Welcome : There is a risk that we may be jumping the gun with all this spring chat. But the magazine will be in your hands until the beginning of April so we’re going to take a punt and grasp the new season with vigour. What could possibly go wrong?! I suppose our track record is wobbly given that we featured snowflakes on our January cover and on the day it was delivered it was +12 degrees. If things don’t turn, blame Barra Best. If they do, praise us! There’s plenty happening this month in terms of Mothers Day and also Easter at the very end so there’s lots to prepare for. Anyway, in this edition we have a whole host of features and profiles to get your teeth into whatever the weather. Our spring/summer fashion special will inspire the wardrobe no end and we also profile some of the best businesses in town. Read all about them and pay them a visit to see for yourself. They’re only round the corner. We also are very honoured to feature the recipes of the legendary Madhur Jaffrey. This really is a huge delight for us and we have only featured a fraction of the recipes from her current book; Curry Nation. A Day of Heavenly Glamour, Timeless Romance & Enduring Love

The Northern Ireland Cancer Fund for Children (NICFC) event at the Culloden hotel on April 20 will showcase the remarkable people that really make a difference to children with cancer and their families. The latest spring/summer trends will be modelled by nurses from Royal Victoria Hospital for Sick Children’s Haematology Unit, social workers from the City Hospital’s Cancer Centre and children, teenagers and young adults who currently use NICFC services. NICFC staff will also be on hand to model at the BMW sponsored event which is in associa-tion with House of Fraser. The event will be compered by UTV’s Paul Reilly and Aundrea Bannatyne, whose

little son James was diagnosed with cancer when he was just a toddler said she is delighted to be able to give something back to NICFC by helping to compere and model at the event. ‘NICFC helped us through an extremely difficult time in our lives and we are forever grateful for that. This event recognises and showcases the people who put their heart and soul into helping children and young people with cancer. I urge people to buy a ticket to this event and come and enjoy a fantastic day out in the stunning Culloden,’ she said. Tickets for the event are £30 with proceeds going to NICFC. The NDSAC Annual Sports Awards for 1st January to 31st December 2012 are now open for nomination. This is an opportunity for all in North Down to nominate sport participants to be considered for awards under each of five categories. Nominations are accepted in the following categories and the judges will determine the results of the awards, using the performance and supporting information provided with the nominations:- Sports Person of the Year 2012, Sports Team of the Year 2012, Young Sports Person of the Year 2012, Young Volunteer for 2012, Bruce Mulligan Award. At their discretion, the Judges may also award one or more AWARDS OF MERIT for exceptional performance or service in sport during 2012 (Nominations are not re-quired for this category.) The Spring Fayre Fundraiser for 2nd Holywood Scout Group will be held at St Philip and St James Parish Church Hall on Church Road, on Saturday 9th March from 11am to 3pm. This is the day before Mother’s Day, so it is a great opportunity to get something special and handcrafted. There are 40 stalls, which include cupcakes, hampers, jewellery, pottery, relishes, soaps, candles, textile gifts and much more! There is also a tea room. Entry costs £2 and under 16’s go free. All proceeds from the door, tea room and stalls go to 2nd Holywood Scout Group.

George Best Belfast City Airport has been recognised and rewarded for its Service Excellence at the Ireland Excellence Awards. The bestowment of the prestigious Gold Star accolade, which is independently validated by the Centre for Competitiveness and recognises organisations that have demonstrated excellence in their overall business performance, follows a rigorous examination process of service standards at the airport, which is based just minutes from Belfast city centre. The airport’s Landside Operations Manager, Judith Davis said, ‘Achieving ‘Gold Star’ status is a fantastic and well deserved honour. Customer satisfaction is very important to us and improving the passenger experience through the airport is an area we continually place a particularly strong focus on. Our employees are very aware of customer needs & requirements in the airport, and undergo regular training to ensure all Service requirements on site are not only met, but exceeded at all levels. As one of East Belfast’s largest employers with approximately 1,500 staff on site, I am delighted that the hard work and dedication of our employees has not only been recognised, but rewarded.’ 2013 marks the airport’s 30th anniversary and will see the airport continue to work with long term partners, flybe and Citywing and new arrivals, British Airways and Aer Lingus.

