spend New Year’s Eve.Carson Daly is not one of them.For the past seven years, the MTV

alum, current host of “The Voice,” andstar and executive producer of NBC’sweeknight “Last Call With CarsonDaly” has covered the traditional count-down in New York’s Times Square forNBC. He’ll do so again as “New Year’sEve With Carson Daly” airs Saturday,Dec. 31.

“When I got to NBC, I told them thatI was just used to working that night,”says Daly, who previously did such dutyfor MTV, “and that I wanted to get intothe game there by creating and produc-ing a special that was more about TimesSquare than what ABC was doing (withDick Clark’s annual special, much ofwhich originates from Los Angeles).We’ve just had great success with it, andit’s become a really nice piece of eventtelevision for the network and for me.”

Amy Robach (“Today”) and actor-comedian JB Smoove will help Dalycover the festivities, which also will in-volve music as well as a social mediacomponent. On-air hashtags shown dur-ing the special - which will begin dur-ing the last hour of prime time, thenresume after NBC affiliates’ late localnewscasts - will encourage viewers toparticipate via Twitter.

“It’s something we’ve al-ways tried to find someway to use,” Daly says.“New Year’s Eve is a greattime to be connected and totell your own story. And bythe time we get to the balldrop in Times Square, it’sall about bringing that ex-citement right into your liv-ing room.”

“New Year’s Eve WithCarson Daly” isn’t the onlycustom television willmaintain that evening. ABCcontinues “Dick Clark’sNew Year’s Rockin’ EveWith Ryan Seacrest,” withLady Gaga and JustinBieber among the perform-ers, and a “40th Anniver-sary Party” for the franchiseearlier in the night. AndFox stages another “NewYear’s Eve Live,” slated tohave a country-music fla-vor this time.

Back on NBC, as he does with hismix of interviews and new-artist per-formances on “Last Call,” Daly will tryto pack as much variety as possible intohis New Year’s gala. “That’s kind of thefun of producing the show,” he reasons.“It’s really a pop-culture reflection, sowe get into politics a little bit, but wealso like to have fun. We really are ableto do it all.”

Energizing as it may be to stage aNew Year’s Eve bash, Daly admits it hasadded much activity to an already busyholiday season that now includes his 2-year-old son. He’s been taping segmentsfor “The Voice” - which starts its secondNBC season on Super Bowl Sunday,Feb. 5 - right up to Christmas, and healso has been doing his weekday morn-ing Los Angeles radio show. And he’sglad for it all.

“At this point, it’s tradition,” Dalysays of his hectic year-end schedule.“For 13 out of the past 14 years, I’vebeen in New York in Times Square,watching the ball drop. And selfishly,there’s no place I’d rather be.”

Q: In the movie “Network,” a KathyCronkite is listed as the actress who playsthe Patty Hearst-like heiress working withradicals. Is she any relation to WalterCronkite? — Paul Stevens, Denver

A: She is, indeed, one of the offspring ofthe late CBS News legend. In fact, her fa-ther was a good friend of the director of“Network,” Sidney Lumet ... who passedaway last spring and had, in his days of di-recting television, worked with her fatheron the program “You Are There.”

Computer Classes to BeHeld at Bayonne Library

Mayor Mark A. Smith announced that theFree Public Library and Cultural Center ofBayonne will be holding computer classes forBayonne residents. The classes are funded bythe New Jersey State Library and conducted bythe staff of the Hudson County CommunityCollege. Students will learn basic computerusage of Windows, how to use Word to type aresume, and how to use the Internet to find re-sources for education and job search. That probably explains, at least in part,why “Doctor Who” and Christmas havebecome synonymous in the show’s U.K.home base. And now, for the second con-secutive year, BBC America carries thisyear’s Christmas episode — set in WorldWar II England — on Sunday, Dec. 25.

Series star Matt Smith, who currentlyplays the 11th incarnation of the Doctor,couldn’t be happier about it.

“I think there is a sort of magic andscale to the Christmas episode,” saysSmith, who at 29 is the youngest actor yetto take on the role. “The Doctor andChristmas go hand in hand. WOLFGANG PUCK’S KITCHENA Spectacular Holiday Dessert

cake, is one of the world’s greatest chocolatedesserts.

Sachertorte gets its name from Franz Sacher,who in 1832 was a 16-year-old apprentice pas-try chef in the kitchen of Prince Metternichwhen he was asked to make a dessert to impressvisiting dignitaries. His dense, bittersweet-chocolate cake with a bittersweet-chocolateglaze won raves, and Sacher eventually wenton to open his own delicatessen and winery inVienna. His son Eduard later perfected his fa-ther’s recipe while training at the city’s famousDemel pastry shop and cafe, and then eventu-ally opened Hotel Sacher in Vienna.

