SYLLABUS

A Roadmap to the News of the University Club of Rockford, Illinois

President’s Letter by John Mecklenburg

It is my great pleasure to officially announce that, as of Friday, May 25, Borvone Phothiboupha, better known as “O,” was named the new head chef of the University Club of Rockford. O is Borvone’s given middle and the name he prefers.

Within minutes Head Chef O tapped Adam Murray as his new sous chef, completing a reorganization of our kitchen.

With his promotion, O joins Lisa Pass, Kelly Adrian and Julie Sandall as the fourth member of the club’s management team. O replaces chef Ty Bergman, whose last day at the club was May 19.

O is no stranger to club members, having served us faithfully for more than 11years. He joined us in 2007 as part of Chef Jason Kovanda’s kitchen

staff. O successfully managed the kitchen for a significant period of time when Jason left, before we secured a new chef.

Based on O’s outstanding history of handling our club’s culinary needs during multiple, extended periods of time, in addition to his duties as sous chef, the executive committee and board of directors have full confidence in his abilities to provide our members with outstanding culinary offerings in the years to come.

Newly promoted Sous Chef Adam Murray has been with the club for three years, after serving successful stints as lead chef at numerous establishments in the Rockford area.

During the past month O and Adam have worked fluidly with the other members of the management team, the food and beverage committee, and the club governance group to present the Memorial Day Buffet, kick-off the Monday night cookouts, numerous special events and excellent member dining.

So, when you have an opportunity, please take a moment and congratulate O and Adam on their promotions. We believe you will like their new ideas and approaches.

I’m certain that you’ve noticed that our tree removal project, scheduled for Saturday, June 9, didn’t happen again. The rains came through the area just before the sched-uled removal, making it impossible to bring a crane into the back yard to sup-port the project. Stay tuned, that tree’s going to go one of these days!