With over half of adults in NI being either overweight (35%) or obese (24%), the Health and Social Care Board (HSCB) is fund-ing a new initiative with GPs to help people who are overweight to lose weight and to lead active and healthy lifestyles. The initiative is being supported by the Public Health Agency (PHA). This pilot GP Weight Loss Referral Scheme is the first of its kind in NI and will operate through GP surgeries. GPs and other professionals working in primary care, for example practice nurses and health visitors, will now be able to refer patients who meet the eligibility criteria for free sessions with a participating commercial weight loss provider. The participating providers in the scheme are Unislim, Slimming World, Rosemary Conley, WeightWatchers and LifeCounts.

New GP initiative to help people lose weight

Patients who are over 18 years of age, not pregnant, with a BMI greater than 30 and have not at-tended a slimming organisation in the last three months but are ready and committed to making lifestyle change will be issued with 12 vouchers, valid for a four month period. The patient will benefit from gaining physical activity and nutritional support in a safe, friendly and warm environment, tai-lored to suit their health needs and beneficial to their overall health. One member, Joanne Moore, who joined her local Slimming World group is already reaping the health benefits of following the food optimising plan that Slimming World offers. With its rolling hills, the arrival of new farm animals and scores of trees bursting into leaf, Spring has officially sprung this Easter at the Ulster Folk & Transport Museum. The rural areas of the Folk Museum are an ideal place to enjoy traditional Easter Celebrations taking place from Sunday 31 March to Tuesday 2 April. As well as being able to meet the newest additions to the farm including spring lambs and baby chicks, visitors can take part in traditional spring activities. Families are be-ing encouraged to bring their own decorated eggs to roll down Bleach Green Hill, and to take part in the special egg hunt around the grounds of the museum – keeping an eye out for the special golden egg to win an Easter prize. For 5 years Barry McGrane (the owner of The Zipyard in Holywood) and his team of professional seamstresses have been providing a modern, professional clothing alteration service to the people of Holywood and North Down. ‘It never ceases to amaze me, the variety of jobs customers leave with us. The conversation usually starts with “I don’t think you can help me with this?” but we invariably can and do! We have repaired everything from children’s much loved teddy bears to boat sails, car and boat covers, golf bags, holdalls, boots……The list is endless.’One customer asked if The Zip Yard could customise his camper van by re-upholstering the seating area using his old jeans, a novel idea for recycling. They worked to his instruction and the result was very impressive. ‘The van has now become a bit of a talking point,’ says Barry. ‘But our business is not just about mending and altering. Some of our team have also made garments for our customers who have wanted something unique and a bit special. They provide the template and we set to it. Due to the nature of this work the customer can expect a slightly longer turn around time than our usual 24 to 48 hours.’The team see different alterations at different times of the year. As the weather improves they anticipate an influx of curtains and soft furnishings as well as seasonal fashions and bridal wear. ‘A number of our local customers are housebound and subsequently cannot visit the shop. This is not a problem as a quick phone call can enable us to pick up the garment, repair or alter it and return it at a convenient time. (Unfortunately we cannot offer the pinning service in your home.) The service applies not just to the elderly but also to anyone who is housebound. The shop also has wheelchair access and large spacious fitting rooms with wall bars and seating to accommodate customers needs. Our pinning service is swift, professional and free of charge.’ Although Barry has owned The Zipyard in the town for five years his association with Holywood goes back more than 50 years. ‘I was born and bred in Holywood and it is very gratifying to be able to provide a local service to local people.’

Crossroads Caring for Carers is a Northern Ireland based charity which since 1984 has provided respite care for carers, who provide care for an elderly, frail, ill or disabled friend or relative.

Crossroads aim to meet the needs of carers by providing them with a much-needed break whilst providing peace of mind that their loved one is well taken care of by a Crossroads care attendant. Our new purpose built building on the Upper Newtownards Road has been open for a full year now offering vital services that we have never been able to offer before. Our Care Attendants have been able to bring along our children that we look after to do crafts and play in our new children’s activity room. We also have a purpose built sensory room used by our children with special needs and an outside soft play area.

