the girls wear them in their hair!
Not to worry though. In some ways, Mo is still your typical 12 year old. I always dress up, he says, before backtracking. Well, I mean sometimes I wear T-shirts and shorts and play in the mud. And I play basketball and football too!
Mos Bows have already had a trunk show at Bloomingdales, which Mo calls one of my biggest accomplishments. But Mos dreams dont end there. Im looking to start my own clothing line, and then make other things like bed-wares and house-wares like Ralph Lauren does, he says.
We have no doubt that Mo can make it happen.
Rubbing nosesMo and Jake, Oak Halls fashion hound, became fast friends. Shooting with Jake was a lot of fun, Mo says. He licked me a bunch of times. The only thing was he
got hair all over me!
