Good service cannot be over emphasised. Your customers are the most important people you will meet in your daily work. It is imperative that you apply the following guidelines in every interaction with a customer.

• Always be courteous and smile to the customer over the service counter, first impressions last!• Engage with the customer over their choices and point out the different products on offer. They may not know or be familiar with some items and this is a great way of selling to them.• Learn the ingredients and uses of the Londis Fresh products and be con�dent in explaining them to customers. For example, if your store o�ers an at home catering service you should be able to promote this service to customers if the opportunity arises.• Listen carefully and be attentive to the customers needs and wants.• Produce and deliver the customers request as speedily as possible, but make sure quality standards are maintained.• Direct customers to other areas of the store, not just where you work. Be aware of special o�ers that are also relevant to your area e.g. mineral and water o�ers, snack and confectionery o�ers. • Treat every customer with the intention that you want them to return to your store after a positive experience.

Running your Delicatessen Counter

Below are some tips on how to Set up and Dismantle your Delicatessen Counter.

Setting up your Delicatessen Counter

Steps: 1. Lay out a clean deli liner on base of the Deli. 2. Check dates of the stock of items in the Deli storage fridge. 3. Using older stock �rst where applicable, assemble Deli as per Planogram. 4. Update any old stock dates on today’s Traceability sheets. 5. If using any new stock, make note of the dates on your Traceability sheet. 6. Make sure each item on display in the Deli is set up as per Planogram provided. 7. Make a check of breads and top up where necessary, using fresh stocks, and freshly baked baguettes and sliced pans. Display breads to entice your customers. 8. Using Prep/Stock sheet, plan your products which will be needed for today and prepare as appropriate.

Dismantling your Delicatessen Counter

Steps: 1. Empty all existing stock into clean stainless steel containers, cover with cling �lm and date code as appropriate. 2. Store all dated stock items in the designated fridge for use �rst thing next morning. 3. Cover all breads in airtight containers and return to the bread holding press. 4. Discard any stale items and note in waste log book. 5. Check stock levels of all delicatessan products, ensuring sufficient stock is available for use next day. 6. Remove bottom deli liner and shake out, clean as appropriate. 7. Clean all surfaces of the Deli including the glass areas and remove all garnishing and display trays. 8. Clean all Deli containers and replace in the Deli as per planogram, ready for immediate use by set up sta�, the following morning. 9. Switch o� and wipe down the panini grills or ovens with a damp cloth and remove any burnt on residue with supplied scraper or brush. Oil Lightly. Do not use detergents. 10. Leave Deli ready to use by the morning shift sta�.

The Londis Fresh Sandwich Range

Traditional sandwiches with a modern twist. Our specially developed range of sandwiches allows you to o�er your customers their favourite sandwiches with a touch of variety.

• Crumbed Deli Ham & Irish Cheddar with Ballymaloe Country Relish.• Roasted Breast Of Chicken with Sage & Onion Stuffing.• Mediterranean Tuna & Mixed Lettuce with Sun Blushed tomato.• Moroccan Sweet Chilli and Cheese Salsa Wrap.

When preparing a sandwich for a customer:

• Always use fresh bread of customer’s choice. Be helpful to your customer by explaining the di�erent options available.• Ask the customer whether they would like dairy spread/ butter or mayonnaise on their sandwich.• Engage with the customer over their choices and point out the different products on offer.• Add ingredients as per customer’s request spreading evenly over the surface of the bread.• Always ask your customer whether they would like a sauce or relish on their sandwich.• Place the top slice on the sandwich but do not squash down too hard as this will spoil the appearance of the sandwich.• Where applicable, ask your customer whether they would like their sandwich toasted. If so, follow the toasting guidelines.• Neatly serve on Londis Fresh sandwich paper or appropriate packaging.


Sandwich Range

Upon request spread the bottom slice of �oury bap with butter or spread of choice.

Lay four slices of fresh tomato onto the cheese.

Add two half slices of red cheddar cheese to the ham.

Add one small handfull of mixed lettuce onto the diced onion.

Place two slices of deli ham onto the buttered bread slice.

Place one spoon of diced red onion neatly onto the tomatoes.

Spread one spoon of Country Relish onto the top slice of the bap.

Leaving uncut wrap the �nished Bap as per Instructions.

Finish by placing the top slice onto the top of the sandwich Bap.

If making for Grab & Go fridge, wrap in bloomer square packaging as per instructions. If serving from deli counter wrap in Londis Fresh parchment paper.

Place neatly on the Londis Fresh Grab & Go fridge shelf as per planogram for customer’s convenience.

Apply appropriate label to seal the paper folds with side facing aspect, as per diagram.