We have a training suite where our fully qualified training manager not only trains our staff but also trains our Young Carers and volunteers. We run training courses on first aid and moving and handling for our Young Carers as these are the vital skills that they use in everyday life to support their families. Our Young Carers can also use the rooms to have DVD nights and catch up with other Young Carers. In our purpose built kitchen is our Young Carers Cookery School run by our dedicated volunteers who teach our Young Carers how to cook quick, inexpensive and healthy meals for their families. We run volunteer lunches and parties for our older volunteers. This is a time for the project teams to catch up and thank the volunteers for their dedication and hard work.

An overview of two of Crossroads projects:• In Your Prime ProjectThroughout NI there are many elderly people at risk from isolation and loneliness. Crossroads has just recently launched our ‘In Your Prime’ Project which aims to reach, empower and connect older people through interaction with each other. We want to attract mature volunteers who are willing to support and encourage elderly people, whilst building friendships, reducing isolation and creating a supportive environment. We want to build a network of social support, develop sustainable befriending groups and inspire older people to contribute their skills and life experiences.• Young Carers ProjectYoung Carers are people aged from as young as 5 to 23, who have accepted the responsibility of a caring role, perhaps for an ill/disabled parent. Whilst many children and young people will do jobs around the home, appropriate to their age and ability, young carers do things and take on a level of responsibility that is inappropriate for their age. Crossroads Young Carers Project aim is to provide support for children who ‘care’ for another member of their family who may be ill, disabled, have mental health problems or an addiction to alcohol or drugs.

We would like to thank all the various organisations who helped fund this wonderful new building. This purpose built building has enabled us to provide many vital services that we would not have been able to provide to these deserving people. It is great that Children and adults of all ages are able to come along and make use and enjoy all of the facilities.’

Ronan was first admitted to the Ulster Hospital on 14th November with suspected neurologi-cal problems but after clear CT scans and lumberpuncture was diagnosed with very low blood sugar levels with abnormally high insulin levels. Doctors put him on a dextrose drip to keep his sugar levels up but he needed transferred by ambulance to the Royal Hospital for Sick Children where the specialist Paediatric Endocrine team are based. On 18th November he had surgery to have a centre drip line inserted by the senior consultant anaesthetist. During the following days Ronan was put on a feeding tube and maintained good blood sugars from regular high energy milk feeds. He was discharged with a diagnosis of normal hy-poglycaemia and sent home with a glucometer (a finger prick test to measure his blood sugar levels every couple of days.) However in the next few days Ronan struggled to get his blood sugars above 3.7 and on Monday 26th November it had fallen below 2.5. He was readmitted to the Ulster Hospital and after a week and a half he was seen as an oupatient in the Royal. At that stage it was disclosed that he would be moved to Great Or-mond Street Hospital. On 11th December Ronan, his Mum and Dad (Joanne & Roger) flew to London leaving Ronan’s three year old sister Phoebe behind with other members of the fam-ily. Ronan again had surgery to insert a centre line and was moved to a ‘long-stay’ ward. Ronan then finally got a diagnosis - Congenital Hyperinsulinism which basically means that either part or all of the pancreas is overproducing insulin. This genetic condition is believed to affect 1 in 45,000 babies (it is believed there are approximately six children with it in NI currently). Treatment was started in the form of diazoxide and so began the slow ‘weaning’ process. Roger returned home to Phoebe leaving Joanne to look after Ronan over the Christmas period. Finally they got home in the New Year. Ronan’s blood is constantly monitored and the re-sults emailed weekly to GOSH who advise on progress. He will return to GOSH in six months. The diazoxide that keeps Ronan’s blood sugar levels up by stopping the pancreas producing insulin also causes hair growth - so much so that as Joanne says, ‘Bradley Wiggins would be envious of his sideburns!’ Since returning home the Henderson family have enjoyed spending quality family time and watching Ronan build up his confidence again. They commented, ‘We greatly appreciate the support of all our friends and family and particularly of our Church (Bangor Road Presbyterian) where the ministerial team have been especially supportive.’

