1 Pkg (16 oz.) Irene’s 4 Stack Potato Latkes, cooked per package directions

4 oz Baby Spinach1 Pkg (4oz) Wegmans New York Style

Smoked Nova Salmon2 Tbsp Kedem White Wine Vinegar4 Food You Feel Good About Large Eggs4 Tbsp Golds Extra Chunky Salsa, divided1. Place spinach and 2 Tbsp water in microwaveable

bowl; cover. Microwave on HIGH 2-3 minutes until wilted; drain. Portion spinach evenly on potato pancakes; top with layer of nova salmon.

2. Fill large skillet with 2 inches of water; heat on HIGH until boiling. Add vinegar; reduce heat to MED to maintain simmer.

3. Crack one egg into a small shallow bowl and carefully slip egg from bowl into simmering water. Quickly repeat until all eggs are in poaching water. Poach eggs about 3 min until whites are set; remove with slotted spoon onto spinach-topped potato pancakes.

Chef Tip: Spinach can be wilted in a skillet: Heat 2 Tbsp. of water in skillet on MED-HIGH. Add spinach. Gently toss, 2-3 min. until wilted.

2 Tbsp extra virgin olive oil2 cups peeled, chopped onion1 lb baking potatoes, peeled, 1/4-inch diceSalt and pepper to taste 3 Tbsp Breakstone's Whipped Butter8 Food You Feel Good About Large Eggs, lightly beaten2 Tbsp chopped fresh chives1 Tbsp chopped fresh cilantro1/2 of an 8 oz pkg Les Petits Fermieres Shredded Pizza

Blend Cheese (Dairy)1/2 cup Gold's Extra Chunky Salsa, warmed

1. Heat oil in pan on MED-HIGH, until oil faintly smokes. Add onions; cook, stirring, 2-3 min, until soft but not brown.

2. Add potatoes; cook 10-15 min, until potatoes are fork-tender, turning occasionally to brown all sides. Season with salt and pepper. Add butter.

3. When butter begins to melt, gradually add eggs, folding in with rubber spatula. Cook, stirring occasionally, 2-3 min, until almost set. Add chives and cilantro. Spread potato-egg mixture evenly to cover bottom of pan; sprinkle with cheese. Cut into 4 wedges; serve with salsa.

Gefilte Fish Cakes with Horseradish Dill Sauce

DIRECTIONS:

1. Add fish, celery, peppers, onions, ½ cup mayonnaise, 1 Tbsp horseradish, ¼ cup dill, ½ tsp pepper, egg, 1½ tsp lemon juice, and matzo to bowl; stir to combine. Form into 8 cakes about 4 oz each. Place on baking sheet; refrigerate 45 min.

2. Mix remaining mayo, remaining horseradish, remaining dill, remaining lemon juice, and remaining pepper in small bowl. Cover and refrigerate until ready to serve.

3. Heat 2 Tbsp oil in large skillet on MED. Add half of the cakes to skillet. Cook 4-5 min until golden brown; turn. Cook 4-5 min until golden brown; transfer to serving dish. Add remaining oil to pan. Repeat process with remaining cakes; transfer to serving dish. Serve with horseradish dill sauce.

Chef Tip: Try making the patties smaller for appetizers or stuff into a portobella mushroom and broil on the bottom shelf 5-6 min.