Preparation Guidelines for Crumbed Deli Ham & Irish Cheddar with Ballymaloe Country Relish


Sandwich Range

Neatly place two scoops or 80 grams of Chicken & Stuffing sandwich �ller onto the bottom slice of the baguette.

Slice in two and wrap in Londis Fresh paper to serve as per instruction.

Slice a fresh baguette down the centre and spread with butter or spread of choice.

Neatly layer some red onion and mixed lettuce onto the chicken& stuffing.

Add one tablespoon or 40 grams of honey mustard mayonnaise onto the bread, top & bottom.

Using the back of a long knife gently press the lettuce and chicken �lling into the back of the baguette.

Preparation Guidelines for Roast Breast Of Chicken with Sage& Onion Stuffing & Honey Mustard Mayo

If making for Grab & Go Fridge wrap in baguette �lm packagingas per instructions. If serving customer from Deli Counter, wrap in Londis Fresh parchment paper.

Apply appropriate label to seal the paper folds with side facing aspect, as per diagram. Place neatly on the Londis Fresh Grab & Go fridge shelf as per planogram for customers convenience.


Sandwich Range

Upon request spread the �rst slice of granary Bread with butter or spread of choice.

Neatly layer some mixed leaf lettuce over the tomatoes.

Add six small sun blushed cherry tomatoes evenly onto the tuna mix.

Ask customer if they would like a relish and spread a tablespoon of their choice onto the top slice of granary bread to �nish.

Place two scoops or 80 grams of Mediterranean Tuna sandwich �ller onto the bottom slice.

Lay one slice of Swiss Emmenthal cheese, cut in half diagonally, over the lettuce.

Preparation Guidelines for Mediterranean Tuna & Swiss Cheese with Sun Blush Tomato

If making for Grab & Go fridge wrap in bloomer square packaging as per instructions. If serving customer from deli counter, wrap in Londis Fresh parchment paper.

Apply appropriate label to seal the paper folds with side facing aspect, as per diagram. Place neatly on the Londis Fresh Grab & Go fridge shelf as per planogram for customers convenience.


Sandwich Range

Add one scoop or 30 grams of cheese salsa neatly on top of the chicken.

Wrap the �lled Tortilla as per instructions on following page. Serve whole if serving in Londis Fresh parchment paper.

Lay a plain tortilla wrap out �at onto the deli counter assembly area.

Neatly top the cheese with a small handfull of mixed lettuce or 10 grams.

Place two scoops or 80 grams of Moroccan Chilli Chicken onto the wrap about 1/3 from the bottom edge.

Preparations Guidelines for The Special Classic

Transfer to Merrychef and toast as per instructions.If sandwich is brought from the Londis Fresh Grab & Go fridge shelf for toasting, follow the instructions as supplied.

Note: The assembly instructions for The Tuna Special & The Roasty Special are detailed in the sandwich range section, just omit the mixed lettuce.

Upon request spread the �rst slice of bread with butter or spread of choice.

Lay four slices of fresh tomato onto the cheese.


Finish by placing the second slice onto the top of the sandwich.

Place two slices of deli ham onto the buttered bread slice.

Place one spoon of diced red onion neatly onto the tomatoes.Spread one spoon of Country Relish onto the second slice of Bread.



Toasting in the MerryChef Oven

Check Merrychef oven is fully heated to 250 degrees.

Set the microwave setting to 75% heat, oven will start automatically.

Check toasty is hot enough and transfer to Londis paper for packing, see over.

Close the door and set the time for 1 minute & 40 seconds.

Make sure to close the oven door immediately after every use to retain optimum heat.

Place the toasty onto the te�on mat on the inner tray.

When the toasting is complete the alarm will sound. Remove the toasty from the oven immediately.



Packaging for Serving to Customer

Place the sandwich on Londis Fresh paper.

Flip the sandwich over to meet the end of the paper and hold.

Place a 750cc wave bowl onto the scales and tare to zero.

Add three to four cherry tomatoes to the side of the chicken, 30 grams approx.

Place 10 grams of crispy bacon loosely over the salad.

Using a knife loosen the outer edges of the lasagne. then cut twice across and twice down to make nine equal portions.

Place appropriate lid size onto the container.

Remove all outer packaging from the beef Lasagne.

Place the portions of lasagne into small size mealmaster trays.

Remove the �rst portion of lasagne from the centre to allow easier acsess to the other portions.

Place large tray lid onto the Mealmaster tray.

Place on scales and tare the scales to zero.

Using a scoop put 300 grams of chicken curry into the well in the cooked rice.

Add two half slices of red cheddar cheese to the ham.Add three scoops of rice until you have 200 grams weighed.

Place the appropriate medium size lid onto the tray.

Take a medium size Mealmaster tray.

Using the back of the scoop make a well in the centre of the rice.