Mix together all the ingredients for the marinade. Coat thecod chunks in the marinade and leave for five minutes.Set a large frying pan over a medium-high heat and pourin 2 tablespoons of the mustard oil. Allow it to smoke. Carefully fry the fish all over for one or two minutes, justallowing the chunks to firm up. Remove and drain onkitchen paper. Place the cauliflower in the same oil. 1–1½ teaspoons salt2 tsp finely grated root ginger1.2kg (2lb 12oz) whole chicken, skinned, chopped into 12 pieces450g (1lb) frozen spinach, thawed and finely chopped4 tablespoons whole milk2 whole green chillies

Set a large pot, about 25 centimetres (10 inches) indiameter, over a medium heat. Add the oil and, when it’shot, tip in the onions and whole garlic cloves. Stir and fry for a few minutes, then cover. Cook for 15 minutes until brown, stirring occasionally and adding a splash of water, if necessary. Increase the heat to high and add the plum tomatoes anda little of the juice from the can. Stir and mash for two to three minutes. Add the chilli powder, turmeric, ground coriander and cumin and the garam masala, mashing until you have a thick sauce. Mix in the salt and ginger. Put in the chicken pieces and brown them on all sides fortwo to three minutes. Cover and cook over a low heat for n15 minutes, stirring occasionally. Increase the heat to high and add the spinach, milk and chillies. Mix well and cook over a medium heat for 15–20 minutes, stirring now and then and adding small amounts of water if the chickenseems to stick or brown too much. Serve.

1 garlic clove, roughly sliced, plus 1 tsp finely chopped garlic2 tsps finely grated root ginger2 hot green chillies, finely sliced2 teaspoons ground coriander½ teaspoon ground cumin½ teaspoon turmeric1 teaspoon salt1 teaspoon garam masala60g (2oz) finely chopped onion125g (4½oz) tomato passata15g (½oz) coriander leaves6 tablespoons grated fresh coconut, or frozen grated coconut, defrosted3 tablespoons lemon juice

Rinse the beans well and soak them overnight in 1.5 litres(2¾ pints) of water in a pan about 20 centimetres (8 inches)in diameter. Next day, set the pan over a high heat, add the sugar and bring to a boil. Reduce the heat to low, cover partially andcook for an hour and a half, or until the beans are very soft and broken up. Pour into a large bowl and set aside. Clean the pan and place it over a medium heat. Pour inthe oil. Check it is hot by dropping in a few of the mustardseeds; they should sizzle and pop immediately. Working quickly, add

the cassia bark, followed almost immediately by the dried chilli. Allow this to darken all over for 20seconds, then add the remaining mustard seeds and let them pop for a few seconds. Add the sliced garlic, swirl the pan and then add, all at the same time, the ginger, green chillies, ground coriander and cumin, turmeric, salt andgaram masala. This process should take about one minute.Stir for a further minute, then add the onion and the finely chopped garlic. Reduce the heat to medium-low and stir and fry for two minutes, or until the onions are soft. Add the passata and cook, stirring, for three minutes.Return the beans and their cooking liquid, bring to a gentlesimmer and cook, uncovered, for a further 10–15 minutes. Add water if it’s too thick, to achieve a consistency you like. Add the chopped coriander, coconut and lemon juice, stir then serve.

I got into catering through my family who ran bakeries and coffee shops in

Belfast,’ says Paul. ‘I started out helping on an Saturday afternoon and evolved to going through catering college. I started in Iona nearly 17 years ago and having worked for two previous owners, the opportunity then came up to take over the Iona in 2000 and so bought it over with my mother.’ Since then Paul hasn’t looked back. He has built up the business, putting his own stamp on things and feedback from the customers endorse their suc-cess. ‘What I think our customers like about Iona is that we change the menu regularly, every month in fact. Plus we are ‘bring your own bottle’ so it brings down the expense of buying wine in a restaurant. The consistency and quality of our produce is very important. Our regulars know that as I’m the only chef. When they dine here, their meal has been prepared by the same person, and not by different chefs each time which can result in different tastes.’ Paul has a great rapport with his suppliers and insists on top quality produce with all

