Mamma’s Lentil Soup Time: 1 Hour 15 Minutes INGREDIENTS 2 tbsp Macadamia Oil 2 medium onions 3 medium carrots 3/4 tsp. ground thyme 3/4 tsp. ground marjoram 1- 28 oz can chopped tomatoes w/juice 4 cups vegetable broth 3 cups water 1 1/2 cups dried lentils, rinsed and picked over 1/2 tsp ground black pepper 6 oz. red wine 1/3 cups. fresh parsley, chopped fresh baby spinach DIRECTIONS Cooking Instructions: 1. Peel and chop onions and carrots 2. Over medium heat sauté onions, carrots and marjoram 3. When sweated add tomatoes, broth, water and lentils 4. Bring to boil, reduce heat to a low simmer. Cover and simmer for 45 minutes. 5. Add pepper, wine and parsley. Leave uncovered and simmer for another 15 minutes 6. To serve, add fresh washed baby spinach to bowl and ladle over soup Notes: *Add garlic and roast red peppers (capsicum) for a richer taste *thicken with a tin of refried beans if prefer more stew like consistency *Great for breakfast on a cold day
