Fr om th e beginn ing Lima, th e city of kings and viceroys, was a n oasis

of cultur e an d elegan ce in th e Amer ican Indies. J ust a few decades a fter

its foun dation, Lima already r ivaled Mexico as t he m ost import ant me-

tropolis in the Spanish-American empire. Baroque and Renaissance

churches, ma nsions, palaces, universities an d ar chdioceses filled Lima .

The cultur al scene positively hu mm ed as ear ly as the beginning of the

seventeenth cent ur y, when Lima h ad but a population of just 25.000.

The a ncient Rma c Valley, th e speak er in t he Quechu a lan gua ge, was

originally settled by fisher men a nd h un ter -gat her ers, ruled over by a

local chiefta in, Tau lichu sco. It was here t ha t on J anu ar y 15, 1535, Span-

ish Conqueror F ra ncisco Pizarr o founded th e city of Lima . In less t ha n

70 year s, Lima was to concentra te all th e power an d wealth of all tr ade

an d cultu ra l activity in t he Vice-regency: it ha d become, in effect, t he

most importa nt city in the Amer icas.

In the eight eenth centu ry, Lima fell into decadence and instability due

ma inly to th e creat ion of the Vice-regen cy of Ro de la P lat a, wh o took

over t he grea t m ines of Alto Per (now Bolivia). Thin gs cam e to a hea din 1821, when P eru d eclared it s independen ce as a Repu blic. At t he

sta rt of th e twent ieth centu ry, dur ing la Belle Epoque (1915-30), th e city

enjoyed a privileged position once more as one of th e most modern cities

    on t he cont inent.

In t he 1940s, as growing waves of migran ts left th e coun tr yside bound

for Lima, th e capital became a m iniatu re r eplica of the count ry itself,

a melting pot of people and cultures. Today, with a population of 6.5

million, Lima is home to a qu ar ter of the coun tr ys population a nd n early

two-thir ds of Per us economic and in dus tr ial activity.

More t ha n 460 years h ave passed since its foun ding as a Sp an ish city,

an d Lima today h as become synonym of Peru s mest izo or mixed-blood

her itage, one th at baffles those in the kn ow an d first -time visitors alike.

In fact, this qua nda ry is one of Lima s great est featu res. This alchemy

of influences is m ost clearly seen in t he citys inn ovat ive cuisine, wh ich