meat and fish sourced locally. The menu is diverse but also great value with specials throughout the week which combined with the BYO bottle makes it very appealing. ‘We do a midweek menu and an early bird on Friday and Satur-day which is extremely good value and goes down very well with our customers at 2 courses for £15.95.’ A few of the dishes this month in-clude; slow cooked lamb shank with a rosemary red wine and red currant jus, roast loin of cod on bed of fennel, garlic and roasted tomatoes, dry cured pork loin cauliflower puree cider soaked rai-sin jus and a simple tender sirloin steak au poire with roast mushroom. ‘From myself and the waiting staff, I’d just like to thank all our loyal customers as their business is much appreciated and to recommend to anyone who hasn’t tried us or been in a while to give us a go as you wont be disappointed!’

I’ve always ‘made things’ for as long as I can remember,’ says Karen, ‘Starting with Blue

Peter and progressing through a BA Hons in Design and a career in advertising and mar-keting. When I had my first child I knew that I wouldn’t be going back to work, as family life is too important to me, but I found that I was searching for some sort of creative outlet and so started by making bunting for my son’s room. And so it began...’ Karen progressed from making little things for her sons and their friends, to wondering if she could get it stocked in some retail outlets and when she discovered she could, the next stage of the journey began. She started sup-plying a few shops with bunting, bags and aprons and attending some car fairs, fitting it all round family life. The wonderful range she offers now covers many bases of products and most recently, workshops. ‘I offer handcrafted and personalised gifts for the home - bunting, cushions, iPad/iPhone etc tweed sleeves, and more recently I offer a range of workshops for children and adults and birthday par-ties. What makes my workshops different is that I offer parent and child an opportunity to craft together, rather than the traditional workshop of dropping off the child, I attempt to offer a shared experience and some quality time together.’

So with a broad range of products and interactive workshops, it has been a fantas-tic and inspirational career path, but what has been the highlight so far? ‘To be honest, whatever I am currently working on is my highlight. I love what I do and what I make and would never supply or offer a service that would not make me happy, so I always fall a little bit in love with whatever is my current project! When I am completely absorbed in a project I spend a lot of time turning it over in my head, and the simplicity of two colours together my make my heart soar. I love that I get to create something which I love and which I know makes other people smile. I also love that I can do it around my family life, that everyday I can drop off and pick up my children from school, help with homework, make their dinner and spend time with them and then start working again in the evening after bedtime when we are in silly season.’Some of Karens work is stocked in Doris & Jeannie’s, 25 Belmont Road BT4. I’ve been working as a mechanic since I left school,’ says Paul. ‘But have been interested in cars since I was eight years old. My brother’s a mechanic who owns a garage in Australia and I’ve a

cousin who owns a garage in England. Now my son Aaron has come into the business since he left school, so it’s very much in the blood.’ Paul started out on his own, doing homers while in other line of work and had built up such a quantity of customers, it was a natural progression to set up a base on his own in 1995.’ Downshire Auto offer a fully comprehensive list of services right across the board, every one of them with the utmost customer service, as Paul explains. ‘We do mechanical, bodywork, welding, timing belts, clutches... all competitively priced. We can look after your whole MOT for you. That includes taking the car, booking the test, getting it ready, taking it to the test and returning it. It’s a handy service, especially for our elderly customers or people busy at work. We have vehicles towed here by AA and RAC, we’re one of the nominated garages for that and we also deal with fuel contamination if that mistake occurs. We take part in Autograss racing so we know about racing and high performance modified cars. We have a full racing pedigree behind us and we’re getting more into car sales too.’ With technical advances in cars come of course advances in training and Paul and the team are continually updating to ensure they are on the case with any issue that is brought in to them. ‘It’s got so technical. Diagnostic computers, electronic transmission etc. You have to invest in machines and tools all the time. It moves at such a fast pace. We are always investing too, we’ve just done new floors, ramps and roof renovations recently. We are taking on new staff the moment and are looking for a new mechanic.’ Recommendation comes from word of mouth and that’s the basis of the large client list. Most are from the town but they still have customers who have moved away and still come here from the likes of Greyabbey or Carrick. ‘We always do what we can. We deal with people on a one to one honest basis, show them what the problem is and try to help. We break down the bill and everything’s transparent.