In the 1950s, a lawsuit raged between Demeland the Hotel Sacher over which place had theright to claim it served the “original” Sacher-torte. Arguments focused on such details aswhether the cake was made with butter or mar-garine and how many layers of apricot jam ithad. In the settlement, rules too detailed to ex-plain here were established to differentiate be-tween the two versions and give both partiessome sort of bragging rights.

That’s part of the reason why my recipe iscalled “Wolfgang’s Sachertorte.” It’s my ownversion, which uses bittersweet chocolate inplace of the cocoa powder called for in theoriginal recipes. Why? Because, to tell you thetruth, I’ve found some of the slices of Sacher-torte I’ve eaten in Austria (I won’t say where)to be a little dry for my taste. The cocoa butterin the chocolate yields moister results and evenmore intense chocolate flavor; use a goodbrand of bittersweet, whether imported (suchas Callebaut from Belgium or Valrhona fromFrance) or domestic (such as Scharffen Bergerfrom Berkeley, Calif.).

To make my Sachertorte, you’ll need a 9-inch (22.5-cm) springform pan, the kind witha separate bottom and side with a metal clipthat opens to make it easy to keep the rich-yet-delicate cake intact when you unmold it. Goodkitchen-supply stores carry them. (Let me sug-gest that you pick up two, in case you decide tomake a double batch of the cake!)

Although the steps are fairly simple, you’llneed several hours to make the cake betweenall the melting, beating, mixing, baking, cool-ing, assembling, and chilling. So you’ll haveto find the time during an afternoon, evening,or morning. The good news is, with all its but-ter and chocolate and jam filling, the Sacher-torte stays moist and delicious for several daysif stored covered in the refrigerator. So you cango on celebrating long after the last present isunwrapped.

WOLFGANG’S SACHERTORTE Serves 10

CAKE:6 ounces bittersweet chocolate, cut into pieces3 ounces unsalted butter, plus extra for butter-ing4 cage-free egg yolks1/2 cup sugar5 cage-free egg whites1/4 teaspoon salt1/3 cup all-purpose flour, sifted, plus extra forflouring

APRICOT FILLING:1 cup apricot preserves1 tablespoon apricot brandy

GLAZE:6 ounces bittersweet chocolate, cut into pieces1 ounce unsalted butter

2 ounces heavy creamWHIPPED CREAM:

1 cup heavy cream2 tablespoons sugarPreheat the oven to 350 degrees F. Butter andflour a 9-inch springform pan.For the cake, bring 2 inches of water to a sim-mer in a medium saucepan. Put the chocolateand butter in a heatproof bowl large enough tofit inside the rim without touching the water.Melt, stirring, until smooth. Set aside to cool.

In a stand mixer with the wire whisk attach-ment, or in a mixing bowl using a hand-heldelectric mixer, on medium speed beat the yolkswith 2 tablespoons of sugar until the mixturelooks ribbony. Beat in the melted chocolate-butter mixture until fully incorporated. Setaside.

In another bowl, using an absolutely cleanwhisk attachment or beaters, beat together theegg whites and salt until they form softlydrooping peaks. Continue beating while slowlypouring in the remaining sugar, until stiff peaksform. With a rubber spatula, fold in the flour.

Add one third of the whites to the chocolatemixture, folding in gently. Then, gently butthoroughly fold in the remaining whites. Pourand scrape the batter into the prepared spring-form pan.

Bake for about 40 minutes, until a paringknife inserted into the center comes out clean.Remove from the oven, put on a wire rack, andcarefully remove the rim. Leave the cake tocool completely.

For the filling, put the apricot preserves in afood processor and process until smoothlypureed. Pulse in the brandy. Transfer to a bowland set aside.

To cut the cake into layers, horizontally insert8 toothpicks equally spaced halfway up allaround its side. Following the toothpicks, usea long, sharp, serrated knife in a gentle sawingmotion to cut two equal layers, turning the cakeas necessary while slicing. Carefully slide arimless cookie sheet or clean, sturdy cardboardunder the top layer and lift it off. Remove thetoothpicks.

With a spatula, spread the bottom layer withtwo-thirds of the apricot filling. Slide on thetop layer. Evenly spread the top and sides withthe remaining filling. Chill for at least 30 min-utes.

For the glaze, melt the chocolate and butter ina bowl over simmering water the same wayyou did for the cake batter. In a small saucepan,bring the cream to a boil. Stir into the meltedchocolate. Set aside to cool until thick but stillfluid. With an icing spatula, spread the glazeevenly over the top and side. Chill for at least30 minutes.

Before serving, put the cream in a mixingbowl and beat until thick and ribbony. Sprinklein the sugar and continue beating until thecream forms soft, drooping peaks.

To serve, cut the cake into thin wedges witha sharp knife. Garnish with whipped cream.
